Seal’s Song Standards BY DAVE GIL DE RUBIO

G

iven his roots in the UK’s late 1980s acid house movement and success as a global pop star, the idea of Seal diving into the Great American Songbook doesn’t immediately click as a creative coupling. But as an artist who has always been about honoring the song and as someone who grew up in a household where the songcraft of Burt Bacharach, Hal David and Motown’s deep stable of lyricists were part of the London native’s background, a project like Standards doesn’t wind up seeming so odd. With a move to his new home at Republic Records, the man born Henry Olusegun Adeola Samuel was ready to dive into a passion project with help from producer Nick Patrick [Hans Zimmer]. “These are great songs and if you love to sing, as I do, it’s a wonderful opportunity to do some great [tunes]. Also, the people from Universal approached me with a great deal of passion. And I think if you get the [chance] to embark on a project with people who are passionate about it, you have to take advantage of that opportunity because they can be few and far between,” he explained. The 11 songs that make up Standards (14 on the Deluxe Edition which includes bonus cuts “The Nearness of You,” “Let It Snow, Let It Snow, Let It Snow” and “Christmas Song (Chestnuts Roasting)”) represent stories composers like Lorenz Hart and Richard Rodgers (a sublime and subtle “My Funny Valentine”), Cole Porter (the lovingly lush “I’ve Got You Under My Skin”) and Great Neck’s own Ervin Drake (a string-kissed “It Was a Very Good Year”). Seal’s rich and sonorous phrasing fit hand in glove with conductor Chris Walden’s sumptuous arrangements. Between the embarrassment of riches presented by the depth of the Great American Songbook and the complexity of the material, Seal was enthralled by the entire process. “The pot to choose from is so vast and deep that you can’t really go wrong,” he said. “With standards, even the ones that you’re not familiar with or sure of at first, after singing them a few times, you just realize that they’re beautiful songs and there’s a reason why they’ve been around this long. They were meticulously written, conceived and recorded.” With this current tour, Seal is looking forward to working with small orchestras in some markets, all while weaving in his own songs with these chestnuts. Concert-goers can expect an opening set of standards that gives way to an acoustic section, where he’ll be performing hits like “Prayer for the Dying,” “Kiss From a Rose” and “Crazy.” While he’s been surprised at how well they blend, tackling these more intricate compositions has given him an appreciation for the craft that went into them. “It’s interesting how well these songs work with my own original material. I guess the common

denominator is my voice. I’ve learned so much from doing these standards and learned so much about my own music,” he mused. “It’s altered my approach to singing. These standards are written and more specifically, arranged for the voice in a way that’s very rare to come across today. It’s not enough to just sing the song—you have to tell the story, and that’s a whole separate thing. If you think of people like Ella Fitzgerald or Frank Sinatra—they were great singers but boy, they were even better storytellers. Once you understand that the voice is about carrying the narrative, you realize how exposed you are.” Having gotten such a thrill from doing this material, Seal is anxious to delve deeper, all while continuing to write and record his own music. With the music industry in such flux, he’s even considered recording only singles and possibly only releasing EPs or collections of singles versus a traditional album of sequential tracks. In the end, his concern is with staying true to himself, his fans and the

compositions, whether he wrote them or not. “I think the song, the song, the song. As long as I feel like I’m contributing and honoring the song, then it’ll make it to a record. But if I feel like I’m not doing the song good service, then obviously [I’ll pass],” he said. “I’m never going to compromise my integrity. I’m never just going to put out a single in order to compete. I don’t feel I need to compete. I just feel that the people that I’m fortunate enough to have like [me as an artist] expect great music from me. They expect a level of music that has integrity, authenticity and for it to resonate and say something, whether that’s as a single, an EP or an album of 10 songs.” Seal will be appearing on June 26 at the Beacon Theatre, 74th Street & Broadway, NYC. n April 28, the third day of the NFL draft was underway at AT&T Stadium in Dallas. In the draft’s sixth round, Joseph Jester, a young Baltimore Ravens fan walked across the draft stage. Standing at its center, he announced the team’s 10th pick in the draft in front of the entire stadium. “With the 212th pick in the 2018 NFL draft, my favorite team in the whole world is the Baltimore Ravens and they select Greg Senat, tackle from Wagner,” Jester said. About 1,500 miles away, Greg Senat and his family were together in New York City watching the draft, waiting for a phone call from one of the 32 teams that could use his services. At around 5 p.m., that call arrived. It was Ravens general manager Ozzie Newsome, welcoming the Elmont native to the NFL. “We were all ecstatic. We all just exploded and were so excited,” Senat said. “This is a great organization, a

