Nicholas Gonzalez

Superhero Surgeon Nicholas Gonzalez shares his prescription for acting and returns to his roots to give back by jennifer fauci jfauci@antonmediagroup.com
T
he script has been read, the white coat has been cleaned and the staff is back to solving problems and saving lives. Having returned to St. Bonaventure Hospital last week with the rest of the cast of ABC’s The Good Doctor, Nicholas Gonzalez, who plays Dr. Neil Melendez, shared what he loves about acting, being a father and why being a member of the Hispanic community is so important to him. “I’m a father now, so I’m in a
Renaissance period for myself where I feel everything has come together,” said Gonzalez of his daughter, now 2½. “She is what I was really waiting for.” Unlike other actors, who catch the acting bug as children, Gonzalez’s first foray into his craft came in his 20s. However, the self-proclaimed class clown always found a way to perform with his brother growing up. “My brother and I were latchkey kids. We turned on the TV and did our homework while watching standup comedy. Improv was actually the first thing that got me interested in performing,” said Gonzalez, who grew
up in San Antonio, TX. While enrolled at Stanford University on scholarships for cross country and track, the investment banking major saw an improv class being offered that caught his eye. “I thought, ‘what a fun escape from everything else,’ and when I came back from studying abroad in my junior year, I just wanted to do more acting,” said Gonzalez, who began to take acting classes. “I met a graduate student who did her thesis on this play and was trying to find the right person for the role. She approached me to do a 20-minute monologue,
and after I read it, she asked if I wanted the spot. To me, it was one of those moments that’s an unequivocal ‘no, I don’t do that,’ but for some reason I said ‘yes’ and everything changed.” Gonzalez polished his skills by performing in classic and contemporary theater and began landing acting jobs. In his 30-year career, Gonzalez has appeared in the Lifetime original movie, My Little Assassin, the film Scenes of the Crime alongside Jeff Bridges, the lead role of Alex Santiago in Showtime’s original series,

GONZALEZ from page 3A Resurrection Blvd., and appeared on Melrose Place, Walker Texas Ranger, That ’70s Show and Pretty Little Liars. Currently, he can be seen on The Good Doctor as attending cardiothoracic surgeon Dr. Neil Melendez, who oversees surgical residents. “I enjoy my community and we built an amazing one on the set of this show. Freddie [Highmore] and everyone else were dedicated to making it an amazing work environment for everybody,” said Gonzalez of the cast and crew as the series enters its third season. “This season, you’ll see a lot more concentration on romantic relationships, friendships and a focus on other story lines that weren’t nurtured at heart. I think audiences wanted to see a lot of that because we’re a procedural show, but we also have to have an all-inclusive storyline.” Nuanced writer David Shore of House fame knows how to work a theme that touches everyone’s lives, something that The Good Doctor, and Highmore, who plays Dr. Shaun Murphy, an autistic surgical resident, have received rave reviews for since the show aired in 2017. With something for everyone including the characters, Gonzalez is continually

make it easy for him to be a great surgeon, but he’s at a place now where he has to find a balance between going off of scans and tests and finding a margin between the dangerous decisions. This season he shuffles between those rules a bit more,” said Gonzalez, adding that viewers will also see more of his new relationship with fellow doctor Audrey Lim (Christina Chang). As for working with Highmore, Gonzalez said that the young actor has an aura that makes everyone respond to him. “He is a very wise, mature and talented individual and always celebrates everybody before himself,” he said of his colleague, whose character has further pushed into light the discussion on autism. “There are a lot of shows that are shining a light on what has been considered non-neuro normative, but the response to The Good Doctor has been so overwhelmingly positive from the autism community, activists and family groups. It’s very humbling to be a part of it and I’m happy the conversation is happening.” Being of Mexican descent, Gonzalez shared that there was a point in time where he struggled to identify with his culture. “I once had a conversation with a reporter who asked if I considered myself Mexican. I said ‘I know you consider me American, but when you ask me about what I am, that’s what I identify with,’” he said. “My family
is from Mexico and we have always seen ourselves as such. Because that culture is so meshed in my upbringing, growing up in a town like San Antonio, it’s so Latino dominant and I had more than enough role models to help shape who I am.” Gonzalez is an animal rights activist and supporter of PETA, but also holds close to his heart the Children’s Hospital of Los Angeles and Friends of El Faro, an organization that helps support Casa Hogar Sion orphanage. “I have worked with the Children’s Hospital of LA for a very long time. We do blood drives every year and it is so easy to support anything involving children because to see a child in pain and families that can’t afford care, it’s heartbreaking. I now know what it’s like to have a kid and to make sure that everything is exhausted for their care,” he said. “A dear friend of mine adopted Casa Hogar Sion orphanage years ago and for the past eight years, I have been going to Tijuana, Mexico, to help. Working with these children, aiding in the immigrant crisis by visiting detention centers and bringing out buses to teach kids and engage with them is just about humanity. A lot of people volunteer and feel very strongly about the immigrant crisis.” Catch Gonzalez as Dr. Neil Melendez on The Good Doctor, which airs Mondays at 10 p.m. ET on ABC, as well as in the upcoming holiday movie Christmas on the Range.

