KITCHEN COLLECTIBLES Part Three, by Len Waska A number of readers of Antiquing Texas have asked for information on kitchen collectibles. This is the third in a series of articles which will try to cover the hundreds of items invented to make the cook’s life easier. In the ﬁrst two parts of this series on Kitchen Collectibles, we covered Hoosier Cabinets, Pie Safes, Ice Boxes and Stoves. In this part we’ll cover but a few of the thousands of hand-held devices invented to prepare, handle, measure, cook and preserve food. APPLE PEELERS

A White Mountain Apple Peeler

In 1803, Moses Coates, of Downing’s Field, Pennsylvania received a patent for a device to turn and peel apples. Before 1850, many apple peelers were made using gears and handles from farm equipment. They usually consisted of an axle with a crank, a fork to hold the apple and a knife on a hinged arm. The early ones just turned and peeled the apples. When cast iron peelers were invented, some could peel, core, slice and push the apples off the fork that held them. Between 1830 and 1850 nearly 150 patents were issued for apple peelers, each one different enough from all the others to justify its own patent. White Mountain apple peelers are still made today, except where the pri ce was 40 cents in 1897, they cost around $25 today.

GRINDING, CRUSHING and MASHING

The most ancient of the implements for food preparation were for grinding and crushing. Primitive men had to find some way to reduce seeds and grain into something edible. The first method simply used two stones to smash the grain onto smaller pieces that could be mixed with water. As time went by, more efficient methods were invented. Today’s housewife has a wide selection of items, both manual and electric, to make the grinding, crushing and mashing easier than having to use two stones. While tools used to mash potatoes have evolved from stones through wooden tools called “Beatles“ to handles with wavy metal parts, modern day home builders still use an extra large version of the old potato masher to mix joint compound when installing drywall in interior walls. Another widely used kitchen utensil is the grater. In the early 1700s, pieces of sheet metal with roughly punched holes forming the sharp grating surfaces were used to grate nutmeg. More modern versions hold the nutmeg against the grater with springs to save knuckles and fingers, and larger, machine made pieces with raised holes are used to grate cheese and larger vegetables. A closely related tool is a shallow wooden tray with a blade set in the bottom that the housewife slides cabbage over. The blade cuts the cabbage it thin slivers for sauerkraut and cole slaw.

KITCHEN COLLECTIBLES Part Three continued MIXING While early housewives mixed various cooking ingredients with a stick or spoon, many creative people invented hundreds of machines to mix, stir, blend and churn. Early devices were earthenware containers with a wooden “X” shaped ﬁxture on the end of stick that was moved up and down by hand. This was used to stir milk or cream to make butter which was then pressed into wooden moulds to make decorative blocks of butter for the dinner table. It wasn’t too long before someone invented a churn with a geared handle that was much easier on the arm and shoulder and ﬁt on a large glass jar, allowing the lady to see the progress of the butter being made. SIFTERS After the seed and grain were ground into powder, it often formed lumps which had to be removed to make the dough smother and “lump free”, resulting in smoother dough. The early sifters, like the graters mentioned above, were also made of sheet metal punched with tiny holes that kept the lumps from going into the dough. When the machinery was invented to weave wire into screens, all sifters were made using screens and the earliest models had to be shaken to sift the ﬂour. Another inventor devised a sifter with a handle that could be squeezed with one hand to move internal parts to sift the ﬂour but, once again, American ingenuity stepped in when, in 1945, the Miracle Electric Company of Chicago, introduced the Miracle Electric Flour Sifter for the housewife who had everything. All she had to do was plug it in and hold it over the bowl.

NDGA National Glass Museum Glass on display from the Victorian Era (1800’s) up through Mid-Century Modern with the emphasis on the Depression Era. There is a section of children’s dishes, kitchen items, paperweights, lost children pitcher collection, candlestick collection, a case of carnival glass and much, much more! Displays are changed out periodically as new collections are donated. Whether you are an experienced collector, new to the fascinating world of collecting glass or just want to be enthralled by the beauty and history of American glass there is something for everyone. We have a reference library and gift shop as well as seminars. The museum also participates in Wellington’s First Friday each month where merchants invite artists to come into their shops to display their wares from 5:00 p.m. to 7:00 p.m. Refreshments are usually served for your enjoyment.
