or all the planning we do during the holidays, the last couple of weeks before the big parties and family gatherings can trip up the best of budgets. Perhaps what’s needed is some last-minute tricks to keep overspending to a minimum. Here are a few ideas to get you through. Track your spending If you’re close to the upper end of your budget and you’re not quite sure what’s happened, go through those receipts. Maybe you and your partner or spouse are shopping independently, spending too much on gas, meals out or failing to coordinate on the items you need. Maybe the kids are adding items to their lists at the last minute. It’s toughest to say no to kids, so see if there are adult gifts, decorating items or seasonal specialty food you really don’t need to purchase. In
other words, if your budget is tight, identify the expenses you can alter and adjust your spending plans.
Don’t ignore the cost of returns Some retailers are strict about return policies on a host of items, which makes it doubly important to save all your receipts. If you’re giving gift cards, make sure the recipient has the purchase receipt in case the card doesn’t work. If you’ve bought items online, make

However, take one additional step with shipped returns—see whether the seller is charging you more for their convenient shipping label option than shipping the item back locally in your own packaging. Finally, keep restocking fees in mind—some retailers charge in excess of 10 percent of the item’s cost to accept a return, particularly for electronic and mechanical purchases that involve heavy packaging. Ultimately, the best time to check return policies is before you buy, but if you do have to return items, consolidate those trips to save time, gas and money.

Fastapproaching holidays and busy schedules can leave us tired and distracted, so keep a close watch on potential risk for identity theft, (www.identitytheft.gov) package theft from cars, homes and apartment vestibules. If you take public transportation, use extra caution to keep your money, purchases and personal technology hidden from thieves. Old Bethpage Village Restoration’s Holiday Candlelight Evenings

andlelight Evenings at Old Bethpage Village Restoration (OBVR) will take place on Dec. 15, 16, 17 and 18 from 5 to 9:30 p.m.
Candlelight Evenings offer a Hallmark card-setting of flickering candles inside the village’s historic homes, along with 19th-century holiday decorations and entertainment, all set within the confines of a rural valley setting. very year, holiday shipping should be getting easier with upgrades in technology, convenient shipping options and packing solutions. However, getting your items to their destination ahead of the holiday takes a little extra planning and adhering to some reasonable shipping deadlines for many of the letter and parcel carriers. Delivery in time for the holidays depends, not only on getting your packages and Christmas cards to the shipping agent on time, but on the outer labeling and condition of the packed box.

Here are a few tips to packaging and sending a box or letter safely: • Choose a box with enough room for cushioning material around the contents inside. Many boxes are rated for weight limits also. Choose a box that can handle the weight of the contents during transit. • Place cushioning around your items. Close and gently shake the box to see whether there is enough padding. Add more newspaper, packing foam, or plastic cushioning material if you hear things moving around. • Whenever possible, use a new box. If you are reusing a box for shipping, make sure that old labels and markings are completely blackened out or removed. • Tape your box shut and reinforce the seams with 2-inch wide tape. Use clear or brown packaging tape, reinforced packing tape or paper tape. Do not use cord, string or twine because it gets caught in mail processing equipment. • If you are shipping a package with any of its lengths longer than 100 inches or exceeding 70 pounds, check with the intended carrier for specific instructions and packing directions. • Using a complete and correct address is critical for efficient delivery. When shipping via United States Postal Service (USPS), always use the five digit zip code, plus four digit routing, when possible. For example 11040-5409. • Many of the local carriers provide appropriate shipping boxes free of charge. Check the individual websites for ordering instructions for additional empty boxes suitable for packing and mailing. Here are the suggested mailing dates for three of the major services. Mail early and mail often. These are approximations; actual delivery dates should be confirmed with your selected carrier.

anukkah, the eight-day festival of light that celebrates the triumph of good over evil, is one of the most sacred holidays of the Jewish faith. While it is a time to reflect upon life, love, family and friendships, doing so over a plate of latkes will undoubtedly make it better. Whether Jewish, Christian, Hindu, Muslim or whatever religion one chooses to practice, anyone can enjoy a good helping of potato pancakes. Luckily, this festival feast staple has few ingredients, follows simple instructions, is relatively quick to cook and conducive to being prepared in a variety of styles. To start, here’s a traditional latke recipe in its simplest form. If followed accordingly, these instructions should yield 12 to 16 latkes.

BASIC RECIPE Yields: 12-16 latkes

1 lb potatoes peeled ¼ cup finely chopped shallots 1 large egg, lightly beaten ½ cup panko breadcrumbs 1½ tsp salt and freshly ground black pepper Vegetable oil for frying (or coconut oil as a healthier alternative)
Grate the potatoes either by hand or by placing them in a food processor, and add to a large bowl of cold water. Let the shavings soak for one to two minutes, then drain well. Spread the potatoes and finely chopped shallots on a cheesecloth or towel and gently squeeze to get rid of excess moisture. Next, add the potatoes and shallots to a bowl and stir in the egg, salt and pepper. Coat the bottom of a large stovetop pan with either vegetable oil or coconut oil and put it over a medium flame. Take the potato mixture and form round pancake-like shapes consisting of about two tablespoons worth. Working in batches of four latkes at a time, cook each for about five minutes until the undersides begin to brown, then flip. Transfer the finished latkes to a towel to absorb excess oil and season with more salt and pepper. Repeat the steps for each batch, adding more oil to the pan as necessary. Though they are delicious as is, with a few extra add-ons, transform regular latkes into the talk of the dinner table. SPICY

When in doubt, just add cheese. And while you’re at it, why not add three different kinds? From cheddar, to Swiss, to pepper jack and everything in between, there’s no limit to what can be made of the cheesy delicacy. One option is a cheddar, parmesan and mozzarella blend. Add a little or add a lot for the optimal amount of melty greatness. For a side dip, make use of your favorite tomato soup. SWEET
Easily swap the regular potatoes for sweet potatoes and you have a new dish entirely. Not only are the sweet potatoes tasty, but it is also a healthier carb alternative, proven to be an excellent source of Vitamin A, Vitamin C, manganese and other essential nutrients. To the finished product, add a bit of powdered sugar and some honey mustard dipping sauce or applesauce on the side. HEALTHY
Add a healthy dose of vegetables to your latkes. Ingredients may vary depending on personal preferences, but opt for leafy greens, like spinach and kale, and root vegetables that can be easily grated, such as beets, parsnips, carrots, radishes and kohlrabi. Finely cut your vegetables of choice or put them in a food processor. To rid of excess moisture, place them in a cheesecloth and squeeze. Then add the vegetable mixture to the original latke recipe above, with one added egg. The final product can be best paired with sour cream or greek yogurt.

a dash of cayenne and grated raw jalapenos. Include as little or as much as you’d like depending on what your taste buds can handle, and add a teaspoon of lemon juice to neutralize the spiciness. Top it off with chipotle mayo dipping sauce.
