ou never know when a good idea is going to come your way. It might not even be a new idea, but there’s something about the way it is presented that makes you stop and say to yourself, this guy really gets it. That’s what happened to me when I overheard Patrick Ryan of Ryan’s Pub talking to a brewery sales representative the other day. The conversation sounded a lot like an On-premise Spotlight we could have printed in Heady Times, where owners or beverage managers discuss what makes their business successful, even unique. Often times they talk about customer service and the importance of a knowledgeable staff, which are of course very important. But Ryan, whose family has operated successful pubs since 1952, was discussing the importance of offering a balanced beer lineup. He said, “You have to have balance. We’re not one of those bars with the motto, if you’ve heard of it, we don’t have it… in order to please everyone you have to carry well known domestics and imports in addition to the IPAs and other crafts people ask for these days.” He’s right, I thought to myself. No wonder this family has operated successful pubs for 65 years. Longevity in the restaurant business doesn’t happen by accident. Assembling a balanced portfolio makes sense. But is it as easy as it sounds? What kinds of beer and malt-based beverages do you need to carry to have a balanced selection for your customers? Jon Collins, an on-premise beverage alcohol analyst for Nielsen, has some advice. Speaking at a Beer Business Daily conference a few weeks ago, Collins said that any retailer looking for guidance when trying to assemble a balanced portfolio needs to focus on two beverage alcohol categories – premium and sessionable. According to Collins, premium products of all stripes have grown by 30% since 2013 and he believes this trend will only accelerate. Collins explains, “Consumers want quality and great taste. Right or wrong, they think that a premium product (in our business that means anything over $25 per case) gives them what they are looking for, and they don’t mind paying for it.”

At the same conference, Tom Fox, a recognized leader in Retail Sales and Category Management for the CM Profit Group, addressed sessionability (ABV of 5% or less). “Not enough of these beers are offered at the bar which is a mistake. Tasty, sessionable beer is a growing category and they keep butts in seats because you can drink a couple of them. We see demand in the offpremise too. Of the top 25 national, best-selling beers, 13 have an ABV of 5% or less. Some are craft beers, 9 are FMBs and 8 are Mexican imports. What they all have in common is flavor – as in they don’t taste like water.” This edition of Heady Times features lots of products that are both premium and sessionable, so take a cue from Patrick Ryan when looking at the assortment you offer your customers. Spring is here and summer isn’t far behind, so now is the perfect time. Give your customers the flavorful, high-end and sessionable products they are looking for. Director of On Premise Sales How long have you been with All Star? 21 years. What has been your favorite thing about your job? Getting up every day to do a job I absolutely love. We are very fortunate to work in such a competitive, but fun, industry. The Origlio’s are the third family to own All Star since I’ve been here. I’ve enjoyed working hard for each family and in turn, I appreciate how they have each treated their employees. I also enjoy seeing the teamwork from every department that goes into accomplishing our company goals. What does it take to be a top-notch sales manager? I think it’s most important to find the right balance in dealing with all the different situations you are tasked with. I’ve always done my best to listen to both sides of any situation to find the correct solution, rather than jumping to immediate conclusions while only hearing one side of the story (this is definitely something I’ve learned managing people). In my role, I rely on my managers, sales reps, suppliers and our customers to gain current knowledge that I must then use to make appropriate decisions. If I didn’t listen to these resources for additional thoughts, I don’t feel I would be making the best decision each and every time. A good sales manager should also be there for their employees and help answer any questions they have. These answers are normally needed for others to make decisions.

I try to get to know the customer’s schedule, to find the best time for deliveries. I like to be respectful of their time, so I try my best to be punctual. If I’m running late, I’ll call to let them know. I also like to get to know my customers on a personal level. Small talk goes a long way. What do you like to do when you’re not working? I like to kayak and I enjoy walking my chocolate lab, Ace.

CoverSTORY It Pays to Celebrate Cinco with Corona and Modelo
H
igh-end imports Corona and Modelo Especial, distributed in the U.S. by Constellation, are synonymous with Cinco de Mayo festivities. But did you know that these brands – which post double-digit gains year after year – are growing faster than craft beer and spirits? “No matter which channel your business competes in, job one for any retailer is increasing traffic and boosting the bottom line,” says Mike Kugler, All Star Brand Manager of the Constellation portfolio of beer. “From what I see, the best way to do that in these challenging times – restaurant traffic is down and craft beer sales aren’t what they used to be – is to strategically promote brands that are driving growth and profit. Corona Extra, Corona Light and Modelo Especial are the fastest growing, high-end brands in the country. The demand is there and it is accelerating. To get job one done, why wouldn’t you make the most of Cinco and these best-selling, high-end beers?” Cinco de Mayo has grown into one of America’s most popular beerdrinking holidays – with revelers consuming more beer on this day than on the Super Bowl or St. Patrick’s Day. Cinco, which falls on a Friday this year, is a bona fide occasion that consumers want to celebrate. It kicks off Corona’s “120 Days of Summer” and gives people a reason, or even permission, to socialize with friends and family over a couple of beers. And when they do, they want authentic, sessionable Mexican beers like Corona Extra, Corona Light and Modelo Especial. The proof is in the numbers… Last year according to Nielsen, Americans bought more than $735 million worth of beer during Cinco. Eighty percent of all the Mexican beer sold during that time frame was from the Corona and Modelo Brand Families. These brands are on fire and here’s why… “Six of the top eight, fastest growing imports are Constellation brands, that means they don’t just sell during Cinco,” explains Kugler. “Yes, they are Mexican beers, but that’s not the only reason why they are the fastest growing, high-end brands, and by high-end I’m talking

