FROM ALLRECIPES.COM. ƒ 2 1/2 cups all-purpose flour ƒ 2 cups white sugar ƒ 1 tablespoon pumpkin pie spice ƒ 1 teaspoon baking soda ƒ 1/2 teaspoon salt ƒ 2 eggs, lightly beaten ƒ 1 cup canned pumpkin puree ƒ 1/2 cup vegetable oil ƒ 2 cups peeled, cored and chopped apple ƒ 2 tablespoons all-purpose flour ƒ 1/4 cup white sugar ƒ 1/2 teaspoon ground cinnamon ƒ 4 teaspoons butter

Preheat oven to 350 degrees F. Lightly grease 18 muffin cups or use paper liners.

In a large bowl, sift together 2 1/2 cups all-purpose flour, 2 cups sugar, pumpkin pie spice, baking soda and salt. In a separate bowl, mix together eggs, pumpkin and oil. Add pumpkin mixture to flour mixture; stirring just to moisten. Fold in apples. Spoon batter into prepared muffin cups.

In a small bowl, mix together 2 tablespoons flour, 1/4 cup sugar and 1/2 teaspoon cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle topping evenly over muffin batter.

FROM DELISH.COM. ƒ 1 tablespoon extra-virgin olive oil ƒ 1 large onion, coarsely chopped ƒ 4 cloves garlic, minced ƒ 4 pounds pumpkin (any kind but preferably sugar pie) ƒ 4 cups low-sodium chicken broth ƒ Kosher salt ƒ Freshly ground black pepper ƒ 1/2 cup heavy cream, plus more for garnish

In a heavy soup pot or Dutch oven over medium heat, heat oil. Add onion and garlic and cook until golden.

Meanwhile, halve, peel and scrape out seeds of the pumpkin. Cut into chunks.

Add pumpkin chunks and broth to pot. Season with salt and pepper. Bring to a boil, uncovered, then reduce heat to a simmer. Simmer until pumpkin is fork-tender, about 30 minutes.

Remove pot from heat and using an immersion blender, blend mixture until smooth. (Alternatively, let soup cool, then blend in a blender.) Stir in cream and season to taste.

To serve, ladle soup into bowls, add a swirl of cream, and garnish with pepper.

FROM DELISH.COM. ƒ 1 cup pumpkin puree ƒ 1 (15-oz.) can chickpeas, drained and rinsed ƒ 1/2 cup tahini ƒ 1/4 cup apple cider vinegar ƒ 2 tablespoons extra-virgin olive oil ƒ 1 chipotle pepper in adobo sauce ƒ 1/2 teaspoon ground cinnamon, plus more for garnish ƒ 1/2 teaspoon paprika, plus more for garnish ƒ Kosher salt ƒ 1 teaspoon toasted sesame seeds, for garnish ƒ Pita chips, for serving

In a large food processor, blend all ingredients until smooth. Season with salt and spoon into a bowl. Garnish with sesame seeds, paprika, and cinnamon.
