KITCHEN COLLECTIBLES Part Two, by Len Waska A number of readers of Antiquing Texas have asked for information on kitchen collectibles. This is the second in a series of articles which will try to cover the hundreds of items invented to make the cook’s life easier. We’ll first cover the furniture found in old kitchens and then move into the many hand-held items used. Please patronize shops that are advertising in Antiquing Texas!!

THE EFFICIENT KITCHEN By the early 1900s, gas cooking was catching on, electricity was invented, clean water became prevalent and a Philadelphia scientist and businessman, Frederick Taylor, felt there was a science to efficiency with movement and spacing. He identified the stove, the work surface and the refrigerator as the key production areas. Austria’s first female architect, Marguerite Lihotsky, used Taylor’s time and motion studies and, in 1926, created what is know as “The Franklin Kitchen”. This was the world’s first mass produced, fitted kitchen, designed to let the cook do her work with as little movement as possible by strategically locating the stove, work surface and refrigerator in an equidistant triangle. After World War II, the kitchen became the housewife’s best friend with dozens of time and labor saving inventions like mixers, blenders, toasters and microwaves and new technology in flooring and lighting. The end result is that kitchens have evolved from a place that was a hot, dark, smelly and noisy to a place where family and friends gather in a social setting.

PIE SAFES Probably introduced in the late 1700s by the Germans who immigrated to Pennsylvania, called “Pennsylvania Dutch”, the pie safe was a tall, narrow, free-standing, ventilated cupboard used to store perishable pies, cakes, breads and meats away from flies, hungry kids and other pests. Also called “pie cupboards”, “pie safes”, and “kitchen safes”, it was an important piece of kitchen furniture and has become the second most sought after kitchen cabinet by today’s collectors. Originally , pie safes had tin panels with hundreds of tiny holes punched in attractive patterns to allow ventilation without pests. When metal screens were invented it was cheaper and faster to substitute screening for the punched tin. While the 1930s interest in built-in kitchen cabinets brought about the demise of Hoosier cabinets and pie safes for practical use, pie safes today are used to display collectibles with glass replacing the tin or screened panels. ICE BOXES

In the 1700s, farmers used ice cut from lakes and ponds to store their apples and vegetables underground, and daily delivery of ice to homes was available in the larger cities and towns. But something was needed to keep the ice from melting so fast and many things were tried, including wood shavings and seaweed. In 1803, Thomas Moore was granted a patent for a “refrigerator”, a wooden box with closely fitting, thick doors to hold ice and perishables. Ice was stored in the upper part and a small tube allowed water from the melted ice to drain into a pan that was emptied daily. While Mr. Moore’s patent called it a “refrigerator”, the term “ice box” was also used to describe the device. While Mr. Moore’s wooden “refrigerator” did a good job preventing food from spoiling, the biggest drawback was that the ice used was cut from lakes and ponds with natural sediment and the smell permeated both the wood and the food stored inside. That led to people lining the boxes with metal but the housewife still had to keep from storing incompatible items together like butter and fish. Each food absorbed the smell of the other and you wound up spreading your bread with butter that smelled like fish. In the 1920s, Freon was invented as a refrigerant which led to the device known today as a “refrigerator” and, in spite of the terrible hardships of the Great Depression, the refrigerator was one of the very few goods that actually saw an increas in sales during the depression. While the names “refrigerator” and “ice box” were used interchangeably for over a century, “ice box” today is used to describe the wooden device that actually used ice for cooling, and “refrigerator” describes the modern device. Many people over 60 can still remember the ice truck that came through the neighborhood every few days bringing ice to those hold outs who hadn’t bought a modern refrigerator yet. Today, the ice box is the third most collected piece of kitchen furniture and is used primarily to hold liquor and wine.

KITCHEN COLLECTIBLES Part Two continued STOVES With the exception of the dried “buffalo chips” used for fuel by Americans in the Old West, man has always used wood for cooking. Although the Romans used small vents to carry away the smoke, most kitchens throughout the ages did not have vents and were always hot and smoke filled. The earliest example of a chimney in England was in 1185 and chimneys did not come into wide use until the 1500s but, even then, man still cooked over an open fire. The “Wonder Material of the 19th Century” was Cast Iron because it could be cast in almost any shape or form and could withstand extremely wide temerature swings. As a result, cast iron stoves became very popular because they were much more efficient than the old fireplace, they took up less space that a fireplace, they could be moved from place to place, and small versions could be placed all around the home to also provide heat. As a result, almost every home in the country had a cast iron stove. By the 1930s, nearly 90 percent of urban dwellers had electricity but only 10 percent of the rural dwellers had it, requiring them to continue to cook with wood burning stoves. The private utility companies argued that it was much too expensive to string miles of wire to the country’s farms and ranches. Anyway, they said, farmers were too poor to be able to afford electricity. The Roosevelt Administration believed that, if private enterprise could not supply electric power to the people, it was the duty of the Federal Government to do so and, in 1935, the Rural Electric Administration was formed. Although not the first government program to create controversy, the REA resulted in milllions of citizens feeling that the Government was unfairly competing with private enterprise, leading to may lawsuits and hard feelings. But, by the end of World War II, nearly all rural homes had electricity, the demand for cast iron stoves was almost non-existent, and they were no longer produced.

Today’s demand for cast iron stoves is limited to housewives who are doing “period restorations” of their old homes, and modern reproductions are available with prices ranging from $5000 to $7000, or they can find an enterprising person who can convert on to use modern fuels.

NDGA National Glass Museum Glass on display from the Victorian Era (1800’s) up through Mid-Century Modern with the emphasis on the Depression Era. There is a section of children’s dishes, kitchen items, paperweights, lost children pitcher collection, candlestick collection, a case of carnival glass and much, much more! Displays are changed out periodically as new collections are donated. Whether you are an experienced collector, new to the fascinating world of collecting glass or just want to be enthralled by the beauty and history of American glass there is something for everyone. We have a reference library and gift shop as well as seminars. The museum also participates in Wellington’s First Friday each month where merchants invite artists to come into their shops to display their wares from 5:00 p.m. to 7:00 p.m. Refreshments are usually served for your enjoyment.
