KITCHEN COLLECTIBLES Part One, by Len Waska A number of readers of Antiquing Texas have asked for information on kitchen collectibles, so we are starting a series of articles which will try to cover the hundreds of items invented to make the cook’s life easier. We’ll first cover the furniture found in old kitchens and then move into the many hand-held items used. Please patronize shops that are advertising in Antiquing Texas!!

KITCHEN FURNITURE Although history failed to note when it was that early cavemen decided that meat from a Wooly Mammoth that had been cooked in a forest fire tasted better than a raw Wooly Mammoth, preparing food has become an art form and thousands of items have been invented to speed the process or improve the results. A lot of people today have the romantic image of an early kitchen with a spinning wheel, a rocking chair and a sleeping cat, but history shows the exact opposite and it’s difficult for the modern cook to realize that, not too long ago, kitchens were one of the last places people wanted to spend time. Early kitchens were hot, dark, smelly and often caught fire. For these reasons, kitchens were located as far as possible from the main part of the home. Wealthy families had kitchens in separate buildings and even the lower classes had their kitchens added almost like an afterthought to the back of the home. Through the centuries, the kitchen has evolved from a dark, smelly place to a friendly gathering place for family and friends. In this series of articles, we’ll look into the inventions that brought about the massive change. The first things we’ll cover will be the furniture found in the kitchen.

CABINETRY In the late 1700s and early 1800s, wall hanging cabinets were popular and, since they were intended to be functional rather than decorative, they were made of simple woods like pine and were usually painted to hide their inexpensive materials. They usually had plain paneled doors and a few shelves to hold the cooking essentials. In 1869, Catherine Beecher, the sister of Harriet Beecher Stowe, whose book, “Uncle Tom’s Cabin” helped start the War Between the States, was also a prolific author, and had written several self-help books for women to create a smooth running household. Having seen the small, fundamental galleys in the steamboats that plied the nation’s rivers, Catherine designed her idea of the perfect kitchen and published a drawing of her plan in her book “The American Woman”s Home”. The kitchen of the mid 19th Century was open and utilitarian with a wall hanging cabinet, a simple worktable and a cast iron stove, all on legs. In large, upscale homes, a pantry provided additional storage, but, basically, the center worktable and wall shelves held it all.

BAKER’S CABINETS In the late 1800s, the baker’s cabinet was invented. It was the answer to the kitchen without adequate work surfaces and storage space and provided both by combining a table with the cabinets directly above. In no time, someone added large bins for flour and meal and the upper section soon had space for storing dishes and utensils and the upper doors had glass panels.

HOOSIER CABINETS While the baker’s cabinet was an improvement on early 19th Century kitchen design, the Hoosier cabinet was a vast improvement on the baker’s cabinet and has become one of today’s most sought after pieces of kitchen furniture. Organized in 1898 in Albany, Indiana, the Hoosier Manufacturing Company was formed to further improve the working conditions of the Turn of the Century housewife. The lower section of the baker’s cabinet was replaced with a cabinet base with a door on one side to store pots and pans and drawers on the other side. The upper section was divided into storage areas with wood or glass doors. As time went by, further improvements were made such as pull out bread boards, a drop down ironing board, built in flour sifters, sugar and spice containers, and a bread drawer made of metal to keep out the mice. While the Hoosier Manufacturing Company was the originator of the Hoosier cabinet, they used the name “Hoosier” because they were located in “The Hoosier State”. The name became generic and was applied to all the kitchen cabinets made by the many copy cats, such as Sellers, Napanee, Boone, Wilson and McDougal, and today, all cabinets of this style are called “Hoosier cabinets”. While genuine Hoosier cabinets are not dated, we can judge the approximate date of manufacture by some of the changes the factory made through the years. For instance the early models had work surfaces made of zinc. When zinc proved to be toxic, they switched to aluminum and later used porcelain coated steel. The first Hoosiers were made of natural finished oak and, in the 1920s, were available in various colors. The publishers of "Hoosier Cabinets" have graciously allowed us to use information from their book so, if you own a genuine Hoosier kitchen cabinet and would like more detailed information to help date when yours was made, drop a note to the author at lwaska@att.net and we'll send you a list of the changes showing when they were put into effect. The demand for the time and labor saving Hoosier cabinets was so strong that by 1930, over four million had been built, meaning that two homes out of every ten had one. In fact the Hoosier cabinet was one of the very few things that actually saw an increase in sales during The Great Depression. But, like everything else, tastes change and the interest in built-in kitchen cabinets caught on and they became available to fill entire kitchen walls from floor to ceiling. The Hoosier Manufacturing Company decided to "go with the flow" and began making built-in cabinets, but World War II created a shortage of manpower and materials and, in 1942, the Hoosier Manufacturing Company was liquidated.

Kick-off is at 10:30 a.m. with our annual parade. Parade includes floats, classic cars, antique tractors, bicycles and pets, all decked out in their patriotic best! Parade travels through the downtown historic district on High Street and then on to Comfort Park. Texas-Style Barbecue is served at the park beginning at 11:30 a.m. with beans, potato salad and all the trimmings for a nominal charge. It is prepared by members of the Comfort Volunteer Fire Department. There is also family fun at the park including moon bounces and carnivalstyle games as well as other vendors. All the collector has to do is go to the National Depression Glass Association’s website www.ndga.net, and in the “MENU” area in the upper left corner, click on “Contact us”. On the screen that appears, click on “I would like help with glass identification”, enter your name and email address and attach a photo of the piece you’d like identified. Your inquiry will be forwarded to one of our many volunteers, each of whom specializes in a specific glassware field such as Early American Pattern Glass, Depression Glass, Elegant Glass, etc. Since these are volunteers, please keep in mind that it might take a few days for them to research your glassware and send a response.
