Every season on Amelia Island has its particular joys, but the Christmas season on Amelia Island is a particularly joyful time of year. Why is that? Sometimes the most obvious answers are the most apt. All through the year here on Amelia, family occupies a special place in our lives, which is a sure blessing, and that means—at this most family time of year—our joy in the heart of our families is amplified. Another reason for the special magic of the season here is that people on Amelia Island are very generous with their time, treasure, and energy, and that means—at this time of selfless giving—Amelia Island really shines. And let’s not forget that the foundation of the Christmas season on Amelia is made strong by Amelia Island’s dynamic churches, which form the backbone of our community all year long, and which lead us into ever greater joy this time of year. We have highlighted in past Decembers the tireless generosity of organizations like Joy to the Children, Barnabas, and many others, who bring gifts and food and the spirit of the season to those most in need. We are inspired by their example each year, and we feel fortunate to be able to highlight their wonderful work. Their work reminds us to keep a level head at a time when a frenzy of consumption can overwhelm the true meaning of Christmas. The foundation of a generous heart is a spirit of gratefulness, and we pray that a spirit of humble thankfulness will live in our hearts this time of year. In our cover story this year, Karen Miller discovers that the season’s celebrations occur throughout the month of December. While Christmas is at the heart of December, Amelia Island’s diverse residents find much to celebrate throughout the month. In addition to looking at how some on the island share the Christmas spirit, Karen checks in on some other traditions—some old, some new—that are celebrated in this season, like Hanukkah and the winter solstice. So, however you share the holiday spirit this year, we hope it’s a joyous celebration full of good cheer and cherished traditions. Merry Christmas, Happy Hanukkah, and Happy New Year from our family to yours! See you around the island!

Celebrating the
Holidays
on Amelia
Amelia Island residents celebrate the holidays with cherished traditions both old and new. BY KAREN MILLER
W
hen I first moved to Florida from New England, my teenage daughter was not happy about spending Christmas in the Sunshine State. “It’s not the same without snow!” she whined. “It doesn’t feel like Christmas!” It was a big change for both of us, but I was determined to make it a Christmas to remember. We attended St. Peter’s Episcopal Church’s Christmas pageant on Christmas Eve, then on Christmas Day we headed to the beach, where we made a “snow” man out of sand, decorated with shells for buttons and seaweed for hair. We sipped tropical smoothies and walked on the beach for hours, holding hands. Although it was a different sort of Christmas for us, it turned out to be one of our happiest. How can you not be happy, bathed in the beauty of our island paradise, during one of the most sacred days of the year? But Christmas is not the only holiday celebrated in December, and, with Amelia Islanders’ diverse backgrounds and traditions, you will find joy, good tidings, and festivities everywhere you look. Patty and Terry Spaulding came to Amelia Island quite by accident, on a road trip traveling from Miami to their home in
West Virginia. After some marathon hours of driving, Patty suggested they follow signs to Fernandina Beach, where they hoped to find some fresh local seafood. They ate at the Marina Restaurant that evening and fell in the love with the island, vowing to come back. And they did come back, time and again, until Patty told her husband that they needed to move here permanently. That was twenty years ago, and, since living on the island full-time, their Christmas traditions are all about the island lifestyle. “When we first moved here, we decided to have stuffed flounder for our Christmas Day dinner,” says Patty. “With all the wonderful seafood here, it seemed natural to have fish for Christmas.” Patty’s flounder Christmas dinner started with a microwave recipe, which she adapted for a more elegant main dish. “The family looks forward to this dish every Christmas. They ask why I only make it for Christmas, and I say it’s because that makes it even more special!” The Spauldings spend Christmas Day walking on the beach, no matter what the weather. “It doesn’t matter if it’s cold and windy; we were used to much colder weather in West Virginia. The beach here, that’s our ‘white Christmas!’”

