As far as we can, we’ve tailored our Spring Issue to the needs of readers in these unprecedented times. ESSEX NEWS C O R O N AV I RU S C L O S U R E S These are difficult times for the UK, with events and businesses shutting up shop due to the COVID-19 pandemic. With the public avoiding unnecessary contact, most venues, restaurants and pubs have now closed or postponed their events. In Essex these include a range of events, including the Chelmsford beer and cider festival, due to take place in June, the Maldon Mud Race and the Maldon and Dengie Beer and Cider festival, which went ahead for its first day in March but was subsequently called off. The four-yearly 8 / Aspire / April 2020
Essex International Jamboree, which was meant to take place near Chelmsford in August, has also been cancelled, explaining there would be major financial losses if the event was cancelled last minute. On a brighter note, a number of Essex restaurants and pubs will be operating delivery services during lockdown. These include restaurants like French Martini, La Toscana and Pasha Restaurant Lounge. Make sure to place your orders to keep these fantastic businesses up and running!

R E S TAU R A N T L AU N C H Love Island’s Kem Cetinay will be taking over the popular restaurant the Shepherd and Dog in Harold Wood. The restaurant was set to open in June this year, although will now be postponed due to the COVID-19 pandemic. FREE SKY Sky customers who are stuck at home in the UK during the COVID-19 outbreak will temporarily get extra benefits. These include Sky Mobile customers getting an extra 10GB of data free of charge and Sky Go Extra available to all customers for free.
FREE MEALS FOR T H E E L D E R LY The Fat Turk, a popular pub in Brentwood, was offering free meals for over 70s during part of March. In a statement on its Facebook page, the pub announced the offer would stand until the spread of the virus forced its doors to shut. Deliveries were sent to properties within a five mile radius, with a choice of three meals and something sweet to finish. We want to congratulate this pub, and others like it, for doing its bit during these uncertain times!
ESSEX EXERCISE With COVID-19 rapidly spreading throughout the UK, keeping fit and healthy is more important than ever. Although gyms and sports centres have closed their doors, Brits will still be able to get outside and do some exercise (at time of publication). There are some fantastic walks available to those who want to avoid social contact, with nature trails providing peace and isolation (and an opportunity to escape from the house!) Our favourite is the circular walk starting at Bourne Mill in Colchester, passing the beautiful River Colne, Bourne Valley and the Almhouses of Winsley Square.
ESSEX FIRMS BUILDING V E N T I L AT O R S Meditech, a firm which manufactures equipment for the East of England Ambulance Service, has joined with other businesses in the Essex county, following a government plea for more life-saving devices. The company will be working with MGE in Colchester and MDM in Braintree, which both operate in the medical industry.

UPCYCLING ON RU N WAY At Paris Fashion week this year, sustainability was a major theme. Stella McCartney’s new range featured upcycled materials, with dresses made from vintage t-shirts stripped and knotted together, whilst backstage at Dior environmentally friendly messages adorned the walls. SKINIMALISM Women are opting for a minimalist - or skin-imalist - approach to skincare, with more and more women reducing the number of products in their skincare routines. Opt for simple skin hacks like applying sunscreen daily, using a cleanser applied to cotton wool before bed, and keeping skin hydrated by drinking water. Do away with oily products that block pores and pare back your makeup when you can, giving your skin the space to breathe.
SPRING CLEAN YO U R SKIN It’s that time of year again - the cleaning products are out, wardrobe doors flung open - but have you ever thought about giving your skin a spring clean? Hectic routines and early morning starts mean that we often end up scrimping on skin care. But with many of us using the same skin routines we’ve had for years (this writer is also guilty!), it’s time to do away with the dusty bottles gathering on our shelves and go back to basics. Here are our best tips to give your skin a seasonal spruce...
HEALTH & BEAUTY
E X F O L I AT E D A I LY A build-up of dead skin cells can lead to breakouts and a dull complexion - not what we want for the spring months ahead. The best way to counter this is by exfoliating, using products like scrubs, gloves and brushes. The action removes dead skin cells, but also stimulates blood flow, improving circulation throughout the body and rejuvenating skin tone. Make sure to use light strokes, and rinse with lukewarm - not hot - water.
SUNSCREEN UP As the sun comes out, many of us will be tempted to top up our tans. However, regular sunscreen use ensures that our skin resists the effects of photoaging - the wrinkling, spotting and loss of elasticity caused by the sun’s UV radiation. Combat ageing by making sure that your sunscreen has an SPF of at least 30, and apply daily, regardless of the weather. A foundation or primer with a in-build SPF is also a good way to incorporate sun protection into your beauty regime.
D O AWAY W I T H W I P E S Does your skin routine consist of a quick makeup wipe at night? If so, you’re not alone. Nearly 30% of UK women use makeup wipes, but what they might not know is that this cleansing method can cause more harm than good. Very few wipes contain ingredients that completely dissolve the makeup on your face, which means that you can end up rubbing the bacteria and residue around your skin, leading to clogged pores. A better solution (other than wearing no makeup at all!) is to use a regular cleanser, which packs a greater punch than face wipes, removing those last traces of dirt and giving your skin the deep clean it needs. S TAY H Y D R AT E D The skin is composed of billions of cells, all made up of water. It’s no surprise then that keeping hydrated really helps skin to thrive and look its best. The rule of thumb is at least eight glasses a day, so make sure to keep a water bottle on you, particularly as the weather warms. This is such a simple way to tackle dryness, ensuring that your skin has a healthy glow for spring.

