Saddling Up
With William Shatner BY DAVE GIL DE RUBIO
DGILDERUBIO@ANTONMEDIAGROUP.COM
While he may be best known for captaining a certain starship, William Shatner has a long and loving history with horses. Along with appearing in more than 20 films and 30 television shows (and currently on the road with his one-man show Shatner’s World: We Just Live In It It), the Canadian-born entertainer has also lent himself to being the consummate pitchman (Priceline), musician (he recorded the 2004 Ben Folds-produced project Has Been) and health advocate (he’s deeply involved with the American Tinnitus Association). Shatner’s equine passion led to his being one of the grand marshals for the 102nd Calgary Stampede in 2014 and chairman of the Hollywood Charity Horse Show for the past two decades while raising millions of dollars for local children’s charities. Shatner has also established himself as a respected horse breeder and owner as well as being an award-winning participant in competitive riding events. He recently shared what his favorite breeds of horse are and why. (To read a full feature on William Shatner, go to page 8A).
Standard Bred
“
They are bred to trot so they don’t canter. They’re not supposed to canter. They trot fast and that gait is very exciting. Standard Breds are the trotting horses and I’ve won championships with Trotting Horses.
”
American Saddle Breds
“
They are called show horses and I’ve done a lot of winning with show horses. American Saddle Breds are arguably the most beautiful of horses. The high-headed, high-stepping horses—mostly the Civil War monuments to the generals are of them all sitting on Saddle Breds, those noble horses that have the look of eagles as do the generals. They are renowned for their courage and their beauty. Traveler, General Lee’s horse, was a Saddle Bred.

These horses at the moment are my passion for a sport called reining. What I love about them so much is their affability, passion and quick-twitch muscles that allow them to sprint faster than any other horse. [These steeds also possess] all-around usability, physicality and nobility of spirit.

ny Rockville Centre dining tour worth its salt must stop at Chadwicks American Chop House & Bar. The village’s restaurant hub sits opposite the Long Island Rail Road’s Rockville Centre station amid the mini-metropolitan clamor of crowded streets and foot traffic. A relaxed atmosphere greets guests immediately, with candlelit tranquility presiding over each white linen-topped table in the dining area. The rattle of the restaurant’s bar area can be heard beyond a separating wall, but it is by no means disruptive and instead offers amusing overheard conversations. Turning to the cuisine, Chadwicks plates American fare with international flair, along with classic chop house mainstays. Popular starters include the lobster bisque, the three onion and three cheese French

onion soup, crispy pork belly and, on special, a BLT mussel pot studded with Gorgonzola cheese. The steamed Prince Edward Island Mussels, plump and flavorful, are presented in a sweet tomato broth that plays perfectly against the salty cheese morsels. The crispy pork belly’s unctuous delivery is irresistible, with the fatty richness revealing itself after the eater penetrates the delightful crunch of the belly’s exterior. Chadwicks’ version is served as thick strips, glazed with a sweet
honey chipotle sauce, toasted sesame and apple carrot slaw topping that provides more bite to the dish. For entrées, Chadwicks offers land, sea and air options, with plenty of pasta as well. Popular dishes include various veal and pork chop preparations, filet mignon and an enticing Black Angus New York Strip. The Atlantic Salmon entrée was cooked perfectly—flaky, but it still maintained its firmness, integral to any great salmon dish. Chadwicks offers an array of sauces with its entrées,
including a Madeira wine sauce, which brought a sweet-savory slant to the salmon. Ample side dishes are available with the entrées, with the broccoli rabe pairing wonderfully with the salmon. Another entrée that seemingly jumps off the menu is Chadwicks crispy, slow-roasted half duck served with a honey-pepper fig glaze. Rendering the fat is key to achieving the crowd-pleasing crunchy duck skin while injecting much-needed moisture into the meat. Chadwicks’ kitchen team does not miss the mark. The whipped sweet potatoes is the perfect foil for this waterfowl. With its elegant atmosphere and professional preparations, Chadwicks proves to be a gem in Rockville Centre’s crowded dining scene. smosco@antonmediagroup.com

