W
inter is a hectic time filled with holiday parties and snow days with the kids. Usually, this exciting time of the year means a lot of baking and new holiday recipes. Here are some snowy treats you can bake for parties or on snow days with your kids to get in a festive winter mood:
Hot Cocoa Cookies
Why just drink hot cocoa when you can eat it too? Of course, the chocolate and marshmallow treat in cookie form is just as festive and delicious. Ingredients: ½ cup butter 12 oz Nestle semi-sweet chocolate chips ¼ tsp salt ¼ cup cocoa powder 1¾ cups all-purpose flour
1¼ cups brown sugar 1½ tsp baking powder 3 eggs 1 tsp vanilla extract 24-25 large marshmallows 3 Hershey bars
Directions: Melt chocolate chips and butter together in a saucepan over medium heat, stirring occasionally. Let cool for about 15 minutes. Combine dry ingredients: salt, cocoa powder, flour and baking powder. Set aside. In a separate large mixing bowl, cream together the eggs, brown sugar and vanilla until smooth. Add the melted chocolate mixture to the egg mixture and stir until combined. Add dry ingredients slowly while stirring. Cover the bowl with plastic wrap and refrigerate for 1-2 hours or until mixture is firm. Preheat the oven to 325 degrees. Roll the now-firm dough into 1½ to 2-inch balls and place on a baking sheet lined with wax paper. Bake for 10 minutes until cookies begin to crack. While the cookies are baking, cut marshmallows in half and cut chocolate bar pieces in half. After 10 minutes, top each cookie with a half of a piece from the bar and a half of marshmallow. Snowman Truffles
The simplest wintertime treat will be fun for the kids to decorate on a snowy day. The cookies and cream truffle with an Oreo center and white chocolate coating decorated as little snowmen are great additions to any wintertime gathering. Ingredients: 1 (16 oz) package of Oreo cookies 1 (8 oz) package of cream cheese, softened 1 (24 oz) bag of Nestle Premier White Morsels 1 tub orange sprinkles 1 (8 oz) bag mini Oreo cookies 1 (0.67 oz) tube Betty Crocker gel black icing Directions: Crush all but nine Oreo cookies in a food processor to fine crumbs and place in a medium bowl. Add cream cheese and mix well until there are no more crumbs. Roll truffle mixture into one-inch balls and place on a wax paper-covered baking sheet. Refrigerate for one hour. Follow the instructions on the Nestle Premier White Morsels package to melt them down in a microwave safe bowl. Dip truffle balls into the melted chocolate, fully covering them. Place back on wax paper. Quickly add the mini Oreo top hat and a long orange sprinkle as a carrot nose before the chocolate hardens. After all truffles are finished, place back into refrigerator for one hour. Once chocolate hardens, add the two coal eyes and mouth using the tube of gel black icing. Polar Bear Paw Cupcakes
Polar Bear Paw Cupcakes are sure to be a hit at any winter party and the endangered creatures need as much exposure as they can get. Ingredients: Cupcakes: 1¾ cups all-purpose flour 2 cups sugar ¾ cup cocoa powder 1½ tsp. baking soda 1½ tsp. baking powder 1 tsp salt 2 eggs 1 cup milk ½ cup canola oil
2 tsp vanilla 1 cup boiled water Decorations: 1 (16 oz) canister of Betty Crocker vanilla frosting 1 (14 oz) package of unsweetened coconut flakes 24 York Peppermint Patties or Oreo cookies 72 Chocolate covered raisins
Directions: If you do not have time to whip up cupcakes from scratch, you can use your favorite boxed cake mix and follow the instructions for cupcakes. For the cupcakes, mix together the dry ingredients: flour, sugar, cocoa, baking powder, baking soda and salt. Add eggs, milk, canola oil and vanilla. Beat for 2-3 minutes. Stir in the hot water a little at a time. Line a cupcake pan with liners and fill each about halfway with cupcake batter. Should yield about 24 cupcakes. Bake at 350 degrees for about 45 minutes. To test if done, slide a knife into the center of one. If it comes out clean without any batter on it, they are ready. Set on a cooling rack for about a half hour. Coat each cupcake with a layer of vanilla frosting. Place a York Peppermint Patty or Oreo cookie in the middle depending on your taste. Add three chocolate covered raisins equally separated above the Patty or cookie. These create the paw pads of a Polar Bear. What better way to unite friends and family and keep cozy at the same time than to indulge in these warm wintery cocktails? From the chocoholic, to the coffee craver, the sweet tooth sufferer and the chronic brunch-goer, there’s an easy-to-make drink for all. And if staying sober is on the agenda, there’s no need to worry, as each drink has a convenient non-alcoholic variation. These four beverages, whether boozy or not, are sure to warm both the tastebuds and the heart.
Peppermint bark is the quintessential Christmas-time treat, and this drink is just that in liquid form. Ingredients: ¾ c whole milk ¼ c half and half 2 oz chopped semi-sweet chocolate 1 dash peppermint extract 1 Tbsp peppermint schnapps ½ ounce Bailey’s Irish cream whipped cream chopped candy canes Bring the whole milk and half and half to a boil in a medium saucepan. Slowly begin to stir in the chopped chocolate morsels and peppermint extract until the mixture is uniform. Remove the mixture from heat and pour in the peppermint schnapps and Bailey’s Irish cream. This step can be omitted for the non-alcoholic type. For the finishing touch, swirl whipped cream on top and sprinkle with crushed candy canes.
Nutty Irish Coffee
Coffee may be the perfect morning pick-me-up, but who says it can’t get you a little tipsy too? With a splash of whiskey, this drink is the ideal blend of caffeine and alcohol. Ingredients: 1 c coffee 1 oz Irish whiskey 1 Tbsp hazelnut liqueur 1 Tbsp Nutella whipped cream chocolate shavings Combine hot coffee and Nutella with an Irish whiskey and hazelnut liqueur of your choice and mix well. All-Day Wintry Meals In The Slow Cooker BY CHRISTY HINKO