ADD RETINOL Retinol, a form of Vitamin A, is one of the few ingredients that we can apply to skin to stimulate collagen. Retinoids reduce fine lines and wrinkles by increasing collagen in our bodies. They also stimulate the production of new blood vessels in the skin, fading age spots and any rough patches of skin. Make sure to introduce the ingredient to your skin in moderate amounts, as over exposure can lead to irritation and flaking. Products like Dr Sam’s Flawless Nightly Serum are great for beginners, combining 2% retinoid with other brightening ingredients.
WAT C H W H AT YO U E AT Skin creams and masks can take you so far, but the best way to improve the look of skin is through a healthy diet. The skin is an organ after all - the largest in the body - and the best way to nourish it is through antioxidant-rich meals, with lots of fruit, vegetables and healthy fats from oily fish and nuts. Foods to limit are those high in sugar and dairy, as they will exacerbate skin conditions.
P I L E O N T H E P I L L OW S Sick of waking up with a puffy face and dark circles around your eyes? The problem could be the way you sleep, with around 30% of us using just one pillow at night. By simply adding an extra pillow to your bed - two is recommended - our heads are elevated, meaning that gravity is able to drain the fluid from around our eyes, reducing next day puffiness and pigmentation. The extra pillows will also make for a comfier night’s sleep!

ROTATO R C UFF TEA R S IN TH E S H O ULDER April would usually mark the start of the golfing season, Mr Ali Al-Sabti, Consultant Orthopaedic Surgeon at Spire Hartswood Hospital, discusses rotator cuff tears – a common injury in golfers. W H AT I S T H E R O TAT O R C U F F ? The rotator cuff is made up of a number of muscles that surround the shoulder joint. W H AT I S A R O TAT O R C U F F T E A R ? Rotator cuff tears are common and normally found in the muscle which is responsible for elevating the shoulder joint out to the side; however large tears can involve all muscles. It usually presents in patients from the age of 40 years onwards. Tears can affect both male and females equally and are caused by degeneration of the tendon. Trauma plays a role as does repeated overhead activities such as those noted in electricians or in sports that involve the upper limb, like golf and tennis.
S U R G E RY T O R E PA I R A R O TAT O R C U F F TEAR The tear is most commonly repaired arthroscopically, i.e. keyhole surgery, and the procedure is carried out through three small puncture wounds, under a light general anaesthetic with a localised anaesthetic around the shoulder area – this helps to provide essential pain relief after surgery. R E C OV E RY A F T E R S U R G E RY The rehabilitation period varies according to the size of the tear but usually requires the use of a sling for two to six weeks. In the post-operative period, our shoulder physiotherapists will supervise the rehabilitation.

Patients usually present with pain which is typically felt over the deltoid. The shoulder pain is worse at night and symptoms are aggravated with overhead movement such as undressing, putting a jacket on or raising the hand above the head.
Patients’ return to work can vary, i.e. patients with a desk job can usually return to the office in two weeks; however a heavy manual worker will require a longer recovery period, which can be up to two months.

