Donna Summer: A Decade Later BY DAVE GIL DE RUBIO DGILDERUBIO@ANTONMEDIAGROUP.COM

T

he year was 2008 and Donna Summer was touring behind Crayons, her 17th, and what turned out to be final, studio album. It was her first recording of original material since 1991’s Mistaken Identity. I agreed to an interview with Summer because who is going to say no to chatting with a bona fide legend (and unbeknown to the world, someone who would be inducted into the Rock and Roll Hall of Fame in 2013)? The Boston native wound up dying at the age of 63 from lung cancer on May 17, 2012 at her home in Naples, FL, despite being a nonsmoker. Five dates into the Crayons tour, Summer was on the road to play a gig at Bethel Woods, NY. During the conversation, she lovingly spoke about her three kids, the new album, and her thoughts on American Idol. Little did she know that a musical about her life would be playing on Broadway a decade later. This story was never published until now.

LIW: Why so long between records? Donna Summer: I was raising my kids and

a good bit of news—my youngest daughter just put her 4-song EP out [Johnnyswim]. She debuted it last night in Nashville. So you can go to my website and there is a link to her website. The name of her band is Johnnyswim and she and her boyfriend have a band together and they’re incredibly good. It’s gotten amazing reviews and it’s really good. I’m really excited. That’s what I’ve been doing. Raising my kids (laughs).

that no two songs should seem alike. The record company was nervous in the beginning, but after they started hearing the material, they started getting extremely excited and then it became a really pleasant experience.

LIW: “I’m a Fire,” you’re singing in Spanish. “Drivin’ Down Brazil” has that samba flair. I was really intrigued by “Fame (The Game).” Tell me about that. DS: Some of the words are autobiographical and looking at what’s been going on with Britney Spears, Whitney [Houston] and a lot of these other kids that are out there who have really lost their sense of direction in life. We’ve incorporated that song into our set and it’s really great on stage. I think it gets the point across. A lot of people are busy trying to be famous and they don’t understand what the animal of fame actually is. I call it an animal because it can be brutal. LIW: How do you explain your longevity versus so many disco artists? You are the one gold standard where you have a career arc that is continuing to this day versus so many artists, be they bands or singers, who might get one or two hits tops if they’re lucky. Next thing you know they end up on a disco oldies revue. DS: I think I planned at a very early age that this was my life and career. I don’t look at it as a passing phase for myself. Like you know, it doesn’t mean there won’t be ups and downs. Frank Sinatra was successful every year of his life but I think it’s the long-term perspective on

a career that makes it a career. If you’re going to have a shot at something, you can’t do it once or twice and then bail out. That’s not a career. I never bailed out of my career. When I wasn’t recording, I was performing. Thankfully, I had a very large [fan base] and they’ve been very loyal, so I’ve been able to perform on a very high level for a very long time. That’s been very good for me, but that is something that I established early on in my career. So I think a lot of artists don’t establish themselves as performing acts. I think I managed to do both of those things through the tutelage of Neil Bogart. He was very adamant that I be recognized as a real person who could really perform like a Frank Sinatra and he thought that would bring me the longevity. And he was right. There is a lot of truth in that.

LIW: You were recently on American Idol for the second time. What was that like? DS: It was the finale this time and I really enjoyed it. The girls that were on the show this time around rallied and were there until the end. They sang a lot of my songs. It was just great. It’s great to see this new crop of talented kids that have really got it. They’ve got it going on and it’s not gimmicky. If you don’t have it, you ain’t going to be on the show. They work you so hard on that show and I know what it’s like. It’s almost brutal, but they really get an education in success on that show. I like it. LIW: Congratulations. I understand your other daughters are also in the industry. DS: Thank you. And my other daughter is an actress out in Hollywood and she’s been on a show called My Wife and Kids, that’s been on for two seasons. She’s getting ready to do a new show called Revolution on the Sci-Fi channel. Everybody is bubbling along. My oldest daughter Mimi is married with three kids and she’s still writing songs and working on her career. So everybody is in the business somehow. LIW: Talk to me about Crayons. It seems to be all over the place and I mean that in the best sense of the word. DS: It’s supposed to represent as many colors as I could possibly get out. The criteria for the album was

