1 CHILLI (TO TASTE) 2 TBS MIRIN

2 TBS SOY SAUCE

METHOD: Take your marinated, boiled and cooled octopus hands (see previous video) and slice off each of the tentacles. Place tentacles onto a hibachi grill or barbecue plate on a high heat. While the octopus is grilling, finely chop your onion and chilli. Using a peeler, slice your cucumber longways into ribbons. Combine your ribboned cucumber, sprigs of dill, onion and chilli into a bowl. Mix through the soy sauce and mirin and let the salad sit and pickle for a few minutes while the octopus grills. Once the octopus is cooked, drain your pickled cucumber salad and place onto your plate. Top with a few picked coriander leaves, sprinkling a few more leaves around the plate to garnish. Once the octopus has caramelised around the edges, it is ready to serve. Add atop your pickled cucumber salad, garnish with chilli oil, chopped scallions and roasted sesame seeds. Enjoy!
