Trends don’t always become traditions, but the following current wedding customs seem to have real staying power. Swan Club Restaurant Opens This Spring BY CHRISTY HINKO
chinko@antonnews.com Whether you can’t get enough of The Swan Club’s picturesque waterside views and the impeccable service, or you have yet to experience it for yourself, the Roslyn venue’s staff will be extending the invitation for you to try their full restaurant service, set to open in April. “The Swan Club has a good name,” said Gregory Trunz, owner of the Swan Club. “We will be serving comfort foods, a lot of foods we are known for, such as the fish dishes, soups and meat dishes.” Just a sneak peek at the menu includes: chicken Wellington, filet mignon with a port wine sauce, and broiled Norwegian salmon with a champagne dill sauce, each often paired with their popular Duchess potato and all prepared by the Swan Club’s head chef and Long Island native, Thomas Henrichs, who joined the staff in 2007. Trunz explained that the Swan Club once offered dinner service, back in the 1990s, but slowly turned its focus to catered events because of the high demand at the time. “It’s a growth opportunity for us,” he explained, about their decision to seek the necessary approvals from the village
and complete their return as a full service restaurant in addition to their catering. Brides Against Breast Cancer is an organization serving a very “pink” purpose — their gown sales fund programs and services that are free to cancer patients and their families. Through its “Nationwide Tour of Gowns” bridal shows, Brides Against Breast Cancer plans to unveil more than 100 shows in 2014. In cities nationwide, with an average offering of nearly 1,000 new or gently worn bridal dresses, brides-to-be will find their dream gown at a greatly reduced cost. Brides Against Breast Cancer will be making a tour stop in the New York area on Feb. 23 and Feb. 24 at Zanger Hall, 347 W. 34th St. (bet. 8th and 9th Ave.), in New York. “Wedding gown sales are an important fundraising program for Brides Against Breast Cancer. The organization makes it possible for future brides around the country to purchase wedding gowns at dramatic savings, and give back,” said Amy Paulishak, senior vice president of Brides Against Breast Cancer. “Most gown prices range from $75 to $799,
including beautiful new name brand and designer gowns valued up to $3,000. We also offer layaway.” Unlike boutique bridal stores that carry only a few lines, each show in the Nationwide Tour of Gowns features hundreds of gowns with a wide assortment of styles and designs, including gowns designed for beach or outdoor weddings. “We are in need of contributions from brides and bridal designers in all sizes and styles,” Paulishak added. Brides who have already said “I Do” can donate their gowns, and receive a tax deduction for a charitable gift. “You can also text the word BRIDES to 85944 to donate $10 to Brides Against Breast Cancer and help us reach more people impacted by cancer,” said Paulishak. Chocolate Heart Petit Fours Makes about 40 mini cakes • 1 cup all-purpose flour • 1/2 cup cocoa powder • 3/4 teaspoon baking powder • 1/2 teaspoon baking soda • 1/2 teaspoon salt • 6 tablespoons (3/4 stick) butter, softened • 2/3 cup firmly-packed brown sugar • 1 egg • 1/2 teaspoon pure vanilla extract • 2/3 cup buttermilk • 1/2 cup peanut butter, chocolate fudge ice cream topping or cherry pie filling • 2 containers (14 ounces each) Chocolate or Vanilla Icing Glaze (optional) • Jumbo hearts sprinkles (optional) Preheat oven to 350°F. Prepare a 24-cavity bite-sized heart dessert shell pan with nonstick pan coating. In large bowl, combine flour, cocoa, baking powder, baking soda and salt. In large bowl, beat butter and sugar with electric mixer until light and fluffy. Add egg and vanilla extract; beat until well combined. Alternately add flour mixture and buttermilk in three additions, beating until just combined. Spoon one tablespoon batter into each pan cavity. Bake 9 to 11 minutes or until tops of cakes spring back when touched. Cool in pan 10 minutes. Cool completely on cooling grid. To decorate, place cakes on cooling grid with cookie pan below. Pipe 1/2 teaspoon peanut butter, chocolate fudge or cherry pie filling into shell; fill only to top of cavity. If desired, warm glaze according to package instructions; carefully pour over shell and tap pan to smooth. If desired, add jumbo hearts sprinkles.

