eputation matters. Five years ago, suppliers started spreading the words that Brooks’ House of BBQ was getting into the con-

tract-bottling business.

That was all it took. Today, Brooks is contract bottling for 150 clients, “and we haven’t even scratched the surface, said proprietor Ryan Brooks. That potential won the company a

$100,000 state grant in August to help underwrite a 6,000-square-foot expansion. That will quadruple the 2,000-square-foot plant behind the Route 7 chicken-barbecue mecca on the city’s East End. The latest recognition of the three-generation success story comes Thursday, Oct. 17, at The Otesaga, when the Otsego Please See BROOKS, B4

SpongeBob was there posing for pictures for hours.

The duo, who bought the comSMALL pany with a plan to BUSINESS “build it around the AWARD community, knew they had something special on their hands. “We had SpongeBob back; we’ve had Dora and Scooby-Doo, said Guenther. “It got so big we had to move it down the park. We would have 4,000 kids there. “Those kids are our future customers, said Jennings. “It’s a day they’ll always remember. That understanding also helped Please See FIVE STAR, B3

Five Star Finds Taking Care Of Customers, Employees, Good For Business FIVE STAR/From B1 bring the Susquehanna Balloon Fest, expanded Fourth of July festivities at Neahwa Park and, most recently, the band America to Damaschke Field, reasons that Five Star Subaru won the 2013 Otsego County Chamber Small Business Award. “If someone comes to us and they’re doing something for our community, if we can financially help them,

we do, said Guenther. Jennings is a 1983 OHS graduate who got his start working at the Honda dealerships (where The Shipping Room is now), while Guenther moved here from Rhode Island and opened his own lot, Majestic Motors. “We met in the business and we were good friends, said Guenther. “We hung out outside of work, our

families got together, added Jennings. The Bettiol family owned Five Star Subaru, and Guenther was given the opportunity to buy the corporation. Without hesitation, he approached Jennings to join him. “We came into a running business, said Guenther. “But our strategy was to take care of our customers and our employees. We

tell our employees that they don’t work for us, they work with us. And they’re constantly making improvements to their dealership, to improve the experience of buying a Subaru or getting one serviced. “We have Wi-Fi, quiet waiting rooms with coffee and snacks; we even lend out iPads, said Guenther. “People are disappointed

when there isn’t more wrong with their car, Jennings joked. The partners even had some cross-country visitors. “We had a guy driving this old Subaru with Alaska plates stop in for service. He was driving back to Maine, Guenther recounted. “A few months later, he came back through and stopped in our shop again. And both Guenther

and Jennings plan to keep reaching out to community, supporting concerts, youth sports and downtown celebrations. “This award was very unexpected, said Jennings. “But it’s a really good feeling. “At the end of the day, are we successful? I don’t know, said Guenther. “But we feed 33 families with this business. We feel good about it.

Brooks Finds Co-Packing Niche That’s ‘Doing Nothing But Growing’ BROOKS, From B1 County Chamber celebrates Brooks as its 2013 Small Business of the Year. The numbers tell the story: • The current plant fills 22 bottles per minute. “I thought it was fast when I bought it,” Ryan said of the current production line. “It’s not. It’s very slow given our needs now.” The new will fill 90 bottles per minute. • Five years ago, Brooks installed two 80-gallon kettles. “I thought it was a lot,” said Ryan. Since, they have been replaced with 150- and 200-gallon kettles. With the expansion, the 200-gallon kettle will be replaced with a 500-gallon one, with the 150 one kept for small batches. • Vinegar comes in 5,000gallon truckloads. The bottling plant used to get 3-4 truckloads a year; now, one comes every 3-4 weeks. • Before contract bottling, Brooks was processing 1,200 bottles a day. Even before the expansion, “we’re running 1,400-1,600 an hour,” said Ryan. “It’s mind-boggling to many,” he said. “It’s mindboggling to me.” The bottling plant employs six now, but that will double when the expansion, to be built by Eastman Associates, is completed next April; ground-breaking is planned in November. In all, the company employs 112. Ryan’s grandparents, Griffin Brooks, who passed away in April at age 92, and his wife Frances started the chicken-barbecue business in the 1940s. John and Joan Brooks, the founders’ son and daughter-in-law, were the next generation. When his father was ill in the early-’90s, Ryan returned from college to assume the House of BBQ’s management,

then returned fulltime after graduation in 1996. “The month I graduated I got put in the hot seat,” said Ryan. In 2005, he and wife Beth acquired the business. And today, while immersed in daily operations – among other duties, Beth has developed Generations, the onsite gift shop and soft-icecream parlor – and investing in expansion, the couple are already looking to the future. “This is for Carter and Abigail,” said dad Ryan. “This is their future, too.” Brooks had been bottling its own sauces since 1980, but Ryan saw the greater potential. At first, his idea was to market the Brooks’ sauces, familiar now to generations of SUNY Oneonta and Hartwick College graduates, up and down the East Coast, (and he still plans to do so.)

However, he and – and Mark Kelly, the PR and marketing consultant he brought in from the Albany area to help the company move to the next level – soon saw the more immediate potential in bottling. “The co-packing industry is doing nothing but growing,” said Ryan, who broke the business into two entities, Brooks BBQ and Brooks Bottling, on Jan. 1. While there’s room on the current site for the current expansion, he wouldn’t be surprised to see “a whole new facility” in Otsego County at some point. Another reason for the bottling plant’s success: Brooks has found a niche. While most plants require a 5,000-case minimum, Brooks will do a 50-case first run, rising to 100 cases after that. “There are a lot of great

products out there,” said Ryan. “They don’t know where to start; they don’t know how to start.” Brooks can help them with that first step. “We want to see them succeed.” The 150 customers range from Manhattan (and the Brooklyn Nets’ arena) to Ohio. The largest client, in Vermont, it getting 50 pallets of product – 120 cases per pallet, 12 bottles per case, 5 ounces to 128 ounces per bottle – every two months. Locally, Brooks has been doing special labels for SUNY Oneonta, Hartwick College and SUNY Cobleskill, bit hits at alumni gatherings. So you can understand why Ryan says, “the demand is unlimited.”