Amelia Islanders Linda Lane and Bill Raser have made a holiday tradition of hosting a “cookie party” nearly every year, beginning in 1999. “Open house parties used to be all the rage, back then,” remembers Linda. “We wanted to hold an open house, too, but do something a little different. That’s how I came up with the idea for the cookie party.” In the Lane/Raser home, Linda makes all the cookies, and Bill makes hot mulled wine. In the many years they have held the cookie party, the couple has hosted well over one hundred guests each year. Linda’s recipes come from all over. Some are family recipes, some from magazines, and others from cookbooks. Linda adds new cookie varieties every year to keep it fresh and interesting. She creates twelve to fifteen varieties, three to six dozen each. If you do the math, it means Linda single-handedly makes up to one thousand cookies for their party. “Right after Thanksgiving, I purchase the ingredients I need to make all the cookies,” says Linda. “It takes a lot of planning. I make cookies nearly every day up until the
party. Some can go into the freezer or in airtight containers. Some, like the “mice” cookies, have to be assembled last minute. Our most popular cookie —and Bill’s favorite—is the fruitcake cookie.” Linda goes on to say that she feels no stress whatsoever in making all the cookies. “I love the process!” The Winter Solstice on December 21 is an event that has been recognized as a special day around the world, nearly since the beginning of recorded time. It marks the longest night and the shortest day of the year, and it is usually seen as signifying the beginning of the rebirth of the natural world. Amelia Island artist Eliza Holliday celebrates the Winter Solstice by building a labyrinth on the beach, a special path and sacred space where she can move into deeper contact with her spiritual dimension. It is a tool for meditation, and Holliday has made them with sand, dirt, and candles, for many years, all over the island. “I heard Lauren Artress speak on NPR about discovering the walking labyrinth, and her research in her book, Walking the Spiritual Path,” says Holliday. “So I built

my first labyrinth at the beach in sand so I could experience what Ms. Artess was talking about. I have built many styles of labyrinths, mainly to celebrate my spiritual family, the turning points of the seasons (solstices and equinoxes), and to celebrate the earth.” Participants are invited to recite a healing prayer while walking the labyrinth. “It’s as healing to build them as it is to walk them,” says Holliday. “I find it enriching every time.” Christmas in Mexico is celebrated during a season that begins in early December and lasts through January 6. During this entire time, one can see nativity scenes, poinsettias (which originated in Mexico) and even Christmas trees gracing Mexican homes. The season begins with celebrations related to the Virgin of Guadalupe, the patroness of Mexico, followed by traditions such as Las Posadas, pastorelas, a Mass and feast on Christmas Eve, the arrival of the Three Wise Men on January 6, and culminating with Candlemas and the presentation of Child Jesus images at churches. Cole-Escutia moved to north Florida from Mexico several years ago, dividing his time between Jacksonville and Amelia Island. He still celebrates many of his family’s Mexican traditions, and, because Arturo loves to cook, many of his Christmas traditions are centered around Christmas Eve dinner. “We celebrate with a very elaborate dinner on Christmas Eve,” says Arturo. “We get together with family all dressed up for dinner on Christmas Eve, and then we also get together for lunch on Christmas Day, but now in a more relaxed setting, and we eat ‘recalentado,’ reheating the leftovers from last night’s dinner.” “So, dinner is elegant, but lunch next day is relaxed, all family children playing with toys that Santa brought them that day. The menu at my family place is always the same: a big roasted turkey, two types of stuffing, one salty made with oysters and another sweet made with dried fruit. We also make cheese and spinach crepes, cooked shrimp, macaroni and ham cold salad,

