very year we kickoff The London Coffee Festival with one heck of a party, but this year’s promises to be bigger and better than ever as we welcome none-other than Norman Jay to the line-up.

Co-founder of the legendary Good Times Sound System and London dance station KISS FM, Jay fostered the ‘Rare Groove’ scene pushing boundaries of the UK’s emerging club culture. Awarded an MBE for services to Djing and music, he recently released his most eclectic compilation to date, ‘Good Times Skank & Boogie,’ and is currently taking his legendary Good Times party to selected venues around the UK, continuing to convert generations of clubbers to the cause, championing new sounds, yet never forgetting his musical roots, thus generating nothing but ‘Good Times.’ What about the ‘Espresso Martini’ part of this party, we hear

Espresso Martini (obviously) and The Bailey’s Flat White Martini, crafted using Starbucks’ coffee. If this all sounds too much to handle or your diary is already full on Friday 7 April fear not. We’ve persuaded the guys at Baileys to share their Flat White Martini recipe so you can give it a whirl at home. PSSSS. Gwilym Davies 2009 World Barista Champion and founder of East London’s Prufrock Coffee, Gwilym, is famed for making coffee in 36 different countries. He’s now settled in Prague where he owns and runs a Barista Training Centre.

Creativity, passion and skill – this is what makes a Coffee Master. Coffee Masters™ is a fast-paced, multi-disciplinary global barista tournament taking place annually at The London and New York Coffee Festivals. The competition sees some of the world’s best baristas compete head-to-head in a series of disciplines for the prestigious Coffee Masters title and a £5,000 cash prize. Judged by a panel of industry figureheads, the fast-paced knockout battle format of Coffee Masters will see 20 baristas showcase their skills head-to-head across a broad range of disciplines: The Cupping, The Brewing, The Origin, The Latte Art, The Order, The Signature Drink with The Espresso Blend included for those who successfully make it to the Coffee Masters’ semi-finals.

The competition will run throughout the four days of the festival with the winner taking the Coffee Masters’ crown on Sunday.

The Disciplines The Cupping:

The Cupping tests the barista’s ability to understand taste profiles in a highly-competitive time-pressed battle. Each competitor is presented with six coffees set in a particular order and the competitors have three minutes to taste and memorise the order in which those coffees are placed on the table. The coffee bowls are then shuffled randomly and competitors have two minutes to taste and return the coffee bowls back to their original order. The Brewing:

The Brewing tests the barista’s ability to choose the right brewing method for a coffee. The competitor will select one of the six coffees presented in The Cupping round to brew. This discipline aims to assess the barista’s understanding of grinding and their ability to select the right brewing method from a Chemex, Aeropress or V60 to maximise taste. The competitors will be judged on the correlation between their choice of coffee and brewing method, their presentation and the taste of their coffee.

The Origin:

The Origin tests the barista’s ability to identify coffee origins by taste, in a highly competitive time-pressed battle. Each contender is presented with six coffees, and a table-top map of the world. The contender will have five minutes to taste the coffees and place them on the map in the correct geographical location from where they originate. The Latte Art:

The Latte Art tests the barista’s mastery of milk, challenging them to create specific patterns in milkbased drinks against the clock. The judge will roll a dice three times, determining three different coffee patterns that competitors have to replicate and present to the judges. The presented coffees will be judged on visual appearance of the pattern, milk quality and contrast. The Order:

A real world test. Baristas are challenged to deliver an order of 10 espresso-based drinks, common to a quality café menu. Baristas will be presented with an order docket, which they will be challenged to produce in nine minutes or less. The competitors will be judged on their technical skill, cleanliness and time.

The Signature Drink:

A signature drink is a coffee based mixed beverage consisting of three or more ingredients, as long as they are safe and legal to use. Baristas will need to replicate and present the same Signature Drink that they created for their online submission video. The competitors will present three identical drinks to the judges and will be judged on taste, creativity, consistency and presentation. The Espresso Blend:

Baristas will create an espresso blend from the coffees used in The Cupping. The ‘Espresso Blend’ discipline will only occur during the semi-finals. The two finalists will then need to replicate their bespoke blend during the final.

Sonja Zweidick Sonja is Founder of Barista Connect, a female network where women from all parts of the industry meet and inspire each other at international events. She’s also a three-time national Barista Champion, Judge, Roaster and Barista.

Kris Schackman Kris is Co-Founder of Berlin based Five Elephant Coffee Roastery & Cake Shop. He works there as CEO and Green Buyer, focusing on ethical and responsible business practices and direct sourcing of high quality coffee.

Tim Sturk Tim’s Head of Coffee Training and Development for BaxterStorey where he developed and launched the company’s Barista Academy in 2009. He’s since guided over 4,000 budding barista delegates through the Foundation Level Barista course.

