MY GO-TO EASY & HEALTHY LUNCH Prep Time: 20 minutes | Makes 2 Servings
Ingredients: q 1 /2 cup quinoa, measured uncooked q 1 /4 cup cherry tomatoes, diced q 1 /4 cup cucumber, diced q S unflower seeds, for garnish q G oat cheese, for garnish q 1 /2 cup spinach, chopped q O live oil, drizzled to your liking q B alsamic vinegar, drizzled to your liking q S alt, to taste q P epper, to taste Directions: Prepare the quinoa according to the package instructions. In a bowl, add chopped spinach as your base and top with cooked quinoa. Top with goat cheese and toss to combine. The warm quinoa should melt the cheese a bit, and mixing it will give you a little taste of goat cheese with every bite! Add your toppings! (diced tomatoes, diced cucumbers, and sunflower seeds) Drizzle with olive oil and balsamic vinegar. Season with salt and pepper. Dig in and enjoy!
