atmosphere.

Shopping that you can feel good about! What could be better than that? When we shop right in our own area, we can indeed feel good about supporting our local economy. When we support our local businesses, we are also supporting our neighbors who are the merchants and their employees. Those same small businesses then pour their earnings back into our own community, rather than sending the profits off to a distant corporate headquarters. In addition, shopping locally also creates its own momentum, as more and more businesses can flourish and help to create a more vibrant community atmosphere. That’s why each November we present the Amelia Islander Holiday Gift Guide, Amelia Island’s own catalogue of gift items available locally. The more you browse our local shops, the more you find, as local merchants search far and wide to bring us the best and most unique gift ideas of the season. So before you head out to do your shopping, we hope you’ll enjoy a cup of coffee or tea and flip through our pages for some preliminary ideas. Like us, you might just decide to skip the road trip to the big-city shopping mall, with its parking lot misery, frenetic pace, and sensory overload. Not to mention the money you’ll save in gas and regrettable fast-food meals—as well as your valuable time. In recent years, we’ve been trying to slow down our pace, shopping for just one or two gifts at a time and enjoying the flexibility of shopping locally. That’s something to feel good about. And speaking of something to feel good about, we have the privilege of spotlighting so many admirable charitable organizations in our community. This month, we present an article on the Nassau County Volunteer Center. Many of us know about their annual fund-raiser, the Taste of Amelia—this year, mark your calendars for December 2—but what exactly is their role in the community? Read about this special organization that provides so much support to our local non-profits. Also this month, we have a preview of the fabulous Amelia Island Museum of History Holiday Home Tour in our Island Home column; an article about the growing interest in Peruvian cuisine in our Island Entertaining column; an energetic and dynamic local couple, Stan and Debbie Cottle, in our Fernandina Faces column; and much more. See you around the island!

Over 150 thousand Americans died of lung cancer last year. Recently, we’ve found that people who are at high risk for developing lung cancer can get screenings that will save their lives. If you are at high risk for developing lung cancer, please talk to your physician. The earlier we diagnose cancer, the easier it is to treat and the better chance for a cure.

Teams of four collaborate as a group and compete against other teams to solve the different challenges, then, for their final event, put together a jigsaw puzzle. It’s all about teamwork and fun! Teams can be formed by businesses, not-for-profits, and among families and friends. Cash prizes are awarded to charities chosen by the top three winning teams. Register on-line at www.ameliachallenge.com or contact at Mark Dennis at (904) 583-1887. This year’s title sponsor is again Baptist Medical Center Nassau, and First Coast Community Bank and Florida Public Utilities return as Gold Sponsors. Devastated after suffering at the hands of a con artist, one couple realized their dream beach wedding thanks to the associates at the Residence Inn Amelia Island. Danielle Atkins and Jeseh Smith were finalizing their last-minute wedding details when they realized that they had fallen victim to a scam. After paying someone who claimed to be a legitimate wedding planner to plan their dream event, the couple was left with only broken promises as their wedding day drew near. When they learned about the couple’s dilemma, the Residence Inn on Amelia Island got busy doing what they do best—planning a dream wedding. “They are such a nice couple—and we knew we needed to help them if we could,” explains Director of Sales Dottie Richards. “General Manager Bob Hartman generously approved the use of the Tide’s Terrace reception site— and we even provided the catering and a champagne toast. I’m just so happy that it ended up being the beautiful day they had hoped for!” Danielle and Jeseh had a beautiful seaside wedding at Burney Park and then enjoyed an elegant poolside reception with 70 guests. The champagne toast to the bride and groom included a heartfelt “thank you” to the Residence Inn Amelia Island!

ith its exciting mix of original artwork, Amelia SanJon Gallery has evolved into a dynamic space filled with modern and vintage jewelry, pottery, fabric art, sculpture, photography, fused glass pieces, and more. Owner and artist Sandra BakerHinton approaches her gallery as she does her artwork, allowing it to evolve and grow in new directions. For example, in November of last year Baker-Hinton was approached by the Disney Corporation to take on three commissioned paintings for a new restaurant in Orlando. The catch: she had to complete and deliver all three paintings, to their specifications, within just two weeks. She jumped right in and, after repainting the first one four or five times, she got the idea of what they wanted. “I even went to the final meeting with my box of painting supplies,” explains BakerHinton. “When they said they needed some more blue, because the waitresses outfits were blue, I just said ‘well, you guys go to lunch and, when you come back, it will have more blue!’”

