SUMMARY: I call this “better write in down soup” because when my husband tasted it, he said “did you write it down”. So here you have it, my “thrown together” soup that turned out to be, as my husband says “the best soup he ever had. If you like soups with meat but want to eat vegetarian, then this is the soup for you. It’s truly a meal in a bowl and soooo satisfying. Don’t worry about the fat, it’s spread out over 6-8 servings..
Gets even better with age. (2) Sauté the following in a large saucepan: 1 Teaspoon Olive Oil 2 Stalks Celery – diced 1/2 Large Yellow Onion – diced 2 Large Cloves Garlic – diced 1 Red Bell Pepper - diced
(3) After the above veges are softened (but not mushy) add the following: 24 oz. of canned crushed tomato (any brand) 1 Can Corn (any brand) drain off the water 1 box of Creamed Pearl Onions (Birdseye) 6 cups water 1/4 cup Tamari

1 box of Creamed Pearl Onions 6 cups water 1/4 cup Tamari 1 Tablespoon dried oregano
Add the chopped veggie burgers you cooked earlier (see step 1).
Salt/Pepper/to taste.
Simmer all for at least 30 minutes and up to a few hours on low.
Feel free to use less garlic. We just love it so we add a lot.
Serve topped with grated cheese or other garnishes of your choice and some wonderful crusty bread.
Use any brand of ingredient you like. I simply used what I had on hand.