about anything that sells for at least $25 per case. These beers are exactly what millennial drinkers are looking for. They want authenticity, more flavor and something they can drink more than one of. And sessionability is key. I can’t tell you how many times I see LDA consumers start the party with a higher octane craft beer and then switch to a Corona or Modelo for the rest of the night. Plus, these consumers don’t want the cheapest thing out there. They want quality and they don’t mind paying for it. And, they think these beers are cool – worthy of a post on Instagram.”
More beer is sold on Cinco de Mayo than on the Super Bowl or St. Patrick’s Day. These days it’s hard to predict with any certainty what consumers want to purchase. Fifty to seventy percent of all buying decisions are made at retail, after the customer walks through the door. There is tremendous opportunity to influence what they purchase. Why not get them to ‘tradeup’ to Constellation’s high-end beers? The demand is already there. Why wouldn’t you feature these beers prominently? Why
CoverSTORY High End & Growing devote tap handles or shelf space to brands that don’t move quickly? “There hasn’t been a ton of good news lately about beer or restaurant activity,” says All Star Sales Manager for the on-premise Keith Mock. “Craft beer sales have slowed dramatically and National Restaurant News [a magazine devoted to all things important to that channel] published an article in February titled ‘Restaurant Traffic Won’t Improve in 2017’. The one bright spot I see is imported beer – make that Constellation beers, imported from Mexico.”

BrewerHIGHLIGHT 2SP Brewer Bob Barrar is the Michael Phelps of Beer, But He Doesn’t Care if You Know That or Not
A
WARDED A TOTAL OF 30 MEDALS at the Great American Beer Festival and World Beer Cup, Glen Olden-born Bob Barrar has won more competitions that swimmer Michael Phelps, the most decorated athlete in Olympic history. While Phelps might flash his hardware around, don’t expect to see any of Bararr’s medals at his new 2SP Brewery in Aston, Delaware County. Showboating doesn’t fly in Delco, a community where respect is accorded for honest, hard work and passion for craftsmanship. Pretention is taboo in this neck of the woods, a place where everybody went to school with a friend’s brother or sister. Barrar does his talking through his beer; hence the 2SP motto: Believe Nothing. Try Everything. You really should try everything that comes out of this local brewery… if not move to Delaware County. Here are Some Things You Need to Know About 2SP, Bob Barrar and His Beers.
• Open for just one year, 2SP (short for 2 Stones Brewing) was named Small Brewery of the Year in 2016.
• Barrar is best known for his world-class Russian Imperial stout –
perfected during his 11-year stint with Iron Hill Brewery in Media – but his IPAs and lagers have also medaled.
• His first professional gig as a brewer was at the now defunct Red Bell
Brewery, located in what was then the Wachovia Center. “I loved that during intermissions, people would just slam the beers I made,” Barrar told Heady Times.
• To the surprise of his friends and partners, the first beer Barrar made at the helm of his very own brewery was Delco Lager, a crisp and malty American amber with an ABV of 4%. It’s 2SP’s “All Weather Beer.” Barrar confesses that Delco Lager is his “party beer”. Shhh!
• As a brewer, Barrar likes to keep challenging himself. That’s another
reason why he brewed Delco Lager. “People don’t know that a really good lager is hard to make. I like the challenge of perfecting the beers I make. It’s hard work and that’s what I love about it.”
• While Barrar is exact and by-the-book, 2SP’s head cellarman,
Andrew Rubenstein (Ruby) is the driving force behind the brewery’s more experimental, barrel-aging program. “Ruby brews stuff that he envisions in his head, so we are total opposites,” says Barrar. “And he’s from Pittsburgh, so there’s that whole Steelers vs. Eagles thing. Neither of us talk very much, so we work well together.”
• Delco Lager notwithstanding, Barrar loves fresh IPAs. The brewery gets
ASAP IPA out the door as quickly as possible so friends and neighbors get to enjoy the beer’s full hop flavors at its peak of freshness. “That’s

