Rockstar Cheesesteaks Prep Time: 15 minutes Cook Time: 20 minutes Servings: 4 3 Tbsp vegetable oil, divided 1 small sweet onion, 1 red or green bell pepper, thinly sliced 2 lbs ribeye steak 1 tsp garlic powder 1 tsp onion powder ½ tsp paprika Salt and pepper 4 hoagie rolls, toasted 4 oz Rockstar Cheddar cheese, sliced Place steaks in freezer for at least 30 minutes. This will allow you to cut it as thinly as possible. Remove steak from freezer and, using a sharp knife, slice very thinly against the grain. Then dice the steak into small pieces. Add 1 Tbsp oil to a large pan over medium low. Add onion and peppers. Cook until soft and onions are translucent. Season with salt and pepper. Remove onion and peppers from pan, set aside. Season steak with garlic, onion, and paprika. Season with salt and pepper, to taste. Using the same pan, add remaining oil and turn heat to medium-high. Add steak and cook, stirring frequently until no pink remains, about 5 minutes. Drain off the juices from the pan and return to the stove. Add back all of the steak, onions, and peppers. Place cheese slices on toasted hoagie rolls. Divide hot steak and onions on top of cheese on each hoagie. Serve immediately.
