Grilled Fish Tacos


Contrary to what has been said about seafoods not having any dietary fiber content, fish, mollusks, and crustaceans have considerable amounts of fiber though not as much as those found in oats, strawberries, and similar non-meat food sources. Still, there's much to be said about seafoods making for easy appetizers or satisfying lunch entrees and even delicious side dishes for dinners. Seafoods are also excellent sources of fiber. Several types of fish such as American shad, wild salmon, and carp, as well as crustaceans like lobsters and crabs, and oysters, mussels, scallops, shrimp and squid, all have high fiber content and can be incorporated in a simple but robust cooking recipes, a mixed greens salad recipe with honey-mustard dressing or a mixed seafood stew the way they do it in the Basque region of Spain. High fiber seafoods make for great snacks, too, if you didn't know that. Take for instance, Crab Salad with Jalape単os in Pita Pockets, or Fish Tacos, which has become ubiquitous in the U.S. and a staple in Mexican, Southwestern, and Tex-Mex cookery. On the other hand, Canada's British Columbia and Nova Scotia are home to the most delicious seafoods. This fish taco recipe uses grilled fish instead of the traditional fried to keep them healthier. fish & marinade 

1 pound skinless halibut cut into 4, 4-oz. pieces

zest & juice of 1 lime

2 cloves garlic – chopped

¼ c. cilantro – chopped

1 T. olive oil

kosher salt & fresh ground pepper

sauce 

¼ c. plain Greek yogurt

½ c. mayonnaise

1 t. white vinegar

1 t. Cholula

salsa 

½ c. pineapple - diced

½ c. cherry tomatoes – halved

¼ c. red onion – diced

¼ c. cilantro – chopped


1/2 avocado – diced

½ jalapeno – minced (optional)

shredded cabbage

taco size corn tortillas

garnish with hot sauce & fresh lime wedges

Instructions 1. Mix lime juice, lime zest, garlic, cilantro and olive oil together. Toss halibut pieces with marinade and let sit for 20 minutes. 2. While fish marinades, combine all ingredients for sauce & pineapple salsa. Thinly shred cabbage. 3. Season halibut with kosher salt and pepper. Place on pre-heated, oiled grill over medium-high heat and cook about 4 minutes per side until charred and just cooked through. Remove fish and cover with foil while warning tortillas. 4. Warm corn tortillas on grill. 5. Coarsely shred halibut. Top grilled tortillas with fish, sauce, salsa & cabbage. Add a squeeze of lime and some hot sauce. 6. Pop open an ice-cold cerveza & enjoy!
