Warm Chocolate Fondant Pudding With Molten Filling.

This month we welcome back Derbyshire’s culinary elite, Scott and Kelvin to bring a delicious dessert into our lives. We’ve had really great feedback about the recipes that these guys have kindly submitted and I would love to hear about it if you made the recipes, it’d be even better if you sent in a picture! Ingredients Molten Filling
Cake mix
9oz Dark chocolate 6fl oz Double cream 1tbsp Brandy or other flavouring
9oz soft butter 9oz caster sugar 4 eggs
6oz plain flour 4oz cocoa powder
Method Make the filling first, ideally the day before you make the fondants. Warm the cream and whisk in the broken chocolate until thick, add flavouring. Pour into a shallow container and chill until set, minimum 3 hours. Pre heat oven to 200 degrees Celsius. In a electric mixer cream the butter and sugar together till light, fluffy and almost white in colour. Add eggs 1 at a time and beat well. Sift the flour and cocoa together and add to the butter and egg mix making sure its all worked in. Transfer the mix to a piping bag. Butter 8 dariole moulds or ramekins. Starting at the bottom pipe the chocolate mix so it covers the bottom and then pipe around the sides till you get to the
top, making a well in the centre. Do this with all the moulds making sure you still have some mix left. Now make a ball about the size of a marble out of the chilled molten filling mix and place in the well. Do this with all the moulds then pipe over the top with the remaining cake mix. Bake at 200 degrees Celsius for 15 minutes. Once cooked, leave to cool slightly then gently run a knife around the edge of the mould and gently remove the cake. If still warm you can serve immediately with vanilla ice cream and seasonal berries. Alternately you can leave to completely cool then once ready to serve gently warm through on medium setting for 1-2 minutes in the microwave.

Book Review Gone Girl by Gillian Flynn
Gone Girl by Gillian Flynn is definitely a book you can imagine being turned into a film. It may not be high art but it reads fast and keeps you gripped – maybe just the thing to distract from dark February nights. Nick and Amy are five years married; happily it would seem, then on their wedding anniversary Amy goes missing amid signs of a struggle. Nick is a weak and less than brilliant husband, but you start to wonder – could he have killed her. Or is there something else going on here? What follows are Nick’s recollections of the days after the event, interspersed with sections of Amy’s diary from the beginning of their relationship. Bit by bit we start to find out what was going on in this marriage. Our understanding and expectations are teased along; we’re given just enough information to think we know what is happening – but do we? The inconsistencies of their narratives leave you as confused as Gillian Flynn wants you to be. This is a smart read, with twists and turns every few pages. It may leave you feeling you’re glad you don’t inhabit the world of the trust fund baby - and everyone will have a different view on the ending; but as a fast and furious February pageturner, it fits the bill.

12 This month we head to Ambergate for a really dog friendly walk around Shining Cliff Woods. This walk is part of the Amber Valley Routeways series and is well know as the Betty Kenny Trail as the route takes you past the Betty Kenny Tree, where she was reputed to live with her family in the 17th Century and rocked her children to sleep in the branches of the tree. The woods themselves are wonderful and are a sight of special scientific interest due to the range of plants and trees that live here. The route will take around 2 hours There are some moderate climbs and the terrain can be muddy and uneven so a good pair of boots are a must. The path is well marked by posts with a white strip. 1.

Park at Ambergate railway station. Parking costs £2 a day. Alternative parking is available on the roadside on Holly Lane, although space is more limited. Exit the car park and walk down the road before taking the steps on your left to cut out the bend. Carry on along the road until it meets the A610. Turn left and pass under the railway bridge. When you meet the A6 turn left again and carry on along the road and when safe cross before reaching Holly Lane. Take Holly Lane. After crossing the der a e Ha’penny bridge take the turn that R ffer O leads off to the right and into the woods. Carry on along this road for around 400 meters looking out for a sign on the right which indicate the Betty Kenny Trail. Take the footpath and carry on through the old wire works site. As you exit you will see a sign for Shining Cliff Wood ahead.. Head towards this with every purchase of passing through a barrier and take the Millers Complete Dog Food path into the woods. This path will with this coupon take you roughly parallel to the A6 and the River Derwent. After around 400 meters, when you reach a fork in the path keep to the right and follow the path as it goes down hill.

