Pistachio-Inspired Recipes

Throughout the month of November, APG held a series of virtual harvest tours that took participants from the pistachio orchards of California’s San Joaquin Valley into the kitchens of some of California’s most respected chefs. Chefs Wolfgang Puck, Nancy Silverton, Gerald Hirigoyen and Martin Yan guided food writers and industry influencers in the U.S., France, Germany, Italy, Spain, China, South Korea and India through live, interactive cooking demonstrations via Zoom. The following pages are filled with their amazing dishes created with America’s beautiful green nut.

CHEF WOLFGANG PUCK

About Wolfgang Puck Born in Austria Wolfgang Puck began cooking alongside his mother, who was a chef. Driven and inquisitive, he started his formal training when he was 14 years old. As a young chef he worked in some of France’s greatest restaurants. At the age of 24, Wolfgang took the advice of a friend and left Europe for the United States. His first job was at the restaurant La Tour in Indianapolis from 1973-75. From there he traveled to California, where he became the chef for Ma Maison in West Holiday, where he flourished. After leaving Ma Maison, in 1982, Wolfgang opened his first flagship restaurant, Spago. Located in West Hollywood on the Sunset Strip, Spago was an instant success and culinary phenomenon. During those 18 years, he earned many accolades including winning the prestigious James Beard Foundation Award for Outstanding Chef of the Year in 1991 and 1998, and the James Beard Foundation Award for Restaurant of the Year in 1994. Wolfgang is the only chef to have won the Outstanding Chef of the Year Award multiple times.

NANCY SILVERTON

About Chef Nancy Silverton Nancy Silverton is an American chef, baker, author and restarauteur, co-owner of Osteria Mozza and Pizzeria Mozza in Los Angeles, Newport Beach and Singapore, as well as Mozza2Go and chi SPACCA in Los Angeles. Silverton also founded the world-renowned La Brea Bakery as well as Campanile Restaurant. Early in her career, Nancy was named Food and Wine magazine’s “Best New Chef.” In 2014, she received the highest honor given by the James Beard Foundation for “Outstanding Chef.” That year, she was listed as one of the “Most Innovative Women in Food and Drink” by both Fortune and Food and Wine magazines.

CHEF GERALD HIRIGOYEN

About Chef Gerald Hirigoyen Gerald Hirigoyen, who grew up in the Basque region of France and was surrounded by a cooking culture, embarked on his culinary journey at an early age. After having developed his skills in his hometown of Biarritz, Gerald moved to Paris to start his patisserie apprenticeships at the age of thirteen. Thirty years later he moved to the San Francisco Bay Area, where he worked at several restaurants and cultivated what would become his signature: incorporating fresh ingredients into simple yet scrumptious dishes that echo the local spirit as well as that of his homeland.

About Chef Martin Yan Spanning over four decades, celebrity Chef Martin Yan has traveled around the world, sharing the best of Chinese and American culture, food, and personal enrichment with multiple generations of audiences. His grand vision is shaped by more than 3,500 culinary and travel TV shows, 32 cookbooks, and several restaurants in North America and Asia, which include M.Y. China, a highly rated culinary hot spot in San Francisco. Today, Chef Yan is one of the most recognizable Chinese American icons on mass media. He is a tireless promoter of many social causes and cross-cultural exchanges between Asia and North America. For his efforts, Chef Yan has been awarded multiple James Beard Awards, and has been named culinary ambassador for the cities of Chengdu, Guangzhou, and Shenzhen, China.
