HISTORY

Brunswick My family is pretty much 100% German. My last name is Brunswick, for goodness sake. But we’ve never really been the type of family to eat typically-German foods. We eat pretty average American foods. Cornbread casserole is just something that my aunt started making one year and we’ve been eating it ever since. Some people in my family hate it, but I love it. It’s cornbread but moist and since I don’t like honey, I don’t have to put anything on it.

JIFFY CORNBREAD CASSEROLE 1 (8 OUNCE) BOX JIFFY CORNBREAD MIX 1 (15 OUNCE) CAN WHOLE KERNEL CORN, DRAINED 1 (15 OUNCE) CAN CREAMED CORN (NOT DRAINED) 1 CUP SOUR CREAM 1/2 CUP MELTED BUTTER 1 MIX ALL INGREDIENTS AND POUR INTO (GREASED OR SPRAYED WITH COOKING SPRAY) 8X8” CASSEROLE DISH. 2 COOK UNCOVERED FOR 55-60 MINUTES AT 350 DEGREES. * I DOUBLED THIS RECPIE FOR THE POT LUCK

JIFFY CORNBREAD CASSEROLE The casserole is perfect just when it starts to pull away from the pan and a toothpic comes out clean. In the end, the casserole turned out okay. It deflated a little, but it still tasted good. It wasn’t as good as when my aunt makes it, but isn’t everything better when someone else makes it?

REFLECTION

The potluck was very interesting to experience as a class. I enjoyed trying new foods (vegan mac and cheese) and getting a different take on other foods (oreo balls w/pretzel). I didn’t try everything, but I did sample most of it. I thought it was interesting that some people tried to bring food that was extra healthy and didn’t used processed foods or corn, and others just made whatever they want. I think that says something about us as humans. When we’re confronted and feel conviction about something, some of us like to change our ways, wheras others just go with what’s normal, because staying in habits and staying comforable is easier than fighting something, even if it’s something worth fighting for.