After that, other commissioned pieces started coming in, like one from a client who wanted two watercolor paintings—depicting a sunset and a sunrise on Amelia Island—to be given as a present. Other clients wanted different versions of BakerHinton paintings they had seen, but tailored to their size specifications. The one shown above, called “Marsh Sunset,” was commissioned by a client who wanted a painting of the sunset view from their home as a Christmas present for his wife. “Working with different mediums and styles has left me flexible enough to be able to handle most any situation,” explains Baker-Hinton. “I work on paper or canvas, in realistic or abstract style—I only need the luxury of not having a two-week deadline, and I will create something to make you happy!” Located on the corner of 3rd and Ash Streets in downtown Fernandina Beach, Amelia SanJon Gallery is open seven days a week. asablanca is a unique shop that features fine antiques, selected high-end second-hand furniture, paintings, china, and more. Owner Carolyn Rowe’s mission is to help people create beautiful interior spaces at a reasonable price. She does this by focusing on the “chose trouvée”—a special item discovered in an estate sale or antique market. It might be a buffet, made by talented furniture makers in a time when high quality in both workmanship and materials was more common, or perhaps an early 19th-century painting that would be very expensive if attributed to a particular painter, but because of its ambiguous attribution can be purchased at a great price. “My approach is similar to some of the high-end shops in Avondale—but at a much more accessible price!” explains Carolyn. “By making some creative choices, people can achieve the look they want, while still holding to a budget.” This approach involves working with one’s existing furniture and perhaps finding that one outstanding piece that could transform a room. It might also involve slip-covering existing or second-hand furniture, melding what clients already own with newer pieces. “I am not a decorator,” she says, “but more on the fringe!” Casablanca is located at Rowesville Cottages, at 2188 Sadler Rd. (next to Amelia’s Attic). From 3:00 and 5:00 p.m. from Wednesday to Saturday, you can enjoy “Picasso and Me for Tea,” a complimentary cup of tea in the showroom, where you can view the fabulous paintings and discoveries for yourself. For more information, call (904) 415-1540.

n ancient proverb says: “Choose a job you love, and you will never have to work a day in your life.” This holds true for Lindy Kavanaugh, who has turned her passion for jewelry into a career. While attending Fernandina Beach High School, Lindy crossed paths with a local jeweler whom she credits with showing her the ropes of the jewelry industry. After college, Lindy moved to New York, where she earned the title of Graduate Gemologist from the Gemological Institute of America. After a four-year stint at Tiffany’s, she realized it was time to move back to her hometown, to be near her family and open her very own shop. “Getting to know many of my customers and earning their trust and friendship has been the best part of my job,” says Lindy. “I just love seeing customers around town wearing jewelry from the shop, it makes me proud.” Custom jewelry, as well as distinctive items in every price range, are available at Lindy’s, along with a growing line of jewelry of Lindy’s own designs. In September, Lindy’s celebrated their ten-year anniversary. Lindy’s has created a niche by providing customers with a unique product at a terrific price. “Our customers are often buying gifts for happy occasions, like birthdays and weddings,” says Lindy. “Jewelry is very sentimental, and it is wonderful to be part of that joy.” Lindy’s is located at 202 Centre Street in historic downtown Fernandina Beach. For more information, call (904) 277-4880 or go to www.lindysjewelry.com.

Deb & Stan Cottle BY JAN DAVIS • PHOTO BY KATRIN BELL

S

ipping a cup of coffee at Deb and Stan Cottle’s kitchen table and listening to their life story is very inspiring—and it has nothing to do with the caffeine! This dynamic couple has developed a global business headquartered at that same kitchen table, as well as from their upstairs bonus room, which is filled with a massive array of electronic equipment. The focus of this home-grown enterprise is helping others. Stan is a Fernandina Beach native. He graduated from Fernandina Beach High School and earned a degree in Journalism & Communications from the University of Florida. His early career focused on working for corporate advertisers as a film director at Telemation Productions. He was later transferred to Chicago, where he met Deb, an Illinois native, who was assigned to him as account executive. In less than a year, the couple was married. That was 25 years ago this past October, and they have been working together ever since. Once their son Connor was born—he is now 18 and a senior at FBHS—they were anxious for a change in lifestyle. In 1990, Stan had formed his own marketing communications company, and they decided that they could live anywhere. Stan happily remembered growing up in Fernandina, and Deb thought Amelia was “paradise.” They moved here in 1997. Although Stan’s company is doing well, for about 10 years, he mulled over a new idea: a program to help kids, “my passion project,” as Stan calls it. The project, In Search of Me Café, is an

