The James Beard Foundation is sponsoring a series of dinners pairing Kentucky chefs, including five-time James Beard Foundation Award nominee Kathy Cary, with nationally known celebrity chefs during each night of the Games. Caramelized Onion Pudding SERVES 8-10

INGREDIENTS 12 tablespoons butter 9 cups thinly sliced onions 9 eggs 3 tablespoons flour

1 tablespoon kosher salt 1 tablespoon baking powder 2 tablespoons sugar 3 cups heavy cream

INSTRUCTIONS: Preheat oven to 350°F. Melt the butter in a large skillet over medium heat. Add the onions and cook slowly, stirring frequently, until dark brown and caramelized, about 30 minutes. Pour into a greased 9”x11” pan. In a blender, combine the eggs, flour, sugar, salt, and baking powder. Blend well and add the cream. Pour over onion mixture and bake for 45 minutes or until set.
