A
lbert Einstein once likened life to riding a bicycle in that you had to keep moving in order to maintain your balance. Apparently, this is a credo that Josh Groban has wholeheartedly embraced. In the past year and a half, he’s nabbed a 2017 Best Actor in a Musical Tony nomination for his performance as Pierre Bezukhov in Natasha, Pierre & The Great Comet of 1812 and this past September saw the premiere of the Netflix murder-mystery series The Good Cop, which was developed by Monk creator-writer Andy Breckman and finds Groban sharing co-billing with Tony Danza. If that’s not enough, that same day saw the release of Bridges, the California native’s eighth studio album, which is also being followed up by Josh Groban: Bridges Tour, a string of arena dates he’s been playing with fellow musical theater phenom and friend Idina Menzel. While it seems to be a pretty overwhelming slate of activity, Groban doesn’t quite see it that way. “Time does slow down in my head, even if it’s
not slowing down in front of me. I’m able to kind of zone in on things and focus on them and I think being able to take a time out and go make The Good Cop was really serendipitous and helpful, because I was starting to feel a little burnt out having finished about half the record,” he explained. “Then I got that [role] out of nowhere. It gave me a chance to change gears and sides of my brain. Then when I had so much fun taping that and was done with it, I couldn’t wait to get to my day job. I was there guns blazing, ready to get back in again. Everything happens for a reason and I feel like even though it’s been a lot on my plate, those things have inspired me to do other things. So, it’s been helpful.” Groban’s newest musical outing is his first album of mostly original music since 2013’s All That Echoes. Balance is a key element at the center of these dozen songs, as life lessons about receiving and losing love and maintaining positivity through times good and bad resonate solidly, whether it’s throughout the stirring “River” and its inspirational gospel accompaniment, the ethereal opener “Granted” or the closing number “Bigger Than Us,” a message of unity wrapped in a delicate swath of string arrangements
and sparse piano runs that wouldn’t sound out of place on a latter-day U2 album. Guest appearances by Sarah McLachlan and Sugarland’s Jennifer Nettles further sweeten the listening experience. As someone who cut his teeth on musical theater, Groban shows his range and adeptness of singing in a foreign tongue, be it in Spanish for his duet with classical guitar virtuoso Vicente Amigo in “Musica Del Corazon,” tackling Celine Dion’s “S’il Suffisait D’Aimer” in the original French or trading lines in Italian with Andrea Bocelli on “We Will Meet Once Again.” For Groban, going the extra mile to learn how to sing a song in the original language that it was penned makes for a more rewarding experience for all involved. “It takes the difficulty level of recording up considerably. I didn’t grow up with these languages. As a vocal student, I studied many of them, which is how they started to find themselves on my first album. Just singing in those languages was always a huge part of why I loved singing. But the process that goes into it is pretty in-depth. If I’m going to tackle a

DIVIDE from page 3A song in another language, even if I’m very confident, I always work with a coach to make sure that I’m getting the right dialect and the right pronunciation. And of course, learning the song, even if I don’t know the language conversationally,” he said. “I have to learn the song fluently and really learning it as if I were singing it in English. As far as the why—I’ve always felt there’s a musicality and a poetry to these songs when they are in those languages, especially if they were written in those languages. They lose their music when you translate that into English. There’s something very special about choosing to sing in different languages as a vocalist because it really unlocks different levels of your voice that are both challenging and so rewarding for both me and my audience.” As for his live shows, Groban is aware that for as many people that may be attending who are hardcore fans, there are just as many spouses and significant others who might just be along for the ride. Given that he looks at the live music experience as being as close to a kind of religion that he connects with, creative inclusivity remains a goal every time he hits the stage. It’s why he’s making sure to work with local string players and choirs at every stop of the tour. “I always like to have the live show be the best

representation of the spirit of any new music that I’m putting out. And also be a celebration of the songs that I’ve had throughout the course of my career. There are some songs we do that the fans have loved forever and we always like to throw in songs that are a surprise that fans may not have heard much of. And it gives us a chance to put a new energy on, even the newer songs,” he said. “At any given moment of the show, there’s going to be 40 musicians. When I do a live show in an arena, it’s really a chance to celebrate the connection that I have with my fans that’s different than holding or downloading an album. It’s something that becomes a once-in-a-lifetime experience for all of us that you can’t share. So my goal is to both give fans of mine a musical experience that is more heightened than any other way they can experience the music. But then it’s also my goal to win over the people that have been dragged there who aren’t as familiar, aren’t fans or really don’t want to be there. ven though he’ll be celebrating his 38th birthday on Feb. 27, Josh Groban has got rock-solid singing credentials to his name dating back to when producer David Foster asked the then 17-year-old Los Angeleno to stand in for an ailing Andrea Bocelli opposite Celine Dion during a rehearsal for Foster’s “The Prayer” that was going to be performed at the 1999 Grammy Awards that night. Since then, he’s not only shared stages with Sarah Brightman, Sting and Paul Simon, but carved out an acting career for himself that went from David E. Kelley creating a role for him on the final season of Ally McBeal to playing Andy Bernard’s brother in a couple of episodes of The Office. With a Tony Award-nominated stint on Broadway in Natasha, Pierre & The Great Comet of 1812 under his belt, Groban was more than happy to share who some of his favorite singing actors are.