hile the name Michael Irby might not immediately ring a bell, the Palms Springsborn character actor has amassed quite a number of acting credits, starting with his breakthrough role as Sergeant First Class Charles Grey in the CBS action-drama series The Unit. Currently doing double duty as Obispo “Bishop” Losa, motorcycle president in the FX series Mayans M.C. and New Age drug lord Cristobal Sifuentes in the HBO dark comedy Barry, Irby has also made his mark in a number of other television series including CSI: Cyber, True Detective, Seal Team and Line of Fire. The following are a trio of projects the former Team USA soccer player wound up being involved in.
The Unit (2006 to 2009)
“[The Unit] was just a game changer for me. Getting invited to be a part of the military community. Plus I met my brothers on that
show—Dennis Haysbert, Robert Patrick and Max Martini. It was a big show for me. It was David Mamet. It was [producer] Shawn Ryan and CBS. Say no more. It was one of those jobs that really catapulted me to become a professional actor. I think we ended up doing about 69 episodes of that show and it really put me in a good place in my career. And it really re-instilled in me that I was making the right choices and that coming to Los Angeles was the right thing.”
Bolden (2010) “It was a turn-of-the-century jazz film that I’d been in between seasons two and three of The Unit. It was the early 1900s. The wardrobe, character and the story was amazing. But they ended up taking so long to make the movie, that they ended up recasting quite a few of the characters. It came out this year, but it wasn’t met with huge open arms. It’s a very specific kind of film, but it was still beautifully made. I shot that movie for five months down in North Carolina with
Anthony Mackie, Wendell Pierce, Michael Rooker and Jackie Earle Hale. A lot of those people did not make it into the final cut of the film because the movie took about eight years to hit the screen. It was one of the most amazing experience I had on a film that no one will ever see, which is kind of cathartic in that moment. There is something kind of spiritual about that. But that’s okay. No one can ever take it from me. No one can ever judge that performance. I know exactly what I accomplished there. It was a fascinating experience and one I’ll never forget.”
Mayans M.C. (2018 to present) “The third favorite project I worked on would be what I’m doing right now—The Mayans, Bishop and being able to put on those boots, jeans and that cut and get on that motorcycle and be the president of an M.C. I always joke that I don’t mind being on a team, but I need to be the team captain (laughs). I just really love it.
Michael Irby

I feel like I’m on a team again and we’re just a bunch of dark, violent human beings being human. It’s top shelf man.” Go to page 8 to read a full feature on Michael Irby.

he arrival of autumn brings a chill in the air, layered clothing and the gorgeous colors of a picturesque fall foliage. It also has everyone’s favorite autumnal tradition—apple picking. Whether you’re spending the day with friends or family, here are a couple of spots worth visiting. Wickham’s Fruit Farm
28700 Main Rd., Cutchogue This 300-acre farm dating back to 1661 offers not only apple picking, but strawberries, raspberries, cherries, blueberries and peaches ready to pick when in season and take home. Pears, pumpkins, apricots and much more are also available for purchase, along with donuts and cider.
Harbes Family Farm and Orchard
5698 Sound Ave., Riverhead 1223 Route 25, Jamesport 715 Sound Ave., Mattituck With three different farms to visit, Harbes is a family-favorite for a reason. Their Riverhead location offers more than 10 different apple varieties for picking like Blondee, Snapdragon, Golden Delicious, Autumn Gala, Ruby Frost and Honeycrisp. In Jamesport you’ll get
lost in a corn maze, enjoy pumpkin picking and a fresh farm stand. For the Harbes vineyard and Barnyard Adventure, visit Mattituck, where more than 40 farm animals roam and games, play areas, a hedge maze, pig races and more await.
Woodside Orchard
729 Main Rd., Aquebogue 116 Manor Lane, Jamesport At Woodside Orchard, Cortland, Empire and Gala apples, among many other types, are ready for the picking. With semi-dwarf trees, kids will have no problem reaching for the perfect apple to take home. After you have scoured the orchards, try the farm’s variety of ciders and
hard ciders, all made on-site from fresh-picked apples. Pies, donuts, breads and candy apples, as well as fresh honey from their own beekeeping, await guests. Come back to the Aquebogue location after Thanksgiving to pick out a Christmas tree.
Lewin Farms
812 Sound Ave., Calverton This East End farm offers apples, berries, peaches, tomatoes, peppers, eggplants and pumpkins for picking. Offered in their farmstand is broccoli, zucchini, cucumbers, peaches, corn, squash and much more. After stocking up on produce, try your best at navigating their five-acre corn maze. The farm also operates Baiting Hollow Nursery on Fresh Pond Avenue in Calverton where, come winter, you can rent a saw and cut down your own Christmas tree.
Seven Ponds Orchard
65 Seven Ponds Rd., Watermill In addition to traditional apples, Seven Ponds Orchards
also offers tomatoes, raspberries, sunflowers and string beans for the picking. A longer season than most, Seven Ponds holds their apple picking season from late August to late November, giving families plenty of time to schedule a trip. After picking until your heart’s content, take a hay ride or traverse through the corn maze.
Hank’s Pumpkintown
240 Montauk Hwy., Water Mill Nearly 15 types of apples are ripe for picking at Hank’s Pumpkin Town. After you’ve filled up your basket, head over to the corn maze, pick a pumpkin, let the kids play on the playground and get their face painted, mine for gems and pick up some treats at the market.