her working-class Boston environs and the glitzyness of Studio 54 to recording studios in Germany and Hollywood. But the creative approach

ukebox musicals are a fairly surefire way to profit on Broadway (although Escape to Margaritaville seems to be defying that logic, given that it’s closing on July 1). Summer: The Donna Summer Musical seems tailor-made to succeed. Director Des McAnuff (who also co-wrote the book along with Colman Domingo and Robert Cary) has been down this path to success with his prior efforts The Who’s Tommy and Jersey Boys. And the two Tony nominations Summer landed for leads LaChanze and Ariana DeBose must mean it’s a great production, no? Not exactly. The idea that LaChanze, DeBose and Storm Lever portray the late vocalist’s different personas (Disco Donna/Diva Donna/Duckling Donna) is novel on paper, but proves to be a bit confusing in reality. Particularly when LaChanze and Lever also play Summer’s mother and daughter respectively. The set design is top-notch, capturing various locales in Summer’s life ranging from

of having a cast that’s essentially all-female playing virtually all the male roles, not unlike an inverse version of what Shakespeare was doing with The Globe Theatre, is jarring and doesn’t necessarily work. There is also a lot of chronological jumping around that can be dizzying. While the audience gets the full Behind the Music treatment that includes anecdotes about Summer being groomed by mentor/label head Neil Bogart (who was one of the few male characters played by a man), enduring childhood molestation, a suicide attempt and a bad first marriage, it all seems to be glossed over. The musical’s creators get credit for addressing Summer’s anti-gay remarks that included, “God made Adam and Eve, not Adam and Steve,” a 1983 on-stage quip the then-born again Christian made that alienated many of her most devoted fans. The Donna Summer canon is what keeps this production afloat. Attendees can expect to get the kitchen-sink approach that not only includes Summer’s seminal songs—”MacArthur Park,” “Hot Stuff,” “Dim All the Lights,” “Bad Girls,” “On the Radio,” “Heaven Knows,” “She Works Hard For the Money”—but collaborations with Musical Youth (“Unconditional Love”) and Barbra Streisand “No More Tears (Enough is Enough),” although Streisand’s presence is glossed over. And by the time “Last Dance” is unleashed as the show closer, there’s no denying the greatness that was Donna Summer.

ssembly line-style fast-casual restaurants have come a long way since the auspicious debut of Subway many years ago. These days, hungry customers on-the-go can build their own meals at fresh-forward stalwarts like Chipotle, Moe’s and the lesser-known but growing Sabrosa. Recently, a new option in that vein of eateries opened in Mineola—and thankfully, it features cuisine other than the usual suspects. Conceived by the owners of Bosphorus Cafe Grill in Port Washington, Kebab Factory, a Turkish and Mediterranean grill, utilizes the

quick-serve approach to build streetfood favorites with an emphasis on fresh ingredients and homemade recipes. The five-step factory process starts when customers pick a base from options including salad and grain bowls, roasted vegetables, pita sandwich and French fries. From there, you choose from a list of proteins like falafel, chicken doner kebab, chicken shish kebab, lamb and beef doner and spicy chicken to top your base. Then, it’s time to pick up to two dips and spreads—these include hummus, babaganush, spinach with yogurt, eggplant with tomato, spicy feta and roasted red pepper hummus. The next step is toppings, with options including shepherd’s salad, olives, cherry

peppers, pickled onion, cucumber, feta and more. And finally, you can choose up to two sauces from a collection that consists of herb vinaigrette, tzatziki, lemon citrus, hot sauce and tahini. The end result is a completely personalized combination of ingredients for a flavorful lunch or dinner. And as the bases include a variety of greens and grains, it feels downright healthy, even when the beef and lamb are piled atop. Speaking of the meats, chicken doner and lamb and beef doner seductively spin on vertical rotisseries just behind the counter. Marinated in a proprietary blend of spices, the meat is succulent, with that all-important outer crust created when heat meets juicy meat. The lamb/beef doner is

especially luscious, imparting its drippings onto the base below. Meanwhile, the chicken doner is equally moist, thanks to the tradition of using thigh meat rather than the dangerously dry breast. While the meat is serious business, customers can have some real fun mixing and matching dips, spreads, toppings and sauces. The babaganush is smoky, while the spinach with yogurt is subtle and smooth. The roasted red pepper hummus tastes garden fresh,

