Celebrate …what’s on Tremains Christmas Lights Lights will be running from the 1st – 24th December. Maps for self-guided tours will be available in your Napier Courier or Hastings Leader on the 9 December. Tickets for buses will be on sale from all Tremains Hawke’s Bay offices from November 16. The Tremains Christmas Lights extravaganza is a firm favourite on the calendars of the Hawke’s Bay community each December. Homes, gardens, shops, and buildings are transformed into Christmas wonderlands, decorated with magical light displays to celebrate the festive season.

The competition will be judged via people’s choice and is open to schools, clubs, organisations and individuals. Entry is by gold coin donation and any money raised will go toward a charity.

It will open for the first time following the Christmas parade at 12.30pm and will close at 2pm. Entry is by koha which will go toward the rebuild of the Fantasy Cave. Don’t forget M ost families own a cat or a dog or some other furry creature like a rabbit or guinea pig and it’s nice to be able to treat them at Christmas-they are part of the family after all!

Contemporary trends include giving your pet a Christmas stocking full of little treats from the pet store, dressing them in a bow tie, a colourful ribbon or a Christmas hat. For those who send cards or electronic greetings it’s a nice idea to include your pets in the family photo too. While humans tend to overindulge in food and beverages there are certain foods that are hazardous or toxic for pets. The best rule is not to feed them human food and avoid bones. Chocolate, raisins, grapes, currants and sultanas, along with Christmas cake, mince pies and chocolate raisins are a definite NO NO. Not all pets are sociable and it’s easy to be frightened by new people, crowds and noise so always make sure there is a quiet place for your animals to retreat to. Seeing kittens playing with Christmas trees is adorable to watch but kittens and puppies can wreak havoc if they decide to climb or play with a tree. So make sure your tree and its ornaments are secure and will not topple. If you are considering buying a new pet at Christmas make sure you think it through. Christmas is busy and not the best time to introduce a new member to the household.

A short history of C ommercial Christmas cards as we know them were first made in Britain in 1843. Sir Henry Cole, founder of the Victoria and Albert Museum, came up with the idea to keep in touch with all those he needed to without writing letters. The introduction of the “Penny Post’ saw an increase in the number of people sending letters and his card, designed and printed by John Calcott Horsley, was a way to

correspond with all those he didn’t have time to write to personally.

The tradition caught on and sending Christmas cards became a ritual amongst many cultures. It became big business alongside other commercial customs at Christmas time. However, times are changing and fewer and fewer people stick to the tradition. For many people digital technology has taken over.

Strawberry This delicious treat involves making custard. For those short on time readymade custard can be substituted. • 3 punnets Strawberries • 3 tbsp Sugar • ½ cup Water • 1 Sponge cake, cut into fingers • 3 tbsp Grand Marnier • 6 Eggs • 160 g Sugar • 600 ml Milk • 1 Vanilla bean • 300 ml Cream

reheat the custard, stirring constantly until the mixture thickens enough to coat the spoon. Do not let this boil, as the mixture will curdle. If the mixture starts to curdle around the edges, immediately remove from the heat and whisk vigorously until smooth. Once the custard is cool, tip it over the strawberries. Finally, lightly whip the cream then spread it over the custard. Decorate with reserved halved strawberries. Chill before serving.