Pumpkin Ale
When I was a waiter/bartender, I can attest that the most requested alcoholic beverage that customers ordered during the fall was pumpkin ale. It would sell out like hot cakes, which I’m sure if given the chance, would also be injected with pumpkin spice. Dating back to the late 1700s, pumpkin ale may be produced using pumpkin flesh in conjunction with malt or other more typical beer grains. It may also be produced by adding natural or artificial flavor while the spice flavor may be added to evoke the flavor of pumpkin pie. Many styles of pumpkin ale are produced including pale ales, wheat beers, porters and stouts, and are produced by several breweries including Sea Dog Brewery, Shipyard Brewing Company, Saint Arnold Brewing Company and Blue Moon.

It wouldn’t be the fall season if Dunkin Donuts and Starbucks didn’t have its pumpkin spice latte/coffee line, which is usually launched in late August. A pumpkin spice latte is a coffee
drink made mixed with traditional fall spice flavors such as cinnamon and nutmeg, steamed milk, espresso, and topped with whipped cream. Starbucks’ pumpkin spice latte is actually a little healthier since the company now uses actual pumpkin instead of artificial coloring since 2015. You can get a pumpkin latte/ coffee either hot or iced.
Pumpkin Butter
I can’t believe it’s not butter! Yes, even our butter is now pumpkin spice infused. Pumpkin butter is basically a pumpkin puree that has been combined with either maple syrup for unrefined sweetness or cinnamon for added flavor. That pumpkin puree is then simmered and reduced until it’s thick and creamy. You can find pumpkin butter at your local North Shore Farms, Stop & Shop or Trader Joe’s. Just take some of that pumpkin butter and slather it on a pumpkin muffin, you’ll have yourself a true pumpkin feast.
Pumpkin Ravioli
You can now even stuff your raviolis with pumpkin as well. Pumpkin ravioli is traditionally served with a butter or cream sauce and can even be topped with pecans or even walnuts. Butternut squash can also be used as a nice topping for your pumpkin raviolis. In order to make the pumpkin ravioli filling, you’ll generally need 8 ounces of canned organic mashed pumpkin, 2 tablespoons of brown sugar, 1/8 teaspoon of ground nutmeg, and salt and pepper. Those ingredients are for a 12-person serving.

The Salon Project by Joel Warren redefines the beauty experience BY JENNIFER FAUCI

orld-class salon services, modern looks and styles and the best beauty brands lie within the walls of Saks Fifth Avenue in the Walt Whitman Mall. For upstairs is the holy grail of beauty: The Salon Project by Joel Warren.
And if Warren’s name sounds familiar, you probably know it from Warren Tricomi, which he cofounded in 1990 with Edward Tricomi and Roxana Pintilie. While Warren is no longer associated with the brand, he is still a leader in the haircare industry for the past three decades and his love for hair styling is more passionate than ever. “I believe in beautiful hair,” said Warren, who wanted to revolutionize the concept of the traditional salon. “I came up with a presentation for Saks Fifth Avenue and the creative director asked me what I wanted to call it. I didn’t have a name at the time so she just wrote down ‘The Salon Project by Joe Warren and it stuck.” Warren’s deal includes exclusive rights with all Saks Fifth Avenue stores. As for why the first Long
Island location of Salon Project was established in Huntington, Warren said it just made the most sense. “Walt Whitman is closest to New York City so it made sense to pick this location as many Long Islanders go into the city to get their hair done. Now, we bring the city to you,” he said of the location that opened in 2017. “It’s an uber experience for hair. We have iPads
at each station, high end products within arms reach of the stylists and we have the best trained staff I have ever seen.” Using technology, the tablets also allow clients to virtually try on a series of hair styles and colors before making a final decision. Warren, who is also the new spokesperson for Goldwell hair color, is all about keeping it simple

