KITCHEN COLLECTIBLES Part Four, by Len Waska Since almost everyone drinks coffee, we at Antiquing Texas thought it would be appropriate to devote an entire article to coffee, its history and use. Approximately 95% of American homes have some sort of device to prepare coffee, but few people other than collectors of Kitchenware ever think about the history behind the devices. There is no record of the exact time man decided that coffee beans could be roasted, crushed and soaked in hot water to make a beverage they can drink while sticking burning leaves in their mouths, but drinking coffee and smoking cigarettes has been around for centuries. There are many conflicting stories about when people began to enjoy coffee. It is generally thought to have started in Ethopia around the 10th Century, but the earliest evidence of drinking it is in the 15th Century in the Sulfi Monasteries of Yemen. One story is that Omar, a disciple of a Muslim Sheik, was exiled and was so hungry that he began to eat berries, but they were bitter so he roasted them to improve the flavor, but then they were too hard to chew so he boiled them and drank the liquid. Another story, from a document written in 1671, claims that, in the 9th Century, a goat herder noticed the energizing effect after his goats ate the berries, so he ate some himself. Coffee beans were first brought to the North American Colonies in 1720 but tea remained the beverage of choice until the Boston Tea Party of 1773 when Americans switched to coffee because drinking tea was “unpatriotic”.

COFFEE ROASTERS Up until the Mid-1800s, all coffee beans were purchased green and had to be roasted by the consumer, either in a pot on a wood burning stove in a home or in a frying pan over a campfire, frequently resulting in burned beans and a bitter taste. The first commercial coffee roasting machines were simply large cylinders placed in a fire. When the beans were roasted, the cylinders were pulled out of the fire and the beans were dumped on the floor to cool. In 1864, Jabez Burns invented a machine that did not have to be pulled out of the fire and had a double screw drive that rotated the beans for even roasting. During the 19th Century, the United States was the world’s largest consumer of coffee, purchasing 40% of all the coffee beans grown in the world. This created a lot of competition among coffee roasters who wasted no time trying to get a larger share of the market. In 1864, the Lion Coffee Company introduced “Fancy Roasted” coffee beans in Toledo, Ohio, carefully roasting and blending beans from around the world and put them in one pound bags, including trading cards in the packages to appeal to customers. John Arbuckle, of New York City, coated his beans with an egg and sugar glaze to seal in the flavor and aroma during transit and named it “Arbuckle Ariosa” and, in 1871, he invented a machine to weigh, lable and seal beans in paper bags and “Arbuckle Ariosa” coffee became the first mass-produced coffee ever sold all over America. Not to be outdone by Lion Coffee Company’s trading cards in every package, Arbuckle included coupons on each bag that were refundable for handkerchiefs, razors, scissors and even wedding rings. Kind of like a predecessor of the Green Stamps of the 1940s and 50s. Ever the Marketing Whiz, Arbuckle realized the Chuck Wagon cooks were expected to keep a supply of hot coffee available all day long, so he included a Peppermint stick in every package. This was such a great marketing ploy that, for years, cowboys on the range didn’t know there were any other brands of coffee available. As a result, Arbuckle became the largest coffee importer in the world. Arbuckle was the Starbucks of its day. The Arbuckle Coffee Company is now located in Tuscon, Arizona and makes the same coffee available in a package identical to the one of the 1870s and it still has the peppermint stick inside.

KITCHEN COLLECTIBLES Part Four continued COFFEE GRINDERS After centuries of crushing the coffee beans with stones, hammers and other tools of the times, the first mechanical coffee bean grinding equipment appeared in Turkey in the 1400s, utilizing a hand cranked grinder on legs, and in the 1700s, a drawer was added to catch the grounds. In 1798 the United States Patent Office issued a patent to Thomas Bruff, who happened to be Thomas Jefferson’s dentist, for a wall mounted grinder using metal nuts with both coarse and fine teeth. In 1828, Charles Parker, of Meriden, CT improved the machine and the first packaged ground coffee was sold by Lewis A. Oaborn of Athens, NY in 1860. The first electric coffee grinder was introduced by the Hobart Manufacturing Company in 1898 but, since many rural homes didn’t have electricity until well into the Twentieth Century, a lot of American housewives used manual grinders like the cast iron model introduced by Arcade in 1884, while the general store had a double wheel store model made by Enterprise that stood six feet tall.

COFFEE MAKERS Early coffee drinkers simply dumped the ground coffee in a pot of water, brought it to a boil and drank the liquid, probably keeping their jaws together to strain the grounds between their teeth. Folks without teeth weren’t as fortunate. In 1818, a Paris metalsmith named Laurens invented the first percolator that ran boiling water through the ground coffee. Only four years later, another Frenchman, named Louis Bernard Rabaut, used steam to force hot water through the ground coffee, thus inventing the first Espresso machine. In 1901, an Italian named Luigi Bezzera patented the first commercial espresso machine, supposedly to reduce the amount of time that his employees spent during their coffee break. It wasn’t until 1865 that James H. Nason patented the first percolator design in the United States and, in 1972, the first automated drip coffee maker, named “Mr. Coffee”, was introduced, using water heated to 200 degrees, not boiling water like percolators used. In spite of many competitors, Mr. Coffee machines are still the largest selling brand of drip coffee makers and make up approximately 40% of the American market.

A COFFEE TIME LINE since the MID-1800s In 1860, the Folger Coffee Company was founded in San Francisco and, being one of the country’s largest coffee importers, owned a large number of sailing vessels, hence the picture of ships on all their cans. In 1861, Joel Cheek started Maxwell House Coffee Company, naming it after the ritzy hotel in Nashville that served it. When President Teddy Roosevelt stayed there, he said the coffee was “good to the last drop”, and that slogan is still with them. In 1901, a Japanese-American chemist named Satori Kato created a soluble blend of coffee, introducing it at the Pan American Exposition as “Instant Coffee”. In 1903, Ludwig Roseilus, a German coffee importer, received a shipment that had become wet in transit from Nicaragua, and discovered that most of the caffeine had been removed by water. He perfected the procedure and created the first decaffeinated coffee and called it “Sanka”. In 1906, an inventor named George Washington (no, not that one) created the first mass produced instant coffee and sold it as “RED-E COFFEE”. During the 1970s, the demand for instant coffee peaked and 1/3 of all the coffee imported into the USA became instant coffee, totalling 200 million tons per year. In 1938, Brazil had a huge surplus of unsold beans, so they contacted Nestle and they created the first freeze dried coffee and named it “Nescafe”.