Mikaela Wallgren Mikaela has a dual role as Barista and HR-Coordinator at The Coffee Collective in Copenhagen. She’s represented her home country, Finland, in the World Brewer’s Cup on several occasions coming second internationally in 2016.

That’s why we created Coffee Masters: The Workshops, a series of immersive activities scheduled to take place between battles. CALLING ALL GEEKS If you haven’t already heard about our extensive Lab Programme in partnership with MUMAC Academy and featuring interactive demonstrations, workshops, fascinating talks and lively debates, flick over to p. 20.

Keep your eyes peeled for the Allan Reeder crew who’ll be wandering around the Coffee Masters’ arena, sporting usherette trays filled with these fruity little delights. And make sure to visit the Allan Reeder stand where baristas from Roastworks Coffee Co. — a Devonbased, independent coffee roaster dedicated to engaging people in better coffee — will be taking over to demonstrate beautiful latte art. Festival-goers will also get the chance to try Roastworks’ new range of Nespresso compatible speciality coffee capsules paired with some of the finest artisan milk on the market, as well as The Truth, the roaster’s seasonal blend and a stunning companion to Allan Reeder’s unhomogenised milk.

These days, it’s rare to order a coffee without being faced with the option of at least four different types of ‘milk.’ That’s why, as part of this year’s Order Challenge, Coffee Masters contenders will be asked to make one plant-based drink using Alpro For Professionals. But what exactly will those dairyfree drinks taste like, and will they be delicious enough to tempt you away from the white stuff ? Visit Alpro’s stand and you’ll find out, as Coffee Masters’ contenders as well as Dutch Barista Championship finalist Merijn Gijsbers will be on hand to craft you delicious coffees using plant-based milk alternatives, including a preview of a neverbefore-seen For Professionals product launching in July. Sip on this top-secret beverage, an Alpro Soya Original Cappuccino, Coconut Hot Chocolate or an Iced Chai Latte, whilst Merijn divulges littleknown info on Alpro’s sustainable supply chain.

How important is water to getting your coffee right? H2O makes up to 98% of a cup of black coffee so water is crucial to getting the taste just right. At this year’s London Coffee Festival, BRITA Professional will be joined by Rob Dunne, barista and Founding Partner/Director of Old Spike Roastery, to take you through a specially developed tasting session that explores water and coffee. By tasting, you’ll discover how water affects the taste, flavour, aroma and appearance of coffee. You’ll leave knowing what needs to happen to your water to make that perfect cup every time, plus there will be giveaways galore and the chance to take a water hardness test on stand to determine the quality of your water.

Some of these coffees are the perfect example of what to expect from their origin, others are rare and interesting varietals, and then there are the ones that we just had to take simply because they blew us away on the cupping table!

Latte Art Live A brand new, inspirational feature is coming to The London Coffee Festival. Latte Art Live is an interactive zone dedicated to the highly popular skill of latte art.

oasting some of the world’s best latte artists, this experiential area enables visitors to take part in 35 minute hands-on workshops and demonstrations to learn the techniques and skills needed to create jaw-dropping masterpieces. The exciting four-day programme will also include daily latte art throwdowns. World-celebrated latte artist Dritan Alsela stole the show at the feature’s New York Coffee Festival launch back in September, with hundreds of visitors flocking to see him pour intricate designs. And London’s line-up is equally if not more impressive. hanks to its hugely successful launch at last year’s festival, La Marzocco’s Roaster Village is back! But there’s a difference – this year it’s split over two floors, allowing even more of the UK’s finest roasters to take up residency and serve the finest of coffees from LM’s Linea Mini machines.

Union is partnered with Royal Botanic Gardens, Kew, to conserve the Yayu Coffee Forest in Ethiopia, and invest in the region’s coffee cooperatives. The Union Direct Trade initiative is enhancing smallholder livelihoods, preserving a unique wild coffee biosphere, and improving the farms’ coffee quality. Union’s excited to build sustainable relationships which motivate farmers to grow excellent coffee, and you get to enjoy a delicious, responsibly sourced cup full of exotic coffee flavours.

Coffee Forest, the birthplace of a rather special species, Coffea arabica. It was here in the western Ethiopian highlands that humans first discovered coffee, and the region continues to produce some of the tastiest speciality grade coffee available. But Ethiopia’s coffee biospheres, and the livelihoods they support, are under threat from climate change, deforestation and changing land use. In fact, the country lost a staggering 70% of its forests in the last century.’