ast food faces a lot of criticism, with companies being accused of everything from destroying mom-and-pop eateries to making Americans fat and generally unhealthy. Those accusations, and others, are completely true. But to constantly rail against fast food is an exercise in futility. This food is not going anywhere—its marketing gimmicks, convenience and preservatives ensure that. So, rather than fight for an unattainable victory, we should embrace fast food to the fullest. This means going beyond the listed menus. Sure, you can walk into a McDonald’s, order a Big Mac with fries and experience a whirlwind of self-loathing mouth pleasure, but in the spirit of National Fast Food Day (Nov. 16), let’s examine the best in “secret menus,” both official and unofficial.
McDonald’s The Golden Arches are the source of some of the most notorious secret menu items in the fast food world. With that said, Ronald McDonald and his minions are completely tight-lipped on the subject, claiming there is no such thing as a “secret menu.” And to be sure, ordering anything off-menu induces sideways stares from McDonald’s employees, so the only real way to get these items is to build them yourself. Start with the Big McChicken. This involves ordering one Big Mac and three McChicken

on the actual menu, but now lives on in secret. And if you’re into this sort of thing, you can make your Whopper a Vegetarian Whopper—essentially a regular Whopper but with a veggie patty instead of beef.

sandwiches, getting rid of all the buns and combining it so what you’re essentially left with is a Big Mac that utilizes fried chicken breasts in place of all three buns. Next, try the Land, Sea and Air Burger. This takes the meat from a Filet-O-Fish and a McChicken and combines them with a Big Mac, with the chicken on the top half of the Big Mac and the fish fillet nestled on the bottom. For breakfast, make your bacon, egg and cheese McGriddle a Chicken McGriddle by cramming in a McChicken, sans bun. Dessert is problematic, as this is where you will need to convince the McDonald’s employee to help out. Order a McFlurry, but request that they blend in a McDonald’s apple pie instead of the usual toppings for an Apple Pie McFlurry. It is the last good use of
a McDonald’s apple pie since they stopped deep frying it decades ago.
Burger King Other fast food places are far more liberal with their secret menu items. At Burger King, you can actually ask for these items and the employees will know exactly what you are talking about. The Quad Stacker (also known by the harsher name the Suicide Burger), is a high-calorie commitment with four beef patties, four slices of cheese, plus bacon and special sauce. One of the more popular secret menu orders at Burger King is undoubtedly the Frings, an order of half fries and half onion rings. The Rodeo Burger, a cheeseburger with onion rings and barbecue sauce, is an example of an order that was once
The burger wars rage on at Wendy’s, where square burgers have given rise to the Meat Cube—a burger with four patties, equaling a full pound of meat. You can get a taste of all the animals at Wendy’s with the Barnyard Burger, consisting of a chicken patty, beef patty, bacon, cheese, lettuce and tomato stuffed onto a bun. Then there’s the deadly Quadruple Baconator, made up of four beef patties with bacon and cheese in between each layer of meat. And if that sounds like overkill that could kill you, I give you the T. Rex Burger, made with nine patties and nine slices of cheese. Other secret menu items at Wendy’s are far more timid, including the Big Bacon Classic, which merely adds bacon to a regular burger, and the Cheeseburger Deluxe, which is a smaller-patty alternative to the classic cheeseburger.
Arby’s Other fast food places flaunt their secret menu items in a way that is at once intriguing, cocky and alarming. Here, Arby’s commercial boast of “We Have the Meats” is put on full display with the obscene Meat Mountain, a ridiculously stacked sandwich that has two chicken tenders, slices of roast turkey, pit-smoked ham, corned beef, smoked brisket, Angus steak, roast beef and pepper bacon with cheddar and Swiss cheeses lost somewhere in the terrifying monument to gluttony. The sandwich

renders any other Arby’s secret menu item irrelevant.
Taco Bell Stepping outside of the bun, Taco Bell has long been in the game of “menu hacking,” where customers can order customized items and some popular discontinued items. Real talk: secret menus are so easily procured at Taco Bell because there’s only like four ingredients in every Taco Bell food order. Take the Cheesarito for starters, merely melted cheese, scallions and taco sauce wrapped in a soft tortilla. Then there’s the Enchirito, which used to be on the permanent menu and it is basically a burrito and enchilada hybrid. The Chili Cheese Burrito (also known as a Chilito for portmanteau fans) was discontinued back in the 1990s, but can be resurrected by asking them to mix red sauce with ground beef, topping it with cheese and rolling it into a burrito. Things get extreme with The Superman, a double-beef burrito with sour cream, guacamole, tortilla strips and extra potatoes. And keep the superhero theme going with the Incredible Hulk—a seven-layer burrito that replaces nacho cheese with guacamole. Then there’s Fresco Style, a menu hack for Taco Bell fans who want a healthier option. This order replaces the cheese, sour cream, guacamole and other sauces with pico de gallo. Pro Tip from the writer: If you choose to ask a fast food worker for any of the above items, be patient. Keep in mind there is a good chance they will have no idea what you are talking about, so be prepared to explain exactly what you want. Help them to help you in your quest for full fast food enlightenment.

