90 Years And Still Kicking
The Radio City Rockettes line up for two show stopping spectaculars The Rockettes salute the armed service in this naval themed costume from 1940.
BY JENNIFER FAUCI
JFAUCI@ANTONMEDIAGROUP.COM
One can’t pass through Rockefeller Center at Christmastime and not catch a glimpse of the Radio City Music Hall marquee, where inside the theater, dancers and actors are setting the stage for the Christmas Spectacular. Among the them are the Rockettes, and being a member of the most famous kickline in the world is a dream come true for Malverne native Kristen Grace Smith. The 22-year-old has taken the stage for the past three seasons, and every moment is magical. “I am so incredibly honored and blessed to be a part of this wonderful legacy. I have wanted to be a Rockette since I was 9 and went to the Rockette Experience. After that, I told my mom ‘this is what I want to do,’” said Smith, who began dancing at Tap To Pointe Dance Center in Malverne. “I’ve been going to see the show since I was 3; it’s my family’s annual Christmas gift.” Smith attended the Boston Conservatory, and was returning from a dance class in Manhattan when she got the call. “I called my parents and told them ‘I just became a Radio City Rockette,’ and they were waiting at the train station for me,” said Smith. Founded in 1925 in St. Louis, MO, the Rockettes took New York in 1932 and have been performing at Radio City ever since. But just because danc-
Rockettes from left: Samantha Beary Burns, Sara Hoenes, Amanda McCormick and Kristen Grace Smith (Photo by MSG Entertainment) ers don their tap shoes on stage one year, does not guarantee they will return for the next. Smith explained that each Rockette must audition every year in order to keep the process fair to achieve that perfect, uniform kickline. “There are two days, two numbers to learn and up to 500 women waiting to audition,” said Smith of the auditions that are held in early May. “Cuts are made and you learn combinations. Then a list goes up with alternates.” There are 80 Rockettes in total who are split into two casts for the 90-minute morning and evening shows, which include 16 shows a week and up to four a day. “We rehearse for five weeks before showtime from 10 a.m. to 5 p.m., six days a week. It’s a rigorous schedule but we all love it and have a lot of fun,” said Smith. The company learns all eight numbers and must adhere to Rockette precision standards. “The girls have to be between 5’ 6” and 5’ 10.5”
and proficient in jazz, tap and ballet to maintain those eye high kicks,” said Smith. Keeping every toe in place is a huge job and director Julie Branam does it well. Branam adds something different every year to keep the show fresh. The finale number “Snow,” was recently introduced and features GPS enabled snowflakes that fly out of the orchestra. “Julie motivates us to where we want to do better as a whole. She’s amazing at her job,” said Smith. The indescribable honor of dancing on that famous stage is something Smith is eternally grateful for. “It’s the 90th anniversary this year and I had the privilege to meet a lot of the alumni, some who danced in the 1940s,” said Smith. “Being able to talk to them and share this experience was so moving.” Smith plans on auditioning for the New York Spectacular as well, which runs from June 15 through Aug. 17 and features the Rockettes as they take Manhattan, with dances numbers that epitomize New York. “Radio City is my favorite place on the planet and it’s been my dream to perform here. Now, I get to be a part of that legacy and it will stay with me forever.” For more on the Rockettes’ classic dance numbers, see page 20A.