mashed potatoes, and cranberry sauce,” says Arturo. “And we love our desserts. There are always two kinds of cake, a classic chocolate and a tres leches cake. Amelia Island’s many churches celebrate charitable giving among their many Christmas rituals and traditions. At St. Michael’s Catholic Church, the entire parish takes part in two holiday special projects: children from their religious formation program, coordinated by Lori Kennedy, make handmade Christmas cards for nursing homes and homebound adults. “From kindergarten through eighth grade, our children make one hundred seventy cards,” says Lori. “They are hand-delivered though our Eucharistic ministers.” St. Michael’s also has an “Angel Tree,” coordinated by Maryellen Crocker and Marsha Grubesky. “We receive the names of needy children and adults from nine local agencies,” says Marsha. “We hang angels on Christmas trees in the back of the church, and on each angel is written what the recipient would like for Christmas, along with each person’s size and age. Our parish members take an angel off the tree and shop for that person, then wrap the gift, and return it in time for us to deliver them by Christmas.” This project is the combined effort of St. Michael’s Catholic Church and St. Francis of Assisi Mission Church in Yulee. The endeavor began over ten years ago, and today it provides gifts for five hundred local residents, who otherwise might not receive anything for Christmas. (For more information about getting involved with St. Michael’s Angel Tree program, call Maryellen Crocker at (412) 977-0683.) solar, Hanukkah begins on a different day each year. This year, the holiday begins at sunset on December 16 and ends at sunset on December 24. On Amelia Island, the Jewish community gathers at a private home sometime during the eight-day festival to light their menorahs and feast on traditional Jewish dishes. Debbie and Ron Price are the “go-to” people for Jewish information, and they are eager to answer any questions about their faith and culture. “Usually we have about 50 people attend our Hanukkah party,” says Debbie. “Everyone brings a dish to share, either an appetizer or entrée or dessert. Most of us have menorahs that are old, maybe handed down from our grandparents, or maybe one we received as a wedding gift. This makes our party very special. We light our individual menorahs together.” Debbie adds that many Jewish people try to do volunteering or community service during the holiday, as a means of keeping
other people in their thoughts. For more information about the Hanukkah party and the other Jewish holidays, or to receive the group’s newsletter, contact Debbie at (203) 313-3925 or email her at deb203@aol.com. Amelia Island residents celebrate the season in so many ways. Some spend Christmas volunteering for charities like Joy to the Children. Others spend the day on the water, fishing and boating. Others sing in the church choir. Many spend Christmas working at our fine resorts, our community hospital, and our local grocery stores. And, no matter how busy our holidays are, we always find time for our families and friends. It is a joyous season, a time to reflect on everything that is good in the world, and to appreciate our many blessings.

The 8th Annual Benefit Gala for the Boys & Girls Clubs of Nassau County will be held at The Ritz-Carlton, Amelia Island on Saturday, January 17. The evening will feature Crescendo Amelia, an outstanding 21-piece band playing music that spans the decades from the 1920s to today. This event has become a highlight on the Amelia Island social calendar and reservations are at capacity. However, opportunities to attend the cocktail reception, dinner, and silent auction sometimes open up at the last minute, so call (904) 261-8666 or email info@bgcnassau.org to be placed on a waiting list for tickets. If you can’t attend the gala, you can still participate in the silent auction from home. At midnight on January 6, bidding on auction items will open and may be accessed at either https://www. qtego.net/qlink/bgcnassau or from the Clubs’ website at www.bgcnassau.org. The silent auction has a great variety of highly-attractive auction items, including local adventures, vacations at renowned resorts, fine wining and dining, works of art, and much more. All proceeds from the auction and benefit gala support the operations of the two Boys & Girls Clubs in Nassauville and Fernandina Beach.
AMELIA ISLAND CHAMBER MUSIC FESTIVAL WINTER SEASON Rachel Barton Pine opened the Amelia Island Chamber Music Festival’s 20142015 season on November 7 with a program of Bach and Paganini, with Amelia residents turning out in record numbers. Upcoming concerts include Anne Akiko Meyers on January 31, the Kruger Brothers on February 24, Joshua Bell on March 1, The Dover Quartet on May 23, and the Eroica Trio on May 31. he Blue Door Artists are a unique collective of local, contemporary artists located in historic downtown Fernandina Beach. Unlike traditional galleries in the area, the Blue Door Artists are working studio artists who rent work space and actively create art at the Blue Door. They pride themselves on featuring some of the island’s finest selection of original art in a variety of media and genres to suit the taste and budget of a wide variety of collectors, who come from all over the world to seek out their gallery. The eight artists who are featured at the gallery include Sharon Haffey, Sharon Badenoch, Suzanne Batchelor, Theresa Daily, Liz Dion, Lynette Holmes, Casey Matthews, and Georganna Mullis. The group established themselves in 2005, and, in 2007, the artists opened all their studios on a full-time basis. They are unique in that they are not in business with each other, but instead pool their resources to run the studios and gallery. The public is welcome to visit the gallery and witness many of the artists going through the creative process, and December is a wonderful time to visit, as
most of the artists have produced special items for gift-giving. Some of those include holiday greeting cards, smaller paintings, bags, scarves, jewelry, and more. Visitors to the gallery will get a preview of the artwork when walking up the stairs to the gallery, as each artist has painted a stair in their own particular style. Once a month, the Blue Door Artists are open until 8 p.m. for Amelia Island’s festive Second Saturday Artrageous Artwalk. In addition to wine and hors d’oeuvres, visitors can enjoy speaking to the members of the collective, the talented artists who work with various media, including oil, acrylics, and watercolors, plus pottery, glass jewelry, and even textiles. The Blue Door Artists are a walkup gallery located on Centre Street between Amelia Island Coffee and Go Fish. Look for the crazy, colorful stairs. They are open Monday through Saturday from 11 a.m. to 5 p.m. For more information, call (904) 491-7733. You may also visit the Blue Door website at www.bluedoorartists.com and click on each individual artist to view their own personal web sites.