great team with a great coaching staff. I’m just happy they wanted me to be part of this.” Senat went to Elmont High School and was a member of the school’s football team, basketball team and lacrosse team. After finding his niche in basketball, he transferred to Marianapolis Prep School in 2010. He was a member of Wagner College’s men’s basketball team for the 2013-14 season and remained with the team through the 2016-17 season. Despite his commitment to basketball, in 2016, Senat wanted to get back on the gridiron. “The initial thought about playing football [again] was I just wanted to play it for fun,” said Senat. “I was in a place where I was missing the game. I was having fun playing basketball, but I thought it would be cool to also play football if I could.” “When he approached me about the idea, my first response was ‘Hey, get out of my office, go down to the men’s basketball office, you guys are about to play in a championship and I’m not going to be blamed for

anything,’” said Wagner football coach Jason Houghtaling. “I told him to go see [men’s basketball] coach [Bashir] Mason, then come back and see me once it’s cleared by him. The rest is history in terms of his development.” Houghtaling and his staff put Senat on the offensive line to fit his skillset. In the first few games of his career, Senat tried to adjust to the game he hadn’t played since high school. “After a game versus Boston College in his first season, I went up and grabbed him because he had a rough day,” Houghtaling said. “He had to block [Harold] Landry, who is going to be a top NFL defensive end. [Senat] made some great plays, but there were seven or eight that didn’t look to good. It was only Greg’s third game playing football after a long break. I told him ‘Hey, keep working, you’re going to play in the NFL someday.’ How he responded to the adversity of the Boston College game showed me what kind of grit he had. He could’ve quit, but he didn’t.” Despite early struggles, Senat went on to start all 22 games over the course of his two-year career with the team. He focused solely on football in 2017 and then spent the start of 2018 getting ready for the draft. He participated in the East-West Shrine Game, becoming the first Wagner player to play in the college all-star game. He also attended the NFL Scouting Combine, where he participated in drills that helped give NFL teams an idea of what he could do at the pro-level.

“He has all the athletic ability in the world. He’s extremely intelligent. He just needs to develop that strength to block some of those guys. If he does that, he’s well on his way,” said Houghtaling. A week after being drafted, Senat made his way to Baltimore to meet with Newsome, Ravens head coach John Harbaugh, and the rest of the coaching staff. He began work immediately, playing with high draft picks Hayden Hurst and Lamar Jackson during rookie mini-camp. He’s now working with the rest of the team during OTAs. “Training camp has been great,” said Senat. “I’m learning a lot. They’re throwing us right into the fire as rookies, which is the way it should be. You got to learn on your feet. I’ve met some great people. The coaches are giving me a lot of knowledge and taking a lot of time to teach me the nuances of the game and teach us all the fundamentals. It’s been a great learning experience and I’m getting better every day.” As for his future, Senat said his goal right now is to earn one of the 53 roster spots the Ravens have available. “As long as I keep a positive attitude and I keep on working hard like I have been doing my whole life, I think that’s all they want to see from me,” said Senat. “They want to see progress. Every day I’m doing something better and not going the other way. That’s just the mentality I’ve always had as a competitor and a person.”