and natural, as clients trust the professionals for great advice, which is why he works with his former assistant and master colorist Rick Wellman. Widely recognized as one of the most talented and innovative colorists in the world, Wellman developed a breathable hair technique over the past 10 years
that utilizes 100 percent biodegradable cotton pads. Aside from being better for the environment, the material does not soak up color, allowing the hair to truly be enriched by every drop of dye. The less aggressive treatment utilizes about 25 cotton pads on the average head and can be used with the popular balayage technique for
highlighting hair in which the dye is painted on to create a graduated, natural-looking effect. “If you want a streaky look, you use foil. But for a better blended look, use less hair in the cotton swatches,” said Wellman of the luxury highlight service with an upgraded experience for the client. “We’ve taught classes and a few
eco-friendly salons have picked up the technique. The diagonal coloring technique means no lines anywhere as you work around the head in patterns that avoid that strip look. And, you don’t have to sit under a heat lamp.” The Salon Project is the first Long Island salon to utilize the treatment of dye on hair, and the signature, more sophisticated technique is perfect for touch ups and highlights. “It’s a one-stop shop and a true client-focused experience from the minute they walk in to the minute they walk out,” said Warren. A charity event on Oct. 24 from 5 to 7 p.m. with Saks and Pink Aid Beauty will benefit breast cancer as the salon is offering complimentary services. A percentage of the salon’s proceeds raised during the month of October will go towards Pink Aid. For more information, visit www. thesalonproject.com. The Salon Project by Joel Warren is located within the Walt Whitman Mall at 230 Walt Whitman Rd., Floor 2, Saks, Fifth Avenue, in Huntington Station.

Leaf Peeping In Connecticut A colorful weekend in The Nutmeg State BY KIMBERLY DIJKSTRA
kdijkstra@antonmediagroup.com
The changing of the seasons from summer to fall is one of the most wondrous things to experience on this planet. All that green we enjoyed for the past six months gives way to vibrant reds, oranges and yellows. For a few short weeks in October, New England glows and people come from all over the world to see it for themselves. Connecticut epitomizes autumn in autumn. Just thinking of it brings up those good feelings of leaves crunching under your feet, a brisk breeze on your face, sipping a warm drink by a fireplace, driving over colorful hills and strolling through covered bridges. Long Islanders are fortunate to be only a short distance away—about 1 to 3 hours by car or a hop, skip and a jump by ferry. Spending a weekend among the fall foliage is an absolute must for all leaf peepers and outdoors seekers.

LEAF PEEPING from page 17A The Nutmeg State If you’re wondering why Connecticut is sometimes called The Nutmeg State, you’re not alone. Nutmeg trees do not grow in Connecticut, but hundreds of years ago when the spice trade was booming, Connecticut merchants imported nutmeg, a spice prevalent in early American cuisine. The official nickname of the state is The Constitution State. However, The Nutmeg State is apropos, especially in autumn when it describes the warm colors and comforting spiced scents and flavors closely associated with the season. Fall Foliage Finder In early October, the northernmost eastern and western corners of Connecticut will be at peak vibrance. By mid-October, the northern two-thirds of the state will be overtaken by the colors of fall. By late October, every part of the state will be touched by the palette leaf peepers lust after. Be A Gilmore Girl Gilmore Girls, which ran on The WB and The CW from 2000 to 2007 and Netflix in 2016, is known for taking place in the quaint small town of Stars Hollow, CT. Though fictional, the setting was inspired by the charming towns in the Litchfield Hills area of Connecticut.
The Mayflower Inn & Spa in Washington, CT, served as inspiration for the fictional Independence Inn run by Lorelai Gilmore on the television show. While in Washington, also stop at Marty’s Café (aka Luke’s Diner), the Washington Food Market (aka Doose’s Market) and The Hickory Stick bookshop (aka Stars Hollow Books). Between the gazebo, the library and the independent shops, New Milford feels even more like Stars Hollow than Washington. For a coffee fix—and you can’t be a Gilmore Girl without fueling up with a cup of coffee or six—stop into the cozy River & Rail Café. Spend the rest of your morning at the Town Green and the afternoon at Lovers Leap State Park with magnificent views of the Housatonic River. Litchfield, which is mentioned by name on Gilmore Girls, is a lovely place to stop if you enjoy antiquing. Nearby Kent also has a Stars Hollow vibe with a cute downtown area, and features Bulls Covered Bridge, which sits atop a waterfall. ARIES (March 21-April 19). There is no perfect way to live your life. There’s not even a perfect way to live your day. This is a week to avoid striving or pining for some ideal. The magic happens when you focus on getting comfortable with your choices and accepting them -- and yourself -- as being valid and worthy of your approval and enjoyment. TAURUS (April 20-May 20). This week, you’ll eliminate the noise to amplify the signal. As you simplify your scene in the name of organization and efficiency, don’t take away the color and fun. That’s not the part that’s holding you back. The joy-producers aren’t extraneous. Look instead to the labor that produces little in return. GEMINI (May 21-June 21). People who are vividly alive take up space both physically and spiritually. They are there even when they are not there. They are not easily forgotten or avoided. Maybe you’re feeling a little bigger than life this week, and why not? It’s only threatening to those who wish to control you. It’s OK to be unapologetically present. CANCER (June 22-July 22). There are places that are more or less conducive to imagination. Crowded and overstimulating environments do not invite input. Blank pages and the equivalent can be just as daunting. You’ll find fertile ground for your ideas where suggestions are offered and resources are provided along with the space to create. LEO (July 23-Aug. 22). As you endeavor to make everyone comfortable, keep in mind that there are no universally comfortable environments. Where people feel comfortable depends on who they are in the moment, and where they believe they’ve earned a seat. What helps everyone is when you make yourself comfortable and radiate. VIRGO (Aug. 23-Sept. 22). Most people have heightened feelings about entering a new social situation and often it’s some form of fear. Social anxiety is not a sign of weakness; rather, it’s a sign that your humanity is intact. However, if you’ve been invited, you probably belong there. Don’t let your head tell you any different. LIBRA (Sept. 23-Oct. 23). Your love has a signature. So does your work, your play and the way you go through life in general. You can take on a role for a while, relinquish it, and then it will be filled by another. And yet, you should never doubt that the role of you is absolutely irreplaceable. Keep it in mind as you’re living it this week. SCORPIO (Oct. 24-Nov. 21). Your best success tactic will be to learn all you can about your problem. The tools are available to get the most comprehensive and thorough understanding possible. A path will illuminate. You’ll soon not only see your way out of this, but you’ll be able to show others precisely how to solve it or avoid it altogether. SAGITTARIUS (Nov. 22-Dec. 21). People may think they know about each other but they never completely do. To some extent, love is always given in faith. So try to understand the truth of another person in full awareness that you won’t get there. The only truth that matters is the truth about each individual that is told and heard internally. CAPRICORN (Dec. 22-Jan. 19). If you wonder what’s holding the group together, look in the mirror. You’re the glue. You may not want the responsibility of this, and you probably won’t get credit for it either, but the ability to connect people and give them a reason to work together is ultimately an honor and privilege you’ll be glad you accepted. AQUARIUS (Jan. 20-Feb. 18). You are the authority in your life. Having a game plan makes you feel so much better about things. Even if your game plan is to take a nap, you’ll feel successful when you follow a procedure. Plan it, do the thing, and then cross it off the list. It reinforces that your choices count the most and you’re in charge.