interactive, self-help life skills program for teens. It’s a website where teens can share ideas on various topics with others from around the world and discuss such topics as “bullying” and “peer pressure.” Teens chat with other teens using the website’s blogs, plus Facebook, Twitter, and YouTube channels. Youth reporters are based here, as well as New Jersey, New York, Belgium, England, Hong Kong, and India, with others being added in Nairobi, Kenya and California. The non-profit company plans to expand its outreach throughout this country, and beyond, by licensing content to other organizations that help build character. A pilot curriculum program, developed in partnership with a school in Hong Kong, is underway at the Miller Boys & Girls Club in Yulee. With the help of the Boys & Girls Clubs of Nassau County Foundation, they have created the first brick-andmortar In Search of Me Café. “Teens mostly listen to each other and often don’t know where to go for help with life skills issues,” explains Stan. “This program can answer some of those needs and help teens help themselves.” And Deb? Although she is helping Stan with In Search of Me Café and the marketing company, she is an inspirational speaker and life skills coach through her own company, World on a String, Inc. She is the co-author of two books, and the producer of the Music & Motivation CD series, as well as a series and a documentary titled, “Women with GUTS!”. This program features an interview with Denise Brown, sister of Nicole Brown Simpson, whose murder became a rallying cry for domestic violence prevention. Stan and Deb are a matched pair. They each are enthusiastic about their separate projects, but show even more passion about supporting each other. How could one not feel invigorated by their positive attitudes and desire to help others? For more information, go to www.WorldOnAString.com and www.InSearchOfMeCafe.com.

Autumn on Amelia With planting season in full swing, fall is a great time to think about some fabulous new plants. BY BETTY MORRELL

I

recently spent three days at the National Growers’ Association Show in Orlando, where I was thrilled to find many new plants, along with some everyday cold-hardy plants for our area. Fall is the best season for planting shrubs and trees. Although spring is also a recommended planting season, both you and your plants will have to work a lot harder in the spring to establish a healthy root system for the upcoming summer. Newly established plants— even the hardy varieties—can have a difficult time thriving in the summer heat and drought and require more attention than usual. Planting in the fall, on the other hand, gives shrubs and trees some time to develop before entering winter dormancy. With the weather is cooler, the sun lower, and the days shorter, fall is the ideal time for planting. The “orchid” camellia was one of my top finds at the show. It has fabulous white and pink blooms in the fall and grows to about five feet wide. This shrub is hardy for our area and grows in full sun to partial shade. Another wonderful plant that blooms in the fall is “inspiration” camellia. Featuring

TIP O F T HE M O N T H For olive tree lovers who are wondering how to brine their olives, here is one old-time recipe for brining: Fill a vat, pot, or bucket with water (depending on the amount of olives) and drop a raw egg in the shell into the water. The egg should sink to the bottom. Start pouring in the salt, until the egg rises to the top. You now have enough salt for brining. dramatic white and magenta flowers, it grows more quickly than the orchid camellia and grows to be a bit larger (about six feet high). A wonderful holly, called “Robin” holly, has beautiful dark red berries in fall and winter. It has a pyramidal shape and rich dark green leaves that turn maroon in spring. It is a holly you will love. Robin holly will grow in full sun to part shade, with moderate to fast growth, and will reach a height of 15 to 20 feet and width of 12 to 15 feet in width. A new pittosporum is called “Mojo.” A hardy evergreen shrub, it

features dense variegated foliage and orange blossom-scented blooms. Perfect for hedges and foundation plantings, it has excellent salt tolerance, which makes Mojo an ideal plant for coastal zones. Reaching three feet in both height and width, it stays relatively compact. For those who crave more change in the fall foliage, there are some wonderful plants for our area that do have color-changing foliage, like “bronze beauty” cleyera, “LeAnn” cleyera, “obsession” nandina, “flirt” nandina, “blush pink” nandina, and, of course, the new Robin holly. Another discovery was an agapanthus that was still in full bloom—in October! It is called “storm cloud” and it has bloomed all spring and well into fall. It is three years old, and this was the first year it had produced blooms all summer. I’ll keep you updated on that one. Check back in future issues for more details about all the plants, flowers, and trees I discovered at this year’s show! As always, you can e-mail your questions to me at bamorrell@aol.com, or go to www.inthegardenwithbetty.com. Until next month, Happy Gardening!