Gutter To The Grammys Goo Goo Dolls journey from college radio to the pop charts By Dave Gil De RuBio dgilderubio@antonmediagroup.com
I
t’s been 20 years since the release of Dizzy Up the Girl, the Goo Goo Dolls’ multi-platinum sixth studio album, that yielded five Top 10 singles and signaled the commercial arrival of this Western New York outfit. Arguably one of the most successful post-grunge bands to emerge out of the ’90s, the Goos did not arrive fully formed. The early days of the band found them tagged as Replacements Lite (that group’s Paul Westerberg cowrote the 1993 single “We Are the Normal” off that year’s Superstar Car Wash) and they were actually college radio staples up through the early 1990s. So while the band’s latest road stint found them helming the Dizzy Up the Girl 20th Anniversary
Tour, founding member Robby Takac is quick to point out that his band hasn’t forgotten its hardscrabble roots. “The tour has been going great and we’ve been going out doing our best to play everything that everybody wants to hear every night. With this new format of this show—going out and playing this whole Dizzy Up the Girl record—we got five of our pretty big songs out of the way really early in the set, so it really structured a really different kind of experience for us,” he said. “We would sort of put things together and there were two ways to go. We could play Dizzy and then nail everybody with a mini-set of super-hits and say goodbye. Or, we could go the opposite way and go a little deeper, which is what we decided to do. So we were a little skeptical as to how that was going to work. But it’s turned out

People have been into the whole idea and it’s been a pleasant surprise for us for sure.” While the release of Dizzy turned the Goo Goo Dolls into household names, the skids were greased by the release of “Iris,” a chart-topping power ballad released on the soundtrack to the 1998 film City of Angels. For Takac, he knew big changes were on the horizon for his group. “We had already recorded ‘Iris’ and it was already sort of bubbling up as we were recording this album. I can remember sitting in the lounge of the studio and the Stanley Cup Finals were going on,” he recalled. “Somebody was skating around with a Stanley Cup over their head [and] ‘Iris’ was playing in the background. As this was going on during the broadcast, I remember us looking at each other thinking how crazy that was. So we already knew that something was starting to happen a little bit. People were treating us differently.” It was quite a change for the thentrio that got its start in Buffalo and took its name from an ad for a toy they saw in True Detective magazine. Too soft to be considered a hardcore punk band and too aggressive to be lumped into the alternative music camp, The threesome signed up with Metal Blade Records and worked hard on their craft, touring with everyone from Gang Green and Cannibal Corpse to cow-punk outfit The Gun Club. And while the band started out with the bass-playing Takac as the lead singer, the vocal duties gradually shifted over to guitar player Johnny Rzeznik. It was all part of the learning curve and progression as a band that Takac acknowledges was needed. “I just think [having John become

the singer] was more of the journey of becoming a real band. We just had the unique or unfortunate opportunity of making that growth that most people do in private, on record. Even on our first record, I think we fancied ourselves a little bit more like The Cure than we really came off as. But I think from that, John and I learned to stand in front of a room full of people in any situation and make this thing come down. I think that 10 or 12 years of knowledge contributed when it became crunch time and we really had to make it happen,” he said. With 2019 looming, the Goo Goo Dolls are working on a follow-up to 2016’s Boxes and are set to make a major announcement for next summer. When asked about his band’s longevity, Takac pauses before acknowledging that the school of hard knocks he and Rzeznik attended helped forge their determination and hone their creative vision. “I think [our being an album band was] one of the things that sets us apart from a lot of the bands that were happening at that time. People sort of popped into that scene, when it became popular and I think we sort of rose into it as part of the journey here,” he said. “We love The Replacements, Bad Brains and The Clash and everybody that formed what we were doing early on. Especially John’s desire to move beyond what we were doing at the time, but at a reasonable pace, has led to this sort of growth over the past 30 years. When Home Was On A Long Island Whaleship

Out of the kitchen: Women of years past have gone whaling with their captain husbands.

