The Italian Way
Spending her childhood summers in Italy only strengthened the love chef Donatella Arpaia had for the culinary world BY JENNIFER FAUCI
I
f you ask any chef how they came into their craft, most of the time the answer is simple: they were born into it. Such is the case for chef Donatella Arpaia. The Woodmere native grew up in the restaurant business, spending summers in Italy where her mother’s family made their own olive oil. It was also during her childhood when Arpaia’s father encouraged her to become an attorney, feeling that the education and training would benefit her. But one day in a restaurant kitchen changed everything. “Food has always been an integral part of my life,” says Arpaia, who made the decision to attend law school after graduating from Kellenberg Memorial High School in Uniondale and furthering her studies at Fairfield University. She received her Juris Doctor from St. John’s University. “I was very focused on my studies and after I graduated, I passed the Bar exam and started working. I realized very quickly that practicing law was not something I would be happy doing nor something I was passionate about.” Arpaia had her “a-ha moment” when she

stopped at her brother’s restaurant on the way home from work. Shortstaffed, she lent a helping hand, forever changing her career path. “I immediately felt alive. In that moment, everything became clear. I knew that I had to go into the restaurant business and so I just did it and never looked back,” she says, making the decision to attend the French Culinary Institute and the Italian Culinary Academy. She opened her first restaurant, Bellini, in 1998, along with several others including partnerships with fellow chef Michael Psilakis. Like many of her culinary colleagues, Arpaia truly loves feeding people, including her family (she is married to cardiac surgeon Allan Stewart and is a proud mom to her 6-year-old son, Alessandro). It makes her happy to know that with food, she is creating so much more than a meal, but rather “moments and memories,” among others. “I love the creativity and everchanging aspect,” she says of cooking. “There’s always something new to learn, but my three musthave ingredients will always include an excellent olive oil, garlic and tomatoes. It’s obvious I’m Italian.” With her roots embedded deep in Italian tradition, it was that culture that not only inspired, but shaped her culinary background. “My heritage truly informs my cuisine. I am Italian and I grew up spending three months every year in Italy,” says Arpaia of her connection to the country. “My earliest food memories come from those early first bites. Although I dabble with other cuisines at times, Italian cuisine is the one I always go back to. Italian food is home to me.” Arpaia recently made Italian home to Grand Central Terminal with her new venture, Prova Pizzabar. According to Arpaia, “Prova” means several things in Italian, such as “to try something new.” “The pizza at Prova is a new

creation, but ‘Prova’ can also mean ‘proof,’ which is something unique about our pizza—the proofing process occurs over two to three days, leading to a highly digestible and unique dough,” she says of the pizza, which customers can order in margherita, four cheese, mushroom and vegetable. Prova is the signature pizza, comprised of cherry tomatoes, burrata, baby arugula, speck and truffle oil. The menu also features salads, pastas, Stromboli and Arpaia’s famous meatballs. Switching from pizza to pasta, the chef loves a good blend of ingredients in her dishes. “The orecchiette with sausage, garlic, chili, Romanesco, Parmesan and breadcrumbs is perfect for fall,” she says of one of Prova’s pasta dishes. “Romanesco is a great fall ingredient—it’s hearty, wholesome
and a comforting dish.” With everything running smoothly at Prova (including plans for a second location), Arpaia is in the midst of launching her new website, which will feature an e-commerce site where customers can buy her famous meatballs as well as other products. Gearing up for the holiday season, Arpaia teamed up with the home and décor website Frontgate for her holiday collection, which she says “is truly a labor of love.” And that hardworking mindset and diligent persistence to follow her dreams is something the chef says is necessary for those aspiring to a life in the kitchen. “The culinary world today is very different than when I started. Certain aspects, like opening your own restaurant, have become much more difficult,” says the chef, also noting that in other ways the opportunities have expanded greatly, especially for women. “I think it’s important, if you want to switch careers, to keep your job and start out with a part-time internship to truly understand what the lifestyle is all about. If you really love it and are passionate about it, then go for it.”