It starts in October with Halloween. Candy. Lots of it. Then we move into November with the feast of Thanksgiving and then quickly onto Christmas with eggnog and candy canes and Chanukah with latkes and sour cream. New Year’s Eve comes with drinking and more feasting. At last, it is January and the indulging slows down. Everyone goes on a diet; it’s time to eat sensibly. And then comes Valentine’s Day and the bakers and candy makers and restaurants conspire to get us eating all that stuff again. Resistance is futile and we have all of March for austerity until chocolate bunnies arrive in April. Here’s the news on three local bakeries gearing up for Valentine’s Day. Lello Messina’s father and grandfather were bakers in Naples, but when he decided to open his own bakeshop — Dortoni in Levittown in 1976 — he knew he wanted it to be more than an Italian pastry shop. So, in addition to cannoli and sfogliatelle, Dortoni produces rich pastries such as French profiteroles and Austrian linzertorte. Numerous Valentine’s Day inspired cakes and cookies will be available at Dortoni’s and the Messina family’s
other two pastry shops — La Bonne Boulangerie in East Norwich and Port Jefferson. Robert Ellinger, the owner of Baked to Perfection in Port Washington, has achieved the two highest certifications in the baking world: Certified Master Baker and Certified Executive Pastry Chef. Ellinger has received many awards in the pastry world and in 2010 (and again in 2012) was the head judge of the World Pastry Championship, the first American to achieve this honor. Baked to Perfection opened in 1986 and this year, Ellinger opened the Ellinger Baking Institute, also in Port Washington, to share his knowledge. Look for red velvet biscotti, Valentine snowmen and heart shaped cookies. There’s lots of heart-shaped baked goods at A Taste of Home in North Bellmore: a rainbow cookie cake covered in chocolate, brownie cakes, linzertortes in small, medium and large, fondant cakes and cookies, all baked by Rose Fuger who owns the café/bakery with her sister Monica Tarantino. Rose, a self-taught baker, has the distinction of being chosen to compete on the TV reality show, Sweet Genius. Although she didn’t win the competition, she is proud of being one of only two Long Island bakers ever to appear on the show.

For several years, vintage engagement and wedding sets have been trending, whether it is an estate piece or a reproduction of the styles of the 1920s and 30s, inspired from the Edwardian or Belle Epoch Eras. The intricate designs and workmanship were influenced by a prosperous time in Europe when the Art Nouveau movement influenced everything from art and architecture to fashion and jewelry. These type of engagement rings are usually set in either platinum or 18 karat or 14 karat white gold. If you are not lucky enough to have an estate piece handed down through the generations there are many local estate jewelry dealers and consignment jewelers on Long Island, including the Oyster Bay, Manhasset, and Plainview locations of Coin Galleries of Oyster Bay, and even more of a selection at online estate jewelers. Jackie Einhorn, estate jeweler at Coin Galleries of Oyster Bay said, “We are definitely seeing a trend in vintage jewelry and a lot of jewelers are doing vintage lines, reproductions of the original pieces.” The most traditional Vintage-style engagement rings will feature a round center diamond, although princess
cut, pear shaped and oval diamonds are also popular. Vintage ring settings are typically contoured, featuring diamond accents on the band, and detail either in the form of many finely set diamonds or elaborate patterns that have been created in the metal. “I love vintage, myself,” said Einhorn. “I just like how dainty and delicate the design is; I like the single-cut diamonds, a thing of the past.” She added, There are usually two types of popular settings also, the pave setting and the cathedral type. In a pave setting, an indentation is first made in the gold for the diamond to “sit” in and then a tiny amount of the gold is pulled over the diamond to hold it in place. The diamonds are smaller and set very close together. The second type of ring is a cathedral type ring setting with a great amount of artistic detailing that includes milgrain (raised beaded edges engraved into the ring) and filigree detail (intricate twisted or scroll patterns) that is often beautifully displayed with a side view that also features a bezel set diamond. Einhorn also mentioned engravings which are traditional on most vintage rings. “It’s romantic, like an old message from the 1920s,” although she said not everyone prefers the messages from the past on the inside of the bands, which can be easily removed.

Solomon Jewelers, with stores in Plainview and Albertson, has been serving the community for 70 years, with two generations of experience including certified appraisals, design staff, repairs and watchmakers on premises. Stacey Sachs, one of the family owners of Solomon Jewelers, told Anton Community Newspapers that she is seeing a trend in vintage and reproduction jewelry for engagement and wedding sets. “We are seeing a lot of halo mountings for engagement rings and matching wedding sets; a lot of people are going through a trendy phase though.” Sachs, who runs the Albertson location for Solomon Jewelers, said couples are typically searching for something classic, elegant, or a little trendy, and especially in search of styles by Verragio, of which Solomon Jewelers is the only premiere certified Verragio agent in the state. “Brides want something interesting and beautiful, something they can wear every day,” added Sachs. While she has noticed that couples are spending about the same as in the recent past, she said couples do tend to spend more on wedding jewelry because it is one of the most special occasions. Other popular lines at Solomon are Marco Bicego, Honora, and Jordan
Scott. Solomon Jewelers is also the only certified Le Vian Couture Boutique in the state. Sachs and her brothers Marc and Robert Solomon run both locations, while their father, Albert, continues to be involved with the overall operations. H.L. Gross & Bro. Jewelers in Garden City is a 5th generation, family-owned business, established in 1910. The first store opened in Brooklyn, then in Jamaica, before moving to Hempstead, and then finally to Garden City in 1968. Brad Gross said many of their customers, even ones who have moved from New York, still rely on their service. “I now serve a lot of the children of some of my father’s original customers,” said Gross. The store’s specialty is their bridal selection, the diamond engagement rings. “We have the largest selection, I’d say, in New York, of designer engagement sets, diamond settings,” said Gross.
