id you ever see the faces of the children/they get so excited/ they believe in dreams and all they mean/ including [Santa’s} generosity.” (From the musical, The Who’s “Tommy”). The radiance from the children’s faces as they kept an eager eye out for Santa warmed hearts as a record-breaking crowd gathered together to welcome Christmas to Port Washington with the 19th annual lighting of the tree at Blumenfeld Park on Sunday, Dec. 4. After an introduction by emcee Susan Bishop Copeland, the festivities began. The beautiful pageant spoke to the crowd of the true Christmas story, narrated by the pastor of the Lutheran Church of Our Saviour, the Reverend Dr. Charles R. Vogley. The St. Peter’s Children’s Chorus, directed by John Chang, was accompanied by the brass band Liquid Bread and together they added musical magic to the joyful event. The tree this year was dedicated in memory of Bob Harding and Dereck O’Reilly. Their families shared the spirit of Christmas with the community

as they lit the tree together in honor of their loved ones. The crowd joined in together, as they did with the caroling, and counted down from 10 to the tree being lit. Just then, with lights flashing, a fire truck pulled up with Santa and Mrs. Claus. More than 200 children cheered their arrival and patiently waited in
line to let them know that they have been “good” this year and what special toy they look forward to seeing under the tree on Christmas morning. As she observed the special twinkle in the children’s eyes as they sat on Santa’s lap, Tree Lighting organizer and volunteer Patty Atkins said, “It is fun to be a part of something that people look forward to every year. It’s a great way to celebrate the beginning of Christmas, with everyone you know or maybe don’t know yet.” “We are so happy to keep alive the Christmas spirit in Port Washington. The Christmas tree in Blumenfeld Park is a beautiful gift for our entire town. I am so proud to be part of this tradition and grateful for all of the volunteers on our committee,” Claudia Rudegeair, chair of the Christmas Tree Lighting Committee, chimed in with a smile as she watched the last child happily hop off of Santa’s lap, confident that the jolly man added his wishes to his list. The Christmas Tree Lighting Committee said that if anyone would like to help to continue this tradition, contributions can be made to the P.W. he Port Washington Chamber of Commerce has announced that the Town of North Hempstead (TONH) will suspend parking fees along Main Street and Port Washington Boulevard from Dec. 12 to Dec. 31. Red bags will cover the meters throughout the holiday shopping season. Chamber Co-president Warren Schein thanked TONH Councilwoman Dina De Giorgio, Supervisor Judi Bosworth and the entire TONH board for continuing this holiday tradition. Shoppers will be allowed to park at the meters on Main Street and Port Washington Boulevard and along some commercial side streets including Carlton Avenue, South Maryland Avenue and Irma Avenue, for 90 minutes for free. To discourage commuters from using the street parking spaces meant for shoppers, cars that exceed the 90-minute limit are subject to ticketing. Parking meters will remain in effect in the TONH parking lots. Chamber Copresident Mitch Schwartz said, “This will give Port residents an added incentive to shop locally throughout the holiday season.” There are many other advantages to doing your holiday shopping in Port Washington, including receiving friendly, personalized service and saving time, gas and frustration by not having to travel to malls and look for a parking space in their overcrowded parking lots. It’s always safer to stay close to home when bad weather strikes. Most importantly, shopping locally means you are supporting the merchants that support our town all year. Remember, your local merchants care about you and support the Port community. Did you know that for every $100 spent in locally owned stores, $68 returns to the community through taxes, payroll, donations and other expenditures? If you spend that in a national chain, only $43 stays here. If you spend it online, nothing comes home. anukkah, the eight-day festival of light that celebrates the triumph of good over evil, is one of the most sacred holidays of the Jewish faith. While it is a time to reflect upon life, love, family and friendships, doing so over a plate of latkes will undoubtedly make it better. Whether Jewish, Christian, Hindu, Muslim or whatever religion one chooses to practice, anyone can enjoy a good helping of potato pancakes. Luckily, this festival feast staple has few ingredients, follows simple instructions, is relatively quick to cook and conducive to being prepared in a variety of styles. To start, here’s a traditional latke recipe in its simplest form. If followed accordingly, these instructions should yield 12 to 16 latkes.

