WE share PORTUGAL Portugal is a country that prides itself on its history of discovery, their navigator heroes, immortalized by the ''new worlds that gave to the world''. A unique country that invites to feel the tradition, history, culture, landscape, nature, coast, heritage, cuisine and quality wines from Portugal. Stimuli that console senses and spirit, providing unique emotions. From Algarve beaches to the breathtaking mountains of the north, Portugal is a land of contrasts. In between lie verdant floodplains, rolling plains and cork forests, wetland reserves‌ The east is dry and continental, the west milder, ocean-influenced, greener, especially the lush north west. Today, the country is linked and united as never before by fine new roads – just one sign of the prosperity that has spread across Portugal from the late '80s onwards. But tradition still lies at Portugal's heart. Families spend time together, eat long meals together. Friends enjoy festivals, dancing, fado, cafÊ culture and eating out. * 6

WINES OF PORTUGAL Portugal has a rich wine heritage. A Portuguese wine is easily recognised by connoisseurs and wine lovers due to its distinct taste and aroma from that of all other wines around the world. The hot sun, the fresh Atlantic winds, heavy rainfall, aged soil and stones and an array of native vines are features that combine to give the drink its quality and uniqueness. Wine tourism has naturally become a much sought-after activity in Portugal.

Verdes Porto e Douro Dão e Bairrada Beiras Tejo Lisboa Setúbal Alentejo Algarve Açores Madeira

Connecting the wine lover with the production and nature of the drink, numerous wineries and vineyards open their doors and allow tourists to take part in the grape harvest, taste wines and tour wine cellars among other activities that are organised by local hotels and restaurants. The desire to know more about wine and collecting different facts about its production methods and connection with gastronomy is the starting point for an exciting journey of tastes and aromas. Along the way you can acquire knowledge on the history, culture and traditions of the areas that produce these treasures. **

7

WE share WINES OF PORTUGAL TESTIMONIAL '' Portugal's varieties are unique, with thrillingly different flavours. Yet qualitywise there has been no resting on traditional laurels. A quarter-century of investment, education, open-mindedness and flair has meant explosive change (....) One of the features that make the Portuguese grape special is their different personalities. Some bind readily with other varieties, others prefer isolation. Some are more traditional, while others love new ideas. The Portuguese wine producers can combine all of these personalities with outstanding results, a process that is customary to call "art of blending". So new wines are born with a soul and a very unique character, unique in the world that gives flavour to discover new tastes. '’ from Jancis Robinson (Master of Wine) http://www.jancisrobinson.com

8

TASTE PORTUGAL Portugal has developed its own cuisine, one that is different from traditional recipes and that brings surprise and delight to all those who visit Portugal. Alongside this marvellous tradition the country now has an elite group of chefs that work in our new kitchens, fusing classic flavours with new trends. Flexibly prepared and presented dishes are the order of the day for these state of the art professionals who over the last decade have affirmed their place as Master Chefs. Often anchored in the country's culinary tradition, using new techniques to achieve new effects with authentic recipes, their culinary creativity and experimentation has given rise to a new era, in which the chef has become the author. Preparing dishes like never before, true creativity has become the essence of this cuisine. In Portugal there are numerous restaurants that have appropriated this new mindset, serving unique dishes designed by the house chef.*

9

WE share TASTE Lisboa A meeting point for different cultures, the Lisbon region offers almost all the national gastronomic specialties as well as some of its own products and recipes.

Açores Madeira

The tradition of eating fish is at its peak between the months of May and July, during the Lisbon Festivities, of which the sardine is the symbol. Sardines are usually eaten grilled and dripping on bread in the typical folk festivities that take place, go well with boiled potatoes or simply with a tomato and lettuce salad. The great wealth along the west coast of Lisbon coupled with the highest concentration of shellfish in the country result in an immensely diverse range of seafood dishes, The LezĂrias Ribatejanas Carolino Rice (PDO) is another contributor to Portugal's gastronomic affluence; it is enjoyed in rice dishes with sauce also known as "malandrinho" rice (arroz malandrinho). When it comes to sweet food, the Sintra Cheese Cakes (Queijadas de Sintra) gets top marks. It is said that the small cakes made from fresh cow's cheese, eggs, sugar, flour and cinnamon were once used as a commercial currency.*