pairing nicely with the more assertive spicy feta. The shepherd’s salad stands out among the toppings, thanks to fresh herbs, seasonings like sumac and red pepper. Olives add a pleasantly bitter bite, while cherry peppers bring some fire to the fare. As for sauces, the tahini and tzatziki, crucial elements in many Mediterranean cuisines, are tasty and definite must-have additions to any meal at the Kebab Factory. And for a fiery exclamation point, ask for a streak

heaters are hoping to rebound from a slow winter/spring slump by releasing some of its best blockbusters for summer. They are so confident that they are distributing a few of them prior to the official start of June 18. Take a break from the heat and catch one of these exciting flicks. The following are just a few to choose from this summer.

Crazy Rich Asians (PG-13)

On Aug. 17, the film Crazy Rich Asians debuts, directed by Jon M. Chu and starring Constance Wu, Michelle Yeoh, Henry Golding, Gemma Chan and Ken Jeong. This movie is based on the 2013 novel of the same name by Kevin Kwan. The hilarious comedy follows boyfriend and girlfriend Rachel and Nick, both NYU professors who travel to Singapore to meet Nick’s family. Unbeknownst to

Ocean’s 8 (PG-13) June 8 sees the premiere of Ocean’s 8, which received a lot of buzz since the announcement of an all-female cast. Gary Ross directs Sandra Bullock, Cate Blanchett, Anne Hathaway, Mindy Kaling, Helena Bonham Carter, Rihanna, Sarah Paulson and Awkafina. A direct spin-off from the Ocean’s trilogy starring George Clooney, this story follows Danny Ocean’s estranged sister, Debbie Ocean, as she gathers a crew to steal a major item from the star studded Met Gala held annually in New York City. This action-comedy is a must see.

Mission: Impossible Fallout (NR)

Rachel, Nick’s family is one of the wealthiest families in Asia and they don’t necessarily think she is good enough for him. A great film to destress with.

Replicas (PG-13) Aug. 24 sees the release of Replicas, directed by Jeffrey Nachmanoff and starring Keanu Reeves, Alice Eve, Thomas Middleditch and Emily Alyn Lind. Reeves stars as a scientist who loses his family in a car accident and does everything possible, legally or not, to bring Incredibles 2 (PG) them back to life. A scary thriller, which Reeves excels The animated feature debuts on at. This one will keep you June 15, directed on the edge of and written your seats. by Brad Bird who also did the same for the first Incredibles movie. Holly Hunter, Craig T. Nelson, Sarah Vowell, Samuel L. Jackson and Sophia Bush are just a few celebrities to lend their voices to this funny sequel following the Parr family. This time, Elastigirl, continues to fight crime while protesting for the reinstatement of the supers. Mr. Incredible becomes a stay at home parent caring for Violet, Dash and Jack-Jack where he discovers the baby’s secret powers in the process. Hitting theaters July 27 is Mission: Impossible-Fallout, which is directed by Christopher McQuarrie and stars Tom Cruise, Henry Cavill, Rebecca Ferguson, Michelle Monaghan and Angela Basset. This is Cruise’s sixth turn as Ethan Hunt as he and his team must regroup after a failed mission threatens the world. This time not only enemies but former allies hunt him down, assuming wrongly that his loyalty may be in question. This is what Cruise does best and it is sure to win at the box office.

Ant-Man and the Wasp (NR) July 6 sees the debut of Ant-Man and the Wasp, a sequel to 2015’s Ant-Man. Peyton Reed directs with Paul Rudd, Evangeline Lilly, Michael Pena, Bobby Cannavale, Judy Greer and Michael Douglas starring. Scott Lang aka Ant-Man is under house arrest following the Avengers Civil War where he is struggling to balance life as a father while working on his responsibilities as Ant-Man. Hope Van Dyne aka the Wasp and her father (played by Douglas) team up once again to fight for goodness while protecting their loved ones. Sure to be just as funny as the first one.

Escape The Heat: TV Binges BY ANTHONY MURRAY

ummertime is right around the corner. Why go out and have some fun in the sweltering heat when you can stay inside a nice air conditioned room and binge out on some of the year’s hottest shows? Here are some suggestions for those who just want to Netflix and chill out.