elmont Child Care Association hosted its third annual Spring Fling Hat Luncheon and Fashion Show at The Garden City Hotel on May 31. The gala event, attended by 265 guests, raised funds to contribute to the care and education of the sons and daughters of New York thoroughbred racing backstretch workers who would not otherwise have the means for trusted and quality child care. “Our mission is to provide a safe, supportive and academically inspiring environment. We are committed to promoting early childhood education, molding young minds and encouraging the fulfillment of dreams,” said Joanne K. Adams, executive director, Belmont Child Care Association (BCCA). “The Spring Fling is one of our most important events of the year. We honor individuals from the local community and the thoroughbred racing industry who give their time and resources to BCCA. As we raise funds, we also have fun. Guests wear hats to the luncheon as they do to the races. They enjoy a seasonal fashion show, buy raffles and bid in a live auction. The top item is part-ownership of a thoroughbred racing horse.” The honorees at this year’s Spring Fling Hat Luncheon were Nancy Kelly and Roberta Doheny. Nancy Kelly is the 2018 BCCA Thoroughbred Horse Racing Industry Honoree. For more than 30 years, the Westbury resident has raised awareness and funds for charities associated with industry. Formerly with The Jockey Club and New York Racing Association (NYRA), she has been a board director of BCCA since its inception in 1998. Roberta Doheny is the 2018 BCCA Community Honoree. The life-long Point Lookout resident is an owner and operator of a fifth-generational business, Scotty’s Fishing Station on Reynolds Channel, and the Buoy Bar Waterfront Grill, providing a unique and memorable experience for BCCA children to learn about fishing techniques and water safety at the annual Scotty’s Fishing Fun Event. In homage to the longstanding hat-wearing tradition at horse races, guests always wear hats to the Spring Fling. Roth’s treatment of the riots in American Pastoral was even-handed, from the trials of city residents to the response from South Jersey farm boys who filled the ranks of the state National Guard. With Newark, there are no happy endings. The city’s decline began in the early 1950s, with many industries leaving town. By 1967, Newark was a

time bomb. Roth was balanced, but there is no talk of renaissance, either. “It will be 500 years before things get better!” a despairing retiree blurts out. It’s always salutatory to be told something you already know. 500 years. Newark—or America? Or both? Roth’s canon had glaring faults. His rage gained him fans happy to see WASP America getting cut down to size. Too often, it got ugly. When Roth was down on certain ethnic groups— Italian-Americans, Cuban-Americans, Scotch-Irish Appalachia, Wall Street WASPs—he put female characters from those stock in the most degrading situations possible. If ever a novelist needed a blue pencil, it was Roth. With American Pastoral, we’ll remember the man at his best.

National Cancer Survivors Day The Belmont Stakes 5k run attracts hundreds

On Sunday, June 3, communities across the globe held celebrations to recognize National Cancer Survivors Day, to honor cancer survivors, and to show the world that life after a cancer diagnosis can be fruitful, rewarding and even inspiring. To celebrate this day, Integrated Medical Foundation (www.imfcares. org) along with the New York Racing Association (NYRA) hosted its annual Belmont Stakes 5k Run/Walk. The event was the prelude to the 150th running of the Belmont Stakes. Runners and walkers and cancer survivors traversed the grounds of Belmont Park, leading up to an exciting finish on the track at the same finish line that witnessed the Belmont Stakes triumphs of Secretariat, Seattle Slew, Affirmed and American Pharaoh, and recently, Justify. “Life after cancer is more than just surviving. It can be beautiful, abundant, and fulfilling. And that’s something to celebrate,” said Rhonda Samuel Executive Director