Though they are delicious as is, with a few extra add-ons, transform regular latkes into the talk of the dinner table.
1 lb. potatoes peeled ¼ cup finely chopped shallots 1 large egg, lightly beaten ½ cup panko breadcrumbs 1½ tsp. salt and freshly ground black pepper • Vegetable oil for frying (or coconut oil as a healthier alternative) Yields: 12-16 latkes
SPICY Fire up Passover this year with spicy cajun latkes. Add a dash of cayenne and grated raw jalapenos. Include as little or as much as you’d like depending on what your taste buds can handle, and add a teaspoon of lemon juice to neutralize the spiciness. Top it off with chipotle mayo dipping sauce.
Grate the potatoes either by hand or by placing them in a food processor, and add to a large bowl of cold water. Let the shavings soak for one to two minutes, then drain well. Spread the potatoes and finely chopped shallots on a cheesecloth or towel and gently squeeze to get rid of excess moisture. Next, add the potatoes and shallots to a bowl and stir in the egg, salt and pepper. Coat the bottom of a large stovetop pan with either vegetable oil or coconut oil and put it over a medium flame. Take the potato mixture and form round pancake-like shapes consisting of about two tablespoons worth. Working in batches of four latkes at a time, cook each for about five minutes until the undersides begin to
CHEESY When in doubt, just add cheese. And while you’re at it, why not add three different kinds? From cheddar, to Swiss, to pepper jack and everything in between, there’s no limit to what can be made of the cheesy delicacy. One option is a cheddar, parmesan and mozzarella blend. Add a little or add a lot for the optimal amount of melty greatness. For a side dip, make use of your favorite tomato soup.
SWEET Easily swap the regular potatoes for sweet potatoes and you have a new dish entirely. Not only are the sweet potatoes tasty, but it is also a healthier carb alternative, proven to be an excellent source of Vitamin A, Vitamin C, manganese and other essential nutrients. To the finished product, add a bit of powdered sugar and some honey mustard dipping sauce or applesauce on the side. HEALTHY Add a healthy dose of vegetables to your latkes. Ingredients may vary depending on personal preferences, but opt for leafy greens, like spinach and kale, and root vegetables that can be easily grated, such as beets, parsnips, carrots, radishes and kohlrabi. Finely cut your vegetables of choice or put them in a food processor. To rid of excess moisture, place them in a cheesecloth and squeeze. Then add the vegetable mixture to the original latke recipe above, with one added egg. The final product can be best paired with sour cream or greek yogurt.

ort Washington is getting festive for the holidays. The Port Washington Chamber of Commerce has decorated the lampposts on Main Street with garland, lights and red bows. The Port Washington Business Improvement District (BID) has installed lit snowflakes on the utility poles. S.F. Falconer Florist has decorated the train station with wreaths and garland. Residents For a More Beautiful Port Washington created a winter wonderland in the garden in front of the train station. And stores throughout town have outdone themselves with beautiful window decorations in their attempt to win the Chamber of Commerce Window Decorating Contest. The chamber’s judges will be judging who has the “best of the best” window decoration, which will be published in an upcoming edition of the Port Washington News. Chamber of Commerce co-presidents Warren Schein and Mitch Schwartz consider all the stores that enter the contest to be winners, as their windows announce to everyone that they care about the community and promote the holiday spirit in Port Washington. The chamber thanks all who entered the contest and wish them a successful holiday season. Different colored flowers represent different Christmas themes, such as white representing purity, innocence and peace. Red, as in many biblical motifs, is indicative of the blood of Christ, with green signifying everlasting or eternal life. Adding gold or silver to an arrangement or even a bow of that color means The Star of Bethlehem , and if gifting a blue flower, it symbolizes the Virgin Mary. Some of the most popular Christmas plants are also some of the easiest to tend to, making them the ideal gifts.
Amaryllis The plant called “amaryllis” is not really an amaryllis but a Hippeastrum hybrid. It is also known as St. Joseph’s Staff. The amaryllis will require a warm place with bright light but not full sun. Keep soil evenly moist but not wet. The bloom should last six to eight weeks.
Christmas Cactus According to legend, when Father Jose, a Jesuit missionary, tried to teach the natives in a jungle of Bolivia about the Bible and the life of Christ, he struggled to gain their trust and faith. He feared the natives did not comprehend the concepts he worked so hard to teach them. One Christmas Eve, he knelt before the altar seeking God’s guidance. The joyful sound of voices singing a hymn he had taught them could be heard in the distance. As the sound grew louder, Jose turned to see the village children marching into the church with armfuls of bright flowers they had gathered in the jungle for the Christ child. These flowers became known as the Christmas cactus. Put Christmas cactus in a bright window and water when the top of the soil begins to dry out.
Cyclamen This plant is dedicated to the Virgin Mary. The red spot at the heart of the flower represents the bleeding sorrow of the Immaculate Heart. The cyclamen is sometimes called “bleeding nun.” It is most comfortable in a north- facing window in a cool room (50 to 60 degrees F.). Keep the soil moist but don’t wet the crown of the plant. Mist occasionally and pinch off spent flowers to keep them blooming for months.
Kalanchoe The name Kalanchoe stems from “Kalanchauhuy,” a Chinese name for the species recorded by Georg
