Crispy Chilli Beef
I love this meal from the local Chinese takeaway, so I was amazed to see it could be done as a ‘fakeaway’. YUM!
Serves: 4 Ready in: 1hr, 5mins Syns per serving: 1.5
Method:
1. Preheat your oven to 220°C/fan 200°C/gas 7. 2. Beat the egg with a fork, then stir in the cornflour and bicarbonate of soda until combined and season lightly. Toss the beef in the egg, then spread out on a large nonstick baking tray in a single layer and spray with low-calorie cooking spray. Cook for 30-40 minutes, until dark and crispy, turning halfway. Reduce the oven to its lowest setting and leave the beef inside while you make the rest of the dish. 3. Make the sauce by mixing together the brown sauce, soy sauce, vinegar, garlic, ginger, squash,
Worcestershire sauce, tomato purée, chilli flakes and stock cube.
Set aside. 4. Spray a large, non-stick wok or frying pan with low-calorie cooking spray and place over a mediumhigh heat. Add the onions, peppers and carrots, and stir-fry for 7-8 minutes until starting to soften. Add the sauce and corn. Increase the heat and simmer for 5-6 minutes, stirring often, until the sauce is reduced and syrupy, and the vegetables are just soft. 5. Add the beef to the stir-fry with the bean sprouts and bring back to a simmer. Cook the noodles according to the pack instructions, then drain. Divide the noodles and beef mixture between 4 bowls, and scatter over the chilli to serve.
Ingredients:
• 1 medium egg • 2 level tbsp cornflour • 1 level tsp bicarbonate of soda • 500g lean beef frying steak, visible fat removed, cut into thin strips • Low-calorie cooking spray
For The Stir Fry
• 4 level tbsp brown sauce • 3 tbsp dark soy sauce • 2 tbsp rice vinegar • 4 garlic cloves, crushed • 5cm-piece fresh root ginger, peeled and grated • 3 tbsp orange and pineapple no-addedsugar squash diluted with 400ml water • 2 tbsp
Worcestershire sauce • 2 tbsp tomato purée • ½ tsp dried red chilli flakes • 1 beef stock cube, crumbled • 2 onions, thickly sliced • 2 red peppers, deseeded and thickly sliced • 200g carrots, cut into matchsticks • 150g baby sweetcorn, halved lengthways • 50g bean sprouts, rinsed • 250g dried medium egg noodles • Sliced red chilli, to serve

Is it just me, or are we currently living in a society where individuals increasingly refuse to accept responsibility for their own actions? Personal responsibility; accepting our mistakes (and learning from them!) and utilising common sense, seem to be attributes we are losing.
But are these attributes inbuilt or are they learned behaviours that override our basic programming? I was always taught to accept that I would mess up, that we all do, and that it is normal to do so. I was also taught to hold my hands up and admit to my mistakes. Life lessons I passed onto my own children. Looking around, it seems that many people find it easier to pass the buck rather than admit and accept that they are fallible. ‘Blame culture’ has been seen as another import from our US cousins…but is it? Or is the desire to hold someone other than ourselves responsible for our actions simply basic human nature, one that we can (should?) learn to override? Personally, I believe that ‘compensation culture’ (rather than blame) IS a US import…’where there’s blame there’s a claim’ comes to mind, but that we humans as a species have always tried to blame someone, or something else for our own failings. Think about it, in order to survive, our earliest ancestors needed to somehow balance the desire to ‘look after number one’, with the need to ensure the safety of a tribe/family unit. It must have been tempting to shift the blame, if things went badly when looking after number one took priority, to an outside influence or to someone else. “It wasn’t my fault…” Perhaps that’s even how religion came about – if there’s a ‘greater power’ in charge of everything, then nothing is ever going to be our fault. The ‘buck’ can permanently be passed! Back to my initial point though, the whole Covid 19 crisis seems to have highlighted the best AND the worst in modern society. So many people have refused to accept responsibility for keeping themselves (and therefore others) safe and healthy. So many have adopted an ‘I’m alright Jack’ mentality and merrily gone about life however they wanted. At the other end of the scale are those who have become obsessive and are happily reporting on friends and neighbours whilst telling themselves ‘it’s for their own good’. The very worst of us though are the politicians, companies and corporations who are profiting during the crisis by dishing out contracts based solely (or so it would appear) on connections rather than ability. How many of these people will ever admit their incompetence though? None, I would guess, because in their minds they are doing the right thing…for them at least. Let’s all try to override our inbuilt selfish, self-led, programming in 2021 and learn to accept responsibility for our own actions. Let’s teach our children and grandchildren that only by working together, by collaborating, by being compassionate, can we ever hope to rise and find our truest selves.