HBO’s Barry follows former United States marine Barry Berkman who is played by comedian and Saturday Night Live alum Bill Hader, who works as a low-rent hitman in the Midwest. Lonely and dissatisfied with his life, Berkman travels to Los Angeles to kill someone but ultimately ends up finding an accepting community in a group of eager hopefuls within the Los Angeles theater scene. Season one consists of only eight episodes, an easy challenge for all the hardcore bingers out there. Barry was recently renewed for a second season. Unbreakable Kimmy Schmidt on Netflix is another good show to binge. The web television sitcom follows 29-year-old Kimmy Schmidt—played by Ellie Kemper—as she adjusts to life in New York City after her rescue from a doomsday cult in the fictional town of Durnsville, IN. The overtly positive Schmidt quickly befriends her street-wise landlady Lillian Kaushtupper, finds a roommate in struggling actor Titus Andromedon and gains a job as a nanny for the melancholy and outof-touch socialite Jacqueline Voorhees. The show just recently ended its four season run on the streaming service.

Also on Showtime is the comedy-drama Shameless, which stars William H. Macy who plays Frank Gallagher. As a single father of six children, Gallagher spends his days in a drunken stupor when he’s not searching for misadventures while his kids learn how to take care of themselves. The British remake has been renewed for a ninth season, which will make it the longest-running original scripted series in Showtime’s history.

For those who have a passion for anything British or royal, the award-winning historical drama The Crown, can also be found on Netflix. The show traces the life of Queen Elizabeth II from her wedding in 1947 through to the present day. Each season of the show covers a different period of Queen Elizabeth’s life. The Crown has already been renewed by Netflix for a third and fourth season, which the former slated to premiere in 2019. The show is intended to last 60 episodes over a six season span, with 10 one-hour episodes per season. If being scared out of your mind is something that you enjoy, then Netflix’s Evil Genius: The True Story of America’s Most Diabolical Bank Heist is a good choice. Evil Genius is a true crime docuseries about the murder of Brian Wells, a high-profile 2003 incident often referred to as the “collar bomb” or “pizza bomber” case. It was released on Netflix as a four-part series last month. Billions is another binge worthy show. The television drama is loosely based on the activities of crusading federal prosecutor of financial crimes Preet Bharara, the former U.S. Attorney for the Southern District of New York and his legal battles with hedge fund manager Steve Cohen of S.A.C. Capital Advisors. In the second season, Billions loosely incorporates the cases involving the Treasury bond auction market manipulation conduct of the Salomon Brothers in 1991. Both Paul Giamatti and Damian Lewis star in the Showtime show, which was just renewed for a fourth season.

Lastly, Showtime’s Homeland—the popular American spy thriller follows the missions of bipolar CIA officer Carrie Mathison (played by Claire Danes) and U.S. Marine Corps Scout Sniper Nicholas Brody (played by Damian Lewis). Mathison comes to believe that Brody, who was held captive by al-Qaeda as a prisoner of war, has been “turned” by the enemy and poses a threat to the country. Homeland focuses on a storyline that evolves from this premise, together with Mathison’s ongoing covert work. The show will end next year after its eighth season. Christian explained that many renters enjoy having a captain because they don’t have to focus on driving the boat and can fully relax while the captain adds to the experience by sharing information about the area. “I feel like I really get to know people when I go out with them on the water because they’re in a very comfortable environment,” said Christian. Poppable, portable and altogether delicious, these simple shrimp dishes will be a hit at any barbecue this season. Fried Shrimp with Garlicky Hot Pepper Sauce From Judy Joo’s Book Korean Food Made Simple Serves 4

“This classic Korean-Chinese dish is a more grown-up version of sweet-and-sour shrimp. The shrimp is battered and fried and then enrobed in a spicy, garlicky, pungent sauce, free of the distraction of vegetables. With its somewhat familiar tomato-accented sauce, it’s more similar to Chinese sweet-and-sour takeout than its cousin, sweet-and-sour beef.” 1 tsp plus 1 Tbsp vegetable oil, plus more for frying ½ cup plus 1 tsp cornstarch ½ cup potato starch ½ tsp baking soda Kosher salt or sea salt 1 large egg white 1½ lbs large shrimp, peeled, deveined, and patted dry