hen Linda White and Nancy McGhin first met, they instantly formed a great friendship. They were introduced to each other while working at a spa. Together, the women decided to open their own spa and, four-and-a-half years later, Park Avenue Natural Day Spa is one of Amelia Island’s finest. The services they offer are unique, offered in a professional, serene, and inviting setting. “Our mission statement is all about wellness,” says Nancy. “We believe in the connection between beauty, health, and lifelong wellness from the inside out.” Clients can enjoy the following services at Park Avenue Natural Day Spa, provided by one of their professional members: a facial with Barbe Jordan, massages with Nancy McGhin or Jonathan Felsen, and a manicure or pedicure with Linda White. Linda takes particular care and pride in her distinctive sanitation practices and methods, and she offers a variety of quality product lines when choosing a polish or hybrid gel. One other unique service available at the spa is colon hydrotherapy, or “colonics,” which is offered by Nancy. Each of these services is available in a private area in the spa. Visit their web site at www.parkavenuenaturaldayspa. com to view an informative video on colonics. Review other customized services, like the new facial treatment using the FDAapproved micro-current system. Mention this article and receive a complimentary 30 minute demo on this facial treatment. Services at Park Avenue Natural Day Spa are by appointment only. Appointments can be made by calling (904) 310-6788.
hen Dr. Gerald Koss decided to purchase Dr. Jay Crump’s optometry business, he was all about keeping it local. From his employees and labs to his charitable giving, Dr. Koss does all his business with community in mind. “We are completely focused on customer service and quality care,” says Dr. Koss. “Everything we do at Amelia Eye is for our patients and our community.” Dr. Koss knew at a young age that he wanted to be an optometrist. “I started wearing glasses when I was nine years old. I was fascinated with the process of the eye exam,” remembers Dr. Koss. Since July, Dr. Koss has brought new optical technology to Fernandina Beach, including an O.C.T., which is a machine that allows observation of all ten layers of the retina for better diagnosis and management of retinal disorders and glaucoma. It is similar to an M.R.I. for the eye. As a licensed optometrist, Dr. Koss provides exams, diagnoses, and treatments of all disorders that affect the eye or vision. Dr. Koss was also invited to do a residency in ocular disease at Omni Eye Services of Atlanta, which focused his training on glaucoma and dry eye syndrome. With this background, he is able to recognize and manage a range of health issues, such as glaucoma, macular degeneration, dry eye, cataracts, diabetes, and hypertension. For more information or to make an appointment for an eye exam, call (904) 321-1333 or visit Amelia Eye Associates at 1411 South 14th Street, or visit their website at www.ameliaeye.com.

running with the reindeer With a Christmas costume contest, homemade cookies, and a reindeer medal at the finish, the annual Reindeer Run is an Amelia Island favorite. BY JULIE SIMMONS • PHOTOS COURTESY OF AMELIA ISLAND RUNNERS

eindeer mile markers, carolers serenading the course, a runners’ Christmas costume contest, homemade cookies, a reindeer medal at the finish line, and the post-race chocolate milk—what’s not to love about the Reindeer Run? As a twotime, going on three-time participant, my favorite part of the Reindeer Run is that it’s so much fun, all the participants feel like kids on Christmas morning! If you ask race founders and directors, Pattee Boler and Susie DeMille, they’d scream, “Mission accomplished!” Amelia Island has grown to love the Reindeer Run as much as the duo enjoys hosting it each year. “I love the chance to show off where I live and give people the experience of running on a beautiful, unspoiled island,” smiles Pattee. And that was the inspiration that brought this 13.1 mile race, which encompasses the north end of Amelia Island, Fort Clinch, Old Town, and Main Beach, to Amelia Island four years ago. “Obviously, I am into running, and when I moved here, I was surprised there was no half-marathon,” says Pattee. For
those who know her, you understand that she finds possibilities where others see impossibilities! She quickly rallied a group of fellow runners to the cause, including Susie DeMille, Liz Kawecki, and Ed Hardy, then president of Amelia Island Runners. The group learned that executing a race is arguably more difficult than running in it, thanks to insurance requirements, permits, and expenses. That is when the idea to partner with Amelia Island Runners emerged, and the plan was approved in 2011. This year’s event is December 7, and it includes a half-marathon, as well as 5K, one-mile, and halfmile and 100-yard-dash runs for kids. Amelia Island boasts many running events, but this race is unique because of its development by local runners wanting to give back to Amelia Island. “The best part of this event,” stresses Susie, “is that it’s not about us; instead, it’s a great opportunity to support local charities and our community.” And that’s exactly what this event does: reach continued on page 39.