‘Coffee from Ethiopia gives us distinctive and astonishingly exotic flavours. It’s a very diverse growing area, which constantly surprises us with its variation in taste profiles. Brewing a cup with beans from the Yirgacheffe region often amazes us with aromatic notes of bergamot (like Earl Grey tea), whilst coffee from Harrar can get our senses somersaulting with spicy, earthy flavour notes.

Thankfully, several organisations are working together to preserve it, and Union’s proud to be one of them. In 2014 the brand began a project in Yayu with Royal Botanic Gardens, Kew, and Ethiopia Coffee Forest Forum.

Immerse Yourself In UCC Coffee’s Experiential Coffee Journey, from origin to cup Visit the UCC Coffee UK & Ireland stand during the festival and you’ll be taken through the journey of coffee – from origin through to the finished product in the cup – exploring coffee at every step of the way. Live roasting and cupping at the different stages of roast feature in the hands-on experience. And you’ll leave with a bag of specialty grade coffee roasted just the way you like. But that’s not all. This year, UCC Coffee has collaborated with Hotel Chocolat to host a sensory session in The Tasting Room (p. 25), exploring what makes coffee and chocolate great – and you’re invited.

David DeMaison, head chocolatier at Hotel Chocolat, and Gayan Munaweera, head of coffee quality at UCC Coffee, will be hosting the sessions to help you discover the stark similarities between coffee and chocolate as natural products. They’ll explain the differences in how they are harvested and their production which create the huge variety ultimately found in each. In the session, you’ll pair coffees and chocolates from the same origins as the experts walk you through the key stages in each products’ development, and how different flavours and mouthfeels come to be. Having discovered what the relationship between coffee and cacao of a similar origin really means, you’ll learn how both beans are roasted, affecting coffee and chocolate in different ways. David will also describe how chocolate’s delicate ‘conching’ process can create completely different flavours from the same raw product. And, you’ll sample a specially developed coffee chocolate. The Ethiopian Yirgacheffe Kochere specialty coffee from the session has been blended into a paired chocolate to create a unique tasting experience. You’ll leave the session

Did you know? Coffee and cacao take root in many of the same regions, but thrive in different altitudes, humidity and times of year. Arabica, for example, flourishes over 1000m above sea level, a height at which Cacao trees start to perish. Cacao is only produced 10° either side of the equator, where the temperature and humidity suit, while coffee as a crop is more forgiving, allowing a wider variety of origins.

The Men Behind The Menu Sam Trevethyen: Head of Coffee Sam is coffee at Grind, working closely with Head Roaster Howey when it comes to choosing and selecting the coffees used, as well as heading up the in-house training programme for all Grind staff. He also works closely with Grind’s wholseale partners, educating baristas from each site to ensure that the quality and consistency of coffee remain high. Howey Gill: Head Roaster Howey joined Grind in 2016 to help set up the Grind Roastery. With 5 years of experience sourcing and roasting coffees for the Counter Culture Coffee and Alchemy plus numerous years of barista work before that, it’s fair to say that he’s pretty knowledgeable by now. His background as a Natural Sciences graduate keeps him curious and experimenting with how to improve coffee, and his

habit of playing in psychedelic rock bands is useful when a more creative approach is required. Howey was once told by a coffee farmer that after a coffee cherry is grown, you can never add quality to it. That’s he why believes that his ‘job in the coffee industry is to maintain it; to bring as much of that goodness from these great farmers’ work all the way to the final cup. It’s a pretty solid philosophy we think. Kyle Boyce: Executive Chef Born and raised in Cape Town South Africa, Kyle started his culinary journey at the Cape Grace Hotel, one of the leading small hotels in the world at that time. From there he was headhunted by Soho House and relocated to London where he has worked for the last 8 years, helping the group to open sites across London as well as in Chicago and Istanbul. ittle leaves a bad taste in your mouth more than having a fantastic experience only to be ruined by terrible food. But, this can often be the case with festivals, famed for their expensive chip vans, lack of vegetarian options and greasy noodles. Which is why we launched The White Label Kitchen, an innovative dining experience that provides a blank slate for a handpicked selection of London’s hottest food concepts to join forces and create the ultimate festival menu.

Making its debut appearance at London Coffee Festival and bringing the Kent coast to The White Label Kitchen is Crabbieshack. The Folkestone inspired shack uses local and seasonal produce to celebrate the humble crustacean. Soft-shell crab is coated in Old Bay batter before being deep-fried for intense crunch. Fluffy, brioche burger buns and stuffed with fresh fillings, topped with crispy crab and drizzled in a choice of sauce. MmmMmm. HS&Co. Another festival newbie and indeed a new addition to the East End is HS&Co, bringing you Irish steak cooked on the famous Josper Grill. Steak is dry aged for three weeks before being cooked on the Grill with nothing other than salt and pepper (no silly marinades) to enhance the beef’s flavour. It’s then sliced and served with onions on a soft white bun, but not before being topped with creamy cheese sauce. Philly Cheese Steak sound a bit too meaty for you? Fear not. For the Veggies out there, there’s also homemade falafel wrapped in traditional Lebanese flat bread served with salad and tahini sauce.