3 Tbsp sugar 4½ tsp tomato paste 1 Tbsp soy sauce 1 Tbsp rice vinegar 1 tsp gochujang (Korean chile paste), Sriracha, chile sauce, or chile-garlic sauce 1 tsp toasted sesame oil 3 Tbsp diced onion 6 cloves garlic, grated or minced 1 fresh Korean red chile or Fresno chile, diced 1 fresh Korean green chile or jalapeno, diced Handful of scallions, thinly sliced on an angle Steamed white rice for serving 1. 375 degrees F. While the oil is heating, in a large bowl, whisk together ½ cup of the cornstarch, the potato starch, baking soda, and a pinch of salt. Add the egg white, 1 teaspoon of the vegetable oil, and ½ cup water and whisk until a thick batter forms. 2. Working in batches, coat the shrimp in the batter, letting any excess drip into the bowl. Slip the shrimp into the oil, one piece at a time, and fry, stirring occasionally, until golden brown, about 1½ minutes. Transfer to a wire rack or paper towel-lined plate to drain. Repeat with the remaining shrimp, letting the oil return to 375 degrees F 1. Bring a pot of water to a boil. In a large bowl, whisk together the eggs, stock, fish sauce, and salt. Pour the mixture into four 10-ounce heatproof bowls or ramekins. Arrange the bowls in a large wide pot with a lid. Add enough boiling water to the pot to reach two thirds of the way up the sides of the bowls. Bring the water to a gentle simmer, cover the pot, and steam until the custards are slightly wobbly in the center, 6 to 7 minutes. 2. Divide the shrimp and scallion among the bowls, cover, and steam until the shrimp are cooked through and the custards are set, about 3 minutes more. 3. Top the custards with a drizzle of sesame oil and a sprinkle of sesame seeds and serve warm

When all the shrimp have been fried, let the oil return to 375 degrees F, and then carefully return all the shrimp to the oil and fry a second time until very crisp, 1½ to 2 minutes. In a small bowl, whisk together the sugar, tomato paste, soy sauce, vinegar, chile paste, sesame oil, remaining 1 teaspoon cornstarch, and ¼ cup water until the sugar has dissolved. Set the sauce mixture aside.

Shrimply The Best ½ pint heirloom cherry tomatoes, halved 1 pound heirloom tomatoes, cut in various shapes ½ white onion, thinly sliced 6 large fresh basil leaves, cut into a chiffonade ¼ cup red wine vinegar Black volcanic sea salt 1. Coat a large sauté pan with olive oil. Add the garlic and a pinch of crushed red pepper and bring the pan to high heat. When the garlic is golden and very aromatic, about 2 minutes, remove it and throw away. Toss in the shrimp, season with kosher salt, and cook for 2 to 3 minutes, or until the shrimp turn pink on the outside and are opaque all the way through. Remove from the heat and reserve. 2. In a large bowl, combine all the tomatoes, onion, basil, and a pinch of crushed red pepper. Add the vinegar and the juices from the pan. Toss gently. 3. Arrange the salad on serving plates and top with the shrimp. Sprinkle with the sea salt and serve.

From Fred’s at Barney’s New York Downtown

1 cup cooked octopus, cut into 1-inch pieces 1 cup raw calamari, cut into 1/2-inch rings 6 medium-size raw shrimp, peeled and deveined cut into 1 inch pieces 6 sea scallops cut into 1 inch pieces 8 littleneck clams in the shell, rinsed 8 mussels in the shell, rinsed 1 lb. dried spaghetti ½ cup crushed canned Italian tomatoes 3 tbsp. extra-virgin olive oil ½ cup dry white wine 2 cloves of garlic sliced 1 inch thick ½ teaspoon dried oregano Pinch hot red pepper flakes Kosher salt and freshly ground black pepper 1. In a large covered pot, heat a gallon of water with a tablespoon of kosher salt to a boil. In a skillet large enough to hold the pasta later on, heat the oil over medium-high heat.