othing says cozy days like all-day meals cooking into greatness in the slow cooker. The ease of cooking with a slow cooker is preferred because it’s typically a one-pot dish with minimal fix-it and forget-it preparation steps. Some recipes call for a small amount of stovetop cooking, usually to brown meats (which do not brown on their own in the slow cooker). A tiny bit of prep work yields a soul-satisfying culmination. Here are four of my personal slow cooker recipes.
Slow Cooker Chicken
Seasoned salt Minced garlic Dried parsley 1 c water 4 chicken bouillon cubes whole cut-up chicken 4 Tbsp butter Add 1 c water and 4 chicken bouillon cubes to slow cooker. Place chicken cuts in slow

cooker. Season to taste with seasoned salt (I use Lawry’s or Goya seasoning salt, but use whichever you prefer), minced garlic and dried parsley. Cut small 1 Tbsp pats of butter and place randomly over cuts of chicken. Cook on low for 6 to 8 hours. .............
Brats & Kraut
Serves 6
5 bratwurst links, cut into 1-inch pieces 5 medium potatoes, peeled and cubed 27 oz sauerkraut, rinsed and drained 1 medium tart green apple, chopped 1 small onion, chopped ¼ c packed brown sugar ½ tsp salt In a large skillet, brown pieces of bratwurst on all sides. In slow cooker, combine all ingredients. Stir in brats and pan drippings. Cover and cook on high for 4 to 6 hours or until potatoes and apple are tender. .............
Slow Cooked Cabbage Rolls
½ c cooked white rice 12 leaves cabbage 1 egg, beaten ¼ c milk ¼ c minced onion
1 lb extra-lean ground beef 1¼ tsp salt 1¼ tsp ground black pepper 1 (8 ounce) can tomato sauce 1 Tbsp brown sugar 1 Tbsp lemon juice 1 tsp Worcestershire sauce Bring a large pot of water to a boil. Boil cabbage leaves 2 minutes; drain. In large bowl, combine 1 cup cooked rice, egg, milk, onion, ground beef, salt and pepper; stir well to combine. Place about ¼ cup of meat mixture in center of each cabbage leaf, and roll up, tucking in ends. Place rolls in slow cooker, tucked side down. In small bowl, combine tomato sauce, brown sugar, lemon juice and
Worcestershire. Pour over cabbage rolls. Cover and cook on low 8 to 9 hours. .............
Slow Cooked Tortellini
1 lb ground beef 1 lb Italian sausage 30 oz marinara sauce 1 c sliced mushrooms 2 cans diced tomatoes, undrained 18 oz tortellini, premade-frozen 2 c shredded mozzarella cheese Brown and drain meat. Spray slow cooker with cooking spray. Cook meat, sauce, mushrooms and tomatoes for 7 hours on low. Sauce will be thick. Stir in frozen tortellini and cheese. Cook 15 minutes and serve.