Survivors may face many challenges, such as limited access to cancer specialists and promising new treatments, inadequate or no health insurance, financial hardships, difficulty finding employment, psychosocial struggles, and a lack of understanding from family and friends. “Despite the numerous challenges they face, cancer survivors’ serve as an inspiration to all of us,” said Samuel. “It’s time for our community to stand with them and help find ways to lessen the burdens a cancer diagnosis brings.” IMF offers free support groups to prostate cancer patients and one on one in person or phone support to survivors of all cancers. Life-Saving Tobacco 21 Law Enacted In Nassau County A law that prohibits the sale of tobacco products to those younger than 21 years of age was recently enacted in Nassau County. “We are thrilled that County Executive Laura Curran acted to protect young people from Big Tobacco by signing this bill into law. Tobacco 21 is a common-sense measure that will help prevent kids from picking up their first cigarette. Approximately 95 percent of smokers started smoking before the age of 21,” Julie Hart, American Cancer Society Cancer Action Network (ACS CAN) Government Relations Director in support of the new lifesaving law. “The longer we can delay initiation of tobacco use, the less likely it is that someone will begin this terrible addiction. Increasing the age for the sale of tobacco products is a promising

strategy in the effort to keep kids from beginning this deadly addiction and may decrease their risk of many cancers and other diseases.” A report by the Institute of Medicine (IOM) titled, The Public Health Implications of Raising the Minimum Age of Legal Access to Tobacco Products concluded that raising the age for the sale of cigarettes to 21 can significantly lower smoking rates. The IOM report predicts that raising the national minimum age for the sale of tobacco products to 21 will likely lead to a 12 percent reduction in smoking prevalence. “It is now time for New York State to enact Tobacco-21 legislation,” added Hart. taying healthy is the key to a successful life for everyone. While there are many things you could do for your health, you may not know what to do first. In honor of June being Men’s Health Month, below are five simple health checks every man should do.

Get an annual physical

Getting a physical examination from your doctor is very important as you may have an underlying disease or illness you may not even know about. As you get older, your doctor may examine areas of your body that may be uncomfortable such as your prostate and genitalia. The better shape you are in, the quicker your examination will go. The more frequently you get a physical, you can be on top of any sight changes in your BMI, so if it raises at all since your last visit, you can change your lifestyle before it gets worse.

See your urologist

While it is very rare, affecting only 20,000 people per year according to the Mayo Clinic, testicular cancer is no laughing matter. Testing for testicular cancer is very simple; your doctor will check for any growths on your testicles and run some blood work or scans. While the causes of testicular cancer are unknown, the survival rate is still pretty high. However, that’s if cancer hasn’t spread to another part of your body. Another reason to see a urologist is because of prostate cancer, which can turn into colon cancer. The issue with prostate cancer is that the symptoms can either be unnoticeable. Tests for prostate and colon cancer are similar so one trip to the urologist can make a huge difference.

Get tested for skin cancer

Getting tested for skin cancer is as simple as a checkup by your

dermatologist. During the examination, the doctor will check the size of any moles or lesions you may have on your body, check your lymph nodes. Typically, any signs of skin cancer will form around the age 50 but can be from large amounts of sun exposure from years earlier. Skin cancer is the most common form of cancer, affecting over one million people in the U.S. alone. Even if you have existing moles on your body you were born with can develop into skin cancer. As always, wear sunscreen and protective clothing when outdoors in the heat for prolonged periods of time.

Check your testosterone levels

This test can affect not only you but also the people closest to you. Low testosterone levels can cause fatigue, agitation, loss of sex drive, stress, weight loss and severe depression. Low testosterone levels can cause a man to develop irritable male syndrome.

Fortunately, testosterone levels can be measured by having your blood taken. Healthy testosterone levels can be achieved again by weightlifting, anti-depressants, exercise and a change of diets such as less sugar intake and more protein.

Affecting more than three million people per-year, coronary heart disease is the most common cause of death in the United States and is more common in men. In 2013, one in every four men will die from heart disease, according to the CDC. Coronary heart disease is caused by plaque build-up, which hardens which then clogs your arteries, preventing blood flow causing a heart attack. Smoking, stress, high sugar levels, fatty foods and high blood pressure cause coronary heart disease. Unfortunately, plaque build-up cannot completely go away on by itself. Usually, cardiologists will perform a bypass surgery, which removes the plaque build-up.