fter waiting for her sea captain husband’s return from a two-year whaling voyage, Martha Brewer Brown was faced with either being separated from him again or leaving behind their two-year-old daughter Ella with relatives so she could join him on his next voyage. On Aug. 31, 1847, she left from Greenport to “go awhaling” on the Lucy Ann. Brewer Brown was one of 443 American women who braved life at sea. Whaling, an important part of the northeast’s maritime heritage, was a male-dominated industry: the captain, crew and ship owners were male. Women who decided to sail with their husbands broke social boundaries. After Mary Brewster chose to go with her husband William on the Tiger to the Pacific in 1846 (few women from her hometown of Stonington, CT, had done so) her bold decision scandalized her family so much that her foster mother disowned her. The little-known stories of women who defied convention during the 19th century to “go awhaling” is the subject of a new exhibit that opened last month at the Whaling Museum and Education Center of Cold Spring Harbor. The exhibit, “Heroines At The Helm,” illuminates the lives of these pioneering women through archival photographs, letters, journals, personal artifacts and period costume. “We wanted to explore the experiences and impact of whaling wives,” said museum director Nomi Dayan fo the exhibit, which is intended to honor the centennial of women’s sufferage in New York. “There is a connection in talking about these pioneering women before they had access to the ballet box.” Life aboard a whale ship was no place for a lady.
Sailing wives had to contend with unrelenting sea sickness, cramped quarters, the lack of other female companionship and pest-ridden food. They braved hardships including leaving children and family behind and having to give birth at sea. In 1856, Mary Rowland recorded in her journal, “White crawling worms about an inch long come out of the cargo of figs and raisins and large numbers make their appearance in the cabin and more particularly my room. They keep hid during the day time and like the cockroaches and musketoes make their debut at night.” Yet, in 1864, Lydia Beebe noted, “I believe this is where I ought to be with my husband. In the six years of our married life we lived together about six months and I trust now we shall never be separated again till death parts us.” Before 1845, it was rare for women to go to sea with their husbands. Business, commerce and politics were the sphere of men. Domesticity and the home was the female sphere. Modesty, piousness and devotion to family were seen to be a woman’s aspirations. Polly Gardiner, whose wedding ring is on display, accompanied her husband Captain Henry Gardiner on the Dawn in the 1820s. Gardiner is believed to be the first documented whaling wife. As more women joined their husbands at sea by the mid-1800s, one in five Yankee whalers were socalled “Lady Ships.” By the 1850s, one out of six whale ships carried the captain’s wife aboard.
Daily tasks such as laundry were a challenge. Sallie Smith noted in 1875, “The lack of good soap and fresh water made a hard task horrid.” The captain’s family was physically and socially separated from the rest of the crew. Women and children were confined to two private rooms: a sitting room and bedroom and meals were taken with officers on the forward cabin. Some captains built their wives a small wooden shed on deck, a private space so they could read or sew. Other areas of the ship were off-limits to them. The exhibit explores these women’ everyday lives. Many passed the long tedious hours aboard ship sewing or doing needlework, while others, like Brewer Brown took over the role of nursing sick crewmen. Mary Stickney, who traveled to St. Helen in 1880 to join her husband on the Cicero, kept a record of the men she treated for various ailments. Toothache was a common complaint. Many women raised families aboard ship or gave birth at sea. Nancy Marie Babcock of Sag Harbor, who sailed from Greenport with her husband Captain Hodges Babcock on long voyages during the 1850s, brought a baby trousseau with her, although sadly, her baby died in infancy in St. Helena. During much-anticipated “Gamming” parties, gatherings which happened when two or more whalers crossed paths and stopped to socialize and exchange information, a barrel-shaped wooden “Gamming chair,” on display was used to lower these “sister
sailors” from the deck of one whaleboat to another. In difficult circumstances, ingenuity was an important skill. Sarah A. Frisbie, who sailed with her captain husband Sluman Gray for 20 years, giving birth to three of her eight children during her voyages, had to decide what to do with the body of her husband after he died at sea in 1849 aboard the Hannibal. With land 400 miles away, she preserved his body in a barrel of rum before shipping him home to Connecticut for burial. There were also women who disguised themselves as men to join whale ships. “Little is known about them. We only know of the few who got caught,” said Dayan. Rebecca Anne Johnson on the whaler Christopher Mitchell of Nantucket in 1848 used her father’s name, George Johnson. After her true identity was revealed, she claimed she had cast off her petticoats to see the world. She was sent back to the nearest American consulate in Paita, Peru, and was sent back to the United States as a passenger on a returning whale ship. Artworks of contemporary multi-media feminist artists on display complement the stories of struggle and resilience of the whaling wives. In “Typology of Women,” Long Island artist Bastienne Schmidt’s hand-painted silhouette cutouts were inspired by Victorian silhouette portraits. Smaller details within the figures complicate their identity and are meant to provoke conversation on how female identity is constructed across history and culture. “I feel so close to these women, long gone, so inspired by their tales of courage,” said Dayan. “These women tapped into strong inner convictions and resources.”

