4 lb. sweet potatoes, peeled and diced into ½-inch cubes 6 strips Schnucks bacon, chopped ½ w hite or red onion, finely chopped 2 cloves garlic, minced 2 celery stalks, chopped ¾ cup Schnucks cider vinegar 2 tbsp. 1. Boil sweet potato cubes until tender, about 10 minutes. Drain and keep warm. 2. Heat skillet over medium-high heat and cook bacon until crisp. 3. Remove the bacon and drain on paper towels. 4. Add onion, garlic and celery to the bacon fat and cook until soft, about 3 to 4 minutes.

1. Preheat oven to 350 degrees. Brown ground turkey in a large fry pan until cooked through. 2. Add beans, corn, diced tomato, salsa, garlic, cumin, chili powder, rice and 1 cup cheese to turkey in pan. Reserve ½ cup of cheese. 3. Cut bell peppers lengthwise and spoon out the ribs and seeds. Place peppers in 9x13-inch greased baking dish. Spoon turkey mixture into pepper halves. 4. Bake uncovered for 40 minutes until peppers have softened and cheese is melted.