Reindeer from page 27. the community at large. The race, now in its fourth year, has benefited Healthy Start, Nassau Humane Society, Pirate Playground, and, this year, Girl Power 2 Cure! Additionally, the race supports Soles4Souls and Toys for Tots Foundation, as runners donate old running shoes and toys on race day. The community also steps up behind the energy of the race directors and gets involved. Races need lots of volunteers to man water stations, direct runners, and assist in setup and breakdown. McArthur Family YMCA, Y Yoga, a huge group of Little Women from Fernandina Beach High School, as well as the National Honor Society, are just a few of the group who help with these tasks. Kids are a big part of the Reindeer Run. “We are committed to the children,” echoes Susie. Youth volunteers are awarded discounted entry in thanks for their service and to encourage their participation. There are three short-distance kids’ runs to make sure children of all ages can participate. The young runners love it when Santa joins them on the course, and the candy cane at the finish line isn’t too shabby either. This year, the winner of the one- and half-mile races will receive a Santa Sock Monkey. In the adjacent Kid Zone, there is an array of activities, including bounce houses. Students from Nassau County are also invited each year to submit artwork to a contest in which the winner’s art is used on the 5K race t-shirt. The half-marathoners receive a technical shirt with a unique reindeer designed by local artist Alan Robertson. And so, my friends, lace up your sneakers and join me this year. For registration and other information, visit ameliarunners.com or active.com. Or, if you want to train for next year, don’t miss the Christmas in July special on your 2015 registration. For a sneak peek, think pink in 2015! And thanks to the race organizers and all the volunteers who make the Reindeer Run possible; it’s a wonderful new Christmas tradition for the whole community!

a brilliant berberis The new “Orange Rocket” Berberis is a vibrant and colorful deciduous shrub, which will brighten your landscape in spring and fall. BY BETTY MORRELL
‘T
is the season, garden lovers! Christmas is here again, to the delight of young and old alike. From year to year, times change and traditions change, but the love of family at Christmastime will always remain. As we ponder the wonders of the past year and begin to dream of what the coming year will bring, let’s consider some new plants and some old holiday favorites. A new plant for 2015 is the “Orange Rocket” Berberis (Berberis thunbergii). This new plant starts with vibrant coral and orange new foliage in spring, changes to mid-green during the summer, and then erupts into a breathtaking ruby-red in autumn. Orange Rocket is an awardwinning, compact, upright, and vigorous shrub, which can reach over four feet tall and a foot-and-a-half wide. Use this shrub to brighten your landscape in mass plantings, as a specimen plant, a hedge, for container planting, or in woodland gardens. Tiny, bright yellow, bell-shaped flowers bloom in mid-spring. This plant will grow in partial to full sun. Plant to same depth as the crown in the pot,
TIP O F T HE M O N T H It’s time to check on your Agapanthus. Clean up the tired leaves and fertilize them with milorganite and epsom salts to give them a jump on next season. A wonderful, old standby, milorganite “greens up” and strengthens the root systems of plants.
and water well. This is a deciduous plant and has thorns, so protect your hands if pruning. You only need to prune to shape in autumn. This is an easy-care plant! Another new release is “Everillo” Carex (Carex oshimensis), an ever-color plant. Everillo is a sedge plant (grass) that makes a dramatic statement to brighten up shady spots or add a pop of color to a mixed container. This easy-care grass can be used in ground covers, borders, garden beds, path liners, or in containers. Everillo features bright, colorful foliage all year, and it can be used anywhere you want color, even on slopes. It grows in full sun to partial shade. Everillo grows twelve to eighteen inches in height and width, with slow-to-moderate growth. It should
41 AMELIA ISLANDER MAGAZINE • DECEMBER 2014
be fertilized in early spring. No pruning is needed for this handsome grass. Everyone loves butterflies, and we are always looking for new ways to attract them. There is a new Buddleia for 2015 called “Ultra Violet” (Buddleia davidii ultra violet). Because this brandnew release is so new, I don’t have any more information on it right now, except to say that the color is magnificent! I will follow up with this one when the material becomes available. Poinsettias, Christmas cactus, greens, and white petunias always add welcome color to the holiday season. Don’t forget to keep your fresh Christmas tree well-watered until you take it indoors, and then keep the well filled so the needles won’t rain down before Christmas. If your Christmas plants are outside, remember to protect them from frost. They should be moved to a sheltered location, or you can cover them. Be sure to uncover during the day. Happy Holidays, Merry Christmas, and a Blessed New Year! As always, please email me at bamorrell@aol.com with any questions. And Happy Gardening!