In order to avoid losing a license or passport, here’s what you need to know . Suspensions are lifted permanently when taxpayers pay their tax liabilities. Requirements for Passport Revocation The IRS can refuse to issue or renew passports or can revoke passports of “seriously
delinquent taxpayers,” which are defined as those who owe more than $51,000 to the government, including both penalties and interest. Passport revocation can occur only after the IRS files a Notice of Federal Tax Lien and all administrative remedies have lapsed or been exhausted or if a levy has been issued. Taxpayers who want to cure their delinquency status must do so within 10 days after notice is given. If the taxpayer does not fully comply with this, the IRS can ask the Secretary of State to revoke or deny issuance or renewal of the taxpayer’s passport. A passport will not be revoked in these situations: the taxpayer and the IRS have entered into an installment agreement or offer in compromise and the payments
are being made in a timely manner; the debt has been fully satisfied or becomes legally unenforceable; or the debt has been suspended under innocent spouse rules. Both the IRS and New York State provide options for resolving a tax dispute including installment payment agreements and offers in compromise. The most important point to remember is that taxpayers should not neglect any tax liabilities or allow tax debts to accumulate. our favorite Food Network chefs will grace the next few issues with their takes on classic Thanksgiving recipes. This week, Anne Burrell, celebrity chef and co-host of Worst Cooks in America, delivers her recipe for the star of Thanksgiving: a Big Brined Herby Turkey.
Big Brined Herby Turkey
Prep: 36 hours Cook: 3 hours Serves: 8 to 10
For the brine:
¾ cup kosher salt ⅓ cup sugar 2 onions, diced 2 carrots, diced 3 celery ribs, diced 1 whole garlic bulb, cut in half equatorially ½ small bunch rosemary ½ small bunch sage 2 Tbsp coriander seeds 2 Tbsp fennel seeds 6 bay leaves 1 tsp crushed red pepper 1 15-lb fresh turkey (neck and giblets discarded)
For the herb butter:
½ pound (2 sticks) unsalted butter, at room temperature 2 Tbsp finely chopped fresh rosemary 2 Tbsp finely chopped fresh sage Kosher salt
For the gravy:
2 onions, diced 2 carrots, diced 2 celery ribs, diced 4 cloves garlic, smashed 8 sprigs thyme, tied together with twine 3 bay leaves Kosher salt 2 cups dry white wine 1 cup all-purpose flour 2 qts chicken stock 1. Brine the turkey: Combine 2 gallons of water with the salt, sugar, onions, carrots, celery, garlic, rosemary, sage, coriander seeds, fennel seeds, bay leaves and

crushed red pepper in a container large enough to accommodate all the ingredients and the turkey. Stir to combine. Submerge the turkey in the brine and refrigerate for three days. 2. The night before you roast the bird, remove it from the brine and pat it dry with paper towels. Make the herb butter: In a small bowl, combine the butter, rosemary, sage and some salt. Using your fingers, carefully work your way under the skin of the turkey to separate it
from the breasts and legs. Massage the butter under the skin, then all over the bird. Tie the turkey legs together with twine to keep the bird nice and compact for even cooking. 3. In your roasting pan, for the gravy, combine the onions, carrots, celery, garlic, thyme bundle and bay leaves. Season with salt. Plunk the turkey on top of the veggies and put it in the fridge overnight uncovered. This allows the skin of the turkey to dry out, which will create a
gorgeous brown crispy skin. 4. P reheat the oven to 450 degrees F. Pour the wine into the roasting pan and put the turkey in the screaming-hot oven for 35 to 40 minutes, or until it becomes beautifully browned. Reduce the heat to 350 degrees F. Baste with the pan juices and rotate the pan every 30 minutes for the remainder of the cooking time; think 17 minutes per pound. If the turkey starts to get too brown, tent it loosely with foil. 5. R emove the turkey from the oven when an instant-read thermometer registers 165 degrees F when inserted into the thickest part of the thigh. (Be sure the thermometer is not touching a bone.) Transfer it to a rimmed baking sheet, cover with foil and let it rest for at least 30 minutes. 6. M ake the gravy: Using a mesh strainer, strain the veggies out of the pan juices over a large bowl and allow the fat to rise to the top. Discard the veggies. Skim the fat from the pan juices, add it to a large saucepot and bring it to medium heat. Whisk in the flour and cook until it has the consistency of wet sand, 4 to 5 minutes. Whisk the pan juices and stock into the flour mixture. Bring to a boil and reduce to a simmer. Cook until it is thick, 10 to 15 minutes. Taste and season with salt, if needed. Carve the turkey and serve with the gravy.