Method Select about a dozen berries for decoration. Put the rest in a saucepan with 3 tablespoons of sugar and the water. Bring to a gentle simmer and cook for about 2 minutes. Place the cut sponge pieces in the bottom of a clear glass bowl. Add the Grand Marnier and allow it to soak in. Ladle in the strawberries and juice. To make the custard, beat the egg yolks and sugar until light and thick. Heat the milk and vanilla bean in a heavybased saucepan until almost boiling. Tip the hot milk onto the egg mixture in a bowl and stir well to combine. Rinse the pan that the milk was heated in, return it to the heat and strain the egg, sugar and milk mixture into it. Christmas cakes C hristmas cake is an English tradition that began as plum porridge. It’s made with rich, moist currants, sultanas and raisins which have been soaked in rum. If a Christmas cake is covered in icing, it is quite common for it to be decorated – models of houses, of fir trees or of Father Christmas. A Scottish specialty is the “Whisky Dundee,” which originated in Dundee, and is made with Scotch whisky. It’s a light and crumbly cake, and light on fruit and candied peel- only currants, raisins, sultanas and cherries. There is also the Scottish black bun, of a similar recipe using whisky and often caraway seeds, eaten on Hogmanay. Coins were also occasionally added to Christmas cakes as well as Christmas puddings as good luck pieces. These were silver 3d pieces, or sixpences, sometimes wrapped in greaseproof paper packages. In Yorkshire, Christmas cake, as with other types of fruit cake, can be eaten with cheese, such as Wensleydale. A cake that may also be served at Christmas time in the UK is known as a “Yule Log, or chocolate log”. This is a Swiss roll that is coated in chocolate, resembling a log. The Christmas cake largely displaced the previously popular Twelfth-night cake during the Victorian era.

Other countries

In the United States, some people give fruitcakes as gifts at Christmas time, but they are not called Christmas cakes. In Canada, however, the same cake is instead called “Christmas cake,” at least among the English-speaking majority.

In Japan, Christmas cake is traditionally eaten on Christmas Eve. The cake is simply a sponge cake, frosted with whipped cream, often decorated with strawberries, and usually topped with Christmas chocolates or other seasonal fruits, and a Santa Claus decoration.

In India Allahabadi cake is famous for its rich taste and texture. Many smaller and more traditional Christian bakeries add alcohol, usually rum, in the cake.

In Germany, Stollen, a traditional German fruitcake, is popular. During the Christmas season, it’s also called Weihnachtsstollen or Christstollen.

In Sri Lanka, Christmas cakes use treacle instead of cane sugar and include spices like nutmeg, cinnamon and black pepper.

In Italy, Panettone, a sweet sourdough bread with a distinct cupola shape, is traditionally eaten at Christmas. It

contains raisins and candied citrus fruit and is prepared meticulously over several days. In France, in Belgium, in Switzerland, in French Canada, in Luxembourg and in Lebanon, a Bûche de Noël is the traditional Christmas cake. In Cyprus, it is served on Christmas Day. The Flaxmere Christian Fellowship is a local Church which has been operating since1980. Situated on Flaxmere Avenue it draws people from around the Hastings and Napier area. This Pentecostal Church was birthed out of the Charismatic renewal of the late 1970’s. The main meeting is every Sunday morning starting 10:30. A Bible College also operates on Sunday evenings for those serious about advancing their knowledge of the Bible. Different groups run during the weekend which cater to youth ad adults. Children’s Sunday school classes run on a fortnightly basis during the Main Sunday service. Glazed Ham Festive glazed ham • 7(kg) Ham • Rind and juice of 1 orange • Rind and juice of 1 lemon • 2 ½ cups of water • 10 whole cloves • 1c brown sugar • 1c apricot jam • 1 tablespoon French mustard • 10 whole cloves, extra Remove rind from ham, leaving it intact around shank. Cut away some of the excess fat. Place orange and lemon rind, water and cloves into barbecue cooking pan position it in the centre of cooking area. Sit ham on roasting rack and cover ham and liquid with foil. Cook indirectly with the outside burner on medium for 1 ½ hours, checking water level periodically. Remove foil and discard liquid. Cut a diamond pattern into the fat of the ham then spread with combined fruit juices, sugar, jam and mustard and stud with extra cloves. Line barbecue booking pan with foil, place ham on roasting rack and cook indirectly with the outside burners on high for 1020 minutes. Reduce heat and medium and continue booking for a further 40-60 minutes or until golden

• 1/2 cup apricot chutney • 1/4 cup dried apricots, sliced • 1 tsp wholegrain mustard To make the glaze, mix pineapple, ginger, apricot chutney, dried apricots and mustard together in a bowl. Preheat oven to 170°C (150°C fan-forced). Remove the skin from the ham and score it with deep cuts in a diamond pattern. Line the base of a large baking tray with paper. Place the ham into the dish. Brush half of the glaze on carefully. Place into the oven for 1 hour, basting every 15 minutes with remaining glaze. Continue to cook until it is golden all over.

awke’s Bay produces a large quantity of New Zealand’s apples so it’s no surprise that it is rapidly gaining a reputation as a centre of excellence for cider. Hot on cider’s heels are craft beers and ginger beers, with and without alcohol, that are being produced in ever increasing numbers.

