BOUCHE WITH A BANG You will need: As many choux buns as your Croquembouche requires (we used over 100!) For the filling (fills 25 choux buns): 400g cream cheese 1–2 red chillies very finely chopped Method: Mix the cream cheese until creamy and stir in the finely chopped chillies. Pierce a hole in the base of your choux buns, then with a piping bag and large nozzle attachment, fill the buns.
For the chilli caramel: 400g of sugar 112ml of water Finely chopped red chilli Squeeze of lemon juice Method: Place the water, sugar, chilli and lemon juice into a pan, and heat until the mixture turns to caramel (swirl, don’t stir!). Dip the filled choux buns into the caramel to stick them around your Croquembouche cone. Build them up in layers around the cone and decorate as desired!
