Truffle Trove Mushroom and Leek Hand Pies
Prep Time: 15 minutes Cook Time: 20 minutes Serves 4-6 1 box prepared pie dough 2 Tbsp butter 2 leeks, white parts chopped 1 lb assorted mushrooms (shiitake, cremini, etc) 1 garlic clove, minced 2 cups shredded Snowdonia Truffle Trove 1 egg + 1 Tbsp water In a large pan over medium-low heat, preheat the butter. Add the leeks and cook for about 5-7 minutes, until softened. Add mushrooms and garlic. Cook for and additional 5-10 minutes, or until the mushrooms have browned and shriveled. Season with salt and pepper. Preheat the oven to 375 degrees, and line two baking sheets with parchment. Place prepared pie dough down on a clean surface. Cut 6 3-in circle out of the dough then place a heaping spoonful on half the dough. Divide shredded cheese over top of each pie. Fold over to create a crescent, and crimp the edges together. Transfer to a baking sheet. Brush each hand pie with egg was. Bake for 20 minutes, or until golden brown.