Many businesses are of a boutique nature with products available at the Farmers Market, the cellar door, selected watering holes and supermarkets. The distinction between craft beer and other beers basically is that they are manufactured by small scale or boutique breweries rather than multinational corporations. Local company Paynters has been in the fruit business for generations and specialise in creating cider with real cider apples using cutting edge production techniques. Three Wise Birds, another local company, manufactures an exciting range of ciders using apples grown in Hawke’s Bay: products include Summer Fling and Bach Life and there’s a champagne style cider, Scenic Reserve, made in the Methode Traditionnelle way using Braeburn apples. There’s no shortage of locally made craft beers with a wide selection available from the Hawke’s Bay Brewing Company, Napier Brewing, Brave Brewing, GodsOwn and the Zeelandt Brewery. Christmas is the ideal time to gather a selection and sample with friends around a BBQ.

For those who prefer bubbles there’s a selection of locally made bubbles created using techniques such as Cumulus Methode Traditionnelle by Alpha Domus. Locals know that there’s a wonderful selection of local wines available at the cellar door and available at local wine merchants - white, red and rose.

Juice is another Bay speciality with several companies producing quality orange and apple juice. An excellent way to enjoy Christmas brunch is to celebrate with champagne and orange juice. A Buck’s Fizz is made of two parts champagne to one part orange juice.

hristmas is a time when people are especially generous and not just with their nearest and dearest. It’s a time for compassion and donating gifts for those who may be experiencing hard times.

The Salvation Army Napier Corps is especially busy at this time of year receiving gifts, cash, food and household staples to donate to their regular clients to help them enjoy Christmas-about 120 families in all.

While young children tend to be well catered for teenagers can be difficult to buy for and they suggest a voucher for The Warehouse or K Mart so the child can choose what they’d like.

Another innovation is the online foodbank www.foodbank.org.nz run by Countdown that was launched last year. Countdown will be creating special Christmas hampers that can be ordered online and delivered directly to the Salvation Army. In addition to thanking the community at large for their generosity there are plenty of volunteers needing recognition for working largely behind the scenes:

Community Ministries Team Leader Major Stephen Wallis says the families receive parcels of food, mainly staples, and toys for the children. The food parcel will also contain a chicken and possibly a few treats like chocolate and tinned fruit. Gifts of other household products are often overlooked but are very much appreciated. Examples include washing up liquid, toilet rolls, nappies and toothbrushes, he says. Money too is an acceptable alternative as it allows them to “plug the gaps” say if there’s a shortage of tinned fruit they can go out and stock up. The public and local businesses are very generous and “We are grateful for their support. Without it we couldn’t do what we do.” Just one example of how business and the community work together is the Shoebox Appeal run by Café Ahuriri. The café

Decorations-spoilt E very year we seem to push the boundary just that little further away from a traditional Christmas but then the climate here doesn’t lend itself very well to snow, robins, roaring log fires and mulled wine.

Options for trees range from mini table top trees in all sorts of materials including feathers, glass and metal up to eight foot pine artificial trees. Christmas tree ornaments or baubles never go out of fashion but the range available is huge with snowmen, jewel encrusted baubles, kittens, Mickey Mouse, birds, butterflies, swans, deer and martini glasses hitting the stores this year. Baby’s first Christmas, along with personalized cat and dog trinkets are also popular. Candles and candle holders can add an element of warmth and an extra layer of interest to your decorations, along with some gorgeous aromas. It’s possible to buy artificial candles for those concerned about fire risk.