As a name it is derived from variations of Eve, and means ‘the first in existence’ or ‘the living one’. It is highly appropriate; Lotus has an unquestionable reputation for its pioneering approach in both automotive and motorsport. As the first all-electric British hypercar, the Evija continues that story of innovation. It also signals the start of an exciting new chapter for Lotus under the stewardship of Geely, the fastest growing automotive group in the world. A STUNNING EXTERIOR I N S P I R E D B Y N AT U R E The most striking element of the Lotus Evija is its exterior. From every angle the full carbon fibre bodywork is stretched taut, appearing shrink-wrapped over the mechanical components. Crouching low to the ground, with a ride height of just 105 mm, the pronounced muscular haunches envelop the teardrop cabin that sinks between them. Taking inspiration from the aeronautics industry, the exterior is a perfectly proportioned blend of fluid forms and crisp lines. This is clearly illustrated by the gently curved but sharp leading edge of the bonnet, which is reminiscent of so many classic Lotus road and race cars. PRECISION PERFORMANCE GUARANTEED The Evija is ‘For The Drivers’ and its searing pace is delivered in one
seamless, sustained surge. The 0-62 mph (0-100 km/h) sprint is completed in under three seconds, while the top speed is in excess of 200 mph (340 km/h). Further performance figures include acceleration from 100-200 km/h in less than three seconds, and 200-300 km/h in less than four seconds. Power can also be delivered over a sustained period. The car’s advanced aerodynamics and four-radiator cooling package keep the battery at an optimum temperature. It means that the Evija is capable of being driven flat-out with no derate for at least seven minutes in Track mode. M O T O R S P O RT- I N S P I R E D INTERIOR The interior of the Lotus Evija is as dramatic as the exterior. Inspired by the technical precision of race car engineering, the dominant characteristic of the cabin is the ‘floating wing’ dashboard which can be glimpsed from outside through the windscreen. The design also echoes the porosity of the exterior. Access to the cabin is through the two dihedral doors. Handle-free to preserve the sculpted exterior, they’re operated via the key fob. It’s the first time Lotus has used such doors, and while they make for a moment of dramatic theatre they also provide maximum space for getting in and out. With schools shut and most of us working from home, the next few months are going to be an interesting time for parents.There are only so many hours that kids can play video games or watch movies, and with recommended screen time limited to one to two hours per day, parents are going to have to come up with more creative ways to entertain their little ones. Luckily here at Aspire we’ve been brainstorming, and have come up with some fantastic ways to entertain your brood during the months ahead. From magical games to green-fingered gardening, here are our top activities for keeping little ones busy, giving you that much-needed me time. You can thank us later. PA C K T H E M O F F T O H O G WA RT S If your kids are fans of the Harry Potter books (and what child isn’t?!), this game is an easy one to set up. Copy the acceptance letter from the first Harry Potter book, inserting your child’s name, then hand over to your kids along with a wand (we recommend a chopstick), cauldron (large mixing bowl) and broomstick (an old broom or mop is great for this).Your kids can while away the hours mixing potions and playing Quidditch in the garden. To prolong the fun, create potion ingredients from unused cupboard items (tip: pesto and water makes for great pond algae).
GREEN-FINGERED FUN The requirements of gardening are in almost direct opposition to those of watching TV. Kids are outdoors, moving around, using their initiative and interacting with wildlife - so what could be a better activity for kids in these long months ahead? Start your children off with some bright, easy-to grow flowers, such as poppies or sunflowers, letting them plant and water all the seeds themselves. Research shows that children involved in gardening are more likely to eat healthily, so create an allotment space for your children and encourage them to plant quick-growing vegetables like radishes or green beans. They’ll be able to see the results in weeks.
P U T O N A S H OW Let your child explore his/her inner starlet with this theatre-inspired game. Instruct children to write a 10 page script, with each of them taking on two characters. Then let your little ones browse amazon.co.uk for a costume (most fall under a tenner), or prompt them to make their own from old t-shirts and leggings. This game can extend over several days (with writing, creating costumes and rehearsals) and will boost a child’s creativity and sense of personal achievement. To extend this activity further, film their performance and encourage kids to edit together the footage, using child-friendly software like iMovie or Filmora9.
GET CRAFTING Crafting is a great way to entertain kids, as it’s cost effective and requires little input from parents. There are thousands of fantastic ideas online, but our favourites include toilet-roll Koinobori (paint a toilet roll, then stick strips of tissue paper around the base), jam-jar lanterns (glue coloured tissue around a jam-jar and pop a tea-light inside) and paper-mache animals (stick strips of gluey paper to a balloon, allow to dry, then paint). Let your kids order their materials online to give them more ownership over the project.