T
he Saddle Rock Grist Mill, located in the village of Saddle Rock between Grist Mill Lane and Little Neck Bay, is an historic grist mill building. Dating back to the 18th century, the two-anda-half story gambrel-roofed structure’s original use was as a storage house for ground grain and corn. It is the only extant, operating tidal grist mill on Long Island. Overlooking Little Neck Bay, adjacent to the mill is a
stream-fed millpond that is supplemented by tidal water impounded by the dam. A beautiful, peaceful area that looks like the picturesque Northeast during the autumn season, this spot of perfect for reading, relaxing and a thoughtful spot to muse. The building underwent a restoration in the 1950s and was added to the National Register of Historic Places in 1978. Today, it is operated as a local history museum.

reat Neck is home to an eclectic mix of eateries and restaurants that run the gamut from Asian, Persian, American, Mexican and Italian. With a town so diverse, there’s plenty of room for more culinary hotspots. Make a reservation at one or more of these new establishments this season.
Royal Tea House Having afternoon tea complete with delicate china and delectable pastries, sounds like something out of a fairytale, but becomes a reality when walking into the newly opened Royal Tea House. Only open for a few short months, it’s already a popular spot for tea parties, private parties and upscale dining. The lunch menu, served Monday through
Friday from 11:30 a.m. to 3:30 p.m., is small, but offers a few options for starters, salads, soups, specialties and sandwiches, including the already renowned Royal Tea House Lobster Roll. A dinner menu offers several main course dishes, each served with spiced vegetable purée, sautéed greens and garlic bread, and include seafood paella and pan-seared duck breast with
fennel and arugula salad, glazed apples and blueberry sauce. Brunch replaces their lunch on weekends, with pastries, sandwiches and classic dishes. And, of course, their tea menu is extensive, boasting hot or iced various traditional English black, green, fruit and milk teas from all over the world, including their Cherry Almond Black Tea, a dessert tea that combines the flavor of plump red cherries with rich almond oil. Ruby Divine Indian Dining Ruby Divine opened its doors in Great Neck and the rich and spicy aromas of cooking food waft out, enticing customers to experience their authentic Indian dishes. Helen Slater looks back on her empowering start

hen Wonder Woman crashed the superhero boys’ club this past summer, it marked the beginning of strong, female-led genre movies being more than mere novelty. But back in the 1980s, an actress took on two iconic roles that displayed the sheer strength of a female hero. Helen Slater, the first on-screen embodiment of Supergirl, the female fighter for truth, justice and the American way, was born in Bethpage and lived in Massapequa and Great Neck—including a stint at Great Neck South High School. Slater donned the cape to play Superman’s cousin in 1984’s Supergirl. Her first big-screen role, Supergirl saw Slater acting opposite heavyweight film talents including Faye Dunaway, Mia Farrow and Peter O’Toole. For the young Slater barely out of New York City’s High School of Performing Arts, it was a master class in the art of acting. “Looking back, it was very daunting. But the performing arts school was intense and I felt like it trained me for that moment,” says Slater, adding that she and O’Toole would workshop Shakespeare during rehearsals. “That was a real mentorship. He loved theater and acting. But they were all so kind to me. I never felt like they were these big powerhouses that I couldn’t approach.”

Recently, Slater’s career came full circle when she took the role of Eliza Danvers, Supergirl’s stepmother on the CW series Supergirl, with Melissa Benoist in the starring role. Slater said that when she first caught a glimpse of Benoist in full costume, she had to stop and take a breath. “I really did have a sensory whiff of my younger self from 30 years ago. It was very memorable and a moving moment,” she says. “Melissa [Benoist] is such a kind, sweet and talented woman. I feel so lucky to have been asked to join the show and the writers are giving me such lovely things to do with the character.” Slater has worked steadily in a wide range of roles since 1984’s Supergirl, including star-turns alongside Bette Midler in Ruthless People, The Secret Of My Success with Michael J. Fox, City Slickers with Billy Crystal and a long list of television roles. But of all the parts she has played, Slater hears the most praise from fans for her titular role in 1985’s The Legend Of Billie Jean. In the film, Slater plays a modern day Joan of Arc—complete with symbolically short hair—as she fights against subjugation and the amoral bombast of male authority figures. Sporting the fist-pumping call-to-action “fair is fair” and a soundtrack that includes Pat Benatar’s anti-authority anthem “Invincible,” it is a snapshot of the 1980s, but with themes of empowerment that excelled it ahead of its time. “There weren’t a ton of strong female roles when Billie Jean came out, and the way her strength and sexuality were portrayed was not usual at the time,” says Slater, adding that the film didn’t achieve its following until after it started airing on television. “She was a super strong chick leading these disenunderdog, ragtag, disen franchised kids. She fought for justice when she couldn’t get it through regular channels and I think that resonates with people.”
With her roles as Supergirl and Billie Jean, as well as Talia al Ghul in the 1990’s Batman: The Animated Series and stints on DC Superhero Girls, Slater is no stranger to inspiring young women with her characters—but what she would really like to see is women of her generation experience their own sense of empowerment. “It’s really only recently occurring to me that a lot of my roles have had a positive impact,” she said. “I would

