Welcome to the 9th Annual Sedona Winefest! This year the Winefest takes place on Saturday and Sunday September 23 & 24 from 11:00 am to 5:00 pm at Posse Grounds Park in the heart of Sedona. Enjoy fabulous Arizona wines, tasty food, music, and vendors galore while taking in the breathtaking panoramic views of the majestic red rocks. General Admission for Saturday or Sunday is $40 at the door, and $35 online. Admission includes 6 tasting tickets and an etched commemorative wine glass. There are additional wine tasting tickets available for sale at the event. This year Sedona Winefest is bigger and better than ever. he secret behind great wine pairing is that there are no hard and fast rules. The day of having white wine only with fish or chicken and red wine with meats is no longer relevant. There are some things that are important to think about when trying to find the perfect pairing. Here are some tips to think about when pairing wine with food.

First, enjoying wine should be a part of every day and not just when you are planning a special event or celebration. Each time you are lucky enough to share great food and a quiet moment with someone you care about, it is grounds for celebration.

2 Choose The Wine First You can design a menu around the perfect bottle of wine and modify how you prepare the food; but you cannot change the wine once it is in the bottle. Far too often, the wine is the after-thought once the menu has been determined.

3 Balance Flavors Eating and drinking wine requires all your senses. Think about the food aromas and flavors and balance or match those with the food you are serving. For example, the rich flavors of a mesquite-grilled New York Strip steak need to be paired with a wine that will not disappear under this intensity. A fullbodied red wine would be the best choice there.

4 Food Texture The food texture and weight might dictate the type of wine you serve. The delicateness of certain dishes should not be overpowered by the wine. The goal is to complement and enhance the flavors of the dish. A poached halibut with a buere blanc sauce should be paired with a light-bodied white wine such as a sauvignon blanc or a wine with strong acidity (Riesling) to cut through the butter sauce. Go With Grenache The most versatile Arizona wine is a Grenache. The styles can bridge between a light bodied wine or a rosé to a more full-bodied wine that goes with food off the grill. Depending on the style and cooking method, Grenache compliments fish, poultry, pork, turkey as well as beef. Think about the way you plan to cook your dish (e.g. grilling, sauté, or roasting) and your “wid-its” (Jamaican for side dishes) to select the right style of Grenache. For example, LDV Winery makes different styles of Grenache from the same grapes to pair with very different foods. We produce a lighter version of Grenache that is meant to pair with Salmon, seared Ahi Tuna, and grilled chicken and another style that is aged in new French oak barrels that pairs perfectly with mesquite gilled Filet Mignon or a mushroom tart.

6 Eat Your Vegetables Wine is not just for meat lovers. Take into consideration the type of vegetables and how they are cooked when choosing the perfect wine. Artichokes and asparagus are difficult to pair with wine because of the sulfur content. However, mushrooms love a full-bodied wine as well as roasted potatoes. The same tips apply for pairing wine with vegetables. Think about the texture, balance, and cooking approach. If there is a cream sauce on the spinach, choose a

wine that can cut through the richness of the sauce. If dinner includes caramelized onions, choose a full-bodied zinfandel because it will have enough spice to compliment the sugar.

7 Respect Your Tannins Tannins are an often misinterpreted and misunderstood feature in wines, especially related to food pairing. Tannins are often associated with the relative dryness or sweetness of a wine (sugar content). Tannins have nothing to do with the sugar content of a wine but can give a dry or astringent sensation on the back of the palate. Tannic wines are best paired with foods with higher fat content (rib eye steak, braised short ribs, bleu cheese) as they have the unique ability to clean off the palate to better taste each bite of the food. There is a reason why great steak houses have wine lists that are top heavy toward higher tannin content wines like Petite Sirah, Syrah, and Cabernet Sauvignon.

8 Enjoy Today And Cap It Off Invest in a good wine preserving system (a capping system that eliminates air from the bottle). Many people forego a glass of wine because they don’t want the whole bottle and can’t justify opening one for just a glass or two. They go without – so sad. If properly stored and refrigerated the wine can be enjoyed over the next several days. Or invite a friend to dinner and enjoy the wine today.

