A S UN FADED FALL .... The Fall 2011 issue brings imagery of a sun-faded Indian summer meandering gently into brisk autumn days. Age-worn collections gathered over well traveled summers, Navajo rugs, and sun-bleached textiles conjure warmth and comfort as crisp winds start to blow through autumnally toned leaves.

(makes 2 tarts) 2 small butternut squash, peeled and sliced into 3 inch pieces olive oil 8oz. fresh goat cheese handful thyme zest of 1 lemon 1 bunch scallions 1 egg white salt and pepper walnuts 1 recipe pastry dough recipe on pg.33 Preheat oven to 425 degrees. Toss butternut squash with olive oil, salt and pepper. Roast until caramelized, about 20 -25 minutes. Remove from oven and let cool. While the squash is baking, mix 6 oz. of goat cheese with the lemon zest, thyme, salt and pepper. Reduce oven to 350 degrees. Roll out each pastry into a round, approx. 1/8 inch thick. Using your rolling pin, transfer dough to a baking sheet. In the middle of the round, spread the goat cheese mixture, leaving a 2 inch border. In a single layer, lay out the roasted butternut squash. Fold up the edges and wash tops of crust with the egg white wash. Bake until golden brown and warmed through, 15-20 minutes. Top with sliced scallions, crumbled goat cheese and a drizzle of olive oil. 26

Drinks are served from a small teak bar-cart. Aged Bourbons and whiskeys are housed in vintage glass decanters. Serve them neat or on the rocks to keep your guests warm when the weather is brisk.

RECIPE FOR PIE CRUST: 2 1/2 cups all purpose flour 1/2 teaspoon sugar 1 cup unsalted butter, cut butter into cubes and keep chilled in refrigerator 1/4 cup ice water Stir together the flour, salt and sugar. Add the butter, and using your fingertips or a pastry cutter, pinch and cut the mixture until it looks grainy, like cornmeal. Add ice water, one tablespoon at a time until the dough comes together nicely and is neither too wet or too dry. Divide mixture into 2 pieces and wrap each in cling wrap pressing down and forming the dough into disks. Refrigerate the dough for at least 1 hour before rolling it out.
