Bangers & Mash Bites

Ingredients
1 lb small white potatoes, washed and dried 1/3 cup Minerva butter, melted
½ cup shredded Cracking Good Irish Mature Cheddar, plus more for topping 2- 3 Tbsp heavy cream
2 grilled pork sausages, diced
2 scallions, white and green parts chopped
Salt and pepper
Instructions
Preheat oven to 425 degrees F.
Poke holes around surface of potatoes to allow steam to escape and wrap in foil. Place on baking sheet and bake, flipping halfway through, until fork tender, about 30-40 minutes.
Allow the potatoes to cool just enough to handle. Slice in half lengthwise. Holding the potato halves over a medium bowl, use a spoon to scoop out the center, leaving an edge of potato in the skin.
Place the empty potato skins skin side down on your baking sheet. Brush the inside with Minerva butter and season with salt and pepper. Broil in oven for 3-5 minutes. The edges should be crispy. Set aside.
In the bowl with the scooped out potato, add butter, Irish Cheddar, and heavy cream. Mix until well incorporated. Season with salt and pepper then add the diced sausage and scallions.
Spoon the potato mixture into each potato skin and top with more shredded Irish cheddar. Place back into the oven for 3-5 minutes, or until cheese is hot and bubbly.