love to do it for my generation of women. I don’t feel like there’s enough of that for women over 40 or 50. I’ve worked steadily over the years, so I don’t feel it deep in my bones, but work does become harder to come by and you do feel more invisible. I would love for that next big character to be for this generation of women.” With this past summer’s success of Wonder Woman, its star Gal Gadot and its director Patty Jenkins, Slater said it feels as though she is living through a mini-awakening in terms of opportunities for women in the film industry. “It’s remarkable that I wasn’t more aware of the shortcomings in the ‘80s, ‘90s and early 2000s. Now, people are outraged and I almost feel a little embarrassed that we weren’t more on top of that early on,” she said. “It was just accepted that men were directors and that women only liked romantic comedies. But no, look. There are real powerhouse women out there.” And though she did not know it at the time, Slater’s early work makes her one of the original powerhouse women. “When I was acting as Supergirl and in Billie Jean at 18 or 19 years old,” she says, “I wasn’t aware of the impact these movies would have.”

When considering the hallmarks of a strong family, one often thinks of words like stability, tradition and care. Perhaps it’s no coincidence that those same words have served as a de facto mantra for Great Neck Alert, dating all the way back to its inception in1901.

The volunteer fire company has thrived largely on the strength of several generations of community members who dedicated themselves to making a difference. “My father’s uncle, a gentleman named Joe Krampton, who had a very large construction business in Great Neck, was a charter member of the fire department in 1901,” says Peter Meade, ex-president and a 50-year member of Great Neck Alert. “My older brother [was involved] and my nephew was as well.” “For years, that’s kind of the way the fire company was,” adds Great Neck Alert president Michael Berry. “Your parents were members and you grew up [and joined]. And then they started a junior program, I think it was in 1982. Basically the kids would join and now their kids are joining. It’s been like a family business.”

According to Fire Chief James Nubert, the addition of the junior program has paid dividends towards maintaining the fire department’s familial traditions, and has also made it possible for aspiring firefighters to get a feel for the responsibilities of the job at an early age. Great Neck Alert currently has a full junior roster, composed of 30 kids from ages 12 to 16. By age 17, junior firefighters can attain full membership, a feat which three current Great Neck High School students have already achieved. “They do kind of the same tasks and skills that we do, on a lesser level,” Nubert says. “When they get to the age where they can join, they already have some training under their belts.” Needless to say, it’s taken a remarkable amount of consistency for the department to

remain a fixture for 116 years, but Meade notes that much has departchanged in both the depart ment and the community it serves. For one thing, Meade recalls a time in which the firehouse was something of a makeshift community center, in which kids could in-hang out, do their homework and in teract with the department’s older members. Those days, for the most part, are over, Meade says. “I also think there’s a cultural divide in that, when I joined, the old-timers took you under their wing,” Meade continues. “I had friends that were in the firehouse 20 years before I joined who became friends of mine very quickly, nurtured me along and mentored me. Today, you don’t see a tremendous amount of that; it’s because they’re not in the firehouse. People don’t hang out the way they used to. Younger members don’t get to spend a lot of time with the senior people.” “The commitment that’s needed in a fire company nowadays is much tougher,”

adds Berry. “And it makes it a lot tougher to maintain members, to stay in the community, because the restrictions are tighter and the community has changed over the years.” One thing that hasn’t changed, however, is the department’s goal to draft high-character community members into its core membership. Meade considers it a blessing that Great Neck Alert has developed a knack for picking excellent leaders, many of whom are immortalized in photographs on the department’s interior walls, which resembles a fire museum as much as it does a still-functioning firehouse. “Every day we’re out there—whether it’s a carbon monoxide leak or someone locking themselves out of the house—if we’re helping people, that’s what makes us all retain our membership,” Nubert says. “There aren’t words to describe some of the emotions, based on things that have happened over the years and the rescues that have been made,” Meade adds. “Those are the memories that never leave you. You can’t buy that for all of the world.”

