Super Food Salad

Salad Ingredients:

q 2 cups lettuce, chopped q 2 cups spinach, chopped q 1 avocado, diced q 2-4 radishes, thinly sliced q 1 can chickpeas, washed and drained q 1 cucumber, thinly sliced

Dressing Ingredients:

q 2 tablespoons olive oil q Juice of half a lemon q Salt and Pepper to taste

Directions:

Add lettuce, spinach, avocado, radishes, chickpeas, and cucumber in a bowl. Toss together. Mix the olive oil, lemon juice, salt, and pepper in a small bowl to form the dressing. Add the dressing to the salad mixture and enjoy!