Experiment For Yourself

Try different combinations and pairings. If you like a certain pairing, you are right, no matter what the “experts” say! You are the only one that experiences that moment. There are so many great wines available today, so don’t get stuck in a rut. Try something new, particularly an Arizona wine. Don’t be intimidated. While there are some basics that should be followed, the expert is you not the guy on TV. Whatever you like is the best match. fall

Watching someone taste wine and identify the flavor characteristics for the first time or examine a vine closely with a new appreciation for its role in producing that wine, provides me with such satisfaction. That connection to the land, our environment, and to each other is what the winemaking journey is all about. LDV Winery is producing 100% estate award-winning wines at 5,000-foot elevation in the Chiricahua Mountains of southeastern Arizona. I am passionate about our special place but also about building the Arizona wine industry because of its economic impact. I served two terms as the President of the Arizona Wine Growers Association which represents the wineries and vineyards statewide. Curt Dunham and I found our way to winemaking through a serendipitous path as wine collectors for over 20 years and traipsing through vineyards with winemakers all around the world. Owning a vineyard and winery was never on the bucket list of things to do with our lives. However, we are passionate about our special place in Arizona wine country and about making the best possible wine that can compete with the greatest wines around the world.

I first fell in love with fine wine in June of 1976 at the ripe age of 16. My parents brought home a bottle of 1974 BV Cabernet Sauvignon from a trip to Napa Valley and let me have a taste. Being Blue Nun and Lambrusco drinkers (remember those?), they were probably looking forward to fall

ability to start enjoying wine seriously for the first time, I went all in. I started visiting vineyards in California, not just going to the tasting rooms but making appointments with winemakers at small establishments. I learned a lot about making wine from those doing it, never dreaming I would someday be making it myself - with my name on the bottle! Cooking has strongly influenced my winemaking in two ways. First, I learned to cook and season foods by sense of smell. I cook with my nose. Second, the wines I am crafting are always a result of me trying to match them with a food palette. My goal is to eventually have a wine to go with almost any kind of food because I don’t think food and wine can be separated. After eight vintages, I am learning more about the grapes that are being produced from our unique vineyard location. I am excited about the possibilities and building the skills of my craft. I look forward to sharing the fruits of our labor and my passion with you. Kief-Joshua Vineyards is a small family business with 20 acres in beautiful Elgin and 40 acres in Willcox Wine Country. Sonoita Vineyards

Dr. Gordon Dutt, owner and founder of Sonoita Vineyards, is a retired soil scientist from the University of Arizona. As part of a research project back in 1973, he established an experimental vineyard on the red, acidic clay of the Babacomari Ranch in southern Arizona. The success of that vineyard and the quality of the wines from those grapes led to the planting of a commercial vineyard in 1979, the first in the Sonoita/Elgin area. Sonoita Vineyards’ winery opened in 1983 with a first-vintage production of 300 gallons. Today, Dr. Dutt’s granddaughter Lori is following in his footsteps and serves as the winemaker. They produce nearly 4,000 cases (9,500 gallons) per year from 10 different grape varieties including Colombard, Sauvignon Blanc, Pinot Noir, Syrah, Merlot and Cabernet Sauvignon. You recall the blood, gold, and wine of Carthaginian Imperialism; Iberian chieftains bought and sold, and soldiers hired to fight in foreign wars, and everywhere, the vines continuing their inexorable journey to new lands, waiting for the soldiers to return. Mourvèdre comes from the Rhone River Valley, too, that mighty river that flowed right in the path of Hannibal’s Herculean march against Rome; the very conflict that set in motion the Western World. Maybe, you think to yourself, the wine his army carried was made from the ancestors of these grapes that weigh so heavy in your hands. You remember that this grape was grown for Popes enthroned in Avignon. The Spanish name for this grape, Monastrell, still holds that connection to God and Communion. Somehow, along the way, these vines ended up in the Verde Valley as their final destination, under a lonely new moon. The light of your headlamp is the only thing that tells fall

Midnight Harvest, Page Springs Cellars

But now? Now it is a clear night. The distant flashes of monsoon lightning on the far horizon, looking like distant heavy artillery, are the only evidence of violence. Above you, the sky is so clear that you can see the very colors of the stars in the heavens above. Everywhere the soft whisper of harvest shears, footsteps crunching on limestone soil, and quiet murmured conversation surrounds you. In the distance, coyotes howl and their cries in the dark night pierce your wounded and lonely soul. All of these eventually fade into silence as you walk between the rows of vines. Meanwhile, you pluck clusters of Mourvèdre grapes that are often the size of your face and shaped like hearts. They weigh heavy in your hands: plump, purple, and sweet … like memories of past lovers, memories of people you’ve wronged by accident either by loving them too much, or by not loving them enough. They weigh heavy like your heart, wronged by the inability to understand. You remember the loves that got away; like the bird flying out of the vine into the darkness of night to points unknown, crying aloud in a prayer of supplication. “Midnight Mourvèdre Harvest” The love you would do just about anything to bring back; the one whose silence slices like knives the color of the night. Snip, snip, in the dark, as the clusters fall into your hands, into the bright orange bucket you carry between the rows. You try to snip the memories away. Your mind wanders. You cut your hand with the shears. The harvest teaches discipline. You must be mindful of where you put your hands, your feet, your heart, your mind, your soul. Otherwise, you shall be grievously wounded by your shears, or the shears of others. You remind yourself to apply this lesson to your daily life, outside of the vines, where even greater dangers await. (You will forget. You will need this lesson again.)

