We miss entertaining and getting together with our friends, but recently my husband, Troy, and I came up with an idea to show our love with soup. We named it the Amelia Island Soup Exchange, and then twisted the arms of several friends to join in the fun. Here’s how it works: Troy and I made a gallon of Shrimp and Corn Chowder one chilly afternoon. We kept one quart for ourselves and packaged the rest in three quart-size canning jars. We then placed them in gift bags, along with a card and our recipe for the chowder. On the card, we told our friends about our soup exchange idea and suggested they pay it forward by making a pot of their favorite soup and passing it on to some of their friends.

We delivered the soup to our friends, ringing their doorbells and leaving the bags on their front steps. Our plan was a smashing success, as a bowl of piping hot soup is just what we need to warm our bodies and souls, especially during trying times. We’re hoping that we can all be together again soon, attending backyard barbecues and birthday parties, but for now, homemade soup and a handwritten card is a great way to show your love. Th e following are two of our favorite soup recipes.

SHRIMP AND CORN CHOWDER

Ingredients 2 lbs. local shrimp, peeled, deveined, and chopped coarsely (save shells) 2 celery stalks, fi nely sliced 2 carrot, fi nely diced 1 large onions, diced 2 cloves garlic, minced 4 Tbsp. olive oil 2 Tbsp. Old Bay seasoning 2 Tbsp. fl our 4 medium red potatoes, cubed 6 cups corn, fresh or frozen 4 to 5 cups seafood stock 2 cans coconut milk Salt and pepper to taste

Preparation Place seafood stock in a saucepan and add shrimp shells. Simmer for about 10 minutes. Strain stock and set aside, discarding shells. In a large pot, sauté celery, onion, carrot, and garlic until vegetables begin to soften. Sprinkle vegetables with fl our and stir gently until fl our turns golden.

Add 4 cups stock, Old Bay, and potatoes, and cook until potatoes are tender. Add corn and coconut milk and bring back to heat. Add shrimp and cook until shrimp turn pink, about 3-4 minutes. If soup seems too thick, add more stock as needed, and add salt and pepper to taste. Garnish with cilantro and add a squeeze of lime and hot sauce if desired. Makes about 8-9 servings.

FIRE ROASTED TOMATO SOUP

Ingredients 6 Tbsp. olive oil 6 cloves garlic, fi nely minced 3 medium onions, chopped 1 Tbsp. dried basil or Italian seasoning 3 cups veggie broth 3 14.5 oz. can fi re roasted diced tomatoes 3 cups coconut milk or other non-dairy milk Salt and pepper to taste

Preparation Saute garlic, onion, and dried basil or Italian seasoning in olive oil for about 3-minutes. Add veggie broth and tomatoes, and bring to a simmer. Stir, taste, and add salt and pepper as needed. Add coconut milk or your favorite non-dairy milk, and heat until piping hot, but not boiling. (You may use an immersion blender if you like your soup smooth, like a bisque.) Serve with croutons or crackers. Makes about 8 servings.
