As we look back at 2024, I want to thank all of you for your continued support of the DeMedici portfolio. As you know, in 2024, I became the Director of Business Development of our group after Steve Kaufman’s long run as leader of DeMedici. As our Senior Advisor, he politely advised me as follows: “Don’t mess it up!” He shared with me the same “advice” he got from the founder when he took over in 2007.

In fact, I can share that we had another year of continued growth. Much of that comes from the dedicated effort and support of you – our customers. Thank you so much for your support this past year I hope our products were as successful for you.

The new year is a time to take stock of the past as we plan for the year ahead. “Best of” lists abound as do lists forecasting the “Trends of” the new year. We see trends that take root and continue to expand year over year and some that are over in the swipe of TikTok. You can always count on us to provide you with the best quality, classic ingredients for any creation This issue illustrates the exciting potential of using classic ingredients to inspire innovative and delicious recipes. We are excited to share new flavors, new twists to existing items and even new brands in the coming months!

The DeMedici team will be on the road throughout the year We look forward to seeing you soon at the Winter Fancy Food Show in Las Vegas and in March at Natural Expo West in Anaheim.

Sourdoughhasbeentakingoversocialmediawithitsrusticcharmandirresistiblecrunch.But whatifyoucouldgetallthatdelightfultextureandtastewithouttheextensiveprepandwait time?ImaginebakingaloafinfusedwithfreshItalianbasilorfluffyfocacciamarbledwithWhiteTruffle easytomake,fullofflavor,andreadyinlesstime.Itmightnotbesourdough,buttheserecipesare perfectforbusyfoodiesorbeginnerscravinggourmetresultswithoutthefuss!

EASY BAKED BREAD WITH PESTO SWIRL

Ingredients:

4¼cupsbreadflour

2teaspoonssalt

1⅔cupswater

1teaspoonactivedryyeast

½cupCiprianiBasilPesto

Preparation:

Inalargebowl,mixtogetherflour,salt,sugar, andyeast.

Addthewaterandmixuntilthedoughcomes togetherloosely Coverwithplasticwrapand setasideatroomtemperaturefor2hoursor untilthedoughdoublesinsize.

After2hours,transferthedoughtoafloured surfaceandkneadfor2minutesuntilitisno longersticky Then,spreadthedoughoutinto a1-inchlayerandspreadhalfofthepesto Foldthedoughinhalfandspreadthe remainingpesto.Foldthedoughagainsothat noneofthepestocanbeseen.

Transferthedoughtoaparchment-linedbowl orproofingbasketandletitrisefor30-40 minutesoruntilitdoublesinsize.

Inthemeantime,preheattheovento450°F withadutchoveninside.

Oncethedoughhasdoubled,transfertothe dutchovenandcoverwiththelid Bakefor40-45minutes

Letthebreadcoolcompletelybeforecutting.

FOCCACIA BREAD WITH WHITE TRUFFLE SAUCE

Ingredients:

5cupsall-purposeflour

2cupswater

1tablespoonfineseasalt

1packetactivedryyeast

6-8tablespoonsMelchiorriEVOO(divided)

2teaspoonshoney/granulatedsugar ¼cupMelchiorriWhiteTruffleSauce

Preparation:

Startbyactivatingyouryeast Mixlukewarm water,honey/sugar,andyeast Letsitfor5-7 minutes.

Meanwhile,inastandmixer,mixyourflourand salt.

Pourtheyeastmixtureintoyourmixerandturn ontomedium Streamin4tablespoonsofoliveoil andmix/kneadfor5-7minutes Pause occasionallytoscrapethebowlandmixinany remainingflour.

Whenthedoughisnolongersticky,placeitinan oiledbowl,cover,andletitriseinawarmspotfor 60-90minutesuntildoubledinsize

Stretchthedoughtothepan'scorners,drizzle with2-3tablespoonsofoliveoilandtrufflesauce, anddimplewithyourfingers.Sprinklefleurdesel, cover,andletitriseinawarmspotfor60minutes untildoubledinsize

Preheattheovento375°F.Bakefor30-40minutes untilgoldenbrownorover215°Finternally.Cool completelybeforecuttingandstoreinanairtight container

Freshlygroundblackpepper&salttotaste Choppedpistachios,optional Basil,togarnish

Preparation:

Usingaknife,supremethebloodorange,navel orange,andgrapefruit.Dothisbystandingup theorangeuprightand,usingaknife,cut downwardalongthecurveofthefruitto removethepeelandwhitepith,exposingthe flesh Holdthepeeledorangeinyourhand Useyourknifetocarefullycutbetweenthe membranes,slicingclosetoeachsideofa segmenttoreleaseit.Repeatforallsegments. Combinethecitruswithcherrytomatoesina bowlandtosswithAL’OlivierLemonEVOO, lemonzest,salt,andpepper. Placetheburratainaservingbowl.Arrange citrussegmentsandtomatoesaroundthe burrata.