LANDMARKS With the help of Google Earth, you can take a tour of some of the world’s most iconic locations. 1 . C L E A N L I K E YO U M E A N B U S I N E S S Clean, clean, clean. Clean everything. On top of the mantlepiece, behind furniture, over skirting boards. Make sure your home is spotless before each viewing, because - and it’s a no brainer - a well-scrubbed home will sell better than a scruffy one. If you don’t have time for regular upkeep, hire a cleaning service to do the job. 2 . C L U T T E R AWAY Kids wellies piled in the hallway, your favourite ceramic ornaments gathered on shelves - these touches might make your house a home, but could also turn away a potential buyer. Visitors to your property need to be able to see the space, so treat your home as a blank canvas, getting rid of anything that detracts from its natural appearance. 3. GO NEUTRAL Buyers want to be able to envision themselves in your home, so make sure that you edit any interior design that might not

S TA M P D U T Y SURCHARGE A two per cent stamp duty surcharge for non-resident homebuyers was announced by Chancellor Rishi Sunak in his Budget. Until now, non-resident buyers have been subject to the same stamp duty rules as buyers living in the UK. But from April 1 2021 all non-UK residents buying residential property in England and Northern Ireland will have to pay a two per cent surcharge on top of any stamp duty already chargeable on their purchase.
GARDEN COMMUNITIES In order to meet its Government housing targets for new homes in the years ahead, north Essex local authorities are proposing to build new ‘garden community’ developments in the region.

RO B OT I C B U I L D S On construction sites, robotics in the shape of drones are becoming increasingly popular, as they can survey the job site during work and help ensure that the workers are safe. Workplace accidents on construction sites have increased by 5%, but drones are helping to increase safety, accuracy and efficiency to reduce these numbers and make construction sites as safe as possible for the workers.
CLADDING R E M OVA L The 2020 Budget confirmed an additional £1 billion allocated for the removal of unsafe cladding from residential buildings taller than 18 metres. The Government pledged £400 million in 2018 for the removal of ACM - the material used at Grenfell Tower - from social housing tower blocks, and in 2019 an additional £200 million was allocated for the private sector.
NEW DEVELOPMENT RIGHTS The government has revealed plans for a new permitted development right (PDR) which would allow for vacant buildings to be demolished and replaced with new homes. SHARED OW N E R S H I P The government is working on plans to apply tenants’ right to shared ownership to all new rented homes built under the new £12bn programme, as announced in the 2020 Budget. E X O S K E L E TO N SUITS Exoskeleton suits for construction workers are expected to be available this year, helping workers carry heavy objects. BREWDOG BEGINS MAKING HAND SANITISER The independent brewer BrewDog has begun making hand sanitiser at its distillery in Aberdeenshire amid shortages driven by coronavirus fears. The firm said it would be giving away the “punk sanitiser” for free to those that need it. BrewDog’s founder, James Watt, announced on social media that the company had started producing sanitiser to help with shortages.

D E L I V E RO O London-based food delivery service Deliveroo has announced it will launch a ‘no-contact’ drop-off service. Deliveroo is taking measures to ensure they can deliver food to your door without you physically contacting the driver. F R E E F O O D PA R C E L S With the numbers of COVID-19 cases still rising, on Sunday, the Communities Secretary Robert Jenrick announced that food parcels would be delivered to 1.5 million Britons by the Government. The scheme is being coordinated by local councils in collaboration with supermarkets and the armed forces, and will be funded by the taxpayer. They are designed to help those most at risk get the food they need without having to leave their houses.

ROA S T LAMB As Easter approaches, many of us look forward to this holiday for the traditional food it brings. Chocolate eggs are usually on the menu, along with a classic simnel cake, hot crossed buns and, of course, a beautifully seasoned joint of roast lamb. There are lots of great recipes for roasting this meat, but our favourites have to be a traditional rosemary-studded joint (making incisions in the skin with a sharp knife, then pushing sprigs into each of the holes) or slow cooking the meat in a tomato sauce, along with pepper, garlic and chilli.