This month, everything seems heightened, especially the stakes. You’ll gladly knock yourself out for a “wow” result; in the end that’s the only sort that will matter, and it leads to so much else. Improved relationships and more joyful feelings run through your personal life, having something to do with the respect you command from others. Attention to health, fitness and all things physical at the end of the year will bolster your vitality and ready you for a 2020 filled with the sort of demands you’ve always wished for. The ones you gave to will pay it forward and make you proud.

PISCES (Feb. 19-March 20). You know what physical hunger feels like and are slightly less in tune to the sensation of spiritual hunger. But this week, you’ll get quiet and inquire to your soul about how you might feed it. Learning your soul’s appetites, cravings and deficiencies will be the first step toward feeling more fulfilled in your daily life.

YOUR GARDEN

older weather shouldn’t be an excuse to ignore your lawn. Rather, it’s the perfect time to prepare your garden for winter so it comes back to life better than ever next spring. Here are some simple tasks from Tilly, the online landscape design company with one cofounder, Sarah Finazzo, from Port Washington. Tilly is changing the way homeowners approach their gardens. The process removes the prohibitive cost, intimidation and inconvenience from traditional landscape design services, while delivering professional, custom plans that reflect your style, space and needs. So let’s see what you can tackle this Autumn to have the best garden on the block next spring.
border or less conspicuous location and fill in that bare spot by your front door.
Garden Prep For Chilly Weather
Plant bulbs Invest in your springtime garden now. As soon as the weather stays reliably chilly, it’s time to think about planting bulbs. One thing to keep in mind is that bulbs are more forgiving than we think. You can dig a hole, throw a handful of daffodils in, and cover them up. No need to worry about their spacing
or directionality. They will come up and look like a lovely little natural grouping. Dig and divide perennials that have gotten too big Transplant perennials and even shrubs that no longer fit in their location. Planting in cooler weather allows for good root growth
Heel in any plants you purchased that haven’t yet found their forever home If you leave them out of the ground in their pots the roots will likely freeze and they will struggle to come back in the spring. Mulch tender perennials and roses to help them better survive the winter. Think of mulch as a necessary blanket to help protect them from the harsh weather.
(roots grow best in cool soil) with a lower amount of water than what is necessary to nurture the same plants through spring and summer. And the key to healthy plants is good roots.
Remove pesky perennial weeds Poke weed, thistle and knot weed, for example, should be removed to get a jump on spring maintenance.
Dig compost into your beds This step will give your Transplant ground cover flower beds a nutritional to fill in gaps in your jump start in spring. coverage Take it from a back-of-the—Submitted by Tilly

The First Thing I Ever Cooked Latin chefs share their early memories in the kitchen
by jennifer fauci jfauci@antonmediagroup.com
B
elieve it or not, famous chefs and Food Network stars weren’t always the culinary wizards we know them as today. Like everyone else, they too were just kids in the kitchen, crafting concoctions—some tasty and some not so tasty. From sweet treats to traditional dishes, learn how Latin chefs like Aarón Sánchez, Wilo Benet, Roberto Alcocer and more got their start in the kitchen.
Aarón Sánchez
Roberto Alcocer
Roberto Alcocer’s first memory of cooking is a special one. It was after baking his first batch of brownies when the chef and owner of Malva Cocina in Baja, Mexico, decided to devote himself to his profession. “Since I was very small, I liked helping my mother in the kitchen,” said Roberto Alcocer (Photo source: Alcocer, whose Facebook) Oaxacan mother emphasized the importance of eating at home with family. However, it was a homework assignment that peaked Alcocer’s interest in the kitchen. “The teacher let us pick which task to do, which we had to make without the help of our parents,” said Alcocer who chose to bake brownies, later learning that his mother saved the brownie recipe that he found in a book years ago, which he added to his restaurant menu.