Serves 1 2 oz Mark West pinot noir 2 oz gin 1 tsp ground ginger ½ tsp lemon juice 1. In a cocktail shaker, mix ingredients and strain over ice into cocktail class. 2. Garnish with a lemon twist. .............
Spicy Grilled Pumpkin Seeds
Makes: 2-3 cups 2-3 cups pumpkin seeds
2 Tbsp brown sugar 2 Tbsp nutmeg 1 Tbsp wasabi powder Olive oil 1. In a small bowl, mix all ingredients except pumpkin seeds. 2. Spread pumpkin seeds on a roasting pan, before drizzling mixture across both sides. 3. Roast in an oven for 35 minutes at 325 degrees Fahrenheit before serving.

1 lb chicken wings ⅓ cup apple cider 1 tsp garlic powder 1 tsp chili powder 1 tsp salt ⅓ cup brown sugar Salt and pepper to taste
1. Mix all ingredients (but chicken wings) in a bowl. 2. Lay washed chicken wings on a pan and evenly coat mixture on each wing. 3. After coating wings with marinade, place on grill and cook

Serves 10 Brine: 5 quarts water 1 cup kosher salt ¾ cup white granulated sugar 1½ cups brown sugar 1 Tbsp chili powder 2 bay leaves 10 turkey legs (8-10 lbs) 1. Add all brine ingredients to a large pot. Bring to a boil then remove from the heat. Allow to cool completely.
BBQ Sauce: 2 cans tomato paste (11 oz total) 1 cup ketchup 1 cup unsweetened apple sauce 1 cup red wine vinegar 1 cup Mark West pinot noir ½ cup dark molasses 2 Tbsp smoked paprika 1 Tbsp dry mustard powder 1 Tbsp onion powder 1 Tbsp garlic powder 2 tsp kosher salt ½ tsp cayenne pepper Salt and pepper
BBQ sauce every 10 minutes. Turkey legs are finished cooking when the internal temperature is 180 degrees. 5. Remove turkey legs from the grill, baste with BBQ sauce and serve immediately.

Serves 4-6 Dough: 2 cups all-purpose flour ½ cup spelt flour 1 Tbsp granulated sugar 2 sticks (1 cup) salted butter, cubed, very cold ½ cup ice water

2 large honey crisp apples 1. To make the dough, add flours, sugar and cold butter to food processor. Pulse several times, until the mixture resembles coarse meal. Add one tablespoon of water at a time and continue pulsing the mixture until it holds together when squeezed, but is not sticky. 2. Gather dough into a ball. Flatten into a disk, wrap in plastic wrap and refrigerate for 30 minutes. 3. Combine sugar and pinot noir in a large saucepan over medium heat for 8-10 minutes or until a dark amber caramel is achieved. Add spices and apples and toss to combine. Continue cooking for 5-6 minutes or until apples have softened. Allow to cool. 4. Preheat oven to 375 degrees. 5. Place dough ball on a floured surface and roll into a circular ¼-inch thick shape. Transfer dough to a parchment-lined sheet pan. Place cooled apples in the center of the dough, leaving a 1-inch border on all sides. Fold the border of the galette up towards the center, crimping and pinching it as you go. 6. Cook for 40-50 minutes or until the crust is golden brown. Serve warm or at room temperature.

