OMNOM Omnom Hand Crafted Chocolate is a bean to bar chocolate producer in Iceland. We produce hand crafted chocolate from organic cacao beans, originating from the cacao fields on the island jungles of the Caribbean, South America, Asia and Africa. We source only premium beans with the most interesting flavor profiles. Our beans are hand sorted, roasted with care and precision, cracked, winnowed and grounded down slowly to achieve the ultimate flavor, texture, and consistency. The only other addition is raw cane sugar with the exception of the Icelandic milk that is added to our milk varieties. Omnom’s sole focus is on the quality of our ingredients and the meticulous production of our chocolate. We use cacao beans from different origins in order to discover what makes each region special and unique and then enable each variety to find its´ true potential through our chocolate making process.
THE CHOCOLATE Simplicity is our vision, from creating the recipe to our design. At the same time we envision a product as enjoyable for our taste buds as for our eyes. If it dosent please us then there is no reason to be doing it. So we go by our instinct and taste. Having years of experience in fine dining restaurants and pastry shops, we approach our recipe making in the same manner: we experiment until we are happy and then try to perfect that recipe. There have been many “back to the drawing table” moments. But ultimately we want to make something we love passionately and also experiment a little with this genre.
Chocolate is an amazing canvas and making just a plain dark chocolate, which i think is the true essenc, is always a revelation. Its just two ingredients, cocoa beans and sugar and an amazing result. This, together with the diversity in flavor of cacao beans between regions, is what drives us. We have been experimenting a lot with salt, coffee and smoke recently but we have to see how those ideas will get through. We are always trying out new origin beans and never cease to be amazed by their diversity. Omnom Chocolate is a collaboration between Óskar Þórðarson, Kjartan Gíslason, Karl Viggó Vigfússon and André Úlfur Visage.

We´ve been addicted to this from the start. There is something about how the beans get smoked during their drying process that brings out so many interesting flavours like, leather, whiskey, pipe tobacco or even the smell of a horse.
MADAGASCAR 66% of cacao beans.

Taste Notes: Nimble forest fruits and festive red berries balanced by an earthiness invigorated by a complex floral tang. This is what made us fall in love with chocolate. Madagascar 66 % has all those elements that makes us loose sleep over. Smooth mouthfeel, light citrus acidity, sweet red berries and complex bitter finish. Madagascar 66% received Bronze and Silver in the European competition of the International Chocolate Awards 2014 and 2015 respectively.

DARK MILK + BURNED SUGAR 55% of cacao beans.
Ingredients: Raw cane sugar, organic cacao butter, organic cacao beans from Dominican Republic & Icelandic milk powder. Taste Notes: The sweet union of toffee and caramel infused with a subtle smokiness brightened with a effervescent buttermilk. Origin: La Red, Dominican Republic Type: Trinatario Roast: Medium Conching: 96 Hours Certs: Organic & Direct trade We wanted to do a dark milk bar with hints of caramel. We are currently using the beans from La Red Guaconejo, Dominican Republic. They give us a sweet toffee, notes of cashew and vanilla. Raw cane sugar is caramelised, which gives the bar a subtle smokiness.

The Madagascar bean was our first love, so it was clear to us that we needed to see what it would taste like as a milk chocolate. The red berries stood out so much that we even considered for a while to name the bar “Red Milk”.

SEA SALTED ALMONDS + MILK 45% of cacao beans.
Ingredients: Raw cane sugar, organic cacao butter, Icelandic milk powder, organic cacao beans from Madagascar, sea salt & almonds. Taste notes: Gentle maltiness emboldened by floral aromatics balanced by lush red berries & combined with roasted and sea salted chunks of almonds. Origin: Sambirano Valley, Akesson’s Farm, Madagascar Type: Trinatario Roast: Medium Conching: 96 Hours Certs: Organic & Direct trade This came about after years of work at Dill restaurant, Reykjavík. Sea salted and roasted almonds, was a staple “mise en place” in our kitchen. It was a simple to prepare and worked great with poached fish, raw fennel salad or even turned into a paste and served as a spread on breads or on top of meats. Just for fun, at a late night tempering session, we sprinkled it on top of some Milk of Madagascar. It was gone within seconds of sampling.
LAKKRÍS + SEA SALT Ingredients: Raw cane sugar, 38 % organic cacao butter, Icelandic milk powder, sugar, 3% raw liquorice, Icelandic sea salt from Saltverk & ammonium chloride (E510). Taste notes: Creamy caramelised chocolate spiced with raw Persian liquorice and finished with sprinkles of sea salt, harvested from the West Fjords of Iceland, by Saltverk. Lakkrís is Icelandic for Liquorice. Origin: Dominican Republic Type: Deodorised Roast: Medium Conching: 96 Hours Certs: Organic & Fair trade In Iceland, black salty liquorice and milk chocolate is the most common candy combo. We wanted to capture that flavour and texture in a chocolate bar. Our Lakkrís bar includes a Persian liquorice root powder and caramelised white chocolate and finished off with Lakkrís Sea Salt from Saltverk. Lakkrís + Sea Salt received Gold in the Scandinavian competition of the International Chocolate Awards 2015.

We were taken back a little when we opened our shipment of cocoa butter. This wasn’t what we ordered, natural cocoa butter was new to us and the idea was to use it for white chocolate. So we experimented and created Dirty Blonde.