rotein powder first grew its popularity in the athletic and bodybuilder community, but it has become a mainstream item for individuals of all activity levels. Protein itself is one of the three macronutrients, and is an important building block of bones, muscles, cartilage, and blood. Your body uses protein to build and repair tissues and make certain enzymes and hormones. Protein powder provides an easy meal replacement or post-workout shake to help you preserve lean body mass and maximize your body composition. Protein powder should supplement a healthy diet, and it is only a small piece of the puzzle towards good nutrition. You need to eat well and train properly, or else all the protein powders in the world won’t help you get stronger. Here are a few key tips to keep in mind when shopping for a protein powder:

Look For Minimal Ingredients

You want to fuel your body in the best and most natural way possible. Be sure to read over the ingredients label on your protein powder to make sure you aren’t filling your body with chemicals and artificial sweeteners. You should be able to pronounce and understand every ingredient on the label of your protein powder. If you are stuck deciding between two protein powders, pick the one with the fewer ingredients. Try to avoid protein powders with artificial sweeteners like sucralose and aspartame, which can have several negative side effects including headaches and bloat.

Watch Out For Too Much Protein

Although protein is a crucial macronutrient, even too much of a good thing can cause harm. Some protein

powders may contain a lot more protein than you need, especially powders that are marketed towards bodybuilders. Believe it or not, excess protein can be stored as body fat. Plus, too much protein at once can be hard to digest and may cause nausea and bloating. Try not to exceed 30g of protein per serving of powder.

Don’t Forget About Consistency

Some protein powders can taste grainy or have a chalk-like consistency. Make sure that your protein powder can blend well and doesn’t require too many additional ingredients. A simple protein shake should include a scoop of protein powder, 1 cup of fresh or frozen fruit, and a liquid base such as almond milk. If your protein powder is still feeling gritty after blending, give another one a try and be sure to read reviews online

to see what other consumers have to say. Typically whey protein isolate is a bit smoother than plant-based powders. If you are a healthy and physically active adult, protein powder can help improve your overall body composition and maximize lean muscle mass. Your recommended amount of protein intake can vary based on your height, weight, and activity level. Neurosurgeon Hails FDA Approval Of New Brain Therapy For Epilepsy

The U.S. Food and Drug Administration (FDA) recently approved a new deep brain stimulation (DBS) therapy for people with epilepsy, and Brian J. Snyder, M.D., FAANS, applauds the decision. Premarket approval for Medtronic’s Deep Brain Stimulation (DBS) therapy was granted by the FDA as adjunctive treatment for partial-onset seizures and is a significant development for patients whose seizures have proven

to be drug-resistant. “Many patients with severe epilepsy are not able to control their seizures with currently available drugs and are not candidates for curative surgery, may be helped by this new DBS therapy,” said Snyder. As Director of Functional and Restorative Neurosurgery at NYU Winthrop Hospital in Mineola, Snyder has performed hundreds of DBS procedures and is the most experienced

surgeon on Long Island performing this procedure. “DBS therapy for epilepsy delivers controlled electrical pulses to target in the brain called the anterior nucleus of the thalamus (ANT), which is part of a network involved in seizures,” he said. “Few therapies are as versatile

“My doctor told me that my blood iron levels are high. I am a 45 year-old father of two young boys. I feel fine and am healthy. Do I need to be concerned?” This is a very common reason why people visit either a liver or blood specialist for a consultation. There are many causes of high blood iron levels including previous blood transfusions, alcohol use, certain hematologic disorders such as thalassemia, and hereditary hemochromatosis. Of these disorders, hereditary hemochromatosis is the most common and worrisome. Hereditary hemochromatosis is a genetic disorder which leads to increased absorption of iron by the small intestine. Normally, the body has a regulatory mechanism by which only a fixed amount of iron will be absorbed. In hereditary hemochromatosis, this regulatory mechanism is disrupted and there is no control on the amount of iron absorbed. The absorbed iron is transferred and deposited in several organs such as the liver, heart, pancreas, skin and joints. The increase in iron stores can lead to problems

such as cirrhosis, diabetes, heart disease, bronze skin and joint pains. Most patients with