eciding to make a charitable contribution can arise from a desire to help others, a passionate commitment to a cause or the aim to give back to a group that once helped you or a loved one. Choosing which organizations you want to support can be difficult. There are more than a million public charities in the United States, according to the National Center for Charitable Statistics, and every dollar you give to Charity A is a dollar you might not be able to match for Charity B.
Whether it’s a friend’s charity run or supporting an animal rescue, often the decision to give comes down to a mix of internal and external factors. You have to determine which causes are most important to you, and with outside help you can compare how effective various charities are at using their funding. Many nonprofits do incredible work, but it’s always smart to verify their claims. You can start your due diligence by double checking an organization’s tax-exempt status using the Internal Revenue Service’s (IRS) Exempt Organizations Select Check Tool. Once you verify its nonprofit status, you want to make sure it’s well run and makes a significant impact. There are several nonprofits that evaluate and rate charities. You

businesses. If you’re looking for ways to increase your contribution, ask your employer if it has a matching program. Some companies will double, or even triple, your gift to select nonprofits. If your company doesn’t offer such a program, you could speak to your human resources department or boss about establishing one. Third-parties also fund matching campaigns for charities. You can ask a charity if there’s a campaign running and make sure your donation qualifies. Unless there’s a pressing reason to make a donation today, you may want to put your money aside and wait until a matching campaign starts. You might be able to increase your financial impact without outside help if you can claim a tax deduction for your donation. Calculate your tax savings each year and put the money back into your charity fund. Donationrelated deductions can sometimes be confusing, and you may want to check with a tax professional or look online for tips from the IRS.
Your charitable gift could be the start of a legacy of giving among your family. By making donations a regular event during your children’s formative years, you’re establishing charitable giving as a family value that they can take into their adult lives. To engage children, make a donation to support a child’s favorite cause and show them how the money makes a difference. For example, you could follow up a donation to a nonprofit animal rescue with a visit to the shelter to see how the money helps the staff take care of the animals. Bottom line: Making a donation is one way to support a cause you believe in and ensure your gift has a meaningful impact. You can do this by having money available when it’s needed, donating to worthwhile charities, looking for ways to increase your financial impact and passing on a legacy of giving. Clean and fill your bird feeders with suet and black oil sunflower seeds. Their fats and oils will help birds to survive cold winter temperatures. Place a net over your pond to keep leaves and critters out, and test your pond heater now before you need it. .............
Clean Up
If you have not done so already, pick up any debris that may have accumulated throughout the garden. This could include fallen
leaves, branches and summer annuals that have died back. Now is also the perfect time to clean your shovels, rakes and other tools before closing up the shed for winter. Delightful Confusion
When I retired nearly 13 years ago, my wife and I started to spend winters in Longboat Key, FL. That’s when I first became momentarily confused about the seasons. Most days it’s shorts and T-shirt weather. One typical winter day I saw an article in the paper about a hockey game. Hockey? That’s in winter; it must be a preseason game. The paper’s month, day and year read otherwise. A few weeks ago at Gerry Park in Roslyn, the sun was gleaming off the water and there were dozens of Canada geese and ducks on it. Was it spring? It felt more like summer. I wear shorts and T-shirts, long- and short-sleeved, all but six weeks of the year so it always seems warm. My mixups last a few seconds and I’m bemused that I can still become confused. It’s not hard to tell that it’s
fall in October and November because of the leaves, nature’s silent symphony. This year the turning leaves seem to be lasting longer than in prior years. There are deep reds, bright yellows, golds, light greens, dark greens and withered browns on the ground. Looking at an entrance to Rte. 135 from Old Country Road, the tree’s colors were wonderfully intertwined. It seemed that to go down that on-ramp would be like going down a magic corridor. I’ve watched a red tree for a few weeks from our kitchen window. Now the top branches are bare. Others will follow. Other trees have some bare limbs that curve and twist, reaching upward. They are like arms reaching toward the heavens asking about the coming winter’s weather. Will it be mild?
Where Are The Starlings?
I wonder about the starlings which in the past have appeared en mass at the end of October and the beginning of November. I have seen them only once at this writing, which is just after Election Day, as they converged Cont’d on page 42B