Island Harvest Food Bank Secures $1 Million In State Funding

Island Harvest recently announced that it has secured $1 million from the State of New York through the 2018-19 State and Municipal Facilities Program (SAM) according to Randi Shubin Dresner, president and CEO. The funding, which was secured by the New York State Senate Majority’s Long Island delegation, will go towards Island Harvest Food Bank’s ongoing capital campaign to be used to purchase a permanent building to consolidate operations, improve distribution efficiencies and expand the hunger-relief organization’s distribution services and programs that assist 300,000 food-insecure Long Islanders. Northwell Health Launches Campaign To Transform Health Care N
orthwell Health has publically launched its first system-wide, comprehensive fundraising campaign to propel innovations to advance health care across the globe. The public launch of Outpacing the Impossible: the Northwell Campaign, an ambitious $1 billion, seven-year effort to support Northwell’s promise to the people it serves, was held at Northwell’s Center for Advanced Medicine in Lake Success recently. The event brought together more than 600 of the organization’s highest-level benefactors who support initiatives across the health system’s footprint. This comprehensive campaign supports capital projects, improves hospitals and clinical programs, and advances research and funding an endowment for teaching and research initiatives. A significant portion of the campaign will also be allocated to the development of Northwell’s care locations in Manhattan. Northwell Health is comprised of 23 hospitals and more than 665 outpatient care locations throughout the New York metropolitan area and beyond. Outpacing the Impossible includes all funds given by individual donors, corporations and foundations. Donors to Northwell have given nearly $500 million since the campaign’s inception on Jan. 1, 2016. on-alcoholic fatty liver is the most common chronic liver disease in the United States affecting 60100 million Americans. Most people are diagnosed when an abdominal ultrasound performed for an unrelated reason reports fatty liver. Fatty liver disease is a spectrum which ranges from just fat, to fat and inflammation, to fat and fibrosis, to cirrhosis and all its complications. Only about 2-4 percent of people with fatty liver develop significant liver disease. Non-alcoholic fatty liver disease is associated with diabetes and being overweight. In addition, about 7-10 percent of people with fatty liver do not have diabetes and are not overweight. These people have what is called “lean fatty liver” and is more likely to progress to advanced liver disease than fatty liver associated with diabetes and/or obesity. With so many people

having fatty liver disease, the real question is how is it treated. Currently, there are no medications approved to treat this condition. Treatment is centered around diet, exercise and weight loss. Of these, the most important is diet leading to weight loss. Some simple strategies for dieting include reducing total intake of dietary fat, avoiding concentrated sugars from sugar sweetened beverages, pastries, cookies, cakes and other sweets, reading food labels to avoid products containing high fructose corn syrup and being mindful of hidden sugar sources in breads, cereals, yogurts, salad dressing and condiments. It is also a good idea to limit refined white carbohydrates from such items as white bread, pastas and rice and replace them with whole grain sources. Eating more non-starch vegetables such as broccoli, asparagus, kale
and spinach and choosing low glycemic fruits such as berries and melons is healthy alternative to those products listed above. Alcohol, unless taken in small quantities, should be avoided. There is a tremendous amount of clinical research currently underway evaluating medications to treat fatty liver. Most of these therapies are targeting patients with either bridging fibrosis or compensated cirrhosis. In other words, patients with advanced disease. Different classes of therapies, all oral, such as FXR agonists, PPAR agonists, ASK1 inhibitors, FGF19 agonists and CCR2/5 antagonists are in development. It is likely that the first approved medication for non-alcoholic fatty liver will be an FXR agonist. Once approved, all these new therapies will need to be taken in combination with the lifestyle changes of diet and exercise. I believe that not any

one of these new medications will be effective in all people and that combinations of new therapies will be required. It is also highly likely that these treatments will be long term and expensive. Non-alcoholic fatty liver disease is a worldwide epidemic and the most common chronic liver disease in the United States. Weight reduction remains the primary treatment for this condition and loss of 7-10 % of body weight has been shown to dramatically improve underlying liver inflammation and fibrosis, even in patients with cirrhosis. Significant research to develop new medications is ongoing and we should see several new products approved in the next 2-5 years. It is important to emphasize that these medications will not be a substitute for healthy eating and exercising. The magic weight loss pill is just not a reality.

Your child is sick. It starts with a cough and runny nose and quickly develops into something resembling a common cold, but it’s more than that. So what is it? A common viral infection of the lungs in babies and toddlers called bronchiolitis. While bronchitis and bronchiolitis sound similar, they are not the same. Both are infections of the lungs, but bronchiolitis goes deep into the lungs causing inflammation of the small airways (bronchioles), which for small children can result in a serious cough, wheezing, trouble breathing and can be scary stuff for parents. What information do parents need to know about bronchiolitis to keep their children healthy? First, bronchiolitis is caused by a variety of viruses, but is most commonly attributed to Respiratory Syncytial Virus