you where you are in the dead of night — but even then, you cannot see the end of the rows. The rows of vines stretch past the horizon. All you can do is focus on the world around you. Moths whirl around your head like electrons around a nucleus, their eyes gleaming like polished copper. You feel alone in the world, as if you’re walking in a world that is in the process of creation; that hour when God Himself walks on the earth and breathes, and before the world has fallen apart. The air is fresh and smells of earth and mint and the pregnant waters of Oak Creek, just beyond the next ridge. Grape juice stains your hand crimson, and mixes with blood. Magically, whenever you fill your bucket full of grapes, someone on a quad swoops in, and picks up your load, and gives you another empty bucket or two, before disappearing back into the night. This is your only human contact throughout the course of your vigil. All is wonder and magic. The world begins to make sense again. Suddenly the sun begins to come out behind the mountain, turning the few clouds into polished metals: silver, copper, and gold. The rays of the sun coming from the distant mountains illuminate the world in bands reminiscent of our flag. The dawn chorus of the birds is heard: Kingbirds, greeting the sun; a distant Gila woodpecker, and the first autumn bluebirds call overhead. When the Black Hawks scream from the creek side cottonwoods, you know that the fall

end of that night’s harvest has come. You are sad, again. You don’t want to leave, to go to that humdrum daytime job. You don’t want to depart from this magical world. You wonder why you could ever leave. But you do. And you must. This is not Heaven; this is the World, and there are troubles in it. For some of us, those wielders of the pruners and shears of righteousness, we will return, night after sleepless night, into that magical kingdom amid the vines, when time holds still under the wheeling stars. The harvest is the sacred calling, and the vineyards are a temple devoted to the glory of the divine. The land is the bridegroom of Biblical parable, and the vines are his children, and need care and devotion in order to safely journey into the bottle to adulthood and old age. Those who have been chosen will sleep when all is accomplished, and not a moment sooner. The Harvest needs them. The vines need them. Sam Pillsbury, noted filmmaker, first planted vines on the Willcox Bench in 2000 when he was a partner in Dos Cabezas with Al Buhl. Chateau Tumbleweed is a collaboration of four friends – two husband-and-wife teams – who, after working more than 30 combined years for other Arizona wineries, recently left their “day jobs” to focus on their own project. Village buildings were examined inminute detail, how they were built and what materials were used. Miller and McIntyre photographed thousands of scenes from rural villages and sketched Spanish Colonial architecture. They looked at how the patios, courtyards and plazas created natural gathering places for the villagers to mingle, sell their crafts and enjoy each other. Bob reported that when he and Abe came upon a small village they would just sit and watch for hours, coming to know the importance of how beautiful flowers, fountains, tiles, and most of all, how trees shaped social interaction in a public space. They studied the architectural forms, arches, fine tiled nooks and grand courtyard fountains, stucco walls and intricate ironwork, cobblestone walkways and overhanging balconies. They were soul searching—discovering what life really was like in rural Mexico. Like a couple of cultural anthropolo-

gists, Abe and Bob began buying up artifacts of Mexican culture. They scoured villages and markets, purchasing what they intuitively thought would work at Tlaquepaque. Truckloads of iron grillwork, enormous carved doors, handmade lanterns, clay pots and benches came up from Mexico into Sedona on a regular basis…all to create the genuine feel and spirit of Tlaquepaque that has only mellowed and improved with age. The Chapel was Abe’s favorite building. He commissioned Eileen Conn to create a painting of St. Augustine, Pope

Pious X, St. Bonaventure, Samuel, Peter, and John the Baptist. The imposing painting is resplendently set off in a gold leaf frame that was painted by Abe and Linn Miller. Styled as a private chapel, like those gracing the haciendas of Old Mexico, it continues to be the perfect place for a truly intimate wedding. Today, Abe’s legacy of celebrating the cultural heritage and traditions of Old Mexico are still very much alive. Tlaquepaque produces colorful fiestas like Cinco de Mayo, Fiesta del Tlaquepaque, Dia de los Muertos, and Festival of Lights, inviting the community and visitors from around the world to take part in the festivities. Tlaquepaque is so much more than a destination for art collectors, discerning shoppers and tourists intrigued with what sensorial experiences await them behind the ivy covered-walls. It’s a rare treasure that celebrates beauty, art and community like no other.