he Holiday Home Tour, sponsored by the Amelia Island Museum of History, provides a dramatic opening salvo to the Christmas season on Amelia Island. Held this year on Friday, December 2 and Saturday, December 3, this marks the fifth year the museum has sponsored the tour, and each year it provides an unparalleled opportunity to step back in time to view houses built over 100 years ago. Although the lifestyle at the turn of the 1900’s was very different, the beauty of the architecture is timeless. The Holiday Home Tour is a rare occasion to visit some of Amelia Island’s most interesting private homes, and

visitors always leave impressed with the way the homeowners manage to preserve the character of such vintage homes, yet make them completely comfortable for 21st-century living. How charming a vintage home can be when it is dressed for Christmas! The Duryee House, owned by Lisa and Howard Smith of Connecticut and featured on last year’s tour, is a perfect example. The Smiths, who come to Fernandina as often as schedules permit, have created an idyllic family home on Broome Street, within walking distance of town. The home has an interesting provenance, built by Major Duryee, a Union officer who had been stationed at Fort Clinch during the Civil

War. He fell in love with the island and built this home as one of the first in the “new” town of Fernandina. The Smiths have Southern roots, and they too fell in love with Amelia Island, purchasing the officer’s home and restoring it as their getaway. The latest addition was a backyard swimming pool for their three children. Last year’s tour was the first to use professional decorators to create a stunning holiday atmosphere. Those same professionals will repeat their efforts this year, including Diane LaPatra of Centre Street Treasures, Brooke Raulerson of Artistic Florist, Ken Prescott of Dottie “B’s”, Bonnie Tennille and Virginia Powell of The Plantation Shop, and, new this year, Dolores Lord and Donna Haddock of Designing Women. The variety of house styles, coupled with the variety of Christmas décor, has made the tour even more interesting. The Plantation Shop was assigned to the Smith home last year. Understated and elegant was the key, and Bonnie Tennille, Virginia Powell, and The Plantation Shop team were the elves who made the home magical. When the Smiths arrived from Connecticut and saw their Christmas transformation, they could not have been more thrilled. Although the tour includes many familiar aspects, such as the carolers, the costumed characters, and the Christmas décor, new ideas have been incorporated this year to keep the event fresh and exciting. One of the new twists is the opportunity to visit with royalty! At a special luncheon staged at the historic Beech Street Grill, Princess Amelia, for whom the island is named, will be the luncheon hostess. Karen Harper, one of the museum’s first-person-presenters, always delights when she is in residence as her majesty. “It will be such a treat to have our very own princess in

attendance,” says Pat Panella, chairman of the luncheon. “The luncheon at Beech Street Grill is an important aspect of our tour. It’s a fabulous restaurant, and the history of the building makes an ideal setting.” But the luncheon offers even more, as Pat has enlisted the help of Iris Jacobsen, local decorator extraordinaire, to stage a display of vintage ladies’ clothing of the period, collected from attics, guest closets, and the museum’s archives. Combining the architecture of Fernandina’s past residents with the creative skills of today’s, this tour is sure to impress— and spread the Christmas spirit. See you on the tour!

Pepper’s MEXICAN GRILL & CANTINA With their fabulous new location on Centre Street, Pepper’s brings great Mexican food and lots of fun to the downtown scene. BY KAREN MILLER • PHOTO BY WILLIAM RASER

P

epper’s Mexican Grill & Cantina offers a wide variety of great Mexican food, with recipes straight from Jelisco in Western Mexico. The restaurant recently moved their business from Sadler Road to downtown Fernandina Beach on Centre Street. With a beautiful patio overlooking Centre Street, along with a full bar, comfortable indoor dining, and a casual chic décor, the ambience is definitely impressive. My partner, Rumsey, and I stopped by Pepper’s on a Sunday afternoon, and the place was hopping! We sat on the patio, a good place to people-watch and to enjoy the cool, autumn breeze. Our server, David, immediately brought us a

basket of homemade tortilla chips, fresh from the fryer, and Pepper’s famous salsa. Pepper’s makes all their sauces and salsas on site, and I appreciate their attention to fresh ingredients. I ordered an alcohol-free frozen Strawberry Daiquiri, which was icy, sweet and loaded with fresh strawberries, almost dessert-like, topped with fresh whipped cream. Rumsey had Pepper’s Margarita de la Casa, which he