Decrease the chances of getting bronchiolitis the same way you would protect your child from getting a cold: frequent hand washing, sanitizing of toys and areas where your child plays, keeping your child home from daycare (if possible), and getting your child (six months or older) a flu shot can all help. For some children,
bronchiolitis may require more attention. If your child develops a cold and has a bluish-gray color to the face, lips or nails, or is flaring the nostrils or retracting the muscles between the ribs be sure to see an emergency pediatrician immediately. This is particularly important for children who were born prematurely, are less than three months old, are exposed to secondhand smoke or have pulmonary defects or other chronic diseases. Nassau County Firefighters Museum Offers Tips for a Happy, Safe Thanksgiving

hanksgiving is one of the most joyous times of the year, a time when friends and family gather together to celebrate and give thanks. Nassau County Firefighters Museum and Education Center offers some simple advice and tips to help residents stay safe during the holiday. According to the National Fire Protection Association (NFPA), in 2015, fire departments in the United States responded to an estimated 1,760 home cooking fires on Thanksgiving, making it the busiest such day of the year. Unattended cooking is by far the leading cause of home fire deaths and injuries. “Thanksgiving kicks off a great time of year that we are gathered with family and friends,” said John V. Murray, Nassau County Firefighters Museum’s Chief Fire Safety Instructor. “We strongly urge all Long Islanders to take fire safety seriously during the holiday season, and to follow some simple tips to avoid a tragedy. We wish everybody a very happy and safe Thanksgiving and ask that nobody ever hesitate to call 911 in the event of an emergency, even on a holiday.” The most common factors in home cooking fires and ways to avoid them: Unattended cooking This is the leading cause of fires in

The Home Cook Celebrity chef, author and restaurateur Alex Guarnaschelli shares what she loves about Long Island By JeNNiFeR FauCi JFauci@antonmediagroup.com
A
lex Guarnaschelli is passionate about many things, from food to travel to charities. But if you get her talking about the history of American cuisine, she will proudly take her place in line and educate you on all things food and how simple ingredients are sometimes the most wonderful items in a cook’s kitchen. After moving to France for several years to study at La Varenne Culinary School in Burgundy, Guarnaschelli began making a name for herself on the culinary scene. She returned to New York and in 2003, the venerable chef became the executive chef at Butter Midtown, a stylized dining destination that specializes in elite American fare, located at 415 Lafayette Street in Manhattan. The Food Network star recently wrapped up her cookbook, The Home Cook: Recipes to Know By Heart. It seems cooking along with writing is in her blood, as the chef’s mother edited
the seminal 1997 edition of The Joy of Cooking, which defined the food of the late 20th century. On her website, Guarnaschelli states, “I honestly feel as if I learned to eat according to whatever cookbook my mother was working on at the time.” In The Home Cook, Guarnaschelli pens a cookbook for the everyday eater, with 300 recipes including Roasted Beef Brisket with Pastrami Rub, Fennel and Orange Salad with Walnut Pesto and Dark Chocolate Rum Pie. A sucker for a good farm stand—she once said that her heart palpitates when she goes to one and has to resist the urge to buy everything in sight— Guarnaschelli loves fresh produce, and would love to cook her way through Long Island, vegetable-wise.

Do you have a must-cook recipe this time of year? I have to go with the roasted chicken wrapped in bacon. It goes beautifully with so many great Long Island fall ingredients, like slow-cooked apples or roasted grapes. What’s new at Butter? We have a lunch prix fixe menu for fall with seasonal ingredients. I always enjoy the transition from corn and tomatoes to squash and pears.

Dark Times Are These Binge-worthy shows perfect for winter’s gloom By STeve MoSCo

here’s always a new batch of shows and movies being dumped across streaming platforms, seemingly on a daily basis. But perhaps the most crucial contribution of these services—Netflix, Amazon and Hulu, specifically—is the overabundance of quality original programming perfect for binging when the weather is cold, dark and dismal. Here are three series from Netflix, Amazon, Hulu that will keep you cozy and warm in your melancholy.
The Handmaid’s Tale
Hulu, 2 seasons, 23 episodes Where The Man in the High Castle sees America destroyed by an outside force, The Handmaid’s Tale shows what could happen to this country when the threat comes from within. A dark, dour glimpse at the most dystopian of futures, The Handmaid’s Tale is basically a worst-case-scenario put to screen—women deemed “impure” are either placed into labor camps where sure death awaits, or they are forced to become broodmares for upper-class women who are unable to have children of their own. Based on the Margaret Atwood novel, the series shows the bleakness of the new world, along with the events that led to the fall of modern America. It’s helmed by an enthralling and fearless lead performance from Elizabeth Moss.
The Man in the High Castle
Amazon, 3 seasons, 30 episodes Based on the novel by Philip K. Dick, The Man in the High Castle tells the story of what the world would be like if the Axis Powers had been victorious in World War II. As the show enters its third season, it continues to follow the storyline of a small band of rebel citizens of America (now divided into Nazi America and the Japanese Pacific States) as they covertly try to undermine the tyrannic German and Japanese ruling regime. A tense drama, The Man in the High Castle also does an excellent job of humanizing characters that would otherwise be portrayed as mere monsters, particularly the character of John Smith (Rufus Sewell), a Nazi officer wrestling much higher stakes than merely keeping the working class in line.
The Haunting of Hill House
Netflix, 1 season, 10 episodes A modern reimagining of the classic Shirley Jackson Gothic horror novel from the 1950s, The Haunting of Hill House follows siblings who grew up in what would become the most famous haunted house in the country. Through a series of flashbacks, the now-adult siblings are forced to deal with the baggage accumulated through the horrifying trauma they experienced inside the house. Suspensefully written, artistically shot and brilliantly acted, The Haunting of Hill House is 10 episodes of unnerving intensity, including one of the best “jump scares” ever put to film in the first episode. It’s a show you might want to start binging early in the morning, long before the sun goes down, then take the edge off with a quirky comedy before bed.

