It is my pleasure to extend a warm welcome to each one of you introducing you to our autumn edition of Times at Armathwaite Hall!

As summer fades, Armathwaite Hall invites you to experience the magic of autumn with our spectacular views and mountainous landscapes – the envy of many around the world.

Indulge in seasonal fine dining making use of local Estate produce and paired with delicious wines. A visit to one of the best hotel cocktail bars in the country is also encouraged.

A stay at Armathwaite Hall would not be complete without an outdoor activity or two. Invigorate your autumn break and discover our range of on-site activities that promise to keep the whole family entertained, from archery and animal experiences to clay pigeon shooting.

At Armathwaite Hall we are proud of our heritage, but we understand the need to welcome the future by investing in tomorrow. We are thrilled to announce the renovation of our beloved Courtyard Bar and Brasserie, with a new name soon to be announced!

Our Vision

Our Courtyard Bar and Brasserie is a beloved institution. However, we have begun to think our informal dining space needs some love to elevate it to the luxury standard that we hold ourselves to. With this in mind, we began making plans to bring our vision of a contemporary brasserie to life.

RECIPE:

With a focus on sumptuous fabrics, a warm colour palette and a focused attention to detail, we will bring you a brand-new brasserie that matches the quality of the food on your plate. We aim to bring the outside in with delicate greenery that reflects the stunning scenery of our home, the Lake District.

The brasserie will become the place to be, whether you are celebrating with loved ones, enjoying an afternoon drink or simply looking to absorb the unique atmosphere of Armathwaite Hall.

We hope that you will join us soon to celebrate the grand unveiling.

Meet The Team

“Autumn is the perfect time to enjoy a hearty, comforting soup. This recipe is one of my favourites because it helps cultivate that cosy feel we all crave at this time of year!” – Chris.

Serves: 6.

Skill level: medium.

Preparation time: 1 hour.

Cooking time: 30 minutes.

Total time: 1 hour, 30 minutes.

Ingredients:

• 1 pumpkin, 1.5kg approx. French preferred but any pumpkin is fine, avoid XL.

• Salt and freshly ground black pepper.

• 1 head of garlic, cut in half horizontally.

• Handful of rosemary sprigs.

• 1 tbsp olive oil, plus extra for drizzling.

• 1 onion, peeled and chopped.

• 20g chopped fresh sage.

• Pinch of freshly grated nutmeg.

• 100g Parmesan, freshly grated, plus extra for garnish.

• 800ml hot vegetable stock.

• 100ml double cream.

• 15g butter.

With Chris Lee as our new Executive Chef, Armathwaite Hall Hotel & Spa promises to deliver an exquisite culinary experience making it a must-visit destination for food enthusiasts and travellers alike.

Method:

1. Heat the oven to 170°C (Gas 3). Cut the pumpkin in half and remove the seeds –you can save them to make dried pumpkin seeds. Score the flesh, season with salt and pepper, then rub with the cut garlic halves. Lay rosemary sprigs and a garlic half in each pumpkin half. Drizzle with a little olive oil and place on baking trays.

2. Roast the pumpkin halves for about 1 hour until tender; the timing will depend on the variety, density and thickness. It is ready when you can effortlessly slip a knife into the thickest part of the flesh. Take out the rosemary and garlic; reserve the garlic for later. While still hot, scoop out the pumpkin flesh and set aside. Discard the skins.

3. Heat 1 tbsp olive oil in a large saucepan, add the onion and cook for 5–6 minutes

Chris Lee brings extensive experience and a passion for fine dining to Armathwaite Hall, having trained in Salcombe, honing his skills under Albert Roux at Hanbury Manor. Lee’s commitment to provenance and sustainability aligns perfectly with our ethos.

until soft and translucent. Scoop out the flesh from 2 or 3 roasted garlic cloves and add to the pan with the nutmeg and a little seasoning. Sauté for a further 1–2 minutes.

4. Stir in the soft pumpkin and Parmesan, then pour in the stock. Bring to the boil, lower the heat and simmer for 10–12 minutes. Stir in the cream and heat for a minute.

5. In batches, ladle the soup into a blender with the chopped sage and blend until smooth. Add the butter and blitz again to a velvety smooth texture. Pour the soup into a clean pan to reheat.

6. Pour the hot soup into warmed bowls. Top with Parmesan shavings and some freshly ground black pepper. Tastes great with some warm, crusty sourdough bread.
