Tom Cleary’s red cabbage
old fashioned sage, thyme and onion stuffing
This is a delicious vegetable with roast meats, it is easy to prepare and really livens up a plate with its colour.
This stuffing is the real deal; it goes so well with chicken, Christmas turkey or even duck. The important thing is to make sure the onions are very soft before you add in the breadcrumbs.
450g red cabbage 450g cooking apples 100g golden sultanas 3 tblsp of red wine vinegar 3 tblsp of brown sugar 1 teasp of salt ½ teasp of ground white pepper Grated knob of ginger Serves 6-8
Quarter the cabbage and remove the core, slice it as finely as possible. Place in a stainless steel saucepan with the sultanas, vinegar, brown sugar, salt, pepper and grated ginger. Put this on a low heat with the lid of the saucepan tightly fitted. Now peel and core the apples and place them on top of the cabbage replacing the lid. Cook on a low heat for 45 minutes and serve hot.
190g good Irish butter 340g very finely chopped onions 450g soft breadcrumbs 7 tablespoons of chopped herbs (sage, tarragon, parsley and thyme) Salt and pepper
Sweat the onions in the melted butter until soft, this should take 10 minutes, stir in the herbs and cook for a further minute. Then stir in the breadcrumbs and season with a little salt and pepper. The stuffing should not be dry but moist and full of flavour.

You either love them or hate them, but this is a way I think most people will grow to love the humble Brussels sprout. I slice the sprouts very thinly and cook them in boiling water with butter for a few seconds. Strain and top with the toasted almond flakes — Ardkeen Quality Food Store
st. stephen’s day lunch Turkey Broth

After two days of eating turkey, most people want something light and healthy and this simple recipe is a great economical way to use up the leftovers from your Christmas feast.
Keep the turkey carcass in the fridge before using it to make stock. This recipe will also work fantastic with a chicken, duck or goose carcasses.
1.5 litre of well flavoured turkey stock 55g finely diced carrot 55g finely diced parsnip 55g finely diced onion 100g of pearl barley 2 cloves of garlic 1tsp of chopped tarragon 1 tsp of chopped parsley
Sweat off the onion, carrot, parsnip and garlic in a little butter. Add the pearl barley and the turkey stock and cook until the barley is soft. If there is any meat left add it to the broth, just before serving add the chopped herbs and season with salt and pepper.
1 turkey carcass 5 litres of water 2 onions 2 leeks 4 sticks of celery 2 carrots
2 bulbs of garlic 3 sprigs of thyme 2 sprigs of rosemary Bunch of parsley stalks 8 black peppercorns
Break up the carcass as much as possible, put all the ingredients into a saucepan and cover with water. Bring this to the boil, froth and scum will form on top of the stock, skim this off as soon as it appears. Cook for 1 hour, making sure not to cover the saucepan with a lid as the liquid needs to evaporate to get a good flavour.

top tips for the perfect roast potato Look out for Golden Wonders, Kerrs Pinks or British Queens, they are the varieties best for roasting. Peel the potatoes before you use them and do not soak in water, this causes the potato to soak up too much moisture and will affect the finished article. Make sure they are all of similar size. Now par boil the spuds for 4 minutes and drain the water and leave them steam for a further 2 minutes. In a hot roasting tray pour in some olive oil or goose fat, I head of garlic, cut across with skin on, 4 sprigs of rosemary, potatoes and season well with white pepper and a good pinch of sea salt. Now place in a hot oven 190c and basting occasionally until they start to colour on one side, turn the spuds over and repeat the basting. Leave the potatoes in the oven until they are golden brown and really crispy; they will absorb the garlic and rosemary flavours. — Ardkeen Quality Food Store

Michael’s philosophy of food is simple. Take fresh, organic, locally sourced and seasonal ingredients and cook them simple to retain the true taste. Michael is now lecturing in Culinary Arts in Waterford Institute of Technology and an active member of the Slow Food movement of Ireland.