Add the garlic and cook, stirring, until golden. Add the calamari and octopus and cook, stirring, until the calamari starts to turn opaque, about 3 minutes. Add the clams and mussels and cook 1 minute. 2. Add the tomato, wine, oregano, hot red pepper flakes, and salt and pepper to taste. Mix well, bring to a simmer, and simmer about 4 minutes, until the shellfish start to open and the sauce has thickened slightly. 3. Next, add the pasta to the boiling water, stir well, and cover

until it returns to the boil. Uncover and boil until just tender to the bite all the way through. 4. Add the shrimp and scallops to the sauce, mix well, and simmer about 2 minutes, until the shrimp and scallops are just cooked through. If the sauce seems too thick, add a few tablespoons of pasta cooking water. When the pasta is cooked, drain it well and add it to the sauce. Toss well and serve immediately. If desired, arrange on a serving platter with the mussel and clam shells around the rim.

A Farmer’s Heirloom A fresh ingredient straight from the garden By Steve Mosco

Thank goodness for fanatical seed savers. Sometime before the 1930s, an opportunistic farmer somewhere in America noticed a plant was producing a tomato that was uniform in shape and color. The rounded shape made shipping the fruit a breeze and the all-red color was more enticing to customers’ eyes. So, after agricultural experiments, a new tomato variety containing this “uniform ripening” mutation was released—they dubbed it, All Red. But breeding uniformity into tomatoes had the unfortunate side effect of sucking out all the flavor. Now the bulk of tomatoes we eat today pale in comparison to the tomatoes of a century ago. Because we demanded tomatoes outside of the traditional season of June through October, and ones more cost-effective to ship, what we’ve ended up with is a perfectly round and perfectly boring tomato with bland flavor, along with a plastic exterior and a Styrofoam-esque interior.

Here’s where those fanatical seed savers come into play. As if they split open a tomato and saw the bleak future, some growers saved seeds for generations, giving us heirloom tomatoes. These antique strains of the fruit and/or vegetable create tomatoes of various colors and sizes, with unsightly bulges, striking shades and the taste of a real tomato. And varieties go beyond Beefsteak or cherry or plum. Heirloom tomatoes boast cool names like Black Krim, Amy’s Super Gem and Dixie Golden Giant. They can be found at farmers’ markets or local grocery stores with expanded produce sections—or, for more agricultural individuals, seeds can be purchased online for home growing. As an ingredient in dishes, heirloom tomatoes easily replace the mass-cultivated versions. A garden-fresh bruschetta atop crusty bread or grilled chicken blatantly displays the array of heirloom tomatoes, while Burrata and Caprese salads are taken to

far more flavorful levels when heirlooms are used in the dish’s recipe. While replacing canned tomatoes with heirlooms in your Sunday sauce is a daunting task, your ancestors would be proud of your homemade, from-scratch efforts. A classic heirloom tomato sauce with fresh basil is a deep-flavored and fresh take on the all-day simmering pot. And the health benefits attributed to tomatoes are numerous. They are a rich source of antioxidants, including lycopene, an antioxidant that is highly effective in scavenging cancer-causing free radicals, while also exerting a protective effect against cardiovascular diseases. Tomatoes are also a tremendous source of vitamins C and A, along with iron and potassium. Dig a little deeper at the market and when you pull out those weird, bumpy tomatoes, say a quiet “thank you” to the seed savers.

Every travel destination has its own look, culture, history, people, feelings, landscapes and stories. Learning how to capture these subjects through photos helps convey the spirit of a place to others, giving them a glimpse of what it might be like to venture there. I never went to school for photography. And yet here I am now, making my living as a professional travel blogger and photographer who regularly licenses images to tourism boards, brands and occasionally glossy magazines. Wake Up Early, Stay Out Late

The early bird gets the worm. I’m sure you’ve heard that phrase. Well it’s also very true for travel photography. Light is the most important ingredient for great photography—and soft, warm, morning light creates amazing images.

Pre-Trip Location Scouting

Read travel guidebooks about your destination. Scour the internet for articles and blog posts to help give you ideas for photos. Talk to friends who have been there. Reach out to other photographers. Become more knowledgeable about which images will capture the essence of a place.

Talk To People

Photographing local people in a foreign country is tough for many photographers. What if they don’t understand you? What if they say no? Will they get offended? It took me a couple years to get comfortable shooting portraits of locals, and even now I still get a bit nervous.

Experiment With Composition

You can almost always come up with a better photo composition after some experimentation. Sure, take that first shot standing up straight. But then try laying on the ground for a low angle. Maybe climb up something nearby and shoot from a higher angle.