A
life that is spent studying, training and preparing to do good in the world deserves to reap all the benefits of success. For some people, personal success is measured in moments of changing the lives of others. Andrew Jacono M.D., FACS, is a board certified plastic surgeon and global authority in the field of facial plastic and reconstructive surgery. Although his Great Neck practice, the New York Center for Facial Plastic & Laser Surgery, caters to patients looking for a younger version of themselves, Jacono’s work as a pro bono surgeon around the world tugs at the heartstrings, as he gives life a new meaning for children born with facial abnormalities. “My desire to become a facial plastic surgeon was solidified in grade school. There was a girl who was on my bus route and lived in my neighborhood who was born with a cleft lip and palate deformity,” says Jacono. “Unfortunately, whenever she spoke, the air and words escaped through

her nose. Kids teased her and were cruel, and nobody would sit next to her on the bus, so I decided I would sit by her.” Jacono recalls the girl being very nice and sweet and not at all deserving of harsh treatment by her peers. He felt bad for her and wished he could help, but also remembers being acutely aware at such a young age, of how judgmental people were of physical appearances. “It seemed unfair to me. There was so much more to her than her cleft lip and palate,” says Jacono, noting that the girl had plastic surgery and returned to school with her face repaired. “Suddenly, we all saw her face instead of her deformity and kids immediately treated her differently. Fair or not, this was the reality.” Relieved and happy for his bus buddy, a young Jacono was intrigued at how a face could be changed. “This seemed to me to be a formidable power and I remember thinking that I wanted to do that,” he says. “I wanted to fix people’s faces. I wanted to change their lives.”

Jacono earned his medical degree from the Albert Einstein College of Medicine in New York, before completing internships in general surgery at St. Vincent’s Hospital and Medical Center. He completed his surgical residency at the New York Eye and Ear Infirmary specializing in otorhinolaryngology. Jacono’s overriding goal as a surgeon is to deliver natural-looking results with minimal downtime, scarring and risk—something he has successfully done throughout his 21 years of practice—and that mindset also extends to domestic abuse victims and children. “Early in my career, I repaired the
broken nose of a woman who said she had been injured in a car accident. Several months later, she returned a second time, claiming she had broken her nose in yet another car accident,” recalls Jacono, later learning that the woman’s broken noses were the result of an abusive relationship. As the senior advisor to the American Academy of Facial Plastic and Reconstructive Surgery’s (AAFPRS) FACE TO FACE, a national project offering pro bono consultation and surgery to victims of domestic violence that have suffered facial disfigurement, Jacono has provided pro bono reconstructive surgery to more than 100 female victims. His work with said victims was chronicled in the television series Facing Trauma on the OWN network and Discovery Fit & Health. Jacono, who began volunteering in 2002, believes that “philanthropy is a cornerstone” of his practice and his passion for giving back is heightened every day. On average, he spends approximately four weeks a year performing pro bono surgery, which includes trips around the
We Are Great Neck... world helping children with facial deformities. “As a father of four, I’m passionate about helping children across the globe,” says Jacono, who volunteers for numerous charity organizations aimed at helping children with limited medical and financial resources receive surgeries. “To date, I have completed surgery on more than 500 children through missions with Healing the Children, the HUGS Foundation and T.H.A.I Children, among others.” Jacono recently returned from leading a mission in Santa Marta, Colombia, with healing The Children Northeast (his 10th mission for the organization) in which he and his team performed surgeries on children with cleft lip and palate deformities, as well as microtia, an underdevelopment of external ears. His next mission is planned for Ecuador in April 2018. Like any philanthropic venture, Jacono raises money for his pro bono work by mountain climbing and running marathons with his family. He is also a proponent of social media platforms to raise awareness. “If people can see the direct impact in a child’s smile, it’s a powerful message,” he says of his work. “There is no better feeling than being able to give children new faces and smiles. Lake Success communities, saying that both clubs do a lot to serve and carry out the mission of Rotary. A sample of Great Neck Rotary Club programs and events include its summer music series, oral cancer screening and youth development through mentoring its Interact members, the high school Rotary clubs and scholarship. One of the biggest and most successful programs that the club hosts each year is its Thanksgiving Dinner Program. “We provide a complete Thanksgiving meal to more than 1,000 families each year,” says Chizever. “For people who are down on their luck or just not doing well, we like to give them a meal so they can be with their families on Thanksgiving.” The club distributes the bagged meals, complete with turkey, stuffing, vegetables and dessert, to worthy agencies and organizations where the meals are then distributed to families who are in need.
