Apple and Lardon Galette

I have just come back from a road trip through Spain and France and among several very memorable meals (and some I’d rather forget) was a delicious galette that I had in Brittany. I thought it would make an excellent easy lunch for the summer months – and indeed it does – my husband loves it.

You can buy pancakes in most supermarkets but they aren’t as thin as the Breton galettes – you can get them on line though.

Apple Sauce – makes enough for 4 galettes 1 Bramley apple peeled, cored and cubed 1 Braeburn apple peeled, cored and cubed 1 knob of butter

Fry the lardons until cooked. Put the grill on high and but the galette on a plate. Smear some apple sauce over the galette and top with the lardons and some grated cheese. Put this under the grill for about a minute until the cheese melts a bit. Take from under the grill and fold over four corners of the galette to make a square. Put more grated cheese on top and return to the grill for a very short time until the cheese melts. It burns quickly so beware. Using gloves take the plate to the table to serve – it’ll be really hot. Serve with a green dressed salad and you’re good to go. A decent cider is good with this.

Melt the butter in a saucepan and add the apples and a dash of water. Cook over medium until the Bramley goes mushy but the Braeburn has still some lumps. Take off the heat and set aside
