Host Your Own Backyard Clambake BY ANTON MEDIA STAFF

A clambake is entertaining made easy and a quintessential summer party—especially if you’re nowhere near a beach. Steamed clams and mussels, juicy corn, baby potatoes flavored with sausage and lobsters— how can you go wrong? If you have at least a 16-quart stockpot and either a gas or charcoal grill, you can do this easily. It’s simple to prepare everything in advance. Steam cooks the meal, and proper layering is the key to success. For a carefree clambake with friends, follow these simple instructions. Serves 6–8

18–20 small red-skinned potatoes, scrubbed and halved 6–8 ears of corn 3 lobsters, about 1¾ lbs each 1–2 tablespoons Old Bay seasoning Lemon wedges 1 lb butter, melted Special equipment: Tall 16–20 quart stockpot with lid 1 large cheesecloth (about 20 × 20 inches) 1. Heat a gas grill to medium or have a charcoal grill ready with glowing hot coals (they must remain glowing hot for at least 25 minutes). 2. Rinse the stockpot with warm water (do not use soap).

1 lb kielbasa or smoked sausage, sliced into 1-inch circles 2 lbs clams, cleaned and scrubbed 2 lbs mussels, scrubbed and debearded (cut or scrape away the little tuft of fibers)

3. Prepare an even layer of kielbasa or smoked sausage slices in the bottom of the pot. 4. Lay the cheesecloth out on the counter. Add cleaned clams and mussels, then tie it up loosely. Place this on top of the kielbasa. 5. Add an even layer of potatoes, then a layer of corn. Finally, carefully fit the lobsters into the pot. Sprinkle evenly with Old Bay seasoning. Cover tightly with lid, pushing down if necessary. 6. Place the stockpot on the grill for 20 to 25 minutes—no peeking. Open carefully. Remove lobsters to a platter to cool. Place the corn into a dish and the potatoes into a bowl. 7. Remove cheesecloth, then cut it open to release the clams and mussels. Arrange them on a platter. 8. Remove the kielbasa from the stockpot and add to the potatoes. Next, detach the lobster claws and tails, displaying them on the platter with the lemon wedges. Kale and Wheat Berry Power Salad

Try adding a fresh salad with seasonal ingredients to the clambake menu. Here is a suggestion provided by North Shore Farms for a tasty summer side dish to any meal. 1 cup wheat berries (they’re not always in stock in the grocery aisle, so if you can’t find them, look for premade at the deli counter) 1 cup white quinoa 4 cups baby kale , shredded ½ cup carrots, shredded ½ cup red cabbage, shredded ¼ cup pumpkin seeds, also known as pepitas 3 oz honey 1 oz lime juice 3 oz olive oil ¼ cup dried cranberries ½ cup blueberries ½ cup raspberries 1 cup blackberries ½ cup mandarin orange segments Cook wheat berries and quinoa according to package directions. Let cool in refrigerator. In a large bowl, combine kale, carrots, cabbage, pumpkin seeds, wheat berries and quinoa. In a small bowl, whisk together honey, lime juice and olive oil; add a few drops of warm water to ease mixing. Pour dressing over salad and toss. Arrange on serving plate. Garnish with berries and mandarin oranges.

SeaGlass Carousel And Woodland Gardens To Open At Battery Park

The Battery Conservancy announces that the SeaGlass Carousel, a new oneof-a-kind, permanent cultural attraction featuring a monumental nautilus shell with 30 grand luminescent fish, will open to the public on Thursday, Aug. 20, at The Battery, the 25-acre public park at the southern tip of Manhattan. The Tiffany & Co. Foundation Woodland Gardens that encircle the carousel will also open on the same day. SeaGlass was conceived by the award-winning WXY Architecture + Urban Design as a carousel recalling The Battery’s history as the original home of the New York Aquarium. WXY, creators of The Battery’s contemporary architecture and furniture, then designed a spiraling pavilion of glass and steel inspired by the chambered nautilus. The magnificent fish figures— as large as 9 ½ feet wide and 13 ½ feet tall—were designed by the internationally acclaimed George Tsypin Opera Factory, which is best known for creating the opening ceremony for the 2014 Olympic Games in Sochi. Unique among carousels worldwide, SeaGlass motors lie under the floor—allowing full visibility across and around the

Instead of “riding” the fish as one would on a typical carousel, visitors will “become” fish while gliding through the sights and sounds of a 360 degree aquatic adventure. “We are thrilled to introduce New Yorkers and visitors from around the world to SeaGlass Carousel, offering a completely unique theatrical experience that will delight and inspire,” said

During the summer months it is incredibly important to review pool safety precautions with the entire family, whether using a pool at a town facility or a private backyard pool at home. Drowning is the second largest cause of death in the United States among children. Town Supervisor Judi Bosworth said, “In order to prevent such catastrophes, we want to make sure that all of our residents are safe and follow the necessary rules and guidelines when they install, maintain and enjoy their pools.” According to the Center for Disease Control and Prevention (CDC), about one in five people who die from drowning is a child 14 years of age or younger. Bosworth is also encouraging parents to teach their children to swim. She advised, “Teaching children to swim at a young age gives them the foundation for becoming skilled swimmers, which can help them avoid dangerous situations in the pool.” Pool Safety Tips: • Never leave a child unsupervised or unattended while near a pool. • Remove all toys from the pool after use so children aren’t tempted to reach for them.

• You must put up a fence to separate your house from the pool. Most municipalities require the installation of a fence at least six feet high around all sides of the pool, as well as the use of self-closing and self-latching gates that secure from the inside. Check with your town or village for specific codes about fencing. • Practice “touch supervision” with children younger than five years old. This means that the adult is within an arm’s length of the child at all times. • After use, securely close the pool. • Keep rescue equipment and a phone near the pool. • Never use a pool with its pool cover partially in place, since children may become trapped under it. Remove the cover completely. • Learn cardiopulmonary resuscitation (CPR). The Town of North Hempstead offers CPR training and certification courses to all residents multiple times per year. The town sponsors the training courses with the National Safety Council Adult and Pediatric CPR and AED. Training and certification courses are held at town hall.

Outdoor entertaining, like any party or gathering, can be as casual or as fancy as the host chooses. Here are some tips for flawless outdoor entertaining no matter the occasion.

Invest in sturdy plates. When it comes to outdoor cooking, paper plates are a go-to for many hosts. It makes cleaning up easier and cooking for the masses less stressful. Keep the food you are serving in mind and choose a material that is sturdy enough to hold up to the meal. The same goes for utensils; you don’t want a flimsy plastic knife breaking when your guests are cutting into their ribs. Provide convenient places to sit down and eat. Picnic style eating is okay for many people and can be a fun way to enjoy the outdoors. But consider older guests who may

not be able to sit down or get up easily, and provide a few table and chair options for them. Position items on the buffet logically. If you are arranging a buffet, place items where they are easy to grab. For instance, put the silverware, napkins and drinks at the end of the buffet so guests aren’t trying to serve themselves and juggle other elements as well. Or, consider putting these items on a separate table so guests can fill their plate, set it down, and then return for the drinks and utensils. Plan for your guests’ comfort. Outdoor dining means Mother Nature is a guest, too. Think about what guests might need to stay comfortable: an umbrella or shady area, paper fans, extra sunscreen and insect repellent.