If you went out and bought all of the photography gear I use, not only would it be super expensive, I guarantee it won’t improve your photography skills. Start with the basics and leave the 12-set of lenses at home.

One of the most basic and classic of photography tips, understanding the Rule of Thirds will help you create more balanced compositions. Imagine breaking an image down into thirds horizontally and vertically, so it’s split into different sections.

Make Photography A Priority

Attempting to take quick snapshots as you rush from one location to another will leave you with the same boring photos everyone else has. Make sure you plan “photography time” into your travel schedule. Good travel photography requires a solid time commitment on your part.

The Human Element

People like to live vicariously through human subjects in photos. Especially if the viewer can pretend the person in the photo is them. It adds more emotion to an image, you feel like you’re experiencing the location yourself.

Patience Is Everything

Photography is about really seeing what’s in front of you. Not just with your eyes, but with your heart and mind too. This requires dedicated time and attention. Slow down and make a conscious effort at becoming aware of your surroundings before pressing the shutter.

Protect Against Theft

Ok, this one is slightly off topic, but I think it’s important too. Cameras are small expensive products. As such, they’re a prime target for theft while traveling. I’ve heard

many sad theft stories from other travelers. Luckily I’ve never had my camera stolen, but I also take precautions against it.

Shoot In Manual Mode

You’d think that modern cameras are smart enough to take incredible pictures on their own, in auto mode. Well that’s just not the case. While they do a pretty good job, if you want truly stunning images, you need to learn how to manually control your camera’s settings yourself.

pecialty stores and even your grocery store are regularly adding to their produce selections and while it might seem like your produce aisle is progressive and full of variety, almost assuredly you’re missing out on hundreds of exotic and obscure fruits and vegetables from around the world. Here are 11 that you might have never

tried or even heard of but are available right here on Long Island.

Lychee—A Chinese fruit with a tough outer skin and a pit. Peel the skin and eat the fleshy fruit, discard the pit. You can also readily find these already peeled and pitted in the canned fruit aisle at an Asian grocer. Rambutan—Don’t let its “hairi-

ness” frighten you. This little Malaysian

delight is similar to the lychee. The fleshy fruit can be described as grapelike with a perfume subtleness. The seed can be cooked and eaten too.

Tomatillo—You’ve definitely

heard of this one and it’s probably been used in a dish that was prepared for you. Bring one home and give a try. This Mexican husk tomato can be eaten raw or cooked, and always makes a good salsa verde.

Chayote (Pear Squash)—

It’s a gourd from South America, with a great source of vitamin C. It can be boiled, stuffed, mashed, baked, fried or pickled. Cook it with or without the peel. It can be eaten raw, diced or sliced into a salad. The seed is edible.

Pitaya (Dragonfruit)—OK,

this European native is a root vegetable and can be used exactly like a potato. Cook it, bake it, mash it. Sometimes called a Jerusalem Artichoke, it is neither from Jerusalem, nor an artichoke.

Bok Choy—Another Asian staple, also called “pak choy” or “pok choi” is a type of cabbage, but its dark leafy blades don’t form heads, instead are open and wide resembling mustard Chayote greens or celery. Great (Pear in stir-fry, or cooked Squash) down like chard and greens.

Kumquat—This is

another vaguely familiar one. You’ve likely heard of it, but it is not common on most shelves. It looks like an orange but is the size of an olive. The peel is sweet, but the center is sour and can be eaten whole, but is mostly used for making marmalade and jelly

Rambutan

Napa Cabbage—This Chinese

staple is great raw or cooked, used as a wrap or in a soup or stir-fry. It’s also the main ingredient in Korean kimchi, pickled cabbage.

Cactus Leaf—Another

cactus fruit, the prickly pear cactus leaf can be eaten cooked or raw. Remove the spines and peel back the skin; smells and tastes like green beans. You can also boil, fry or pickle the cactus fruit.

Bitter Melon—Originally from India and China, depending on the variety, this melon or gourd looks like a weird cucumber. Eaten while green, or just as it’s turning yellow. It’s flesh is crunchy and watery, similar to a cucumber or green bell pepper, but much more bitter and almost always consumed cooked in soup, stir-fry.