Holiday classic A Christmas Story turns 35 By JeNNiFeR FauCi
n the night of Thanksgiving, I grab my list of holiday must-watch movies and specials and get to work binging the best television Christmas has to offer. While my list grows from year to year (I have added a few Hallmark movies), there is one mainstay that will always stand the test of time: A Christmas Story. The leg lamp, the pink bunny costume, the coveted Red Ryder BB gun, the Bumpus hounds—all are staples of this beloved film. Based on the humorous writings of author Jean Shepherd, A Christmas Story follows the wintry adventures of 9-year-old Ralphie Parker (Peter Billingsley), who spends his time dodging bully Scut Farkus and dreaming of his ideal Christmas gift, an official Red Ryder Carbine Action 200-Shot Range Model air rifle. It is a gift that seemingly no one will get Ralphie, although he holds out hope for the big guy himself. At one point or another, we have all related to Ralphie’s trials and tribulations and it is such fun to watch it

play out on screen, especially when he goes to great lengths like centering his English theme essay around the hallowed dream gift. Released on Nov. 18, 1983, and set in 1940s Cleveland, OH, the fun-loving and entertaining film introduces us to The Old Man (Darren McGavin), Mother Parker (Melinda Dillon), Ralphie’s brother Randy, and friends Flick and Schwartz. Narrated by adult Ralphie, it explores Christmas through a child’s eye, capturing the magic, anticipation and sometimes frustrations of the season. Originally, the low budget movie lacked fanfare and was a flop for a decade, until 14 years after its release when it aired in syndication, gaining popularity as a must-view holiday film. Similar to It’s a Wonderful Life, which also did poorly at first, A Christmas Story has joined the ranks of television traditions as it separates itself from the overly sweet and endearing qualities of films like Miracle on 34th Street. If you’re ever in Cleveland, visit A Christmas Story House, which was the actual home of the Parker family in the film.

t’s been a rough start for rookie New York Jets quarterback Sam Darnold as he is dealing with the growing pains of playing in the NFL. He’s thrown more interceptions than touchdowns and has been getting knocked around by defenders. The Jets offense ranks near the bottom of the league, and despite a few nice games, Darnold shoulders blame for the team’s lack of success on that side of the ball. With all that being said, no one should be worried about the 21-year old just yet. He has plenty of potential to be the future star the Jets drafted with the third overall pick. And there’s plenty of proof that high draft picks can rebound into having phenomenal careers after horrid rookie seasons.
Peyton Manning Manning was thrown into the fire as a rookie, starting all 16 games of the Colts’ tumultuous 1998 season. Manning’s performance throughout the season was so bad, he still holds the record for most interceptions thrown by a rookie to this day. He was also sacked 22 times as he tended to throw the ball a lot, also leading the league in attempts. His career turned around quickly as he had back-to-back 4,000 -yard passing seasons from 1999-2000. He finished his illustrious career with 14 Pro Bowl appearances and seven All-Pro First Team selections, as well as two Super Bowl victories.

Steve Young It’s worth noting that Young played a few seasons in the USFL prior to the start of his NFL career. With that said, it didn’t make his first season with the Tampa Bay Buccaneers in 1984 much easier. In five starts, he threw only three touchdowns alongside eight interceptions. His only win in the season came in an overtime showdown with the Detroit Lions, where he was sacked six times but still threw for 167 yards and ran for 60. After being traded to the San Francisco 49ers, he ended up having a hall-of-fame career. Young was on the All-Pro First Team three times and appeared in seven Pro Bowls, winning a single Super Bowl as a starter. He also led the league in touchdowns four times.

Troy Aikman Aikman had a lot of expectations when he was drafted in 1989, as many Dallas Cowboys fans had been waiting for the team to turn things around quickly. With a lot of the roster still needing talent, Aikman struggled heavily in 11 starts as the Cowboys went 1-15. He finished the year with nine touchdowns and 18 interceptions, not winning a single game as he missed the Cowboys’ sole win due to a broken finger. Following a better second season, he had six straight seasons of Pro Bowl appearances and three Super Bowl victories, with help from superstars Emmitt Smith and Michael Irvin.

John Elway After wiggling his way out of playing for the Indianapolis Colts, Elway made his debut as the Denver Broncos’ quarterback in 1983. His season was difficult from the start, with four sacks and an interception in a win over the Pittsburgh Steelers.