hereditary hemochromatosis do not know they have it. Occasionally, young people may first be diagnosed with hereditary hemochromatosis after having an irregular heart beat. This may occur particularly after taking vitamin C, which leads to increases the amount of iron absorbed by the small intestine. Most people with this disorder have no symptoms until they reach their 40s or 50s as the accumulation of iron in the tissues is a life-long process. When symptoms occur, the most common ones are fatigue, impotence,

joint pains or symptoms related to new-onset diabetes. Many people with hereditary hemochromatosis will develop cirrhosis and 30 percent will develop liver cancer, which is the most common cause of death in these patients. Hereditary hemochromatosis is the most common inherited autosomal recessive liver disease in Caucasian populations but can be found in all peoples. About one in ten people are carriers of the gene causing this disease and one in 300 people have the disease. The diagnosis of hemochromatosis is made

through a combination of serum iron and ferritin levels, genetic testing, MRI findings and /or liver biopsy with specific testing of the hepatic iron index. The treatment of hemochromatosis is phlebotomy or removal of blood until iron and ferritin levels normalize. Once levels normalize, phlebotomy is usually performed three to four times a year in order to maintain normal levels. For those patients unable to undergo phlebotomy because of heart disease, anemia or poor venous access, oral iron chelation therapy is available. If treatments are initiated before cirrhosis appears or heart disease occurs, all potential long-term complications of this disease can be prevented. The key to treatment of this disease is to catch it early. It’s important that all people be screened for this condition with iron studies. Once someone is diagnosed with hemochromatosis, it is important to screen immediate family for its presence. This is a hereditary disease so if one member of the family has it, it’s likely that other members have it is as well.

Sometimes the self-description morphs into “I feel tired all the time,” and experts say that’s when extreme tiredness becomes better known as fatigue. Fatigue, when someone lacks energy and feels exhausted mentally or physically, can negatively impact performance at work, family life, and social relationships. Often, it is not a medical issue, but one that can be reversed by a lifestyle change. People would be amazed at how much energy they’d have and how much better they’d feel if they treated themselves better. We all have busy lives, but there are simple ways to not let your schedule overwhelm you and make your health suffer as a consequence. Stress can lead to fatigue symptoms such as a craving for sweets and salty foods, difficulty sleeping and irritability. Try these five ways to fight fatigue and regain energy:

A busy lifestyle can lead to fast food or carry-out. Therefore, preparation is important. Your energy and production are directly proportional to how you fuel your body. Always be thinking about what you will be eating later. Ideally, your diet should consist of eating approximately five times a day with a combination of complex carbohydrates—fruits and veggies— and lean protein.

Fatigue is often directly related to sleep deprivation. When you sleep is when most of your healing takes place and without enough sleep, your immune system breaks down. It’s recommended you get 6-8 hours of sleep per night.

Get regular exercise

No matter how busy you are, you need to make time for exercise on a regular basis, ideally for 20 to 30-minute sessions a minimum of four times per week. Regular exercise helps regulate your mood, makes you sleep more soundly and erases the little mistakes in our diet.

s the calendar claws its way through June, visions of the varied tastes of summertime dance in the heads of the hungry masses. While the requisite burgers and dogs of lazy cookouts offer plenty of comfort, the warm weeks of the season send most discerning eaters to the depths of the ocean for a fine meal. Eating seafood is reminiscent of a day at sea, even when it’s consumed at home or in a restaurant residing far from where the air breathes salty. And easily some of the most amusement one can have eating seafood is with crab. Sure, lobster deservedly gets plenty of press—but diving into the depths of a bucket of crab legs and biting into a buttery crab cake can sometimes offer more fun and flavor

than that other, more luxurious clawed ocean critter. Beginning with an appetizer favorite, crab cakes have been a menu staple at restaurants for a long time. Stuffed with lump crab meat—hopefully—the dish is then pan or deep fried and usually served with a rémoulade or some other type of dipping sauce that pairs well with a butter-and-oil laden crab patty. Restaurants making waves with superior versions of this dish include Anchor Down Seafood and Grill in Merrick and Fisherman’s Catch in Point Lookout. Anchor Down’s version is indeed packed with jumbo lump crab and is pan fried for a golden exterior while sealing in the moist interior. It is served with an Old Bay rémoulade that boasts the immediately recognizable and classic flavor of the go-to crab seasoning. Meanwhile, the Fisherman’s