MAIN INGREDIENTS 1.-5 - 2.5kg Lamb Shoulder 30 g ginger garlic paste 30 g green chilli paste 20 ml lemon juice 1 g saffron 200g brown onion paste 5 g green cardamom powder 5 g nutmeg powder 3 g clove powder 40 ml pure mustard oil 50 g poppy seed paste 100 g cashewnut paste Burned Charcoal (1 small piece) 3 g rose petals, 20 g butter 250 g greek yoghurt 3 whole cloves Foil paper, Salt to taste MINT CHUTNEY INGREDIENTS 200 g fresh mint 100 g coriander 2 green chillies, 10 g ginger 1 lemon, Salt to taste 200 g greek yoghurt 1 tbsp chaat masala 1/2 tsp red chilli powder 84 / Aspire / April 2020
METHOD 1. Ask your butcher to make some slits with a knife along the bone of a lamb shoulder so that the meat absorbs the marinade. 2. Marinate the lamb shoulder with the rest of the marinade. Burn charcoal on gas until red in colour. Smoke the lamb shoulder with burned charcoal by keeping it in small bowl with butter and cloves. Cover it with sliver foil so bowl retains the smoke and the taste of charcoal. 3. Place a rack in middle of the oven; preheat to 170 degrees. Transfer lamb shoulder to a roasting pan and pour in 3 cups of water. Cover tightly with foil and cook, turn lamb and rotate pan halfway through until meat is almost falling off the bone, (approx. 3–3½ hours). Remove lamb from oven and turn up heat to broil (or to highest heat). 4. Discard foil, transfer lamb to a cutting board, and pour off liquid in pan. 5. Return lamb to pan; roast, uncovered, until nicely browned (approx. 5 minutes) Serve with mint flavour duck fat roast potatoes. F O R T H E M I N T C H U T N E Y: Blitz all the ingredients in blender to make a paste and mix in bowl with Greek yoghurt using a whisk. Check seasoning and serve with tandoori lamb shoulder.

O F W I N E TO COME One definition of the word ‘hope’ is as follows, ‘a feeling of expectation and desire for a particular thing to happen’ It comes perhaps as no surprise that the theme of this month’s article rests with that singular word of ‘hope.’ All around the northern hemisphere pictures are emerging of this season’s buds forming on vines. Following the harvest, the vines which had been pruned were left to recover throughout the winter months. Then as the season warms the all too familiar image of vine buds and the cycle of life leading to an eventual harvest perhaps 5-6 months away begins again. This in reality is the ‘miracle of the vineyard.’ At this early stage there are threats from frost which then become further challenges of hail, drought, heat, or disease. Making wine when you talk to any grower is hard work but the hope lies in what is to become. The hope that once the patient wait is over, once the challenges are overcome, then the joy of an end product is laid bare. We too are all facing challenging times. The waiting period never seems to shorten and the end is often clouded. However like winegrowers let us all step out (if possible) into our own gardens and enjoy the simplicity of nature. The beginning of new life, new hope in those shoots and buds which are now appearing all around us. It will not replace the daily horror of bad news but it WILL BUILD US UP and help us to realise that one day soon the current health issues will be overcome. With this thought in mind,two wines to consider for Easter and the month ahead: Saurus Patagonia Pinot Noir (Argentina) A Pinot Noir from one of the world’s coolest vine growing regions. This imparts in the Pinot an overriding elegance balanced against the depth of the fruit. A perfect partner for roast lamb or even richer fish dishes. Touraine Chenonceaux ‘La Voute’ Sauvignon (Loire, France) Located in the same region that gives us Sancerre. This is a rich style of Sauvignon which receives longer skin contact than extended time ‘on lees.’ So what does this mean? The wine shows a refinement of Loire Sauvignon but with a richer, full bodied texture. From a tasty tagine to delicate almond macaroons, this menu will impress family members and loved-ones alike, adding a touch of excitement to your evening in. Bon appÊtit!
TA G I N E B I L M A S H M A S H Tagines are a clay dish with a coned lid and what were used to make this classic Moroccan slow cooked stew of lamb and apricots, sweet and spicy flavours that marry so well. However, if no tagine is present then a simple cooking pot will do! This is my very own signature Tagine and always goes down well with friends at dinner parties! Make the tagine vegetarian by using butternut squash and vegetable stock instead of the lamb. INGREDIENTS 750g-1kg lamb neck fillet, diced shoulder or leg 1 large onion, finely chopped 1 large red pepper, finely chopped 2 tsp Ras El Hanout or Baharat seasoning (ground cloves, ground cinnamon, ground coriander, ground cumin, and/or dried lavender buds or rose leaves) 2 tbsp organic runny honey 1 litre lamb stock (venison stock can work well as an alternative) Garlic 3 cloves, roasted, 100g dried apricots, chopped in half Salt and pepper to taste, Olive oil for frying Vegetarian alternative to lamb 1-2 medium butternut squash, peeled and cut into cubes I N S T RU C T I O N S 1. Mix the diced lamb with a tsp of the baharat seasoning and a tbsp of honey, set aside until needed. 2. Put the garlic in the oven, whole in its skin, drizzled with a little olive oil, to roast. Finely chop the onion and red pepper and fry in some olive oil in a large pot over a low heat, about 10 minutes, until softened but not brown. 86 / Aspire / April 2020
3. Add the lamb and continue to fry for about 5 minutes until lightly browned. 4. Stir in just enough stock to cover the lamb, simmer until sauce has reduced and thickened slightly. 5. Take the roasted garlic out of the oven. Remove the skins, crush the softened garlic flesh and add to the tagine. 6. Toast the pine nuts. 7. Chop the apricots then stir in to the tagine with the toasted pine nuts. Stir in extra honey if needed and simmer for a further 10 minutes. Season with salt and pepper if needed. V E G E TA R I A N TAG I N E 1. Follow instructions above, frying onions and peppers. 2. Add about half the vegetable stock and stir in the dried fruits and honey. 3. Allow to simmer while the butternut squash is roasting in the oven. When it’s almost cooked but still slightly firm, add it to the tagine mix. Allow to simmer for a short while until the butternut squash has softened a little more. 4. Stir in the pine nuts and coriander and serve.