claimed was superb, and sampled another, stronger version, a Guadalajara Margarita, that would have knocked my socks off, had I been brave enough to try it. Pepper’s is well-known for their gourmet margaritas, as they serve them any way you might desire: frozen, on ice, or straight up, with various types of tequilas and fruit juices. I noticed that many diners had ordered pitchers of the frozen form. We shared the Stuffed Jalapenos to start, which were deep fried and served with another one of Pepper’s sauces. The peppers had a light cracker coating and filled with gooey cheese, a little spicy, but not over the top, and the sauce was more of a marinara-style. This very tasty appetizer could be shared by three or four people. I had an order of Pepper’s Fish Tacos, served with beans and rice. The fish, grouper, was seasoned and seared, served on two corn tortillas, and topped with lots of salad vegetables, and served with guacamole and a special chipotle sauce that I found to be a smoky, spicy surprise. This is what I like about Pepper’s: their vegetables and sauces are fresh, and compliment the rich and spicy nature of the rest of their dishes. Rumsey had a Trio of Chimichangas, featuring spicy chicken, shrimp, and beef. This dish was quite bountiful, with three giant tortilla wraps that are deep fried. We enjoyed the different fillings, especially the shrimp, which was nicely cooked and seasoned. The chicken had a nice bite to it, and the beef was savory and tender. For dessert, our server highly recommended the Flan, a creamy custard that was beautifully presented, with a dark and rich caramel sauce, whipped cream, and a bit of chocolate sauce. This recipe is Mexico-City style and is baked daily—and you can tell the difference. What a wonderful dessert, probably the best flan I’ve ever had. Pepper’s is a fun and family-friendly restaurant that is open seven days a week, including express lunch. They also host a fun Mariachi Band every Thursday night and offer catering and special events throughout the year.

ARROZ CHAUFA 1 cup rice, pre-cooked 2 or 3 poached shrimp, cooled and chopped 3 oz. roasted pork, fully cooked, cooled and chopped

2 eggs 1 whole Chinese onion, chopped soy sauce sugar

Fire up a wok to high heat and pour enough sesame oil to coat. Add the rice and begin to stir to evenly heat and coat. After a minute or two, add a bit of soy sauce, stirring with a large wooden spoon making sure it evenly spreads. At the same time, make a two-egg omelet (no milk). In a separate pan, heat the 1/4 cup soy sauce and mix in a bit of sugar until you begin to have a syrupy consistency. Add your pork and/or shrimp and stir well until pork and chicken is glazed, then add your egg omelet, breaking up into tiny pieces. Toss mixture into wok with rice to finish. Garnish with fresh chives. Makes one generous serving.

Sharing the Culinary Traditions of Peru BY EDWARD PREBLE • PHOTOS BY MARION DAVIDSON PHOTOGRAPHY

W

ith seven Peruvian fine casual dining restaurants in New York City alone and over 13,000 Peruvian restaurants from coast to coast—including the much-acclaimed new New York City location of La Mar, by renowned Lima-based chef Gaston Acurio—Peruvian food is really making its mark on the American dining scene. Having spent much of my childhood in Peru, I love being a part of this movement and sharing the culinary traditions I love so much. Peruvian food is all about quality and flavor. Starting with a high quality fresh steak, chicken, or fish, everything we do is meant to complement and enhance that great taste, not to mask the flavor potential of the food, creating a savory and aromatic dish. The ingredient list is simple, but the preparation is laborious. Peruvian peppers are perhaps the single main ingredient used to yield great flavor. Aji (A-he) Amarillo (A-ma-re-yo) is a yellow-orange pepper that can offer just a bit of kick, or else be very spicy, depending on how it is prepared. Aji Panca is an almost brick red in color and yields a rich base that is just fabulous with white meats or fish. For people who really love the heat, Aji Rocoto brings a unique flavor and a deep intensity to a dish.

From the Andes to the Atacama Desert, the wide range of topography and climate in Peru makes it fertile ground for agriculture, fishing, and cattle. There is also rich cultural diversity: African, Chinese, Japanese, Spanish, and indigenous cultures have all contributed their knowledge of food cultivation and preparation. When it comes to dining style, sharing many dishes among family and friends is a beloved tradition that demonstrates the influence of Chinese, Japanese, and Catholic cultures. One popular familystyle meal is Peruvian rotisserie chicken—delicious, yet highly affordable and served with a variety of freshly made side dishes. As a child, every Sunday my family would go to El Rancho in Lima, Peru. Still blocks away, you could smell the mouthwatering aroma of the chicken, slow-cooked over a coal fire. At Picante, we are proud to bring this tradition to our area, offering a whole Peruvian rotisserie chicken with two homemade side dishes that starts at just $16—enough to feed a family of four! Arroz Chaufa is a wonderful side dish that reflects the Chinese influence on Peruvian food. If you start with high quality Jasmine rice, already prepared, and pre-roasted pork and poached shrimp, the rest is very easy. Buen Appetito!

Edward Preble and his wife, Paola, are the owners of Picante Grill and Rotisserie, located at 464073 State Road 200, at the corner of A1A and Blackrock Road. 60 AMELIA ISLANDER MAGAZINE • NOVEMBER 2011
