PARMIGIANO REGGIANO AGED 24 MONTHS Parmigiano Reggiano features a rich flavor and slightly grainy texture. Only authentic Parmigiano Reggiano wears the seal of the PDO-certification, noted by tiny pin holes that bear the cheeses’ name. This mature, hard and nutritious cow’s milk cheese is produced using very strict standards, and only the highest quality ingredients. Aged for over two years, Parmigiano Reggiano Export Quality is a premier cheese, its long maturation period highlighting the intensely nutty flavors and slightly salty, fruity finish.
PROVOLONE PICCANTE AGED 10 MONTHS Made from a stretched paste (the process includes very methodical kneading and stretching of the cheese curds) that is cylindrically-shaped, then brined, this semi-hard cow’s milk cheese features a pale ivory interior and a smooth rind. Provolone Piccante is DOP certified, and has a more pronounced, piquant flavor and a drier, flakier texture..
GORGONZOLA No cheese case would be complete without Gorgonzola, Italy’s contribution to the big blues of the world. This piccante version, called Mountain Gorgonzola, is a “natural” type of cheese, and matures for 90 days. With its buttery consistency and fervent blue veining, it straddles the line between creamy and crumbly, making it suitable for the table as well as sauces and salads.

AGED 12 MONTHS
A dominant product of the Dolomite mountain range, Piave Extra Aged is a traditional cheese made with centuries old traditions and methods. Characterized by a sweet, full-bodied flavor, this Piave is aged for over 12 months for a true taste of the Belluno cheesemaking tradition. Because the cheese ages for a full year, the texture becomes quite crumbly and grainy, wonderful for snacking and grating.
GRANA PADANO AGED 6 MONTHS This wondrous cheese was enjoyed by royals and commoners alike, prized for its delicate, fruity aroma and taste, and became widely known as “the cheese with two souls.” Called “Grana” for its grainy texture and Padano for the region of its origin, the cheese is made with semi-skimmed raw cow’s milk with a recipe that has remained unchanged for centuries.
PECORINO ROMANO AGED 8 MONTHS Pecorino Romano was a staple in every Roman diet. The cheese is named after Pecorino, specifying the sheep’s milk that it is made with, and Romano, referring to the Lazio countryside outside of ancient Rome where the cheese originated. Pecorino Romano PDO is made by a unique process called “rummaging the curds,” where curds are quickly drained and pierced before salting.
ASIAGO
AGED 6 MONTHS
The cheese is aged for a minimum of two months and often up to one year or more, with its creamy, tangy taste and crumbly interior intensifying during the maturation period. Its semifirm, light-golden paste becomes harder as it reaches the rind. Similar to other mountain cheeses, Asiago has a clean, floral and grassy tone with a slightly sweet, but rustic finish.