8. After around 800 meters follow the main path, which is marked by white striped posts, as it turns off to the left and uphill. Follow the path uphill, with the pine trees on your right. 9. As you get to the top of the hill keep your eyes peeled for a path marked by white striped posts that leads right uphill into the pine trees. Follow this path and it will wind up to the remains of the Betty Kenny Tree. 10. Follow the path marked by the white posts as it leads back down hill as it joins up with the path you left to visit the tree. This path takes you to the outskirts of the wood, which is marked by a stone wall. 11. Follow the path, over the boardwalks and continue as it climbs up through the woods. Y0u will near the edge of an old stone quarry so take care, especially if your dog is ‘enthusiastic’ as mine. 12. Carry on along the path marked by the white posts as it leads you up to the top of a hill where you have great views across the Derwent Valley. Continue on along the path downhill through the woods. 13. As the path joins a wider path and you see a sign for the YHA keep to the left. You will come to a T-junction, again turn left going downhill. This will bring you pack to where you entered the wood near the wire works, retrace the route back from here. This walk is for illustrative purposes only. It’s that time of year again when we start to hear the gardening groan - not “What has happened to my garden over winter?” but rather “I was just tidying up a bit..” and the enthusiasm of getting hands covered in soil again - means overdoing it and becoming injured. We all understand how easy it is to get carried away; “I’ll just do this” or “finish that...” and suddenly an afternoon has slipped away. But before you turn your couch potato state into an edible one consider that at this time of year gardening injuries exceed football or rugby injuries!

17 Sporting Futures and US Girls are bringing the Women and Girls of Derbyshire a multi action packed event free of charge on March 9th @ Tupton Hall. The event is to mark the end of the US Girls funding, which has offered activities specifically for Women and Girls and has had a huge impact on the number of Women and Girls taking part in Sport and Physical Activity all over the Country. The day is also linked into International Womens Day supported by Oxfam and Women and Girls are being asked to drop off any unwanted BRAS at the event. These BRAS will be sent to Women and Girls in Third World Countries. Bras are the one of the most expensive things to buy in these countries and as a result many Women and Girls go without. Are you ready for RTI? A major change in payroll is set to hit UK businesses in 2013. Real Time Information (RTI) represents the biggest change in payroll since the introduction of Pay As You Earn (PAYE) in 1944.
What is RTI? RTI is a new system for reporting payroll details to HMRC. As an employer you will be responsible for all tax deductions and calculations but instead of submitting this data once a year to HMRC, you will be required to send information to HMRC about employees’ pay and deductions before or at the same time as they are paid, whether weekly, fortnightly or monthly. HMRC have now confirmed that all companies with up to 5,000 employees will need to start making RTI submissions from April 2013, with larger employers needing to comply by October 2013.
What to report
RTI reports will need to be made where at least one employee is paid above the lower earnings limit (LEL), (£109 per week for 2013/14). For wages between the LEL and the Primary threshold (£149 per week for 2013/14) the worker is given NI credits although they don't actually pay any NI, so the level of their wages needs to be reported. A major difference between RTI and the current system, is that once the employer is reporting under RTI, reports must be made for each employee even if no tax or NI are deducted for a particular period. This is because RTI has two functions; - to report deductions to HMRC and to report net pay for each worker to the Department of Work and Pensions (DWP) to allow the DWP to calculate top-up benefits such as Tax Credits and the new Universal Credit. The wages for employees aged under 16 are not required to be included in the RTI report, unless those wages are so high that the worker will be subject to income tax. Workers aged under 16 do not pay NICs, and are not eligible to claim Tax Credits.

This Jiu-Jitsu club was founded in 1991 in the Chesterfield area by John Rake and he still runs clubs in Chesterfield, Derby, Mansfield and now Alfreton. Jiu-Jitsu is a fantastic self-defence martial art for kids of all ages, whether you want to learn self-defence, improve your fitness or simply meet like minded people, this is the club for you. The classes are mixed but John and Darren make time for each individual and split the class into adults and kids, as you will learn different combative skills as an adult. Gardeners Calendar - February Assuming you can tear yourself away from the plant catalogues which keep flying through the letterbox, there’s surprisingly lots to do this month. Snowdrops are just about up and flowering. But to give an even bigger display next year, lift and divide once the flowers have finished. Bluebell and dog’s tooth violet also respond well to being moved in leaf. Buddleia and summer flowering clematis can be pruned. Buddleia to about a foot, clematis to within a couple of buds of old wood. Dahlia tubers and gladioli corms can be coaxed into life. Place both (corms in seed trays) in a light warmish (around 10+C) place to sprout. Potatoes can be chitted in a light cool place, with the end showing most buds uppermost (egg box works well for this). They’ll be ready for planting in March when sprouts are 1” long. Top Tip Deadheading doesn’t just work on summer flowering plants. Keep lopping the tops off winter pansies to produce more blooms.