the advantage of being a local brewery. Made with Citra & Centennial hops and with an ABV of only 4.2%, it’s a completely crushable beer.”
• Barrar’s favorite ingredient to brew with
is pale chocolate malt. It’s the mainstay of his Russian Imperial stout and its little brother, Baby Bob Stout – a unique and very drinkable American stout made with American hops.
• Barrar’s first taste of beer was his dad’s PBR. “When I was 8-years-old he sent me to the basement for a bottle. I opened it and took a swig. When my mom found out, dad got yelled at.”
• Since the brewery opened, over 40
different beers have been made, so the team has a feel for what will and won’t sell. “We like to brew beers we are passionate about and learn from our mistakes. We nailed the Belgian saison, but it just didn’t move. We do have bills to pay. But wait, we just made a smoked porter. So much for learning from our mistakes.”
• Barrar is eager to make a coffee
Russian Imperial stout. He has already worked with Philly’s Green Street Coffee Roasters on a beer, and he will rely on their knowledge of coffee beans and roasted flavors for the project. “Green Street helped select the right bean, which happened to be Ethopian. They understand that I want a complementary flavor to the hops and malts I use. We are all about balanced flavors. I never want the beer to be dominated by a specialty ingredient.”
• “My friends think I drink all day at work,”
says Barrar. “My mouth is the quality control lab since we don’t have the money to buy fancy equipment. Quality and consistency sell beer. Who cares that we are local if the beer doesn’t taste great.”
• Despite his 30 medals, Barrar’s
favorite award is hearing someone say “mmmmm” after taking a swig of the beer he made with his own hands.

AM AND MARY JO KRAFTY, OWNERS OF MOUNT BETHEL Beverage, are seasoned pros in the beer business. They’ve shown incredible adaptability in times of change and true dedication to the store they run. But the secret to their success, they say, is family. “We are a family business through and through,” says Mary Jo. “Our employees are family. Our nephew Matt has been with the business from the start and now our son Michael has joined us full-time. We even treat our customers like family!” HT: How did you get started in this business? MJK: My parents bought an existing distributor in Bangor in 1991 and then moved it to Mount Bethel. My brother ran the business and I did the bookkeeping until 2002, when Sam and I took over.
“We are a family business through and through.” HT: How has the business changed since you took over? SK: 12 packs were a big change for us and really helped our sales. 30 packs will never go away, but for the more expensive beers, 12 packs are a hit. They encourage customers to try more beers since you don’t have to buy the whole case. We are in the process of prepping our store for six pack and single bottle sales. We’re aiming to have that ready by the time it gets warm. There are four campgrounds in the area, and we have a lot of traffic during the spring and summer. Due to our location, I think six packs will sell really well.

HT: How do you decide which products to bring in? SK: That’s a good question. The Heady Times publication has been very helpful in informing us about available products. There are so many beers out there, I’d have no idea what’s available if I didn’t get it! Our sales reps have been very helpful as well. HT: What is one piece of advice you’d give someone who’s just starting out in the industry? MJK: We are still a traditional mom-and-pop store, and they are harder to maintain because of the competition. What’s keeping us alive in this market is that we are knowledgeable about our products and we have a familiarity with our customers. I think if you’re starting out, you’ll want to offer a welcoming environment, a place where customers feel comfortable. SK: I would say, know your products, offer a friendly environment and listen to your customers – that’s a big one. HT: We hear you have a great slogan, what is it? COZY CORNER PUB IN THE HEART OF SHILLINGTON has become a staple in the community over the past 35 years. Flanagan’s Pub, currently owned by Chris Flanagan, is one of the area’s favorite taverns, thanks to its tradition of combining great food and drinks with a fun, friendly atmosphere. HT: Tell us a little bit about the history of Flanagan’s. CF: My parents bought Flanagan’s in 1982. Back then, it was your typical corner bar. I took over in 1996 and made some changes so that it appealed to a wider crowd. I added the dining area downstairs and the outdoor patio. It’s much more familyfriendly now. I never thought we’d have highchairs! HT: With a name like Flanagan’s, you must have some great St. Patrick’s Day parties. How do you celebrate the holiday?

CF: This year will mark our 35th St. Patrick’s Day celebration! We have so much going on… musicians from 10:30am through midnight, an Irish dance troop performing, traditional Irish fare like corned beef & cabbage and Guinness fish & chips. There’s a group of people who, every year, have reserved the entire downstairs dining room for three hours. And in September we have a “Half Way to St. Patrick’s Day” party. HT: Sounds like a blast! How do you keep customers coming in the other 364 days of the year? CF: We recently started hosting tap takeovers, which have been a big hit. We have 13 taps, so we try to offer a nice mix of craft and domestic beer to please everyone. But we are getting into more craft-y stuff. Dave and Marnie [my All Star sales reps] are a big help when it comes to the beer selection! HT: What sets Flanagan’s apart from the competition? CF: We offer excellent food, great service and a cozy atmosphere. It’s a place where everyone is welcome.

The idea for this beer germinated way back in 2003 when three guys (Sam from Dogfish, Greg from Stone and Bill from Victory) formed the BUFF alliance (Brewers United for Freedom of Flavor) – a noble endeavor with the goal to highlight the passion and camaraderie of the American craft brew movement. BUFF didn’t really do anything (beyond a lot of talk) until 2010 when the three brewers finally got together to jointly brew a beer at the Stone Brewery. Saison du Buff was first brewed at Stone and replicated at each of the other two breweries – same recipe, same ingredients, three different breweries. A saison of sorts, the herbaceously outrageous Saison du Buff is brewed with parsley, sage, rosemary and thyme.