Mary Sue Milliken
Chef, restaurateur and cookbook author, Mary Sue Milliken specializes in Latin cuisine and also shared a sweet memory of the first dish she ever cooked. “When I was about 6 years old, my mom and I found a recipe in Ladies Home Journal for crushed up potato chip cookies, and even today, they are still one of my guilty pleasures,” said Milliken, who was never one for a sweet tooth. “They are essentially shortbread cookies with potato chips in them. We melted chocolate chips and drizzled the chocolate over the cookies with our fingers,” said Milliken of the cookie recipe, which has not only been added to one of her cookbooks, but to the menu of her restaurant, The Border Grill.
Alicia Maher
Sue Torres
Long Island-born American chef and television personality Sue Torres took the frozen route when playing chef as a kid, creating a sweet treat with ingredients from her mother’s pantry. “My mom owned a chocolate store when I was in grammar school, so we always had Sue Torres chocolate, nuts (Photo source: and dried fruits on www.chef hand for when she suetorres.com) felt like playing at home,” said Torres. “When I was nine, I dragged my sister into concocting a peanut butter truffle, which we called ‘Sisters’ Delight.’”
Rellenos de papa (Photo by Håkan Svensson (Xauxa) via Wikipedia)
Wilo Benet
Puerto Rican chef and restaurateur Wilo Benet also credits his very first dish to his mother. “The very first thing I remember cooking was rellenos de papa or fried stuffed potato croquettes,” said Benet, revealing that his mother would always hand him the rellenos to finish shaping. “I must have been 10 years old, but stumbling into cooking via dishwashing and helping my mom is my earliest memory of preparing any food item.”
Salvadoran chef and author of Gourmand award-winning cookbook Delicious El Salvador, Alicia Maher remembers the first time she cooked a traditional Salvadoran tomatada, a simple combination of chopped Roma tomatoes, onions, garlic, oil, salt and black pepper. “My great-aunt taught me how to cook it when I was 8 years old. She always served it with fresh warm tortillas and a slice of queso fresco,” said Maher. “To this day, I use it on my grilled chicken, fish or carne asada; my husband likes it on a baked potato; and our sons love it with spinach and pasta or a batch of warm corn tortillas.”
Chef and busy restaurateur Aarón Sánchez traces his memory back to a favorite dish he made with his mother. And that’s no surprise, since his mama is Zarela Martinez, a famed cookbook author, chef and restaurateur herself. “Sopa Seca was one of my favorite dishes growing up, and I would always ask my mom to make it for me,” said Sánchez. “One day she got tired of me constantly asking so she taught me how to make it.” Sopa Seca traditionally uses fideos, which is Spanish for noodle, but Sanchez shared that he sometimes uses alphabet pasta to make the dish more playful.
Roberto Santibañez
Mexican chef and restaurateur Roberto Santibañez came to enjoy chemistry and mixing concoctions, which in part led him to become a chef. He started his cooking career with a bang—literally. “When I was a kid, about 6 years old, I was camping with my father and Roberto he asked me to cook breakfast,” Santibañez (Photo source: said Santibañez. Facebook) “I had seen my grandma beating eggs and in Mexico they beat eggs like they’re going to batter something. First you beat the egg whites and then add the yolks.” With only a cookie tin at his disposal, Santibañez put his scrambled eggs in the tin and covered it. “Everything exploded after I put it on top of the heat. My dad ended up making breakfast for us that morning since I accidentally blew up ours,” laughed Santibañez, who eventually perfected breakfast.

ctor Michael Irby’s career path has found him playing his fair share of military/law enforcement types, be it in his breakthrough role as Sergeant First Class Charles Grey in The Unit, Detective Elvis Ilinca in True Detective or Detective Richard Paul in Almost Human. And while being of AfricanAmerican and Mexican-American descent has lent him an ethnic ambiguity that’s allowed him to play the occasional terrorist (see 2005’s Flightplan), Irby’s most recent work as Obispo “Bishop” Losa, motorcycle president in the FX series Mayans M.C. and New Age drug lord Cristobal Sifuentes in the HBO dark comedy Barry, have found him going all in to the dark side. It’s a creative move that he’s not only embraced, but admits has given him quite a bit of satisfaction at the same time. “You have no idea when your life is about to change when it comes to stuff like that. I knew that the [Mayans M.C. executive producers] were trying to find a president and my manager called me and asked if I’d give it a read and what I thought about it. It was just one of those things that as soon as you find out who’s connected and knowing the whole Sons of Anarchy lore and what they had created there, I was all in,” he explained. “I just got in touch with Bishop as far as his heart and mind as far as the script goes. I felt like I knew him. I felt like I kind of created this whole career in order to have this one moment, especially with all my military and law enforcement-type roles. I‘ve also played a bad guy quite a bit, so I felt like it was those two worlds coming together. So we just went forward after that. I went back and met with [co-creator] Kurt [Sutter] and FX. The