In the condo where I live in Woodbury, there have been times in the past during the morning Starling when the starlings (Photos by swooped down in a Christy Hinko) constellation landing on trees or the grass. They would stay awhile and suddenly some would fly off followed by others until the last ones left. They would fly to other trees or a lawn and then fly off over roof tops. A few years ago, early one morning, hard light illuminated the side of a unit that were rising above. Moving shadows fell on the building’s side as their bodies rose, making it seem like so many more than were actually flying. Then in a long instant they were gone. I don’t know why they mass or how they can fly in unison like magnetic particles being drawn as one by an invisible source. I never knew when they would come or why. Coupled with their short duration
it always seemed like an event not to be missed and I miss those events. When starlings stay in the trees or on the ground, through binoculars, these 8½-inch birds show dull white steaks on their dark breast, some shimmering iridescent green plumage and a yellow bill. For that reason I affectionately refer to them as the “dirty birds” They were introduced to the U.S. in the 1890s from Europe and since have adapted very well. The original 60 birds have swelled to 150 million Goose in North America. Interestingly, Mozart had a pet starling that could sing part of his Piano Concerto in G Major.
Winter Watching
While I’ve not been here for winter in many years, I have been seeing birds from the car that should be here for winter watching. The other day while driving on 135, a group of 20 Canada geese flew
north overhead. They appeared like specks in a line, became larger and passed. Later on the Northern State extension a much Robin larger group were flying in a very uneven V formation which had many more birds clumped up on one side. They were flying east, not migrating southward. Interestingly, I see pigeons on power lines and on the arms of lights on the LIE lined up and wonder what they are doing. They don’t migrate and if they are removed from their location can find their way back. One bird that also should be here over the winter is the house sparrow. The tend to like the safety of bushes. I remember one winter day Sparrow long ago when a light dusting of snow had fallen and many were on a metal fence
chirping. When I came along they all disappeared into the bushes. Some woodpeckers and cardinals should be here as well but you’ll probably have to wait for spring to see robins, as most migrate. My focus however is on winter in Florida. I receive daily emails about what is being seen by naturalists at a Sarasota birding hot spot. One naturalist reported that she had a British couple at her site during her watch who had been in the area for a month but had changed their departure date Cardinal from the day before Election Day to the day after in order to stay for the election. It only cost them a hundred dollars to make the change. “One said “it’s going to be historic, don’t you think?” I wondered if they had an inkling that a Brexit would happen here. Meanwhile November’s peak foliage is still here and winter is around the corner.

he temperature outside has been dropping lately, which means it’s only a matter of time before we’ll be digging up our winter coats from the backs of our closets. But it also means that snow is just around the corner and it’s time to think about that sled that’s been collecting dust in the garage since last winter. Though some traditions fade through the years, there’s something about slipping and sliding down a snowy slope that remains timeless. Luckily, there are plenty of fun spots around Long Island and New York City that are ideal for sledding. After all, all you really need is a nice hill. Eisenhower Park
At 930 acres, Eisenhower Park, located in East Meadow on Merrick Avenue, is one of the largest parks in the metropolitan area and boasts several activities, not the least of which is sledding. Spend an afternoon on one of the many hills and, if that starts to gets old, check out the aquatics center, which includes a work-out facility, or dine at Carlton on the Park Restaurant. Central Park
Though it isn’t exactly around the block, no sledding list would be complete without Central Park in New York City. Visitors can enjoy the steep slopes of Pilgrim Hill or the popular Cedar Hill, which is divided into sections for both experienced and inexperienced riders. Bethpage State Park
Arguably more famous for its golf courses, Bethpage State Park also counts sledding among its popular activities. There’s plenty of open space and steep hills, not to mention a hill specifically reserved for snowboarding as well. Visitors can park for free in the golf course lot and are only permitted to use steerable sleds; inflatable sleds are not allowed. Make sure to call the park office at 516-249-0701 prior to arriving.
Cedar Creek Park
The sled hills at Cedar Creek Park in Wantagh are open in January and February, after the chaotic holidays have wrapped up and with plenty of winter still ahead.