Arena Dining At Barclays BY STEVE MOSCO
SMOSCO@ANTONMEDIAGROUP.COM
Sports franchises are relocated often, but you never think it’s going to be your team to pack up and hit the road until it happens. When the New York Islanders and the (formerly) New Jersey Nets ditched their old barns for shiny new digs at Brooklyn’s Barclays Center, fans of both franchises were forced to accept unfamiliar pre- and postgame rituals, as well as throngs of new fans filling arena seats. But nothing brings comfort like food and drink—and luckily for beleaguered fans of the Islanders and Nets, Barclays Center serves up first-rate arena fare to ease the transition to the teams’ new surroundings on Atlantic Avenue. Any eating tour of this arena must begin with Carla Hall’s Southern Kitchen Barclay’s outpost in section 11, where the renowned chef brings her Nashville “Hot Chicken” Sandwich to
the gaping maws of sports fans. Dunked in Hall’s “Hootie” sauce, the fried chicken is served with pickles on a potato roll with a side of tangy cole slaw. The chicken is crispy and brings the classic Nashville-style heat without being overwhelmingly hot. And don’t toss the cole slaw; the oft-overlooked side catches you off guard with a balsamic vinegar bite, a welcomed change from the usual mayo mess. Barclays also offers Brooklyn Bangers & Dogs in sections 08 and 225/226. Sal Bolton, a Michelin-starred chef and creator of Brooklyn Bangers, delivers the goods with hand-crafted sausages and hot dogs. Offerings include the Kicking Kielbasa and the must-order Smoked White Cheddar Brat. Far beyond any dirty water dog normally served at sporting events, this plump and juicy beauty hides an inner lining of molten white cheddar to bolster its peppery kick. In section 25 and 209/210, you’ll find an outpost of Habana, a neighborhood joint serving traditional Mexican and
Brooklyn Bangers offers top dogs. Calexico Baja fish tacos
Cuban specialties, including the incomparable grilled Mexican corn and one of the arena’s best bites, the pressed Cuban sandwich. The specialty is stuffed with pulled pork, ham, cheese, sliced pickles and chipotle mayonnaise, all coming together for a soft, delightful bite countered perfectly by the crunch of the Cuban bread. Moving on to section 03, Calexico takes all of the worry out of ordering fish at a sporting event. The Baja Fish Taco, with its beer-battered tilapia, shredded cabbage, mango salsa and spicy sour cream dubbed “chipotle crack sauce,” is a legit contender for top arena dish. The fish is light and flakey, packing an ocean of flavor in a delicate package. Rounding out the dining tour was Buffalo Boss in section 22. This spot offers bite-sized morsels of chicken, breaded and fried to a bountiful crunch and drenched in a selection of sauces including spicy buffalo and sweet honey barbecue. And if you’re looking for something sweet to counter
Chef Carla Hall’s Nashville Chicken the macho behavior on the ice or court, get to Junior’s in section 26 for its Signature Concrete, made with organic Blue Marble ice cream and mixed with cookies and cakes from the Brooklyn’s iconic Junior’s. The texture of the ice cream and cake combination coalesces into a silky smooth mouth feel, leaving the eater in a state of toe-curled euphoria. Aside from these noteworthy concessions, Barclays also boasts an array of clubs including the 40/40 CLUB & Restaurant, with upscale traditional sports bar cuisine; Calvin Klein Courtside Club, a more luxurious-leaning dining experience; and the Billboard Lounge, a 300-capacity music club. Watching the Islanders cross the ice and the Nets take the court at Barclays might seem might summon conflicting feelings for die hard fans from the teams’ former stomping grounds—but acceptance is best served with delicious food created by culinary mavens.