network agreed and here we are, season two.” What makes Irby’s current characters so interesting is the dichotomy they represent in terms of their complexity, despite both living in a criminal underworld. It’s something the former Team USA soccer player embraces as he’s pulled the layers back on both Losa and Sifuentes. “Bishop came from a broken home. He thought that the military was going to save him and all it did was give him a certain set of skills that he could use on the street. So when he went back to the streets, the streets ate him up and he wound up going to prison for a few years. When he came back out, he still had the skill set. He had even more of a skill set by going into our prison system,
which is also broken,” Irby explained. “When he came out, he didn’t learn anything, he was just more instilled in what he is and his cousin saw that and said, ‘Brother, I want you to start up this charter. We need someone like you down there.’ And my character wanted that crown and accepted that responsibility.” The flip side of being cast in Barry meant that Irby got to embrace a role in a black comedy that found him delving into his comedic side, while infusing an unexpected spin into a character that does immoral things. albeit with a New Age spin. “There is an aspect of Bishop in Cristobal and an aspect of Cristobal in Michael Irby. In a lot of the character I play, he is the New Age Bishop. Bishop doesn’t smile too much and Cristobal, you can’t take the smile off his face. Even if he has to murder you, he’ll say that he has to do this and he hopes you’ll really understand,” Irby said. “In fact, I’m going to let you know that I’m coming. So I want you to sharpen your knives, put the bullets in your gun and get ready for a war. One of us is going to die, but it will be for the right reason. It’s very cool how they have written this character.” While the characters in Mayans M.C. may be outlaws coming from an illegal corner of the room, the
writing in the series presents them as complex entities and not onedimensional characters. It’s a big part of what attracted Irby to this project. The fact that the production and cast has a heavy Latino influence also made this appealing and reminded the veteran actor of being inspired by seeing performers like current costar Edward James Olmos and Lou Diamond Phillips in La Bamba acting up on the big screen. “Even though we’re not the best of people—I grew up watching Eddie James Olmos in American Me. I grew up watching these guys in Colors or some of the different films that were out there. They weren’t bad guys. They were bad guys, but they looked like me. They looked like us and I thought if they could do it, I could do it,” he said. “People are watching this now, even though we’re an M.C....it goes behind the scenes too. A lot of our crew and the camera department—this is a really big Latino essence of an environment and a gig. Being here in Los Angeles—when you go to the Rams or Dodgers game, it’s beautiful man. People stop and thank me for putting them on the tube. I say that I didn’t have anything to do with it, but I’m definitely happy to represent all of us because it’s such a big part of me.”

hile walking through the streets of Manhattan to get to Mercado Little Spain, which is nestled right under the High Line, you’re instantly teleported to España when you open the doors to enter. The music that is played throughout is customary, with an array of kiosks and restaurants of traditional and delicious food to devour that is scattered strategically around the building. The crowd exuberantly scours the market floor, either taking in the sights or looking for the next kiosk or restaurant to visit. The walls are covered in beautiful murals that represent Hispanic heritage and its rich culture. Mercado Little Spain is a veritable love letter to Spain from chef José Andrés and his team, and is inspired by the various historic mercados of Andrés’ home country. While inside, you’ll find three different key restaurants: Leña, Mar and Spanish Diner, which offer visitors specific menu options based on their preference. Leña brings together the best elements of Spain’s favorite grill-focused restaurants, including the asadores and steakhouses of the Basque country and Asturias. Nearly everything on the menu is cooked over embers with a focus on larger grilled cuts of meat. Some menu items that can be found at Leña include butifarra con mongetes (pork sausages served with white beans and alioli), codorniza a la brasa (two whole quails served with romesco sauce), chuletillas de cordero (New Zealand lamb chops),
Churros (Photo courtesy of Mercado Little Spain)
Bravas (Photo courtesy of Mercado Little Spain)
A Sergio Mora mural inside. (Photo courtesy of Mercado Little Spain) among others. Mar represents the culture of Spain’s diverse regions with all things aquatic themed. The ever-rotating menu highlights seafood from Spain and the United States, featuring what is fresh and in season. On the menu,
you’ll find gambas al ajillo (the very famous tapa of shrimp sautéed with garlic), anchoas de santoña (cured anchovies from Santoña served with toasted bread brushed with fresh tomato) and more. Spanish Diner is an Iberian take on
the classic American all-day restaurant, and features larger portions of Spanish favorites like gazpacho andaluz soup, callos con garbanzos (Madrid style tripe stew) and bacalao frito (fried salted Spanish cod). Some of the kiosks that can be found include Bocatas & Empanadas, which offers a wide variety of Spain’s favorite sandwiches, Churros, which offers the delicious crispy fried pastry, Frutas & Verduras, which offers freshly made salads, soups, juices, smoothies and stews, Helados, which focuses on frozen treats like granizados (shaved ice), soft serve and corte helado, an ice cream sandwich constructed right before your eyes. And if eating isn’t your thing, Mercado Little Spain also has two cocktail bars called Diner Bar and Bar Celona, and a wine bar called Vinos. Mercado Little Spain is located at 10 Hudson Yards and is open daily. For more information, visit www.little spain.com or call 646-495-1242.