Catch serves a sautéed Maryland crab cake with a more deep-fried technique for a heftier crunch and is served with dynamic carrot cumin slaw and a salty caper rémoulade. Staying in the realm of the deep-sea deep-fried, Bigelow’s in Rockville Centre—the all-time masters of the fried fish/seafood extravaganza—always grace their customers this time of year with soft shell crab. Currently hitting its seasonal peak, the soft shell crab is one of the most visually striking meals with its completely intact body hitting the fry oil and eventually your plate. Bigelow’s breading is light and crisp, and completely devoid of any unpleasant greasiness. From the claws, to the legs and finally the rich, oceanic body, the flavor on this specimen is perfect on its own or with a side of tarter sauce. While Dungeness crab is certainly

available at restaurants and fish markets on Long Island, it is a northern West Coast shellfish so prices around here can get a little steep. But if you have a hard time booking a trip to San Francisco, Portland or Seattle, it is worth a few extra bucks for this ocean dweller. With a tough shell and a maze of nooks and crannies, getting to the meat of a Dungeness can be hard work—but it is well worth all the cracking and effort. The stocky bruiser of the crab family, Dungeness is a meaty mouthful, with a nutty, wild flavor and seems to pair well with heavily spiced sauce blends. For a dish along those lines, check out Ben’s Crab in Oceanside. Ben’s gives the eater a choice of sauce and spicy level for all their shellfish combinations—the Dungeness goes really well with their Ragin’ Lemon Pepper and

Finally, snow and king crab legs are perhaps the most popular, most ordered dishes from the crab world. Snow crab legs, served in leg and claw clusters, are known for their sweet and delicate flavor, with a slightly fibrous texture. These are typically served plain with a side of drawn butter and for good reason—snow crab marries beautifully with butter, but is just as delicious on its own. They are also fun to eat—a seriously seasoned eater can sit dissecting snow crab legs for hours, that is why this species is perfect for all-you-can-eat spectacles. And the place to go for eat-til-you-bust dinners is Popei’s in Bethpage. Tuesdays and Wednesdays boast specials where

diners can sit and decimate the snow crab population for hours on end. And the jovial atmosphere at Popei’s adds to the crab-induced jubilation. Meanwhile, Popei’s also presents king crabs to its devoted customers. The legendary, spike-covered leviathan of the Alaskan deep is notoriously difficult and deadly to catch and the market price certainly drives that point home, coming it at about $30 per pound. With a taste that neighbors somewhere between lobster and a giant prawn and a texture that is surprisingly reminiscent to coconut, king crab separates itself from other species with its subtle sweetness and gigantic claws filled with robust meat. With its numerous species and varying shapes and sizes, anyway you crack it, crab is worth diving for this summer.

ith the baseball season in full swing, it’s time to arrive at the parking lot hours ahead before first pitch to tailgate. But, what is tailgating and how do you do it correctly?

Tailgating is essentially a picnic where people can cook food on mini grills and serve drinks from the back of their car’s tailgate. Generally, tailgating happens a few hours prior to the event you are attending so you have enough time to set up your equipment. The most important component to a successful tailgate party is to bring food and beverages to share with your friends and family. Typically,

food is cooked on portable propane grills that use 16oz propane tanks to reduce weight. It is a good idea to do as much as you can beforehand so you don’t spend the entire time cooking.