ARANCINI BROTHERS A favourite amongst festival goers since day one, Arancini Brothers are best known for their Sicilian-style, hand-made risotto balls. Last year they served up the likes of a Risotto Ball Salad Box packed with superfood salad, four wheat free risotto balls and homemade chutney, as well as The London Coffee Festival Special Burger, made from organic brioche and filled with a beef patty, sweet bacon garlic confit and Colston Bassett Blue, with a side of smoky fries. Not bad considering they started off as a tiny Brick Lane market stall, ay?


(And Drink – Mostly Drink actually) UK Latte Art Champion and Roasting Party barista Dhan Tamang will be showing off his latte art skills at The Roasting Party’s stand, as well as on the Latte Art Live stage. Fresh, light and fragrant, Black Star’s signature cake consists of two layers of almond dacquoise, rose-scented cream, watermelon, strawberries, pistachios and dried rose petals. The Brass Funkeys are an eightpiece London-based Brass Band who draw on the traditions of New Orleans. Formed in 2011, they’ve played at major festivals including Glastonbury, Boomtown and Bestival as well as London venues including The O2 Brooklyn Bowl, Richmix, and Ronnie Scott’s. Last year the band supported Dr John, the Hot 8 Brass Band and The Dirty Dozen on their UK tours and have also performed across Europe.

London’s MC Xander uses nothing more than his voice, a mic, an fx box and a loop-pedal to create intricate, multi-layered music that never fails to amaze. Beautiful choir-esque melodies mix with fat beatbox, growling dubby sub-bass and Xander’s conscious brand of lyricism. The sound he makes is so sonically rich and danceable, it’s easy to forget it is all from the mouth.

Over the last few years, Leeds’ based klezmer/Balkan beats/gypsy jazz bohemians Tantz have taken the UK world/roots music scene apart with their full-on musical attack on audiences across the length and breadth of the nation. With awesome musical chops, an energy not seen since punk rock’s halcyon days and ability to turn a gentle world music festival crowd into a heaving, pogoing mosh-pit, there’s something special about this band that manages to touch almost everyone who hears and sees them live, no matter what music they’re into.

Hailing from South London, All The People are a three-piece comprising of DJ brothers Ashley & Simon (The Burbs, Hospital records) and singer Curtis. They pride themselves on having a recorded sound and live show that reflects their creative and experimental approach to song structures and soundscapes. Musically they are already being favourably compared to artists ranging from SBTRKT, Sampha , Hot Chip, Little Dragon, and their unique sound reflects diverse influences from classic trip hop /soul acts such as Bonobo and Massive Attack, to RnB and 90’s soul , jazz & early Detroit techno.

The Coffee Music Project The Coffee Music Project is a high profile competition that showcases emerging musicians while engaging a deep spirit of community among those who share a passion for great music and coffee culture. The competition takes place annually in London and NYC and all profits from the live rounds directly support Project Waterfall. Eight finalists from this year’s London edition will be performing on the main stage during Saturday and Sunday of the Festival, with the finals taking place at 229 The Venue on Wednesday, 12 April 2017. Craftmanship and Style at LCF

Coffee Art Project The Coffee Art Project is an exciting art competition linked to the theme of coffee and is one of the core fundraising initiatives of UK Coffee Week™ 2017. The competition showcases the creativity and talents of emerging and established artists, while engaging a deep spirit of community among those who share a passion for great coffee! Both up-and-coming and established artists are invited to submit an original piece of artwork that represents a creative, unique and personal connection to the concept of ‘coffee’ or a ‘coffee shop experience.’ Artists specialising in all media types can submit any form of art, including: paintings, drawings,

photography, film, design, sculpture and conceptual art. This unique project gives artists the opportunity to be part of a growing creative community with a passion for coffee whilst raising money for our chosen charity: Project Waterfall. The winning artist will receive a cash prize of £1,000 and three other shortlisted runners-up will receive £250. Acme & Co. Acme & Co was founded in 2011 by two New Zealanders crazy about coffee and hospitality. Jeff Kennedy and Bridget Dunn had sold their coffee roasting company and flagship cafe and decided to launch the cups they had always wanted with great colours available and more user friendly than anything

they had been able to import from abroad. So Acme & Co was born. From its inception Acme & Co has balanced form and function perfectly, refining the classic espresso cups by making handles easier to hold and creating universal saucer sizes.
