Crispy Tofu Stir-Fry with Spicy Mango Sauce

INGREDIENTS ½ block extra firm tofu 4 Tbsp cornstarch, divided into 3 and 1 ¼ cup Del Destino grapeseed oil 1 cup chopped bok choy ½ cup Del Destino peppers 1 Tbsp ginger 2 garlic cloves, minced Juice from 1 orange 2 Tbsp Tamari ¼ cup water 1 -2 tsp sriracha 1 cup fresh diced mango or Celebrity Diced Mango Royal Mahout Rice for serving Lime for serving DIRECTIONS Drain the liquid from the tofu package and dry with paper towels. Cut into 1-inch cubes. Transfer to a large bowl and sprinkle with 3 Tbsp cornstarch. Season with salt and pepper. Heat the oil in a large, non-stick skillet over medium heat. Once hot, add the tofu and cook 2-3 minutes per side, until golden and crisp. Remove tofu from pan and drain all oil but just enough to lightly coat the bottom of the pan. Add bok choy and saute for 2-3 minutes. Add peppers, ginger, and garlic. Cook one minute longer. Add orange juice, tamari, water, sriracha, and 1 Tbsp cornstarch. Cook for 3-4 minutes on medium, or until sauce just begins to thicken. Add mango and tofu back to the pan and gently toss. Serve immediately over rice and with fresh lime wedges.