Roberto Clemente: Hero To A Hemisphere

R
oberto Clemente spent his entire Major League Baseball career with the Pittsburgh Pirates. But he didn’t start out with the Bucs. In early 1954, Clemente, a native of Carolina, Puerto Rico, was signed as an unprotected bonus baby by the Brooklyn Dodgers. During the 1954 season, Clemente played for the Dodgers’ Triple-A farm team in Montreal. However, the youngster saw little action. The Pirates had an interest in Clemente. The Dodger brass knew it and Clemente played sparingly. He hit in batting practice with the pitchers and Dodger coaches ran down Clemente’s prospects when in conversation with scouts from rival teams. It didn’t work. Pirates scouts had already seen Clemente play in fielding drills. They made him their first pick in the November 1954 rookie draft. From 1955-72, Clemente played in more games in a Pirate uniform than any player in that team’s history. He was a 12-time All Star, the National League’s Most Valuable Player in 1966 and a four-time batting champion. In the field, Clemente won 12 consecutive Gold Glove awards. His achievements were even more impressive in that they took place during an era when such pitchers as Sandy Koufax, Don Drysdale, Bob Gibson, Juan Marichal, Tom Seaver and Steve Carlton dominated the game. Clemente played on the 1960 “Beat ‘Em Bucs” squad, which upset the New York Yankees in that year’s World Series, thanks to the dramatic game seven, ninth-inning home run by Bill Mazeroski. It would be another 11 years before the Pirates made it back into the Fall Classic. In the meantime, Clemente emerged as one of the game’s stars, complementing a star-studded field that included Mickey Mantle, Willie Mays, Hank Aaron, Frank Robinson, Carl Yastrzemski, Harmon Killebrew and

Al Kaline. The man was often injured and all around the Pirates clubhouse, players joked on how “the old man” was doing on game day. In his recent autobiography, Pete Rose told a humorous story. “Roberto Clemente…loved to talk hitting,” Rose recalled. “At old Forbes Field, we had to walk…through the Pittsburgh dugout to get to the visitors’ dugout. Underneath…were benches and Roberto would sit there and put on a clinic. ‘Bobby, how you are feeling today?’ I’d always ask him. ‘Pete, let me tell you one thing, every bone in my body hurts.’ Then he’d go out and hit the ball all over the park, going 3-for-5. The next day, I’d ask him again

and he’d say he felt great—then finish 0-for-4. Roberto Clemente helped me more than any player who wasn’t my teammate. You had to listen closely to everything he was saying, because his English wasn’t the greatest. So you paid more attention.” The zenith of Clemente’s career was reached in 1971. That year, the Pirates won the National League pennant. In the World Series, they were underdogs against the Baltimore Orioles, the defending World Champions, who boasted a starting rotation with four 20-game winners. At 37, Clemente batted 0.414, knocking out 12 hits in seven games and homering in the decisive 2-1 game seven win at Baltimore

over the Birds. Clemente was named Series MVP, accepting the award in a nationally-televised interview. The next year, Clemente would cap his Hall of Fame career by belting his 3,000th hit, a double, on the last day of the regular season. Shockingly, it would be the man’s last hurrah. On New Year Eve’s 1972, Clemente organized a relief program for Nicaraguan residents victimized by an earthquake. Tragically, the cargo plane carrying Clemente crashed and a stunned Western Hemisphere mourned the passing of a baseball great. Following his untimely death, Clemente was immediately voted into the Hall of Fame as the directors bypassed the five-year waiting period rule. An annual Roberto Clemente Award is given to the big leaguer who “best exemplifies the game of baseball, sportsmanship, community involvement and the individual’s contribution to his team.” Pittsburgh has a bridge named for Clemente and a monument to the man outside of PNC Stadium. Clemente was about more than statistics. No one who saw Clemente play could ever forget it. During his career, the Pirates played home games at Forbes Field and later, Three Rivers Stadium, both of which were pitcher’s parks. Clemente compensated by being a line drive hitter, slashing outside pitches to right field and pulling inside pitches down the line. He hit the balls in the gaps. For his career, he had 440 doubles and 166 triples. Four times he had over 200 hits in a season. In 1967, general managers rated Clemente as the game’s top player, beating out Yastrzemski in an informal poll. Clemente was a terror on the base paths, stretching singles into doubles and galloping from first to third on base hits. Clemente had a cannon for an arm and he often snagged fly balls, basket-catch style, a la Willie Mays. Watching Clemente round the bases and patrol right field was as much fun as his batting exploits. In this respect, he was an old-fashioned player.