When it comes to beverages, keep it versatile. Bring soda, beer and water and if your friends want something in particular, have them bring it so you can save money. The best idea is to put your drinks in a cooler filled with ice before you arrive to make sure they are cold. Ideally, you should get a 52-quart cooler, but don’t waste your money on a dedicated fishing cooler because those are more expensive. Since tailgating starts in the early afternoon, you may not want a beer. Instead you can prepare a cooler with a faucet and fill with bloody mary mix and extra hot sauce or celery next to the cooler for the perfect early afternoon drink.

What to Pack

When it comes to preparing the food, do not do too much, just use salt and pepper on the burgers and leave the hot dogs plain and let your friends choose their condiments. Another option is tacos, which are an easy way to showcase your ability to host a great tailgate by assembling a table of taco condiments so everyone can enjoy a taco of their choice.

Something that is commonly forgotten at tailgate parties are chairs. Since you’ll most likely be tailgating for a few hours, you’ll eventually want to take a seat. The best chairs to get are the foldable ones because they are cheap and portable. If you are outside tailgating for a long time, it would be a smart idea to pack sunscreen and an umbrella because the average person can get mild sunburn within 15 minutes of being in direct sunlight. With all the cooking going on, it doesn’t hurt to bring a mini fire extinguisher. Even though you may not need it, someone else might.

Etiquette

Tailgating is a party, but that doesn’t mean there aren’t rules to it. Part of having a successful tailgate party is to be mindful of your surroundings and your own health. An unwritten rule is to show respect to others. If you want to tailgate before a

Yankees versus Red Sox game, no matter how much you may disagree with the opposing fan, keep your calm because fights will ruin the entire tailgate. Cups and utensils are key, but glass beer mugs, wine glasses and metal forks and knives can be left at home to avoid broken glass or possible lost utensils. Some good alternatives are plastic utensils and plastic cups. Once you are finished grilling, make sure your propane tank is turned off and store it as far away from others until you are ready to leave. Never keep a propane tank in a hot car because it can explode. Moderation is key as well. It’s not a good idea to be intoxicated before the game or concert because security will not let you in and your tickets will be a waste of money. Just because there are other fans around you, doesn’t mean they are automatically your friend. Avoid taking drinks offered from other fans, especially if they are already open. Remember to play appropriate music as a majority of music that is popular has explicit language, which may be offensive to others. If you’re going to play music, play the clean version. Keep an eye on your children at all times as there are many other people tailgating and some of the other fans may be acting inappropriately or could be using illegal substances. The last component of a successful tailgating party is to clean up after yourself. Bring a couple of garbage bags, one for recycling and another for trash—it’s not the venue employee’s job to clean up your mess.

o matter how the product on the field is faring, Citi Field remains a great place for a day or night out thanks to a power lineup of food and beverages. And this season, a new element was added to the stadium. Denmark-based craft brewer Mikkeller expanded to New York City with Mikkeller Brewing NYC, a 10,000-square-foot brewery, bar and dining space at Citi Field in Flushing. The brewery’s first U.S. location outside of California and the latest addition to their lineup of bars, bottle shops and breweries worldwide, Mikkeller NYC is open year round, not just during baseball season. At the heart of the brewery are 60 rotating taps pouring Mikkeller NYC, Mikkeller SD, Mikkeller Denmark and select friends’ brews that can be enjoyed at the bar or in the 120-seat communal dining area. Cans, bottles and merchandise, all designed by Mikkeller art director Keith Shore, are also available to take home from an onsite shop along with varieties from MKNYC’s friends at other select breweries. Shore’s bold, colorful artwork, sought after by Mikkeller fans and design aficionados alike, also takes the form of larger-than-life murals throughout the space, including a tremendous window treatment visible from the street depicting baserunner Henry sliding towards home, with catcher Sally defending the plate. Visible from the dining space is a vast beer production area open to public tours, where a 20-barrel brewhouse, several vertically stacked 20-barrel fermenters and a canning line allow Mikkeller to provide fresh and varied brews on a weekly basis. Mikkeller NYC is Mikkeller’s first location connected to a professional sports venue anywhere—a space that is equal parts game day hub, beer-obsessive destination and neighborhood watering hole.