A L M O N D M AC A R O O N S
No lamb tagine or Moroccan meat or fish dish is complete without the accompaniment of couscous. This is a delicious spring version using broad beans and peas and makes a colourful addition to your tagine.
These perfectly sweet treats are fabulous served with afternoon tea or coffee and make a great gift too. For a truly Middle Eastern flavour, add rose water or essence.
INGREDIENTS 500g couscous Approx. 1 litre vegetable or chicken stock, or as much as you need as per pack instructions Up to 6 tbsp. olive oil 250g Fresh or frozen broad beans that have been soaked in warm water 250g shelled peas, lightly simmered in warm water for about 2-3 minutes 1 large bunch of spring onions Sprig of flat leaf parsley, finely chopped Sprig of Coriander, finely chopped Few leaves of fresh mint, finely chopped Salt and pepper to taste I N S T RU C T I O N S 1. Chop the spring onions and sweat in a little oil. 2. Dry fry the couscous over a medium heat until lightly golden brown. 3. Make up the hot stock and pour over the couscous, cover with a tea towel or cling-film and leave to soak for approximately 15-20 minutes until couscous softened. 4. Add the peas and broad beans to the onion mix and toss together. 5. Fluff the couscous with a fork and stir in the onions, beans and peas. Add the herbs and salt and pepper to taste. Serve with the lamb tagine.
INGREDIENTS 400g ground almonds 150g caster sugar Grated zest of 1 lemon 2-3 drops almond essence 1 large egg white Icing sugar I N S T RU C T I O N S 1. Preheat oven to Gas mark 6/200oC 2. Put everything, except the icing sugar into a food processor and blend to a smooth paste. 3. Put some icing sugar on a plate. Rub your hands with oil so that the almond paste does not stick to your hands. Take lumps of the paste the size of a large walnut and roll into balls. 4. Press one side of each ball into the icing sugar, flattening it a little and place it on a greased oven tray. 5. Once they’re all made, bake in a preheated oven at Gas mark 6/200oC for 15 minutes. 6. Let the macaroons cool on the baking sheet before lifting off. They will be slightly coloured, crinkly outside and soft inside. Tip:You can also add orange blossom water instead of the almond essence.