ike Amelia Island’s annual Eight Flags Shrimp Festival, the Amelia Island Museum of History’s Holiday Home Tour is a much-anticipated annual event. Each year on the first weekend in December, several homes in the Historic District, all dressed up for Christmas, open their doors for the tour, which is the major fundraiser for the island’s indispensable museum. The tour kicksoff the holiday season and provides a wonderful window into the island’s amazing history. One of the homes featured on last year’s tour is affectionately known as “The Lucy Cottage.” This charming home, circa 1882, is one of three www.AmeliaIslander.com

on Seventh Street that is connected to the Thompson family. The home was built for the sister of William Nailer Thompson, the Florida senator and railroad man whose house is next door. The house, designed by builder John Hedges, is noteworthy for its barge board siding, false dormers, and lancet windows. The two-story frame vernacular is Gothic Revival in detail, with a steeply pitched roof and pointed arches. It remained in the family through a series of owners named Lucy, the last of whom, Lucy Nolan, died in 1999. Deborah and Paul Watford bought the house in February 2000. It has been a labor of love for the new owners, who

have done much of the restoration work in the house themselves. The Watford’s found a home in which everything was original, including all the floors, windows, fireplaces, and light fixtures. The major remodeling occurred between the summer of 2000 and the spring of the following year. An old porch at the back of the house was removed and the building squared off to create a downstairs master suite. The kitchen was gutted and remodeled, and a deck was added on the back of the house, which is now screened and enclosed. Deborah has lovingly decorated each room with family treasures or items she has found that fit the cozy rooms of the cottage.

La Mancha SEAFOOD AND TAPAS
Serving beautifully prepared Spanish, Portuguese, and Brazilian cuisine, La Mancha Seafood and Tapas offers fresh seafood and world-class wines. BY KAREN MILLER • PHOTO BY WILLIAM RASER
W
hen my friend, Cindy, came for a visit from Jacksonville, she was eager to try La Mancha Seafood and Tapas, which features Spanish, Portuguese, and Brazilian food, since she had heard some great things about the restaurant. Manager Netto and his friendly staff were there to greet us at the door, and they had planned a fabulous feast for us. We started our meal with a glass of Mont Marcal, a sparkling wine, or “cava,” from Spain. What a treat to sip those bubbles while enjoying La Mancha’s homemade bread and dipping oil!
Our server, Andrew, brought us an appetizer to share, Gambas Carmen Miranda, fresh local shrimp sautéed with fresh pineapple in a creamy coconut honey mustard curry sauce.
The shrimp were sweet and tender, and the sauce was rich and loaded with curry, mango, and pineapple. The dish was served in a hollowed out pineapple, a beautiful presentation. We also shared Ensalada Ciudad Real, two fried goat cheese medallions served over mixed greens, with caramelized onions, and fried beet chips, drizzled with honey mustard dressing. Andrew brought us each a glass of Vivanco White Rioja, a very light dry wine, which paired very well with our salad course. For our main courses, another server, Edwin, brought us Grouper Mondragon, fresh grouper fillet topped with a creamy roasted poblano pepper sauce, served with two panko-encrusted sea scallops, and Espada de la Reina, herb-encrusted jumbo shrimp and large sea scallops skewered, and char-grilled on an open flame. Espada is Spanish for “sword,” and the presentation was quite impressive, with the sword dangling from a large hook. Our server removed the ingredients for us and placed them on our plates to share. I love grilled seafood, and this dish was probably my most favorite of the evening. But the grouper was a delight, as well. It was nicely cooked, with the pepper sauce making it a little spicy while the creamy sauce kept the heat under control. The scallops were crispy and delicate. La Mancha’s side dishes were wonderful. They serve a homemade potato salad that tastes better than any I have ever made, and they served a mélange of summer squash, red cabbage, and snow peas that were buttery and delicious. Andrew also brought us each a glass of Periquita Reserva Red Wine that was a pleasant surprise. I often go automatically with white wine when I enjoy seafood, but this wine—a medium-bodied Portuguese wine—was perfect, especially with the grouper. Netto suggested we sample two desserts, Tres Leches Cake (made with three milks) and Caramel Flan, both paired with a tawny port. What a treat they were! Heady with wine and a fabulous meal, we settled down to talk to Netto a little more about the restaurant. They have been open for about a year and a half, to rave reviews from their customers. Located very close to the beach and hotels on Sadler Road, it has been a paradise for visitors who are looking for an upscale dining experience in that area. La Mancha has live Flamenco music on Sunday evenings, a special room for private parties, and an outside patio. They also offer private catering and special platters, and mounds of paella for parties. For more information, call (904) 686-8785 or visit www.lamancharestaurant.com.