Casal de Santa Maria Colares ~ Sintra 11

WE share TEJO WINE REGION Santarem

Açores Madeira

DOC Do Tejo occupies almost the same large area as VR Tejo, on either side of the River Tagus (Tejo in Portuguese) as it flows gently along in a southwesterly direction towards its estuary at Lisbon. Until recently the DOC was called Ribatejo and the Vinho Regional Ribatejano. Climatic and geological conditions vary greatly throughout the region. A lot of the vines grow, along with huge quantities of vegetables, on the wide, alluvial plain of the Tagus, in soil known as leziria, very fertile and frankly over-productive as far as quality wine is concerned – unless growers commit great attention and time to reducing their crops and pruning back the exuberant vegetation. Many growers deliver to large cooperatives. The DOC regulations allow a fairly wide range of grape varieties, for whites the local Fernão Pires, Alicante Branco, Arinto, Tália, Trincadeira das Pratas and Vital, but also Chardonnay and Sauvignon Blanc, and alongside the traditional red Castelão and Trincadeira it is possible to use Aragonez, Touriga Nacional, Cabernet Sauvignon and Merlot. **

WE share Península de Setúbal Wine Region The Setúbal Peninsula lies across the estuary of the River Tagus directly south of Lisbon, and linked to Lisbon by two bridges. Setúbal

Açores Madeira

Much of the area is flat and sandy, with the exception of the Serra da Arrábida, a short chain of mountains running along the south coast of the peninsula, It is on these Serra da Arrábida slopes that the grapes are grown for the famous sweet Moscatel de Setúbal wines. The Vinho Regional was recently renamed Península de Setúbal.. There are two DOCs, Setúbal and Palmela. Setúbal is sweet and fortified, made primarily from the Muscat of Alexandria grape. It can be labelled Moscatel de Setúbal when Muscat makes up more than 85 per cent of the blend. It's a very sweet, fragrant wine, with candied orange flavours, floral and raisiny when young, developing nutty, toffeed aromas with maturity. Moscatel Roxo (a pink grape) makes wines that are even more scented.

14

DOC Palmela is mainly red, and based on the lateripening Castelão grape, which is more at home in the hot, sandy soils of Palmela than anywhere else in Portugal. **

WE share Lisboa Wine Region West and north of the city of Lisbon, the Lisboa wine region was until recently known as Estremadura. A lot of wine is made here, much of it in co-operatives, in a very wide variety of styles and qualities. This region where the Vinho Regional Lisboa is predominant also has nine DOC. Lisboa

Açores Madeira

Lisboa is a long, thin region running up beside the Atlantic. Wind is inevitably a strong feature beside the coast – no wonder that these undulating hills bristle with windmills, and no wonder that coastal vines are wind-stressed and hard pressed to ripen their grapes. Just a little way inland, however, a backbone of hill and mountain ranges offers some protection to many eastern parts of the Lisboa region. Just south again, is the small but high-quality white wine region of Bucelas, with sheltering hills to the west and the wide, nearly land-locked estuary of the Tagus to the east. DOC Bucelas is a fresh, crisp, dry, mineral white, made with a minimum of 75 per cent Arinto, sometimes with Rabo de Ovelha and Sercial. There is also sparkling Bucelas. Very little wine is made nowadays in the DOC Colares and Carcavelos, two once- famous wine regions by the coast, out west from Lisbon. This is prime beach and residential country, where there are many more lucrative uses of land than growing grapes. Carcavelos, just west of the capital, makes tiny quantities of fortified wine that is nearly always sweet, from red or white local grapes. Colares, neighbouring the great surfing beach of Guincho, makes high-acid, tannic wines from red Ramisco grapes, planted in sand dunes, and gently aromatic whites based on Malvasia.

16

For the Lisboa region as a whole, the main traditional white varieties are Arinto, Fernão Pires, Malvasia, Seara-Nova and Vital, and for reds Alicante Bouschet, Aragonez, Castelão, Tinta Miúda, Touriga Franca, Touriga Nacional and Trincadeira, but many other national and foreign grapes are now used for VR wines and certain DOC wines.**