CHRISTMAS MENU
A Jolly Morning Meal
BY STEVE MOSCO
SMOSCO@ANTONMEDIAGROUP.COM
After the gift frenzy comes to a close on Christmas morning, it’s time to eat. A tradition for many and encompassing eggy, cheesy and doughy wonder, Christmas morning elevates everyday breakfast with a touch of whimsy and the family togetherness inherit in the most wonderful time of the year. It’s a Christmas breakfast miracle!
Breakfast Pizza Adapted from The Big Sur Bakery Cookbook Makes 2 (12-inch) pizzas 6 strips bacon ½ cup grated Parmesan 2 cups grated mozzarella 6 large eggs Freshly ground black pepper 2 tbsp minced flat-leaf parsley 2 tbsp minced chives 2 scallions, thinly sliced 1 shallot, minced If making the dough from scratch, visit www. smittenkitchen.com/blog/2010/03/breakfast-pizza/ for a full recipe. Otherwise, visit your local
pizzeria for some fresh, raw dough. One to two hours* before baking, place dough in a warm spot. Adjust oven rack to lowest position and set a pizza stone on it. Preheat oven to 500 degrees 30 minutes before you are ready to bake the pizza. Fry the bacon in a large sauté pan over medium-high heat until crisp. Cool on a paper-towel-lined plate; roughly chop. Dip your hands and a ball of dough into flour. On a lightly floured countertop, pat dough into a disc with your fingertips, then drape dough over your fists and carefully stretch it from beneath to form a 12-inch circle. Generously dust the surface of a pizza peel or large inverted sheet pan with flour and place stretched dough on it. Sprinkle dough with half of the Parmesan, mozzarella and bacon. Crack 3 eggs over top and season with salt and pepper. Bake pizza: Shake pizza peel slightly to make sure dough is not sticking. Carefully lift any sections that are sticking and sprinkle a bit more flour underneath, then slide the pizza directly onto baking stone in one quick forward-and-back motion. Bake for 8 to 10 minutes, rotating after 5 minutes. When crust is golden, cheese is melted and egg yolks are cooked, use the peel to transfer pizza to a cutting

MANUFACTURED ON LONG ISLAND FOR OVER 40 YEARS
O
ne of the most exciting traditions to carry out during the holidays is choosing the family Christmas tree. Fresh cut trees are an extremely popular option to an artificial tree, as they provide a fragrant scent to your home. “Balsam fir trees are dense, perfectly shaped trees—exactly what you would expect a traditional Christmas tree to look like. They are also one of the most fragrant trees available,” said Alison Caldwell, fresh cut Christmas tree buyer at Hicks Nurseries. “Fraser fir trees are the best choice for decorators. They have strong, firm branches with plenty of space for larger ornaments.”

To keep your tree fresh and fragrant longer: • Keep your tree in a bucket of water in a sheltered, unheated area until you are ready to bring it indoors. • A tree will absorb as much as a gallon of water or more in the first 24 hours and one or more quarts a day thereafter. Water prevents the needles from drying and keeps the tree fragrant. • Keep your tree stand filled with water. A seal of dried sap will form over the cut stump in 4-6 hours if the water drops below the base of the tree, preventing the tree from absorbing water again. • Keep your tree away from heat and drafts from fireplaces and radiators.

Eileen and Ronnie, the owners of Bobb Howard’s General Store and Auto Repair Shop, are a couple of baby boomers who grew up on Long Island playing hopscotch and hide-and-seek, stickball and stoop ball, flipping baseball cards and jacks, and playing hit the penny and spin the bottle...This family-owned and operated auto repair business was opened 69 years ago on Columbus Day, 1946, by Eileen’s parents. Today, as in 1946, oldtime values continue to be followed… They opened the General Store about 22 years ago, when Eileen, noticing the frenetic pace of today’s computerized world, decided it was time to go back to a simpler time, to have people remember what it felt like to be a “kid in a candy store” again, and go back to a time when games didn’t require batteries - a place where kids of all ages could come and browse and giggle with nostalgic memories. The store now has over 1000 retro candies and toys and ships “packages of memories” all over the world... People often comment on the combination of the two businesses, but for Eileen and Ronnie it is a natural extension of the things they love. Cleanliness, honesty and integrity are of utmost importance to them, traits that were passed down to them by Eileen’s parents. There is also an awards program set up each year at the New Hyde Park High School in Eileen’s parents‘ memory, not for the smartest kids in the class, but for the kids that “try the hardest” - that’s all her parents ever asked of her.... Both the General Store and the Auto Repair Shop have won numerous awards, including Best Candy Store, Best Collectible Store, Best Toy Store, Best Auto Repair Shop, Best Muffler Shop, Best of Long Island, Best of the North Shore, Best of Queens, “One of the 101 Places to Take Your Family”, and “Family Friendly Favorite”, but the one they are the most proud of is the award they won for BEST MOM and POP BUSINESS on LONG ISLAND!!! Eileen and Ronnie feel very blessed and incredibly lucky: they love what they do, they love coming to work every day, and they love working with “kids” and “kids at heart” in both the General Store and the Auto Repair Shop - it must be a “generational thing”.... Go visit their place and take a stroll down memory lane. You will smile, and they will send you home with a free bag of popcorn from their 1947 popcorn machine!