A Traditional Christmas Pudding STORY AND PHOTO BY KAREN MILLER
I
spent some time last summer with a new English friend named Rose Skelton. Not only did she train me in all ways English, like how to make a proper pot of tea, but she also cooked me a traditional cottage pie and introduced me to a British radio soap opera called “The Archers,” which we listened to every day while we were together. And when Rose talked about her traditional Christmas pudding, I knew I would have to put it on my own holiday menu this year. Oddly enough, I discovered that my sister, Laurie, has been making Christmas pudding for years, and I didn’t even know it! Her pudding is an Americanized version, however, using butter in place of the suet, and it’s not quite as complicated as Rose’s traditional pudding. Laurie’s recipe came from her husband’s family and she likes to serve it with hard sauce. To make things simpler,
she uses the microwave to heat up the individual plates of pudding and sauce right before serving. But, for Rose, it’s all about keeping up with tradition. She even puts an English £2 coin in the pudding before baking. The recipient who gets the coin will be blessed with good luck. And everyone in the family, plus friends, must stir the pudding and make a wish before she sets it in the steamer. “On Christmas Eve, I was up all night steaming the pudding; I had to set my alarm often and go check on the water,” Rose laughs. “When I served it the next day, my friend, Charles, found the money. Luckily, no one broke a tooth!” The following recipe is my sister’s Americanized Christmas pudding. Rose’s traditional English Christmas pudding recipe is available on the Islander website. Which one will you make this year?

Preparation With a large spoon, blend together the first three ingredients. When well mixed, add the carrots, raisins, and currants. Stir into the mixture the flour with the baking powder and salt. Put the one tbsp. of warm water in a cup and add the 1/2 tsp. baking soda. Stir that into the flour and carrot mixture. Add the spices and stir until all the ingredients blend together. Place pudding into greased mold, spreading it to corners. Seal. Stand up in enough water to reach just under the cover and steam for 1.5 hours. Remove the pudding from the water and cool. Bake 10 minutes at 350 degrees. Remove from the mold and place on a platter. Decorate with sprigs of holly and serve with Hard Sauce. HARD SAUCE Ingredients 1/2 cup butter or margarine 1 cup brown sugar 4 tbsp. cream 1/2 tsp. lemon juice Chopped nutmeats (optional) Preparation Cream together butter and sugar. Add cream, lemon, and nuts. Serve with Christmas pudding.

It means 9,042 babies were born here. It means 51,700 community members received hospital care. It means 64,792 had surgery. And it means 399,572 patients were treated for emergencies. But more than that, it means you count on us to provide you with exceptional care, our donors are grateful enough to contribute, and our employees are dedicated enough to provide the healing touch you really need. It means we are changing health care for good in Nassau County, and it means that the tradition of heartfelt care will continue. Happy 20th Anniversary Baptist Medical Center Nassau.
